Lotsa munchin’ & brunchin’!

Hey hey! How are you? I spent all day long reading countless pages in pathophysiology and watching lectures so I am treating myself to some writing late this evening 🙂 This semester is already kicking my butt. I am gonna have such little free time .. so it’ll be interesting doing an entire move in the middle of it. Even my prof said, “I hope this course is behind you before the move!”… whoops… guess we’ll see how it goes, haha. (It’s an online course for those that are confused about how that will work).

After returning from Hal’s bridal shower, on May 7th, I paid my speeding ticket, unpacked and did laundry. For dinner I made us this curried seafood mix of calamari, shrimp, and scallops with jasmine rice and naan bread.

af87d79b-8ac7-48fc-8761-a9d31e43ec92

On May 8th I started the morning with oatmeal, a Cutie clementine, Shakeology protein powder, and Fage with my coffee.

eb7b7322-01af-4f18-bd2d-ea35103bb32b

For lunch, we didn’t have much in the way of groceries but I whipped up my new favorite omelette combo: egg whites, artichoke hearts, vegan mozzarella cheese, and garlic powder with pink Himalayan sea salt & hummus on the side. YUM!

20eab674-c29e-462a-94aa-c6b4f59fb10e

And guess what?! Remember how Alexandra and I wanted to go to that Italian restaurant in SF, but they had no openings the evenings we were there? Well— our calendars aligned so we made reservations for that afternoon! Around 2:30 pm we met at my apartment, and I drove us into the city to (finally) try out Cotogna.

ce03134a-d6e4-44cb-8691-20b5a4424f208007091e-403d-42d5-a432-28cb9cc3ff96

I absolutely loved the interior- it was so warm & cozy and you could see the whole wood fire burning stove.

f4094f35-4f36-46ad-a85e-1cceee756236fbec89b1-aa29-4844-8970-d12e5e77095778764bf4-d47a-44be-8085-d64ace6e4d1e

So the item on my bucket list was the Raviolo with farm egg & brown butter.

a6ce5c11-7ddc-4aa3-ae62-7805751f3f2eb460c6ec-a1ee-4bfd-abf2-a7d4e2545d22

^^ Yes, that beauty!!! This ravioli was massive & sooo stinkin’ amazing. Did you all ever make buttered Cheerios as a kid? They were the ultimate treat for us growing up! This dish was reminiscent of that in flavor… but the cheese and quality of pasta took that nostalgic flavor to spectacular and exquisite heights. I had to leave a nibble for DJ, so I took a little home for him to try along with a dish of his own- the Agnolotti del plin. He said he preferred the Raviolo, but that both dishes were incredible.

Afterwards, we had to satisfy our sweet tooth. We headed to Mitchell’s, a place on the bucket list. They are known as one of the best places for ice cream in the entire Bay Area!

1d25f79b-0d3b-4819-8f36-c16046550daf

I ordered a combo of chocolate caramel crackle per Alexandra’s suggestion & Ube.

601ff751-e4b2-4ce0-959d-4863115192bd

The Chocolate caramel crackle is some of the best darn ice cream flavors I have ever had!!! Gosh. I get why it’s known for being famous- & I was soo glad Alexandra suggested it. The Ube was fine- I haven’t been a huge fan of Ube the couple of times I have tried it– it’s just too plain Jane for me.

I always so love my time with Alexandra. Can’t wait for her and her hubby to join us in Austin- right, girlfran?! 😉

On the morning of May 9th, I rummaged through the freezer to find a frozen banana, a dragonfruit pack and then threw on some PB and chocolate chips.

a1a14ded-68aa-451d-aba4-da926e0f8f6a

I caught up on e-mails, etc. that I missed over the weekend and got around to some other to-do list items.

For dinner I made us BBQ’d tempeh, peppers, corn, & white rice. It was pretty delish & high in proteins, so very filling!

9ed8e8c7-2bf1-40bc-bbff-38cb66b9f200

In the evening I took a bath to just veg out after such a busy few days.

b706f26d-2161-495f-8f30-79a05298e8b9

on May 10th DJ and I had a fun day leading into a full weekend of us just hanging out! I went for a run in the morning, caught up on some blogging, and then we headed to Shake Shack.

eb155e61-d5ed-4378-a8d2-aa0085cd474e

Neither of us had been before, but we were so pleased with the whole experience!

