Savings September In Review

Hey everyone! I have a little different type of  post today. As some of you may know DJ and I have an annual tradition of doing a lil’ something we call Savings September. We have noticed that summers tend to make a big ole’ dent in the spending arena, so every September we use to refocus, re-establish good habits, and look for ways to be smarter about spending, especially leading up to the holiday season. We don’t want this to be limited to September either- the goal is that by creating these conscientious, yet practical, habits we will be able to take what we have learned and apply it to each month thereafter.

I wasn’t sure if I was going to make a post initially; I never have in the past. However, this year was particularly successful, and a few of you have expressed interest in ways we have saved! SO without further adieu, here are some little easy tips and tricks that helped us save 42% of what we spent in August. Yes-42%!!! Something we predominately learn each time we do this is the little expenses and choices add up!

1.Limiting Eating Out.This one is probably not a big surprise that it’d be a saver & it didn’t mean we never ate out. Basically, we limited our eating out to either social hangouts with friends or date nights together. I tried to be diligent about prepping more and making sure there was something DJ and I could easily have for lunch rather than him buying lunch every day at work. This used to be a routine for us, but it definitely fell through the cracks through the summer. Feels good to be back in the swing!

 

2. Limiting Coffee Out. I definitely still had my Peet’s <3… but I used up old gift cards with a couple dollars sitting on them here and there at various coffee shops. I tried to only go to Peet’s once or twice a week when the school load was extra heavy and ordered a small most times.

3. Groceries. This is probably where we saved the most. I tried to use up every little thing we had in the pantry/freezer/fridge before going back to the store. I would create meals surrounding what we already had. For example, I knew we had fish in the freezer, so I would go get rice and a veggie to “fill in” a meal with what we needed to use up. I also tried to be attentive to making the wisest decision among choices. For instance, usually when I get tomatoes, I don’t pay too much mind to the couple cent difference between the Roma and the cherry tomatoes. But when you opt for the cheaper one and apply that mindset to every item you are buying over weeks, months, years it really adds up- especially on things that you don’t mind a slight difference. Oh, and buying the on sale in season fruits makes a HUGE difference too- and taste better!

4. Skipping on the non-essentials. I loveee myself some carbonated bevies, especially “ICE” waters. But the thing is, they ain’t cheap when you buy them often! I always throw in a couple bottles when I’m at the store along with some gum from the cash register- but with how frequently I chew gum, it just isn’t a wise investment and a habit that needed some breaking. Rather than buying ICEs, we bought 3 large packs of Bubbly water for $10 and stopped buying gum entirely. I do have mints in need of freshening up my breath on the go though. Not only has this saved monetarily, but I no longer even crave the ICEs or gum. This doesn’t mean I won’t grab a pack here or there, but I don’t have the desire for a piece of gum every hour of the day.

5. Poshmark!!! I sold quite a bit on Poshmark this past month, and then had credit in my account available with the sales. I noticed I needed new face-wash, but my favorite face-wash that I discovered through Fab Fit Fun costs around $34. Ugh! That’s how they get you. I decided to check Poshmark to see if I could find some for cheaper. I negotiated for two bottles that would be about 1/2 of the price using the Poshmark credit. Score! It makes me wonder what other items I can find on there.

6. Being cognizant of saving electricity. I have a bad habit of keeping lights on going room to room (It drove my mom nuts growing up). We have both been extra diligent in making sure to turn lights off upon leaving a room and when we leave the house. It’s a great habit we have developed, and now it would bother me to keep them on and leave.

7. Buying in Bulk. At some point I noticed we were running low on some cleaning supplies, toilet paper and other essentials. I remembered I had received a coupon from Bed Bath and Beyond to get $20 off $80 spent. I bought all the stuff that we needed (including a couple fall candles-  autumn necessities 😉 ) all online. We are stocked up on tons of cleaning supplies, a new shower liner we desperately needed, dishwashing soap, and toilet paper for way cheaper if I had bought them at a regular grocery store. The delivery also came with 2 $60 gift-cards towards HelloFresh. Also, at Target you will sometimes see if you buy a certain number of items, you can get a $5 gift-card back. I always try to stock up on laundry detergent and household essentials when I see those promos going on. Right now if you get a flu shot at CVS affiliated with Target- you can also get a $5 giftcard to Target (just call before you go to make sure they are doing the promotion). But get yo flu shot, peopleeee!

8. Using Cosmetics I already Have. I don’t know about you, but I have a bunch of little “samples” sitting around of makeup, shampoo, body wash, etc. Rather than just buying something new when I ran out of something, I gathered up all my samples and have been using everything up. Those little samples go a long way! Not only have I discovered some products I really like along the way, but I am clearing up space in the cabinet too. Oh! And I’ve started using olive oil to remove makeup- it works wonders and is so gentle- no more needing to buy makeup remover!

9. Having fun, restful weekends at home. I love to be busy and plan, plan, plan. But even seemingly cheap plans can become expensive, especially around here- you’ve got unexpected parking expenses, food, gas money, etc.. Not having a ton of weekend plans reminded me how important (and fun) just a weekend at home is for rest & rejuvenation. I also was able to get ahead on some school projects, so that always feels good! Oh, and DJ definitely needed the time to breathe now that the season has ended. I’m excited to plan some lax dates this month when we carve pumpkins, watch Halloween movies, make homemade wine together, practice baking soufflés, and have picnics with the lovely autumn weather!

10. Mint. This financial management app is incredible. It is super easy to use and understand. Being conscious of where every dollar goes, seeing our budget clearly, and having alerts when we are about to go over a set budget has been tremendously helpful in being good stewards of our money.

We also have some other just general saving tips that we have used for a couple years or gained over past Savings Septembers:

  • We love Groupon . This is where we get some restaurant deals & most of our hotel deals  (along with Orbitz to collect Orbitz bucks!)- always make sure to get points or rewards for your travels! It’s a free night in a hotel or a free plane ride eventually. I also have accounts with hotel.com & booking.com for when they have the cheapest comparative rates.
  • Installing Wikibuy into your Internet toolbar is a big saver! Every time you are about to make a purchase, Wikibuy will scour the internet for coupon codes, deals, promos, etc. and automatically apply it to your order if it finds one. You also get money back many times and can use that toward other purchases.
  • Sometimes I like to peruse Coupons.com before making a purchase to see if there are any coupons for something I may need too.
  • I have subscribe and save on Amazon for certain things we rebuy every few months- like shavers and Swiffer refills. This saves 5% for each purchase, and we would buy that stuff every couple months anyways- so why not save 5%?

As you can see, a lot of the savings do not come from really any novel ideas, but simply being conscious of each purchase. Hope this was somewhat helpful for someone! If you have any tips and tricks I’d LOVE to hear them too! Have a beautiful week, everyone 🙂

French Brunchin’ & Rome Dreamin’: A Weekend Recap

Hi Friends!!!

How ya doing?! Sooo I’ll be totally honest and say the struggle. is. very. real. Imma dive right on in. This past week/weekend have been hyper-emotional for me, laced with overwhelming anxiety. It has easily been the worst week I have had since beginning my job. The assignments have been tremendously heavy lately, and I feel like I’m barely staying afloat. Then applying for grad schools and random other things going on… I am down in the deep, deep dumps.(Well, why don’t ya tell us how you really feel)

I think part of it, perhaps subconsciously, is the emotions that come with November- the month I lost my Dad. Even though I tend to directly point to whatever else is going on in life as the source of the sadness, that’s probably a larger part of the equation than I acknowledge. In reality, this time of year traditionally does tend to bring up suppressed emotions and memories.

BUT, whenever I have been feeling down lately, taking this time to reflect and highlight everything good going on really has helped lift my spirits. Scripture, prayer, conversations, cards, encouragement from DJ and others… man, I do not know what I’d do without every little bit right now. DJ just keeps saying, “once you make it through this year, imagine how strong you’ll be”. Cue Kelly Clarkson!! (But for real… cliche quotes and songs have been my jam as of late— Whatever it takes- Imagine Dragons, Stronger- Kanye West……..).

My mom also keeps reminding me.. we are more than conquerors in Christ (Romans 8: 31-39). That is so powerful. Not just conquerors, more than conquerors.

