Guac & Egg White & Toast

DJ asked me yesterday if I blogged this snack yet. I realized I hadn’t, but why the heck had I not?! This is one of our favorites. Something we crave. It also inspired my Halloween costume this past year. We eat it nearly daily, and I think you will enjoy it too! This is something else we will whip up for guests as a quick snack, and later when they are home I’ll get a text asking for how exactly to make them again. There is not much to it, but I promise the taste will blow you away!

  • 4 hard boiled eggs
  • Bread of choice (I prefer Dave’s Killer Grain Bread or Sprouted Flax)
  • Spicy Guacamole (Or plain avocado)- I like Wholly Guacamole, but it really doesn’t matter. I use whatever the store has.
  • Sea Salt and Pepper
  • Hot sauce of choice. *Optional

  1. Using your perfectly hard boiled eggs and clean hands, open the egg by dividing it in half and popping out the egg yolk. **If having difficulty removing the yolk, just run the egg under a little cold water.

2. Put your toast in the toaster and toast away!

3. Spread 1 guac packet/avocado over the two slices of toast. I usually split a packet of Wholly Guacamole between the two pieces. If using a multi-serving pack, use about 2 TBSP per slice.

4. Put two egg whites on each slice of toast. I break them apart so they can lay (lie?) on the toast evenly.

5. Add sea salt, pepper, and hot sauce (great without hot sauce as well)

Nutrition per two slices: (Using Dave’s 60 Calorie Grain Bread and 1 packet of Wholly Guac)

    1. I love how there are so many ways to combine the ingredients with avocado!!! The thing I love about this combo especially is the spice with the coolness of the gauc and then the contrasting textures! Thank you for stopping by 💕

    1. YESSSS!!!!!!! Dave’s bread is the best!!!!! I love it so much. I may be addicted. No other bread compares, honestly. It may be a bit pricier, but it is worth every nibble! xo

  1. Literally so simple! Also, what an awesome little fun fact about running the egg under hot water to easily remove the yolk (or maybe everyone but me already knew that- which also could be likely ha) I love this as a snack too, I typically mash it all together and use a tiny bit of sriratcha in the mix and then spread it on my bread. The way you do it looks much more delectable though!

    1. Oh my gosh ! I meant to write cold water 😂😂 I mean hot would work too but I definitely the egg tastes better cold. My brain. Hah thanks for mentioning that! And your way sounds delishhhhhh. I’m drooling at the thought. Love how versatile the combos are. Definitely gonna try that!! also I am so behind on reading up on blogs and I want to catch up on all of yours so soon!!!!! Hope you are having such a great week 💕💕💕

      1. Oh thats too funny, cold water though- I’ll be trying that. I don’t know why I haven’t thought to do that regardless bc I usually just go right into cracking it and burn my little fingers ha. Do you ever make your own guac/have a recipe for it?

      2. Haha the struggle is real. I totally get that! And no I don’t— but you are definitely motivating me to have one 😉 So stay tuned! <3 xoxo

    1. Yayyy! And I hate to say this, but I usually just throw them away! If I eat a hard boiled egg plain, then I eat the yolks, but with this toast I toss them. Hope you enjoy, Jena! 😉 🙂

  2. My favorite breakfast meal. I call it “The MacKenzie”. Good thing you taught me how to make hard boiled eggs so I can enjoy!

    1. Oh my gosh too funny- I just said the same thing about squash when I commented back to you on the squash post! LOL. But seriously avocado is one of the greatest things on planet Earth. I am convinced. Hope you are having such a great start to your week, girlie! xo

  3. This looks really good! I love avocado toast, I usually eat it with flaxseed or hummus or a few veggies like peppers, but I will have to try the eggs now! 🙂 <3

    1. Oh my goodness! I never thought of putting flaxseed in it!! But that sounds so tasty! Can’t wait to try. And yesssss- hummus on anything is never a let down! 😋😋😋😋

      1. It is sooo good. There is a restaurant (it is a chain but doesn’t feel like one) called Le Pain Quotidian and they serve it with radish and flaxseed. So yummy! No it isn’t! <3

      2. I just looked it up and it looks like there are a bunch in southern california!!!! I still have never been to LA since moving here and definitely want to make a trip, so I will be adding that yummy place to the list!!! xoxo

      3. Oh my gosh you have to! You will be a convert! They sell coffee and tea in bowls! And not just tiny bowls but large soup bowls! Their cafe au lai is amazing! And they do farm to table and organic and vegan and GF…But seriously…The COFFEE! Now I need one! lol 🙂 <3
