Quinn’s Neapolitan Oatmeal Cookie Recipe

Quinn’s favorite ice cream flavor is Neopolitan, and one day she asked if we could make Neopolitan cookies. I figured oatmeal + vanilla extract could be the “vanilla” base then we could mix in fresh strawberries and chocolate chips. We had fun making them together, and they ended up being so good. I just had to share! They aren’t overly sweet, have a crisp + chewy texture going on and are excellent with milk or coffee. DJ raved about them too! The fresh strawberry flavor with the chocolate and hearty sweet oats is just wonderful.

Ingredients

Dry

– 1¼ cups old-fashioned oats

– 1 cup all-purpose flour

– ½ tsp baking soda

– ¼ tsp salt

Wet

– ½ cup butter, melted & cooled

– ½ cup brown sugar

– ¼ cup white sugar

– 1 large egg

– 1½ tsp vanilla extract

Mix-ins

– 3/4 cup finely chopped fresh strawberries

– 1/2 cup chocolate chips

Instructions

– Preheat oven to 350°F (175°C).

– Line a baking sheet with parchment paper

– Mix dry ingredients: oats, flour, baking soda, salt.

– Whisk wet ingredients: butter, sugars, egg, vanilla until smooth

– Combine wet + dry just until no flour pockets remain

– Fold in strawberries and chocolate chips

– Scoop 2 Tbsp dough balls onto sheet, spacing well.

– Bake 10–12 minutes. Centers should look slightly underbaked & edges just set

– Cool 5 minutes on pan, then transfer to rack