Nope, I cannot do this alone. Not even gonna try because I’d be falling flat on my face.. but with Christ, I know I’ll make it because it is on His strength I rest, not my own. I know I should be spending this time working on my next application- but I don’t think I’m quite in the right head space for that yet. There have been some truly special memories in the last couple days.. and I would love to share them with you! (Plus blogging always gets me in a good mood- especially when I can share things like THIS…

Friday (11/3)…zoomed into Target post-shift to snatch some mint chocolate chip ice cream (the ultimate post cry ice cream) & an endless supply of Candy Corn. Anyone else stock up on candy corn for the rest of the year? ya? no? Jus’ me? Jus me & Doug?

Saturday (11/4) Deej and I had a date night at the row!! Wooohooooooo! Been a hot tick since a real date night for us. This was too fun. We decided to go to Yard House.

I even got to do my make-up for once in probably the last three weeks! Haaack ya!

DJ sampled their pork spare ribs with spicy bbq sauce, creamed corn & bbq pinto beans like the good midwest man he is.

I had their vegan burger (holy maloly) and side salad like the California hippie I am. This burger was flame. So tasty. I love how many options they have for vegetarians and vegans here.

Such a great meal and conversation with the hubs <3 We both agreed that Yard House is a tad overpriced especially for the portions.. but we also agreed that meant room for dessert!

We spent sometime strolling the Row, but the weather actually cooled down quite quick, so we zoomed back home to have cookies and watch some Parks & Rec.

Sunday (11/5) Dj went in early to Church to help with venue set up. I snatched a few extra Zzzzs and woke up for some coffee and toast with toasted vanilla coconut yogurt, chia seeds, oats, a sprinkle of stevia, and apricots.

At Church, we found out the next location our Church is expanding to is …. *drum roll* …. ROME. Yep, ROME. Our Church is only five years old…five. The audacious faith that our Pastors have is truly incredible to roll out five campuses in five years. God’s hand is so evident and revival is happening. I have no words to explain how ecstatic we are to see this vision come to fruition and to be a small part of it.

After Church, Deejers also helped tear down and while he was doing that I finished up some laundry then decided to run from home to the place we were meeting for brunch. The run is about four miles from the apartment, but I made it about a seven miler- it was such a beautiful day, a beautiful service, so I just listened to some uplifting music while allowing adrenaline to replace the nagging anxiety.

We met at Left Bank to enjoy their fabulous French cuisine on the twinkle light lit patio. It is one of those locations that provides the full experience, not just the food.

I visited this restaurant with my mom about a year ago (that was the last and only time we have been). She ordered a Bloody Mary, and I decided to try one since I knew I liked it the last time I tried one in Santa Cruz. This one was okay.. the Santa Cruz one was much better! (DJ snagged the bacon ;)).

I ordered their salmon hash (again). Last time I had it I remembered how absolutely savory it was, and it sounded like a perfect brunchy meal on the chilly afternoon. All I can say is …Délicieux!!!! Absoutely magnifique!

DJ ordered their sausage hash and downed that thing before either of us blinked (of course, post picture 😉 ). I assume he liked it.

We walked around the row for the second time that weekend (becauuuuse it’s the ROW!). We popped into their little boutiques and I saw this on a card…

I started tearing up. (Yes, I’m that friable emotionally right now… I actually took a pregnancy test because I am giving Niagara Falls a run for its money… and I’ve been uncharacteristically craving Diet Dr. Pepper – obviously the test was negative.. but that’s how crazy it’s been. Is that TMI? I’m a nurse.. there is really no such thing).

Monday (11/6) morning, I decided to try something different with my toast! I mixed in Matcha powder in my yogurt, topped it with oats and chia seeds and honey. It was pahretttty tasty.

In the morning I cranked out chores while listening to podcasts, snuck in a nice long run, and stopped by Tea Chansi on Main Street for their Boba, which I was craving something fieeerce.

In the evening, DJ and I went to our Church Group. Gosh, I haven’t been able to go in for FOREVER, and it was incredible to connect with everyone and see our friends I have been missing something terrible. These are the snacks I whipped us for us and my good friend Danielle made some out-of-this-world delicious homemade soup & homemade bread.

It was a much needed night discussing the message Sunday, our vision for our own lives, and praying over each other.

Today has been hard. I’ve been pacing, anxious, and not able to really focus. I go back to work tomorrow after a stretch off. I haven’t been productive AT ALL with my applications. I am going to just focus on getting in a good head space- go for a run, clean the house, blast some feel good oldies, and maybe just read a book. I thank you all for allowing me to be honest in this season, and also for being ever so patient with me. Y’all are the BEST <3

PS. Ya all know we keep it one hundred around here…. I put up a post last night that I ended up setting to Private. If you did read it, I don’t think I was communicating very well what I meant to. I essentially was trying to say that sometimes perception is not the reality in the nurse/patient relationship, and it may be hard to see the nurse’s heart in light of the system in place and the demands placed upon us. I honestly didn’t intend to annihilate myself, but rather, speak from the heart to the patients I wish I could do more for. I also wanted to debunk the idea of a “good” vs. “bad” nurse that is often discussed (eg. often the perceived “bad nurse” on paper actually might care more than you know). I realize it came across pretty bleak, but I wrote it with the intent to be an artistic/poetic form rather than a woeful monologue. Not one of my best articulated pieces. However, I truly, truly appreciate those that reached out and left such kind words <3. (Ps. if you want to read it, I will send it privately). Ya live, ya learn, ya blog.

A Foxy Pup, an Ice Cream Battle, & Recyclops!

Hi, Lovies!!! I don’t have a super eventful update— but as always, I want to reflect on the hum drum and find the highlights, you know, find those doggone silver linings (they are there, I promise!). First, I am SO excited to say I have officially submitted my first grad school application. It was a DOOZY. It’s (maybe) my first choice, but I am very confused about the whole decision. I’m applying to schools across the country (and many online schools that pair you with a nearby hospital). I just pray that God will make it clear where we should be. I love California; I love it so dearly, and I love our life here. But we also LOVE exploration  and when else will we have this flexibility to just get up and go (cough cough… kids…..), so who knows… but I don’t know that we can imagine leaving here yet. I don’t know! I guess we will see! Nothing will happen until next fall, so I’m hoping all things will just fall in place the way they should.

Just a little context, I’m sitting here this Sunday evening with my mint chocolate chip ice cream, a glass of cabernet sauvignon, and NYC Housewives playing on the laptop (Uhm, Aviva- take a chill pill girlfran’). I don’t have the GRE or November application deadline hanging over my head (although I have about three more coming up in November- March), but for today, we will relish in the moment. DJ has the World Series playing in the background, and things feel actually OK at this second.

I think we left off right after the GRE. I went back to work for a few days, and DJ headed to Ohio! I wish I could have went back, but work owns me. I am thankful he had such a fantastic weekend with his family, but I am honestly a bit jealous because I miss them all terribly.

On Saturday, October 21st, my dear fran Sara, (you may remember this chica from here, here, and here), stopped by to hangout and catch up while DJ was spending his last day in Ohio. We decided to go to Steins for an appetizer and a drink to catch up!

The waiter brought us the cutest little mini beer mugs to try their featured sour flavor. It was cute, but wayyy too sour for our liking. Plus neither of us are big beer guys.

We tried a recommended featured cocktail with capurro pisco (not sure what that is), but it ruined the flavor. We were not fans of this cocktail. However, their beer garden cooler was delish and refreshing. Highly recommend if you end up finding yourself here.

Also, highly, HIGHLY recommend their truffle fries- TO. DIE. FOR. Perhaps the best truffle fries ever. I think the only other ones that contest were the ones in Santa Cruz.

ANNNDDD Sara surprised me with Foxy Lady (that’s literally her name) (you may remember her from this post). I was ecstatic. I just love this pup so much.

Cutest little pumpkin <3

We hung out, laughed, had an aggressive battle with a Talenti gelato mint chocolate chip pint (if you follow me on Instagram @ __mackenzie.marie__ you probably saw) and chatted until about 11 pm.

We literally wrestled with a Talenti container for probably twenty minutes. We tried EVERYTHING from knives, to rubber twist jar openers, and finally rubber oven mitts….it was a scene. Beware the Talenti.

Anywho, It was such nice, much needed girl time!!!

On Sunday October 22nd, I woke up bright eyed and bushy, but realized I didn’t have yogurt for my toast. I panicked, but no worries- there is a Target just down the road. I picked up my coffee mug (didn’t even bother putting it in a tumbler) and headed to Target to snag some yog. I know all the workers, considering I stop by there nearly every day, so they didn’t blink at me showing up disheveled with my half finished cup of coffee and zombie affect. It happens more than I probably should admit. After I was all caffeinated, I zoomed to pick Deej from the airport!