095d4d27-cb6e-4618-8674-fb819fb3108b

You order via an electronic system- introverts rejoice.

fffdc6f4-b16b-43bc-906c-56b66d480b2c

It took a loooooong time for our food to be ready, but they were super busy.

3fe53389-3f90-4def-baeb-3bb02794a4ef

DJ tried their burger- his thoughts: It is a good, solid burger, but he still way prefers In-n-Out’s.

facetune_13-05-2019-16-49-38

I could not resist their limited time Game of Thrones milkshake! It was a peppermint shake with candied toffee that made up “dragon glass”- soooo yummy.

0cda5834-ee32-41ae-9e52-a4ddf69ed286

DJ also loved their chocolate shake. Next time we want to try their mixers- we loved our Culver’s concrete mixers when we lived in IN. The fries were decent- good to dip in the shakes of course- but the best fries are forever from Steak & Shake. In the evening I did some grocery shopping and we finished up Ozark (the second season kinda dragged in my opinion-but still excited for the third).

May 11th, I whipped up some black bean brownies to have for the week. I just finished the last of them today. I actually have been having them with my oatmeal, smoothies, or toast for breakfast to get my little chocolate fix!

17498ac9-f72a-41b0-a339-22eeee1de0c5

After a morning run, DJ and I headed into the city to try out Nopa in the early afternoon. We lucked out with parking right on the corner!

141a5803-6612-4257-af3a-197cdac7b261e10bff9c-bdfb-446f-a518-2cfe89ccb599

This place’s menu changes each month- but they always have one famous item on their menu- the Custard French Toast.

6dcdd961-b9d9-4b0a-a407-db5d8e0133ef

We ordered that and the brioche cinnamon roll with strawberries, kumquats, and guava cream cheese frosting and a pomegranate mimosa to pair with them.

After ordering, we sat back to enjoy the ambiance of the place- it had almost an industrial feel with a wide open space and two floors, but somehow maintained a warm energy about it.

12b187fd-a3d1-49e3-9ef1-450f3b0212f8

First up- the cinnamon roll! The flavor burst in each bite of this was real. The guava cream cheese frosting is something I could eat by the spoonfuls- it was outstanding.

111b29f2-58f7-4aec-96ed-ce1b9d86c46c

Now, time for custard french toast! Y’all this lived up to every bit of the hype. I could not get over how delicious this was.

335bbfff-7034-4e98-81c0-a718ef30cc5e

I tried to get some syrup pouring pics, but the distance of the food on my portrait mode messed with my spatial perception, and I ended up pouring it on the table instead. We had a good laugh at it after my initial embarrassment.

0249aada-f2a9-409a-b6e6-2453351f71b5

In the evening, we were craving Mexican, but nowhere around us serves crunchy tacos (the kind DJ prefers)- so I whipped us up a whole spread! I haven’t done this since my mom and Pete were here back in August, although you know I make the tacos alone all time.

3919fb26-a05d-4565-a2c6-fa70db373d89

I put out salsa con queso and regular salsa with hint of lime tortilla chips and plantain chips, DJ’s regular tacos, and my vegan tacos (in the bowl) with lettuce wraps (I LOVE the refreshing crunch of a lettuce wraps for tacos topped with tons of Tabasco and Fage as “sour cream”). I also made my mom’s marg. recipe. Such a winning meal.

d6808f90-8488-4e77-921d-41f0de2b2419

On the morning of May 12th, we brunched round 2 at Stein’s! This was my last free weekend before being buried in school work, so we took full advantage, can ya tell?

c1d803b4-6618-4a33-9175-6b003bea126a

I ordered their vegan hash with mushrooms, tofu, tons of seasoning, and potatoes. It definitely needed salt- but with salt & enough hot sauce it was pretty good. Don’t think I’d order it again because I could probably make this at home, but it was worth the try. The little baguette pieces were yummy- but they could have maybe given a couple more.

d373ee9a-ffa9-42bd-97c9-57f50c66da55

Now, this was the star of brunch! This stack of pancakes consisted of blueberry pancakes with mascarpone cheese & some delicious syrup.

5bf6f585-36e9-41e2-babc-f624ed5b3426

Aaaand I got that syrup pour picture to redeem myself from the prior day’s fiasco 😉

4b4ecc57-3376-428c-80c4-6aee63c6cceb

Personally, these are my favorite pancakes I have ever tried in the area. The mascarpone cheese cuts the sweetness perfectly. They were the perfect balance of fluffy without being too dense and heavy.