When we came home, DJ had to whip off to work for a couple hours. When he came home, we decided we were in the mood for some lunchy brunchy food. We have been wanting to try out the local Bob Evans (Aka Holder’s Country Inn). It received great reviews on Yelp, and it sounded like the perfect Sunday afternoon meal.

I had their veggie scramble with egg whites, peppers, mushrooms, salsa, and avocado. Every ingredient was immensely fresh and satisfied the craving to a tee.

DJ tried their pancakes… now, if you follow along, DJ is on the hunt for the best pancake. So far the best ones we have found in the area are Bobbie’s. They have yet to top the Bellagio’s from Las Vegas, or his mom’s (DUH!).

He also had the country fried steak with eggs. Doesn’t get more Bob Evans-ey than this, folks.

After we returned home, I decided to take advantage of the glorious day and go for a nice jog outside.

The leaves are changing, the colors are vibrant, and the weather is finally cooling its jets (it has been ridiculously hot here). When I came back home I whipped up my new absolute favorite meal. I was going to wait until a Friday Faves, but I can’t. It’s too good!

My all time favorite potato is the sweet purple white potato (purple outside, white inside). It actually has more antioxidants than a regular orange sweet potato, and I swear tastes better. You can find different varieties- some have a white colored inside, and some have a vibrant purple.

I stir fry together white onion, mushrooms, Lightlife tempeh, and eggplant with liquid aminos.

Once it’s all caramelized and the sweet potato is cooked to tenderness, I stuff the tater! So easy, so absolutely delicious, satisfying, and high in protein/complex carbs.

And the caprese salads are still going strong for DJ!

He and I have not been able to do many of the “fall activities” this year ( cue melancholy soundtrack), but I have been listening to a plethora of crime podcasts, have eaten an embarrassing amount of candy corn, and we watched Cropsey together on Amazon prime over the course of a few days. SOooOOO sort of taking advantage, yah?

I even found this wine to accompany the documentary  because it seemed appropro. DJ always laughs at how excited I get about the “idea” of something.. I like things to be themed, anyone else feel meh?! Why just watch a crime documentary when you can watch a crime documentary with CRIME wine on the heels of listening to crime podcasts in the midst of Halloween hype?! PS. Documentary was tremendous.

And I mean these socks are basically me after a couple shifts so… had to invest..

We both worked Monday October 23rd, but the 24th I picked up my bridesmaid dress for the November wedding (EEEK!!!!), and then later in the day grabbed a massage (much needed). There was a $30 off coupon online for a super nice salon in Sunnyvale. I jumped on it, and enjoyed every stinking second of that massage.

After the massage, I stopped by Safeway to pick up my Ice Cream (Oatmeal chocolate chip cookie dough….. it says limited edition but I’m convinced I am keeping them single-handedly in stock). I also stumbled upon this RXBar. Mint chocolate chip you say?!? Yesss sirrr-eeeee.

I still prefer the Chocolate sea salt, but I see they now have pumpkin and maple. Uhm, yuhm. I need to hunt those down!

On Wednesday, the 25th, and Thursday the 26th, I buckled down on my application. I spent the full days slaving over that booger. It was in-stinking-tense. I definitely needed a break to clear my head… this called for an extra long run, which turned into an impromptu half marathon. #procrastinationnation.

And on the heels of any long run, candy corn is EXTRA necessary.

Later in the day I stocked up on groceries for the next few days from Sprouts Farmers Market. This is one of my favorite grocery stores around.

In the evening, I decided I needed some sushh. It has been a hot minute!!! I went for my go-to sunset roll with unagi, ahi tuna, and lemon with a side of wakame salad and extra ginger.

I worked Friday and Saturday. Friday morning was bad, bad, bad. BAD BADDDDD. First, I was out of coffeee (nough said, right?). I drove to work early so I could make a cup, and when I checked my phone, it said my time off request for the wedding the end of November was NOT approved. A few months ago I had a face to face conversation with my manager confirming that it wouldn’t be a problem. So now.. I panicked, the anxiety set in, I couldn’t see straight. I started bawling in the bathroom before my shift. I quickly messaged her explaining I had already bought the plane ticket and told the Bride I could be in the wedding based on our conversation. I spent the whole morning sick to my stomach, holding back tears, and gritting my teeth through my assignments. Halfway through the day she e-mailed back saying it was approved, she just had to go back and adjust the way it was formatted in our system. I have never been so relieved. I cried again— tears of relief. I was a MESS. I would not have made it through the morning without the support from my family who sent scripture and prayed over the situation when I frantically filled them in before the shift began. Thank you Jesus for answering that prayer. I still take deep breaths just thinking about it.

But on a much brighter note….. .on Saturday the 21st, DJ headed to his family’s for a costume party. I was bummin’ I missed it this year. You can check out the post from last year if you would like 😉 Our costumes were certainly something! Haha. This year DJ was Recyclops from the Office! He nailed it. The rest of the family’s costumes were amazing too. I wish I could have been there to see them in person!!

Sunday (the 22nd) I accidentally slept in wayyyyy too late after working all weekend. Whoops. I can’t interact with anyone the day after working a few in a row and my body cannot physically function. I get in a fuzzy funk from the exhaustion and move the pace of a sloth. I decided to wake up my body with a run before finishing up my application.

It was perfectly brisk, with cloudy skies, and the weather finally exuded those autumnal feelz <3 I love LOVE cloudy Sundays. Sundays in the fall are the ultimate relaxing day after Church, naps, football, and candles. A cloudy day just enhances the whole experience and I feel like “gives me permission” to be lazy.

One of the houses along my run had a little garden out front and was growing butternut squash(es), squash? I think just squash. Can you say #GOALS?!

I also saw this beautiful flower and couldn’t help but snag a picture. Is it weird that I thought of a Punnett square when I saw the unusual distribution of colors?! I will always be a bio nerd at heart.

For dinner, we tried the Daiya vegan Margherita pizza. Not only does DJ love the Vegan burgers, but now is on board with the vegan pizza. He said it was easily just as tasty as a regular one.

And that’s a wrap! As I finish up this post, it’s actually morning now, I am sipping coffee, eating a protein bar and my toast, and for the first time in a LONG time I don’t have something hanging over my head for the day. I am gonna finish up my breakfast, go for a run, answer some blog comments, and read Harry Potter until my eyeballs fall out. Woohooo!!!!!

Friday Favorites # 7

Hey y’all! Happy FriYAYYY! I actually get this weekend off too, so I’m pretty excited about that 🙂 DJ has been in Tahoe since Tuesday for work, and I miss him something fierce, butttt we’ll get to see each other this weekend! Without further adieu…. Here are this Friday’s Friday Faveeesss!

  1. The yogurt/toast is backkkk!!!! I am tucking away my avocado smoothie recipe from the summer and bringing back my yogurt/toast combo. I use either Dave’s or Ezekiel Cinnamon Raisin bread topped with Fage yogurt, low sugar craisins, stevia, and granola. It’s so stinking gooood.

2. Pumpkin decor!!!! I picked these little punkins up last year and shared them with y’all then, and I was stoked to pull these back out from storage and blow off the dust! DJ said my autumnal excitement is a bit premature, but I say there is no such thing. Where is y’alls favorite place to find home holiday decor? Mine couldn’t be more predictable: Homegoods and Tarjay.

3. I’m trying my hand at gardening for the first time ever with eco-culture herbs! My Aunt Terry (who was here nearly a year ago, SERIOUSLY, how has it been so long?!?) gifted these to us, and I am obsessed. These are little planters that you can actually plant indoors in the natural window light or outside. I am currently growing basil, cilantro, and parsley. Next I’ll be growing sweet marjoram, sage & garlic chives. They are so easy to use, and gardening (my albeit baby step gardening) is such a cathartic process. Stayyyy tuned!

4. Just ….fall.. Can fall be a Friday Fave? I say yes. Leaves are falling (or one fell) & autumn is thick in the air (well I got a whiff). While out on my run yesterday I spotted these gorgeous Japanese maples & vibrant bright colorful landscaping. **Side note: I can identify many leaves after a biology project in high school- we had to identify tons of leaves as part of a final project, and weirdly, most have stuck with me. So if you need a leaf identified, send it over, lol.** **side side note : Ironically, I can’t identify flowers for crap though 😂**

5. If you are a nurse, you have to follow nurse abnormalities on Instagram and also her blog here. Danielle has a real talent for encouraging new nurses as they begin this challenging career. She articulates phenomenally well about the realities and true abnormalities of being a nurse from the good the bad the weird, the hilarious and the absolutely beautiful. Recently her post to new grads hit home big time for me.

img_16676. The Black Tux! Ok, so I’m pretty bummed I just discovered this site, as it would have been SUPER ideal for our wedding. I know several of you are engaged or will be soon, so I figured I’d share this. Basically at Black Tux, you can rent tuxes/suits for wayyyyyyy less than typical rental/retail stores while also getting free shipping (and free size exchanges). We had groomsmen from several different states, so this would have made things a whole lot easier for us. Also, they are partnered with Nordstrom, so you know it’s gonna be high quality. If you know someone who needs to rent a tux, this company is definitely worth checking out!

9. Welp, we gave in! We done did it. We finally got the Target Red Card after much contemplation. DJ and I aren’t very keen on credit cards for stores, so we chose the debit option (zero risk involved!). Every time you use it you get 5% off. It’s added up a ton. I highly HIGHLY recommend this if you shop a decent amount at Target, or even if you don’t shop that often- it’s still 5%!img_1655

10. Last, but not least, the grocery store was having a huge wine sale, and I decided to grab this bottle for super cheap of Handsome Devil. I am not picky at all about wine, but I do love a dry, yet non bitter cab. This one hits the mark at such a small price!

I Accidentally Stole From Target & Other Recent Happenings

HOWDY! Excuse me while I unleash my good ole’ southern side (I just booked a quick four day trip to Dallas in August!). YEEHAAW. My schedule only comes out about three or four weeks before, so I’m doing all my planning last minute, but I’m learning to navigate it.

I’m thrilled to tell ya’ll that things are getting mucho better. I think after I wrote my last big nursing update post I began truly coping. I’m able to sleep through the night most nights without taking an absurd amount of melatonin, and I am able to separate work from home a bit better. I actually have some energy outside of work and am becoming motivated to start, idk, do real people things, besides sleep on my off days. I’ve still had days that would consume me at the beginning, but now I try to just see them as a learning experience. I feel that I am contributing more to my patients’ care too. One of my patients was just a bit too drowsy for my likin’ and had sluggish pupils. I let the doctor know, and when they did the CT scan it turned out he did have a re-bleed in the brain. As much as I wish these types of complications didn’t happen, it was incredibly rewarding to feel like I actually made a true difference for a patient. I still have an infinite amount to learn, but I don’t get nauseous every single day walking into work. I’ve actually had a few times where I’ve been somewhat excited to go back in because I knew I was getting my same patients back from the prior day! This turned corner is all, 100%, due to the tremendous support I have received in the last couple months and spending time in God’s Word has truly helped change my perspective. I don’t think I could have survived the first three new-grad nursing months from h-e-double hockey without you all, DJ, my family, my friends, and other coworkers. It sounds supes cliche, but it’s the truth. I have just a couple months until my probation period ends and I think I might just make it, guys! Then I will officially be a Clinical Nurse II! Just gotta keep peddlin’ on. (I needed to work in this photo somehow).

When going through my Camera roll as of late I noticed two things. A. All I do is take pictures of food. and B. I make some weird crap. But I swear, it’s delicious crap.

Ok, exhibit A….

I decided to try a portobello mushroom cap stuffed with baked tilapia, blistered tomatoes, hummus, kalamata olives and seasoned with Za’tar. I had a side of quinoa & brown rice. It turned out crazy good. I made it the next day. DJ really enjoyed it as well and commented how good the house smelled when it was all cooking.

I also have been craving tofu lately! Last week I made a medley of roasted veggies, vegan turmeric cauliflower mashed potatoes, and pan roasted tofu with tomatoes.

I then bought giant collard green leaves and stuffed them with the above plus a dollop of hummus.

Last Monday (7/10), I finally FINALLY was able to see one of my girlfriends, Sara. Our schedules haven’t been lining up lately, but they matched for once! DJ had to work super late that night so it made for a great impromptu girl’s night. I still had to work on Tuesday, but not until 2:30 pm, so I didn’t have to go to bed at 9 pm. She came over and we watched Bachelorette, sipped champagne, and ate cookies & chocolate. It was sooo needed.

Tuesday (7/11) DJ and I worked our toosh’s off, but Wednesday (7/12) we both had the same day off! *GASP*. The same day?!? Yes, yes… I know it’s hard to believe, I was looking for the pigs flying overhead too. We were both pretty exhausted from the day before and decided to just take a chill day. We started our morning with a breakfast at Bobbie’s Cafe. This is a staple breakfast place in Cupertino. It’s your typical mom-and-pop dive with great staple breakfast options, phenom service, and friendly folks who appear to frequent the diner for their morning cup of Jo and side of eggs.

I ordered their poached eggs over an english muffin with a side of cottage cheese. It hittt the spot!

DJ says Bobbie’s pancakes are some of the best around here. I tried them, and definitely concur. I say they taste similar to Heidi’s– light but full of flavor.

In the evening I made DJ a pepper jack crusted chicken with a sprinkling of pita breadcrumbs and pasta. For myself, I ate a collard green/cauliflower/veggie/hummus/tofu whatever-the-heck you wanna call it wrap.

Since we graduated our FACC series class, we are only having one class with our Cohort every couple of months. We begin our research project in September. Eeeek! I am too pumped. I already know what our topic is gonna be, and I’m nerding out hard core.

They surprised us Thursday morning (7/13) ( with the most gourmet breakfast! I quickly snuck a picture when no one was around 😉 ) #DOITFORTHEBLOG.

It included all kinds of fruit and bagels with cream cheese, capers, and smoked salmon. I told one of my coworkers that every single tear in the last few months was worth it for this very moment.

After a long week of work, DJ and I set out to Oren’s Hummus shop on Main Street lateee on Friday night (7/14). It was a super spontaneous date night, neither of us thought we would be home as early as we were (I actually got out on time!).

If you want the run-down of Oren’s, go here, such a throwback post. It’s one of our all time favorite spots, and they have some of the best hummus in the whole wide world.

For an appetizer, make sure to order their original hummus with a side of whole wheat pita. Greatest life decision, I promise.

I always order their Moroccan carrots, marinated beets and veggie skewers, and DJ usually gets their beef hummus.

Funnnnnyy story: We stopped by Target afterwards to pick up a few groceries and a card for a friend. I picked out the card and walked around with DJ for the rest of the food he wanted to pick out. When walking back to our apartment, I realized I still had the card under my arm and hadn’t paid for it. I FREAKED out, classic “me” mode, and started sprinting back to Target hollerin’ to DJ, “I accidentally stole it!” When I looked to my right there was a Sheriff stepping out of his car in the parking lot. I dived into Target half expecting him to chase me. I’ve always loved the show Cops, just never expected to be on it. Nothing ended up happening. I walked up to the cashier and explained what happened, they couldn’t have cared less, but I clutched that receipt ready to explain myself as I left the building!

On Saturday morning (7/15), or any day I have off, you can almost definitely find my in my lil’ egg basket. I just swing, swing, and swing while enjoying my coffee, avocado smoothie, and oatmeal chocolate protein cookies. It’s hands down my favorite part of the whole day!

DJ and I both had Saturday off too. DJ played some basketball with the guys in the morning and I went on a nice, loooong run. We also snuck in a few episodes of Game of Thrones and before we knew it, it was dinner time!

DJ suggested Mod Pizza. How I haven’t been here yet is beyond me. They have them all over the US- anyone tried it?! It’s basically a subway for Pizza and it’s amazing.

The crust/sauce/and topping options are endless AND they are reasonably priced. Around here that is a BIG deal. (literally). SUNS OUT, PUNS OUT.

Deej ordered a Chocolate Milk Shake- I tried a sip. If you are a shake lover, you should definitely order one of these. Wowza! It was sweet, but the chocolate flavor was sending me into a whirl like the Cuckoo bird in the Coco Puffs commercial.

I did a Mini-Mod with red sauce, all the veggies, and fig balsamic glaze to top it.

After we devoured every bit of our pizzas, we headed to the Row to be out and about (like I said, I’m beginning to turn back into my old self a bit more!).

The parking was super limited on a Saturday night, so we had to park on tippy-top of the parking garage. We didn’t mind though, the view of the Sunset was perfect, and we made it just in time!

On Sunday (7/16) we went to Church. It was one of the first Sundays since starting this job that I actually had off and could actually go. It did something good for me to see all my friends. I missed everyone so doggone much!

After I did a quick grocery trip. I love grocery shopping- I just put my headphones in, listen to a podcast, and stroll the magical Safeway aisles.