953c3313-479e-4f57-8519-23822864ee33

After doing some chores in the afternoon, we decided to take a late afternoon hike at one of our BL hike places- Sanborn County Park.

154b3142-7002-4044-bba2-19a0505689ff16029ce0-1ea3-452e-aa95-c64d0bc8909c

^ Take note. hahah.

3da5a608-49b7-413b-9972-d14c06115a47

This is such a little gem of a spot. There were so many families enjoying the sunny afternoon and campers galore.

377868fa-5915-466c-8b2b-e41102f8f376

The forest was so quiet and serene.

6225e4bd-cdf1-46c5-9f8b-2d3eb6e446b974600aa9-8dc8-4fa5-a343-62d86c45a62b59076325-e7ac-4987-8eed-30e5f809c62779b2b502-34bc-4d47-b96b-c2a99b27fa19

Going into my most intense semester yet, this was the perfect type of balanced weekend to explore, rest, eat fantastic foods and spend some great quality time with DJ.

Question for you:

  • Where do you go to get your favorite burger/fries?

Recent Eats & Recent Things

Hey guys! I am in a fuuunk tonight and won’t be sleeping for like the sixth day in a row. We have new upstairs neighbors and they are making their presence known. They like to assemble furniture very late at night and don’t shy away from hammering and dropping and banging and anything else at 11 pm. OH, and they have a dog that incessantly barks all day long. I’m genuinely sick to my stomach about this situation. We stinking love our apartment, and this is gonna be a serious issue if it continues. A girl needs to sleep! I hope it calms down soon. I did talk to them once and they were aggressive (well the guy was nice, girl not so much) and denied that they were the ones causing the noise (although she greeted me at the door with a screw driver, lol!!!)….. come onn… I was super nice to them and told them I understand moving in is a loud process, but it’d be appreciated if it didn’t take place at 11 pm 🙁 Has anyone else had issues like this? I totally did NOT plan to go into a full on vent sesh.. but there ya have it.

I am gonna do a quick little catch up post of the in-betweens since our anniversary in the city 🙂

On August 10th, we drove back from SF, and I took a nice little walk around the neighborhood. I just love how the blooms change so frequently here- this massive purple tree really caught my eye.

img_2793

ohhh.. there they go….. *bang bang bang* like seriously how can someone make so much noise?! humph. I’m investing in noises cancelling headphones.

Back to the post… I am fuming right now.. can you tell?

On August 11th, we met with Alexandra, one of my dear friends from the residency program, and her husband Daniel, (from Denmark) for dinner at Eureka. It was such a blast and we really enjoyed hanging with them. Can’t wait for another chance to all get together. (Also, HIGHLY recommend Eureka’s sweet potato fries- yum!).

img_2792

STOMP, STOMP, STOMP. It’s like they are trying to be this loud. My gosh.

Anyyways, August 12th was church and then grabbing some “fill in” groceries from TJ’s for the day. I was honestly a bit tired from eating out which I didn’t know was even possible. I couldn’t wait to just eat at home and cook again! In order to save, I tried to plan our meals for the week around what we mostly had. The TJ’s trip basically was to stock up on just random little ingredients to make the full meals.

August 13th I whipped up some salmon with wild rice and roasted veggies for dinner. A favorite!

img_2789

August 14th was pretty uneventful, just house chores, knocking things off the to-do list and a beautiful run in the afternoon. These flowers were spectacular.

img_2788

DJ and I watched BIP in the evening. I stole his Oreos teheh. These mixed with Fairlife chocolate milk is an unreal combo.

img_2787

On August 15th, I read a bit and then sifted through grad school e-mails. I kept holding my breath every time I logged in- I was so irrationally nervous I wouldn’t be able to start for some unforeseeable reason or i’d be notified my acceptance was a mistake. #imposterssyndrome. It’s like I couldn’t believe I was actually in this program until the first day! And what is paranoia best solved by? Quesadillas with tomato soup, of course! I make mine vegan cheese and DJ’s with regular cheese.

img_2786

August 16th I had a weird medley of foods… I started the day with my go-to avocado and egg toast

img_2771

After snacking throughout the morning, I decided I wanted carbs… but I wanted veggies too. Solution? I put kale and hummus on a sandwich and it hit the spot. DJ thought it was disgusting hahah.

img_2785

Another snack kick I was on this particular week was Fage, peaches, and shakeology powder.

img_2784

August 17th, I made an acai bowl with oats, vegan chocolate chips, and peaches! I was just loving these TJ peaches.

img_2783

In the evening, I had a Dr. Praeger’s burger that had been sitting in my fridge for a while (SO GOOD), some wilted spinach, cauli rice, roasted sweet potato, and an egg. I felt like this was a very Kori-esque meal, and it was SO delicious!!

img_2782img_2781

STOMP, STOMP, STOMP.. it is 11:45. GO TO SLEEP! My gooodnesssss.