In the afternoon I meal prepped a bit- cutting up veggies, getting meats ready, yada yada yada, and then I made my faveeee oatmeal chocolate chip protein cookies. I cannot get enough!

DJ has been asking me lately to make the Dixie Stampede soup. Dixie Stampede is a Dolly Parton owned show/restaurant in a few locations. DJ went with the basketball team in college to the one in Branson, MI, and came back raving about the soup. I whipped up a big ole batch that lasted all of three days.

It is currently Wednesday (7/19) after working Monday and Tuesday. Today I am going out on a long run to catch up with podcasts and then I’m not sure what the evening holds! Tomorrow is pretty busy though, I’m excited to share all about that in my next recap post. Now that I’ve downed basically an entire jar of PB2, I’m off to run and soak up some beautiful sun! Friday Favorites #4!

It’s FRIYAY, FRIYAY, Gotta get down on FRIYAY!!!

It is 9:00 pm, I am home from work and happy to report this week was SO MUCH BETTER!!!!! I can’t tell you how IMMENSELY encouraging all your comments and texts were from my last post. It truly changed my whole disposition. I went in with a determination to face it all head on, learn what I could, and forgive myself (I think that was pivotal). And although I have endless learning and experience to be gained, I felt like I wasn’t totally lost. One HUGE thing I was reminded of that stuck with me was just the the Lord wouldn’t bring me to this point to leave me hanging. That gave me a whole new wave of confidence.

I also see now how no matter how rough the day is, that ONE moment sincerely makes it all worth it. Today that moment for me was making my patient laugh. Even if I’m not the best nurse in the world yet, don’t they say laughter is the best medicine? 😉 Tomorrow (it’s Thursday while I’m writing this) might be different, but for now, I’m basking in the giddiness of success not horribly, epically failing.

NOW, before I go to bed I want to whip up a quick post. I have been collecting pictures for a Friday Favorites post all week and can’t wait to share!

  1. Peets Coffee. I’m not sure that I have given Peet’s a proper shout-out in my Friday Favorites. Due time! My go-to is an almond milk cafe au lait. YURM. Also, my friends that I made while I was studying for my NCLEX still work there, and when I had to do some module work online this week I went back in. It was great to catch up with them!

2. Cereal Quest Bars! I’ve been sitting here for a minute trying to conjure up a description that does these little devils justice- but nothing will. They are beyond delicious. If you don’t believe me I guess you will just have to try for yourself!!! I’m OBSESSED. I love the chocolate flavor most, but all the flavors are terrific.

3. Safeway Monopoly. Our local grocery store has a monopoly game (like the McDonald’s one) that I have been participating in! They have tons of free products you can win by simply shopping at their store! Without boring you to tears, basically you get a board, you earn little “game pieces” when you shop, and then you enter codes online to win or get instant winning tickets for free products. So far I have won a cooking class, Shutterfly photo books, and all the stuff in the pictures below. FREE. Free as a bee!!!!! Now if I can only get those last few game pieces to win one of the big kahunas! DJ isn’t too upset about the free donut I seem to get each time 😉 And who doesn’t want a free 5 lb. bag of flour?! (I do have to say though, I was actually wayyy too pumped about the aluminum foil, because we were out, so perfect timing!)

4. Sprout’s Bags. My “Every Day I’m Brusselin” bag- which was discovered in my very, very first post from Sprout’s grocery store), now has a new friend named, “Turnip For What”. If you know me, you can imagine my minor, massive joyous freakout in the store that maybe borderline, definitely embarrassed DJ when I saw this bag. I was like the needy five-year-old begging their parent for candy at the cash register.

Me: “DJ, I NEED IT! I NEED IT! I REALLY, REALLY DO!”

DJ: “We have so many bags at home, I think you’ll survive.”

Me: NO, I NEEEEEEED IT.

DJ: **Handing over the extra $2.00 to the cashier for my bag of happiness**.

The heart wants what it wants.

5. Dear Mom. Our apartment building has this new vending machine that is basically a grocery store vending machine in our lobby. Plus it has these recipes that hang on the wall next to it saying how to make different meals with the ingredients they provide. I think it’s one of the most ingenious ideas. It has all your basics as well as desserts. Yup, they even have cheesecake (which is a food group of its own). And if I forget anything that I was supposed to get at the store, I always check to see if they carry it before I have to make a second trip!

6. 13 Reasons Why. This is a heavy one. Has anyone watched it or read the books? It’s a Netflix original series. While I was doing some marathon training, cooking, and working on modules, I had this playing and finished the series in about three days. It’s addictive- start to finish. It’s only 13 episodes, but every single one is gripping. But, like I said, it’s heavy. It makes you think. I’d love to hear your thoughts if anyone has seen this.

7. PackIt Freezable Lunch Box. This is the best lunchbox on planet earth. It has built in freezer packs, so you just throw it into the freezer, and when you are ready to go you just toss your food in it. No messing with those awkwardly shaped freezer packs!! It’s super portable, lightweight, and basically I could talk about how much I love this thing all doggone’ day. Like, I have to get up in 6.5 hours, and all I’m doing is typing about a lunchbox. Ummm, #priorities.

8. 100 Calorie Pack Emerald Almonds. MMMM mmm MMMM. These are one of my favorite snacks when I’m on my shifts. I only have 15 minute breaks (and one 30), so these are a lifesaver for super fast energy. I usually pair it with a cereal Quest bar or No Cow bar and am good to go at least for a couple hours!!!!

9. Blogilates. Cassey Ho is the bomb.com. I’m telling you- if you want an insane ab workout, she is your girl. Even DJ is amazed at how hard her workouts are. I DARE you to try one. I think my favorites are

She also has targeted workouts for all other areas too! And they are pretty short, but guarantee you will feel the BURN.

10. Dis’ bag. I know I have tons of pictures of this little guy sprinkled around my blog already- but I can’t help but give it a little love! It’s from Target and it’s HUGE and I don’t know how I went my whole life without this bag. I see the light.

Friday Favorites

Woah, woah, woah hold the phone, Mack is actually doing something semi-normal on her blog? Yes, yes. I can hardly believe it myself. I am doing a Friday Favorites post! Woot woot! I had a few things I wanted to share in the last post, but I felt like doing a friday faves would help shorten the other post a bit! Not sure if I’ll end up doing them every week; I have a problem with commitment as you know by my inability to actually post recipes when I say I will *sigh*. But nevertheless, I’ll do my best.

  1. They’re Real Mascara. My sister and I don’t splurge on hardly anything makeup wise, but when it comes to this mascara we cannot find one better. We are obsessed.

2. Banana Pancakes. This is my most recent breakfast bae. It’s so easy too- 2 large bananas//1/2 cups of oats//splash of vanilla//splash of almond milk in a food processor to get a fluffy batter, cooked like a regular pancakes, some light syrup or blueberry compote on top, and you are golden as a goose. If you are feeding more people, just double the recipe! I also like to add a bit of plain Chobani or Fage on the side to add some protein. I tell ya what, I think I could live on this stuff.

4. Homesick candles. I have seen these advertised all over the doggone place and my sister-in-law actually gave me one for Christmas! It is such a thoughtful gift! And if I had to give an objective review, I’d say it really does smell like Ohio! <3

5. Speaking of candles, this Accent Warmer will blow your “get me wine” socks off! It smells fabulous and lasts forever! I burn through candles like nobody’s business, so the length of time an accent warmer lasts is actually a great investment! The soft cashmere amber smells so yummy, and it lights up the room beautifully!

6. Thrifty finds. I loooove thrift stores. It’s like a sport to me. Ever since middle school I have loved hunting down the best deals, finding hidden gems, and paying a fraction of the initial cost. I bet 85% of my closet is from thrift stores, TJ’s, and Marshall’s. Also, I’m about as fickle as they come, so I never have to have “Buyer’s guilt” if I buy something and don’t wear it as much as I think I will. These are a few of my faves I found last week (along with my purse that I found from the same thrift store a couple months ago). Everything was even brand new with the tags still on it. The shirts are from Banana Republic and Ann Taylor originally, the shoes from Forever 21, and the purse Kenneth Cole Reaction. If you aren’t a thrifter, I highly recommend giving it a try- it’s a blast!

7. This planner. –  I have a new found love of Sugar Paper planners. I never usually invest in a cute planner, but I had a giftcard to Target and stumbled across this little guy. LOVE it!

8. & this Wine Cork holder. My friend Morgan (THANKS MO!), sent me this for my birthday. People must think I like wine or something….. Anywho, I love this, and I am so excited to get the corks glued down to hang it up! ** No judging I have collected corks since I’ve turned 21 , so it’s not that many 😉 **

9. This stuffed vegan purple sweet potato. Ok- so I know it seems I always lie about actually sharing recipes, but I will be posting this one next week. It’s too good and wayyy too easy. I’ve had it for dinner almost every day this week 😋

10. Dexter. We love our Dex.  I think it’s one of those shows that picks up over time too, each season gets better and better.

11. Working for Postmates!!!!!!!! LOVE this company and also how easy it is to work around my schedule!

A lot of my friends and family are curious how it works, so I figured I would describe it here:

  1. I signed up, submitted my info, and then they sent me a Postmates credit card and bag
  2. I downloaded the app and activated the card
  3. While working, I show that I am “Online” and when a delivery needs to be picked up, I will be notified and I can choose to “skip” or “accept”
  4. If I accept, I am given the shopping list of the delivery (so it could be a list for items at Target, a grocery store, a food delivery for pick up, etc.), and I go to the store and pick up the items
  5. When I check out, I use the Postmates credit card (This is not a personal card at all linked to my account- it strictly is a Postmates company card)
  6. I then enter the final amount in the app and take a picture of the receipt
  7. I say “Deliver to ____ (person’s name)”, and deliver to the address given
  8. Once I complete the delivery, I am paid instantly and they can choose to tip.

HIGHLY recommend if you need a side job. BUT don’t do it in high heels. I learned my lesson as I was running through the mall to pick up an order from Panda Express and ended up with blisters all over my feet. Lolz.

** Anyway, deliveries usually take less than 20 minutes, and they have “Blitz pricing” where I will be notified when rates are up! You can work literally any hour of the day, but I choose to work during the day for safety reasons. DJ is hounding me to get my bear spray for the Mountain Lions and pepper spray for the crazies that I might deliver to one day… no worries babe, Amazon Prime has my Bear and Pepper spray on the way 😉

Deck the Halls & A Special Announcement!

Anywayyyyy, I think for the update we left off right before Thanksgiving! I didn’t get many pictures of actual Thanksgiving day, but it was a good one! Just great family time, conversation, and happy bellies. I was on salad and fruit duty! I love that the holidays are an extra special excuse to make extra festive foods 😉

This little guy had apple slices/farro/pomegranate/goat cheese/craisins/mixed greens. Pairs well with a nice balsamic or champagne vinaigrette.

Friday, I had a to-do list ten pages long. I conquered the errands for the day with a No Cow Bar in hand. These are my FAVORITE. I am a notorious Quest bar addict, but I like these even more. The lemon meringue flavor is by far the best, but I am a sucker for anything lemon. The dark raspberry truffle is really good too. The macros here are terrific, and they are vegan!

I didn’t do any Black Friday shopping. OK. That’s a lie. I did jump into TJ’s real quick, but they weren’t having any sales “technically” because that place is always like one big Black Friday sale, and I love it.

I feel like the winter is birthday season central!! I love picking out the perfect card — and in my search I think I found the best card of all time. It’s 3-D sushi. I should have stock piled them.

Saturday during the day DJ went to a friend’s basketball game and caught up with a good friend that he hasn’t seen for years. That night we finished up The Office series. I cried like a baby when *spoiler* Michael came back for Dwight’s wedding. *ALL THE FEELS*. We have moved on to my choice series, which is Dexter. Good so far! Parks & Rec is next on the list after this. Also I need to catch up on Gilmore Girls so I can jump into that chit-chat.

We had Thanksgiving leftovers most of the weekend and into the beginning of the week. I swear Thanksgiving food is always better round dos. Saturday for dinner we decided to take a break from the bird & sweet potato mash and picked up some Oren’s. You guys know how much we love our Oren’s!

Also, Main street Cupertino is looking GORGEOUS. One of my favorite things this time of year is the way the Christmas lights suddenly appear in shopping centers and line the roads! Funny story though…. when I was driving on Main Street this past week a cop went through a stop sign and almost hit me (no lights flashing). The IRONY. He did wave in apology, but what is up with my run-ins with the po-po lately?!

Sunday-FUNDAY! It was baptism Sunday at church. Everybody who participated was such a trooper considering it was in the 50s outside and the water was ice cold! There is something so powerful and exciting about watching others make a public declaration of their faith!

Sunday afternoon we went tree picking!!!!!! I was havin’ serious FOMO when I saw everyone setting up their trees all over Insta & Fbook. We were planning on going Saturday, but by the time DJ was back it was nearly dark out! It gets dark so gosh dang early nowadays. It makes me all sleepy and hungry for dinner at like 4 o’ clock. Anywho- it was so fun looking for our own little piece of nature to bring into our home.

Time to set it up! We named it Bow-Bow (Pronounced like “boe-boe”). Yes it’s silly & a bit strange to name your tree, but also more fun. No judging. We are hoping that Bow Bow stays alive longer than Spanky Tom did… RIP little guy.

Yes I know I am being I’m being such a type of girl in these next few pictures. Being basic isn’t a choice, I swear, I can’t help it.

Confession: I made nine trips to Target in two days for various reasons. NINE. The first five were for the Christmas tree lights/decor. We kept getting the wrong kinds of lights (one of my friends said “HOW, they are Christmas lights?!”) and we still cannot find a good star topper that will actually stay up there. I think Bow Bow is a bit flimsy. I still have one more trip to make back to return a few things, but I’ll wait till we have to do a grocery trip. 

I had so much fun pulling out our Christmas decor. The stuff collects dust all year, so when it’s even kind of remotely socially acceptable these decorations come out to play.

Monday DJ started a new job!! Wooohoo! He is working with the Church, but still getting his MBA next year. This is the perfect job in the meantime. He absolutely loves it so far!

On Tuesday morning I made this little guy because DJ wanted bacon and eggs. I couldn’t help myself and made a face. I couldn’t get the egg “eye” right on the left, but I just said it was because he was winking 😉 For some reason I think you would enjoy this, Cyranny. Hahah.

I squeezed in a run outside on Tuesday to take a break from Shaun T kicking my rump (Insanity).

The trees are finally changing!!! It’s nothing like gorgeous Ohio in the fall, but I had an added pep in my step seeing a few bright colors here and there <3

Yesterday I went to Peet’s (which I have been spelling wrong forever, along with pescetarian, which is really embarrassing) and caught up on e-mails and last minute organization for holiday shenanigans!

I have had to get creative this week to use up random leftovers. Last night for dinner I made sautéed scallops over farro root with roasted root carrots and sautéed almonds with orange zest and basil. It turned out pretty good!

Another meal I have been making this week is this omelette. I can’t get enough. I had a ton of left over stuffing from my stuffed acorn squash as well as goat cheese. I just threw in 1/2 cup egg beaters, 1/2 cup of the stuffing, a sprinkle of goat cheese and some sprigs of rosemary. All the stuffing is gone now, but I have got to make more soon so I can do this again. It was so tasty!

Wednesday night we had our Bible study group. Someone brought CRONUTS! (AKA: Croissant + Donut). I am not even kidding, one of the best pastries of my life. We were going crayyyy for our cronuts.

This morning I woke up at 6 to meet with a friend for coffee @ 7. I love getting up early and soaking up the mornings. We went to Philz coffee. They make every single cup over drip. It’s really great, but SUPER strong. I am so jittery after. We had such great conversation, and my heart just bursts with love for the amazing individuals we have met since moving here in July.

Quick side note: the reason I changed my name to “Mackenzie” from “Mack” for the profile is a lot of people thought I was a guy. LOLZ.

OK- now I am super excited to announce…….drum roll…… I am going to be hosting my first blogging Meet & Greet, BUT it is going to be called “Mingle & Jingle” in light of the holiday season!!!!

For those who don’t know what a Meet & Greet is, it is essentially a post where you can come in and talk about your blog a bit, leave your link to either a favorite post of yours, or your site in general and find other blogs you may enjoy too! Mack … or Mackenzie….. or a million other options…oh shoot, identity crisis!

Whirlwind of a Week

Well, ya’ll! I just want to take a moment and thank everyone for their sweet and kind words from our anniversary and wedding posts. (Also- I will finish the road trip eventually, promise!) RECAP time!