August 18th, I was so exhausted. It was one of those days where I was just so darn tired and hormonal and UGH. My girls get it! Nothing a cute cat can’t fix. I went to my friend Sara’s and we watched our show while I snuggled with this little fur baby.

img_2780

I had some leftover sweet potato and a veggie burger earlier on in the evening, but when around 9:30 pm rolled around I had a massive pizza craving (Like BAD). I ordered DJ and I some pies from Round Table. I had the baby pineapple with mushroom pizza and ordered DJ the large sausage. We rarely ever order pizza- I think we have maybe once in the past year, but gosh this hit the spot!

img_3479

In the morning of August 19th, I woke up with a sore throat. I decided to stay home from Church and watch the sermon online. DJ had to go to work this morning. The rest of the day I took it pretty easy just trying to recoup.

img_2349img_2779

August 20th, I felt a bit better when I woke up. I started the day with the standard avo & egg toast, and then went on a nice long walk to shake off the cobwebs.

img_2777img_2776

In the evening we watched Bachelor in Paradise, of course!

August 21-24th was just a whole lot of running errands, doing things on the to-do list like getting the oil changed, attending online orientation for school at 5 am (since I’m on pacific time lol), deep cleaning in the house, and some blogging in between while DJ worked a homestand.

August 25th I met up with my friend Alexandra for some scrumptious coffee from Voyager Craft Coffee. They have some of the best coffee- but it’s pricy, so I only go when meeting up with friends. It was a treat catching up with her and enjoying this coffee!

img_2760

In the afternoon I was craving something warm and comforting- I made up an oatmeal bowl with acai, cashews, and chocolate chips. Have y’all ever tried acai warmed in your oats?! It’s tasty!!

Ohhhh.. there goes the dog yapping. It is the yappiest little thing. hum bug.

img_2769

As we are trying to limit the groceries we buy and just use food from home (minus the pizza indulgence), I made DJ up these Special K Flatbreads we had in the freezer for breakfast. He loved them!

img_2770

We ran out of avocado, but determined to only use what we had in the fridge, I put some hummus on toast and egg over and called it breakfast. (Oh something I don’t picture but have nearly every day with breakfast is half or whole protein bar.. it keeps me full through the morning).

img_2765

August 26th I wrapped up all loose ends, got my ducks in a row with my books, finished laundry and read for pleasure for a bit because I was going to school the next day!! (and in undergrad the last thing I wanted to do was read for pleasure!).

August 27th was my first day of grad school! I started the day with a clear head by going to hot yoga around 7 am.

img_2758

I grabbed this new yoga mat at TJ Maxx for $7.99!! Way cheaper than anything I could even find on Amazon Prime.

img_2759

I made a turmeric latte at home to start the day and got started on the next 3.5 years of my life!

img_2768

I dedicated the rest of the day to school work. I am loving it, y’all! It’s a lot of work, a massive amount of reading, and a ton of discussion- but I have been anticipating this, and it feels great to be back in an academic setting.

My days basically are all the same now, which I love. I have missed routine! I haven’t had routine since 2016. I’ve been waking up around 8, have a massive breakfast, do some sort of workout whether it’s a run, insanity, or hot yoga, then work all day on school work, and then go on a walk to clear my head before cooking dinner. I then use the evenings to spend time with DJ, read, watch my guilty pleasure TV, and unwind with maybe a littttle bit more school work mixed in (Well… unwind best I can since the neighbors took over the apt. building, lol!).

img_2421

On repeat last week we had butterfly trout with roasted zucchini, forbidden rice, and greens.

img_2757-1

I changed it up a couple times with a veggie burger instead.

img_2756

The next couple posts I will recap our Labor Day! I am sooo psyched to share those.

Oh, one more thing! The month of September DJ, and I call “Saving September” every year. We go all out to try to save after a summer full of traveling and eating out. Basically we just keep to necessities- no eating out, no extra expenses (like those darn ICEs I am obsessed with), no shopping, etc. etc.  I always think it’s fun because it’s like a challenge to try to find new ways to make meals with what we have, get in better habits of not buying gum every time I’m at a checkout counter, forces us to just drink so much water that isn’t laden with chemicals, and get creative with clothes too! We put it off basically until this week because my parents were in town, but now we are all in 🙂 I’m eager to share how it goes!!