Thursday 8/4:

Thursday morning we came back from Monterey and spent the day unpacking, cleaning, and ordering DJ’s books for school. Thursday night I went hiking with one of the community groups I joined from church. It was a beautiful hike at Montavlo Arts Center in Saratoga. There is a gorgeous Renaissance style mansion that has a pavilion for concerts, plays, etc., but the surrounding mountain makes for excellent hiking. Out of all my hikes here so far, I have not gone out at dusk. From now on this is when I am going to do them. The cool, dusky air and the way the sunlight pierces the trees with the vibrant oranges and reds surrounding the mountains is enchanting. I did have one minor mishap though. This was my first time meeting any of the other hikers; I didn’t know anyone. Our conversation was smoothly flowing; I was meshing well, having a ball, and then WHAM. In typical Mackenzie-style (ew, third person), I fell (not gracefully whatsoever) and slid down part of the hiking hill. Score. It was easily the hardest fall I have ever had on a hike. (That says a lot considering falling is sort of my forte). Everyone was so sweet though and I was able to laugh it off. At least I made a memorable first impression 😉

Friday:

Now that the house is stocked with groceries, I am like a kid in the candy store. There are so many recipes I have been saving, ideas I have, and new foods I want to try. It felt SO GOOD to be cooking again. I also think it made our apartment officially feel like home. Every time I go to the store I try to feed off of what we already have in the pantry to try and make sure nothing goes to waste. I know that those canned goods are fine until like 2090, but still, it feels good to use something up that’s just been sitting there! Lately I have been craving mussels. I saw in our pantry we had sundried tomatoes, tomato sauce, and artichoke hearts. I thought a Mediterranean mussel dish sounded just amazing with some garlic bread on the side- mmm mm. DJ is always up to try an original of mine, but I can never be 100% confident how it will turn out. It was delectable!

Saturday:

DJ delved into his books most of the day and I volunteered in San Jose with another community group. It was one of those times that I was not obligated to go; part of me just wanted to stay at home and be lazy all day, but the other part of me nudged, nudged, nudged and said, “get up lazy butt”. I prayed about it and then realized it was sort of funny praying about if I should serve others- HELLOOO. Once I got there I was so glad that I did. I met a girl from the church and we instantly hit it off as friends. We were assigned to a water/pop station to hand out drinks, and for those four hours we talked, laughed, and served the most adorable kids in all the land. She is also in a very similar stage of life as I am. She recently left her job and does not know what she is doing next. I was able to share with her some of the things I have been learning, and she offered me encouragement as well. We made plans to go hiking and foodie-up Silicon Valley together. What perfect timing too considering that DJ is starting up school. GUYS! I HAVE A FRIEND :)! I have met a lot of great people through church, but this is the first person I have plans with outside of the church events. I left the service project feeling energized and excited. It reminded me of when I was in grade school and made a friend for the first time. Here I am at 22 years old, really going on 5. Nice to meet ya.

For dinner we had leftover mussels and these yummy shrimp rice rolls with a homemade thai peanut sauce. Seafood for dayyyyyz.

Sunday- Sunday we went back to the same church we have been going to. Starting off the day worshipping with other believers is the greatest thing. We then went to Living Spaces in Fremont to pick up our TV console for the bedroom and a headboard. I am itching to post photos, but I will hold off until it’s all done. I started to get hangry on the way home, so DJ told me to eat my “emergency Quest bar”. I always have either a Quest or No-Cow bar on hand because no one likes the wrath of a hungry stomach. After a nice run, I whipped up some delicious stiryfry. Stirfry is so easy, filling, and tasty. I made DJ’s with some chicken, and mine vegan with Boca crumbles. I decided to wrap them in some Nori Seaweed wraps. Sometimes cooking for two can be a challenge, especially with the improvisations, but I always like to find something creative to do with anything leftover. I used about three small chicken tenders for DJ’s stir-fry and then baked the rest to make simple shredded chicken for lunch sandwiches or a quick snack for a protein boost.

I gave DJ a haircut for his back-to-school look. Cue the awwwws. Not sure why he let’s me touch his hair, I have way too much fun with it and get a little razor happy. But it ended up looking pretty good. This is how our typical haircuts go initially:


Monday- This was our actual anniversary, but as you know we celebrated it last Wednesday. With DJ’s orientation starting Tuesday we spent most of the day making sure everything was set to go. We went to Target and stood next to all the cute little mamas doing back to school shopping for their little tikes. I offered DJ my syringe highlighters, but he refused, so we got him some “normal” ones. (Syringe highlighter definition: highlighters that look like syringes. As an almost-nurse I think they are pretty dang awesome). For dinner we did –drum roll please- BLUE APRON!

Have any of you done this? It’s pretty stinking fun. Basically they deliver you a box with tons of fresh ingredients, “knick knacks” that include any small dashes of things you may need, and an instructional sheet to make everything step by step with pictures. This is great for anyone that is beginning to cook as well because they are thoroughly descriptive in each step. Also- I think it would make an awesome date night idea. It has ideas for wine pairing with each meal too. In a few posts back I mentioned how we received all these coupons when we first arrived and one of them was for this food delivery service. I always have wanted to try it, but it seemed like a lot of money for just three meals. But with our first order, we received $40 off, how could I resist? The first recipe we tried was the Spicy Peperonata Pasta. I thought it seemed pretty romantic for an anniversary dinner ;). It was out of this world, and I’m not even a big pasta person (I know, sin). DJ said it tasted so “fancy”. I would go into an in-depth description of this, but I think you just have to try it for yourself! We have yet to try the curried catfish and quinoa bowls, so stay tuned! Sadly, we didn’t have our one-year cake topper, but my mom sent us a cheesecake factory giftcard to get some cheesecake in place of it. She knows us well, I do say! Anyone have a favorite there? I can never decide, Oreo is probably ours.

Tuesday- Orientation day!!! I had a list up to my ears with things to do, but first and foremost, we had to get the hubs off for the day. I made him a parfait with Greek yogurt and then we said our goodbyes.

It was so strange saying “bye” to him. Since we have been here we have done the majority of things together. Even when I would make trips to the store or what-not it wasn’t for extended periods. I am realizing that I am about to see my husband a whole lot less, and it’s hard! However, I am so thankful for the memories we shared this summer and know that the time we do have will be treasured. When he came home, I was an Anxious Anna to hear about the big first day! He said that it went well! I could tell he felt relieved just having that initial first day over with. I spent the day assembling our end tables for the guest room, running errands for things we forgot to pick up on our runs over the weekend, and making several returns. We did watch Bachelor in Paradise, ugh I really feel quite ashamed to admit it. Horrible show, terribly addictive. Don’t recommend it; we love it.

IMG_8194Wednesday- You know the book, Alexander and the Terrible, Horrible, No Good, Very Bad Day? That was my Wednesday. Nothing went right.

  1. I woke up with a tremendous headache. It went away after chugging some water and coffee, but it always had that dull ache throughout the day.
  2. I missed my annual doctor’s appointment. I thought it was next Wednesday, but when I double-checked my calendar, I had that “oh no!” moment. It was an easy reschedule, but I hate doing that to anyone. I know that doctors have a tight schedule, and I never want to be the person to just not show up. I apologized profusely, and they were understanding about it.
  3. The sewage line in our apartment’s car garage broke. I went through four years of nursing school and nothing smelled worse than that. Nothing.
  4. DJ said he would like to get a bookshelf for all his law books soon. I thought it would be fun to surprise him and have one ready for him when he came home. I went to Target and spent a good chunk of time surveying my options and then chose one I thought would be perfect. It was the last one too- don’t you love it when that happens?! I lugged that incredibly heavy piece of furniture through the parking garage, up the elevator and into my house myself *wipes dirt off the shoulder*. I was pretty dang proud that I could do that considering my lack of upper arm strength. I excitedly got to work. I almost put it on my Snapchat story, but then I thought, “Nah, bookshelves are the easiest things to assemble, that would be silly”. What happens then? I break it. In the middle of assembling it, I had the weight distributed probably incorrectly and the whole thing collapsed. We are talking wood splinters flying across the room. I wasn’t sure if I should laugh or cry.
  5. I stubbed my toe. That’s enough to make a day bad in and of itself- can I get an AMEN?
  6. I called the nursing licensing board to see where my application was in the process of being approved. Long story short, after calling thirteen times and being on hold for twenty minutes, the lady talked to me more condescendingly and with more ambiguity than anyone I have ever met. I know that’s an extreme statement, but I have never felt more belittled. At this point in the day I just broke down. There I was sitting in the Target parking lot with my pathetically broken bookshelf that mirrored my emotions so perfectly in the backseat and sobbing. I say this not for pity, but because reflecting back it is HILARIOUS. I called my friend, Rachel, as I was running errands and as I recounted the day she laughed harder at each event I rattled off. That’s when I knew that it was just one of those comically bad days. Also, I know that in the grand scheme of things, the day wasn’t really that horrible. It simply is one that could have been worse, could have been better, and I count my blessings.

On a bright note, I whipped up one of the most refreshing lunch dishes! I am dying to share this because it is something that everyone will love with no scary ingredients 😉 I had leftover quinoa from a dish I made last week and through in some mango, pistachio, lime juice, and threw it on a bed of kale. (Wait, kale might be scary?) I missed DJ during the day and was glad to hear that he still is feeling pretty confident about the year to come. For dinner I took the leftovers from lunch and tossed it in some chicken for the carnivore hubby. He said it reminded him of ceviche, which is quite the compliment considering that is one of his favorite apps to order. All the fruit here is absolutely amazing. It just bursts with flavor. I’m not sure if it’s just because it’s summer or if it is always like that out here? In the midwest, the fruit only tastes extremely fresh in the summer. I just bought a pineapple that I cannot wait to carve up! For myself, I wanted some comfort food. I made my “famous refried dip” as we call it with lots of veggies.

I ended the night with a Dreyer’s light mint chocolate chip ice cream cone. I have this theory that nothing tastes better after a good cry than mint chocolate chip ice cream. Next time you have a good tear drippin’, try it! (Not that I wish that on any of you?!).

Serious about Sushi

Hey ya’ll. Welcome to the weekly Cali recap. Not too much has gone on this week besides making more trips to multiple stores, trying to figure out the furniture situation in our home, and, naturally, sampling new food places. I am still waiting approval to take my nursing boards, and DJ starts orientation next week. This allows us a good chunk of time to get settled before the craziness ensues. Wednesday we hit up Santana Row for lunch because we had some errands to run in the area. This is an upscale shopping area with tons of restaurants and an energetic, cutting edge feel. They feature unique stops as well as several chains (the mandatory Starbucks, LB steak, and Maggiano’s).

IMG_7543Our personal favorite is the Village California Bistro. One time we stopped there for breakfast before we moved to the area during our time of scoping out where to live. DJ ordered the most incredible crab cake benedict. I don’t remember what I ordered because I was so fixated on sneaking bites of his food when he wasn’t looking. This time around we went for “late lunch bites” around three. We both hadn’t had lunch, but didn’t want to spoil our appetite for the big dinner we had planned 😉 We sampled the lobster ceviche and shrimp louie. This meal was nothing short of FRESH. I think it was the best avocado and iceburg lettuce I have ever tasted. The ceviche was the perfect refreshing treat on a hot day with the mango and umami essence of the lobster.

After finishing up our errands of the day and exercising, we geared up for an epic dinner experience: KULA Sushi.

Since we have moved here, every time we pass this sushi place it is packed. ANY time of day there are at least twenty people waiting outside the restaurant to get in. Considering there are a million sushi destinations around here, we were wondering what the commotion was about. We get it now! First you walk up and put your name in their outdoor system. They give you a number and also send you a text when you are close to being called. Our wait time was eighty-two minutes. In that waiting time I assembled a lamp that I ended up returning. #productive. By the time we came back the wait was up to two hours if that tells you anything… This sushi bar, is not just any sushi bar, it is a revolving one (Yes, mom, we will go when you visit 😉 ). It has a conveyor belt that passes your table and you literally just choose whatever you want off the belt. The dishes are protected with a bubbled cover to keep the whole system sanitary and what-not. You simply press up on the dish and it pops out of the bubble when you want to try it. They have endless options of high grade “fresh, natural, and organic” sushi (per their advertisements). They have all the rolls one could desire, as well as nigiri, grilled items, side dishes, tempura, noodles, hand rolls, gunkan maki, and dessert!

The best part is each dish is only $2.25, and generous servings for that price! If you do not see what you want passing through you press it on the screen, and it is sent through a zippy delivery system above straight to your seat. Welcome to the twenty-first century, ya’ll. Once you are done with a plate you put it in the “plate disposal” and it counts the number of plates disposed to keep track of your bill. Every five plates you dispose, a cartoon pops up on your screen and plays for you. It’s in Chinese, so I am pretty (totally) clueless what it says, but it’s entertaining nevertheless. If you manage to down 15 dishes, a little toy circles down into a slot next to the screen for you. Rumors have it that there are Hello-Kitty keychains in there, boys and girls. We were short by about three dishes (you can share a plate slot if you are paying together).

Here are a few of our most interesting samplings:

  • Salmon Roe: AKA Salmon Eggs. Conclusion: Not too much flavor, not offensive, probably will never order again.

  • Tamago: Type of japanese omelette with an egg base. Conclusion: DELICIOUS. DJ was not as fond as I was, but I thought it had the sweetest, lightest taste and texture.

  • Spider Roll: Your not-so-standard sushi roll with battered softshell crab tempura that claws out like a spider from the inside of the rice. Conclusion: We are addicted. Need.more.spider.roll.

  • KULA roll. Conclusion: An explosion of all good things sushi in my mouth

  • Negitoro (pink) and Masago (Capelin’s Egg). Tuna belly and fish eggs. Conclusion for Negitoro: One of the most scrumptious seaweed wrapped delectables I tried; may I have another? Conclusion for Masago: Fish eggs…

  • Eel Hand Roll: Description: eel, avocado, rice and a special sauce wrapped in a flaky seaweed wrap. Conclusion: I have seen the light!

For dessert we finished up with Japanese Donuts. I should have snapped a shot, but we were too eager to dig in. They serve about three of these little guys with vanilla ice cream and a carmel drizzle. DJ and I were thoroughly impressed.

Needless to say we loved Kula. So much that we made the decision to go back the next night. I justified this saying we had coupons! Well when we went to pay, I was all excited to get our 25% off, and the waitress pointed out the coupon is for another sushi place called “Kiku’s”. Guys, I was one of those obnoxious, brainless customers that looked like I was trying to scam the place. I felt so silly! Either way we got our sushi round-two and it was amazing. The second night we branched out and tried the Shrimp Tempura Udon. If you are unsure about the whole sushi, raw fish thing, this is a great option! (They also have beef options likes umami oil seared beef, wagu beef on rice, orange chicken, crispy chicken, and chicken gyoza dumplings).

DJ and I have a menu we brought home, and our goal is to try every single thing on it over the next four years. Not to brag, but definitely bragging, so far we have made quite the dent.

Wednesday night we finally got to watch our boo JoJo. We used to have viewing parties at our TOHO in Indiana. I miss those days as it was an excuse to bake all day and a respite from chaotic nursing school to spend time with our friends. We made sure to have the beef jerky and cashews for the guys and the wine with chocolate for us ladies. The cookies were a co-ed thing. Here is a pic from one of those bachelor extravaganzas:

Look, I know the show is pretty trashy in and of itself, but you cannot help love this girl! She is just darlin’ I tell ya. The men, ehhh. I don’t know. DJ likes Jordan the best. I have doubted his sincerity for a while, but find myself warming up to him more and more. My favorite was either Luke or Chase, who sadly left. Now I don’t really care. Jordan is gunna win though- it’s pretty obvious. Men Tell All was hilariously ridiculous. I’ll just leave it at that. The best part of the show is just laughing together at the silliness of it all. I can’t act too cynical though, I always find myself in tears at one point or another during the season.

Thursday we were out and about running more errands so I scrounged up a Panera gift card we had for lunch. It was yum,yum,yum. You just can’t go wrong there. I tried their watermelon and feta salad. A lot of people have this habit of salting their watermelon. I think I understand why now! The salty nature of the feta complimented the juicy, light watermelon wonderfully. We also stayed inside most of the day because there was a smog warning out. Never heard of that, but hey, I’ll listen to the pros and stay inside.

Friday was filled with assembling our new dresser (yee-haw no more living out of hampers full of clothes!). Then I couponed the crap out of target (which has this great deal now, where if you buy a certain amount of a good you get a $5 giftcard). I only buy in bulk the things that we will need like toilet paper, paper towel, some cleaning supplies. I racked up about $30 in giftcards total that day, so I was pretty stoked about that!

This morning (Saturday) Deej got up bright and early to go golfing with our Dad (his side). The apartment is coming together more and more. I cannot wait to share with ya’ll when it is done! But for now I am going to down this candy corn that I found at a Sprouts nearby. Who sells candy corn in July? They do apparently, and I am so bought in.