Also exciting- DJ is DONE with games until next season! That means his schedule goes back to a more 9-5 now. He’s super excited about that as am I.

Any meals/food items/etc. you have been loving lately?

Friday Favorites #9!

Happy Friday, everyone! I know, it’s hard to believe… but I will have officially published three posts in one week- I turned my project in and now have a couple days before I have to start getting serious about prepping for the BIG presentation. To top off the streak here I am doing a Friday Faveeessss! I love them and I love reading yours. If you have one this week please leave it in the comments.

  1. This spoon from one of my best friends from college. It is perfection! I found a perfect match on Amazon. Jump on it if you know any nurses who love to cook!

img_7880

2. COD. For some reason, hubby and I have been LOVING seasoned cod lately for dinner with okra and brown rice. I usually grab salmon or tilapia, but hot dang this cod is terrific. Who knew! Also, one of my patients owns a bakery and gave us this amazing cheesy pesto bread (and a TON of other bread too) to go along with it!

img_7854

3. My guitar <3 I finalllllyyyyy had my guitar repaired. It’s been about three years since I’ve really played. I used to play in high school a ton, and I have about eight original songs (I didn’t say they were quality original songs- but they are original, lol!). I started missing it terribly when nursing school was over and FINALLY had it fixed up/repaired by the nearby Starving Musician. Stay tuned.. (literally).. maybe one day I’ll share a song if I gather up the courage. Buuuuut probably not. haha

img_7867img_7865

4. This travel map!!! It’s no secret we LOVE traveling. For Christmas, DJ found this map for us. If you look closely, there are little blue pins that we place on every city we have visited together. It is very clear that we are from the midwest and now live in California, haha. I want to book a trip every time I pass it in our hallway!

img_7851

5. TRADER JOE’S!!!! Ok. It’s alsooo no secret that Trader Joe’s is amazing. But I’ve only been a couple times in my life, and never since we’ve lived here. WHY NOT!?!?? I KNOW, I ask myself that everyday now. Why have I not been?! It’s like adult Disneyland. It is the freaking greatest place on Earth. I’m obsessed. I could EASILY name 10 items to make Friday Favorites from Trader Joe’s alone. I’m sure it will be a frequent visitor on this segment, so watch for new fun products!

img_7878

For instance, this King Salmon Jerky… a bit salty (but that never deters me), and so stinking good. It’s a pescetarian dream. Especially because in my past meat-eating life I loooooved me some beef jerky.

img_7877

& This Arugula Pizza was too delish. My willpower was at a big fat zero with this in front of my face. Let’s just say, this did not last long at ALL between the two of us!

img_7852

6. Avocado Toast Tank from Deej for my bday. Anything more perfect for a Cali girl?

img_7870

7. Shakeology oats. I am embarrassed to mention Shakeology honestly–… I’m always a bit of a skeptic of health formulary protein stuff (except my No Cow/Quest bars)…. I’d just rather eat my protein than drink it I guess. Anywho, lately I have LOVED making a big ole bowl of oats for breakfast with vegan Shakeology powder on top and stevia (maybe even a little whip cream). It’s like dessert!

img_7876img_7879

8. Impress Nails by Kiss!!! I adore these stick/glue on nails. As a nurse, I can’t really wear nail polish (it comes right off and chips with the hand sanitizer). This is such a great alternative and quicker than painting and waiting for my nails to dry. If I only have a day or two where I need nice nails, I loveeeee these!

img_7868

I wore some purple ones in San Diego.

img_7360

9. Lulus!!! Lulus is a new online shop I am OBSESSED with!!! Their style is totally my cup of tea. They have free shipping over $50 and free return shipping within 30 days. Their customer service is amazing, and selection is tremendous. Some of you asked where the dress was from in my first San Diego post, here is the link!

img_7871img_7575

10. SUPER BOWL time! I will be working during the Super Bowl, probably my favorite sporting event of the year (except when Cavs are in the finals)…..BUT we love these recipes below if you need some healthy ideas for your party…..and I’ll be making them regardless if I have to celebrate a day late 😉 !!

Buffalo Cauliflower “Wings”

Vegan Tacos

Loaded Vegan Nachos
