Buns, Dumplin’s & Blooms

Hey hey!! How’s it shakin’? I am a touch behind on these updates (what is new?)… but I have a pretty chill weekend where I hope to sit on our balcony with lots of coffee and catch up! Currently I am eating a yogurt with matcha powder, granola, & chocolate chips — mmmm. I can’t wait to share this in a few posts.

This post includes highlights (mostly foodie highlights) from in between studying, work, house chores and watching Ozark in the evening, of course! We only have a couple episodes left in the second season- then I think we are going to start the OA!

Okay, jumping right in- I am trying to use up as many of our “dried goods” items so that we don’t have to take them with us on our move. So, on March 28th, I made fresh spring rolls with rice paper, tofu, sautéed veggies, and fresh cabbage mix.

I made some homemade peanut sauce with PB2, a touch of soy, and topped with a sprinkle of ginger.

On March 29th, right before dinner I went on a walk enjoying all Spring has to offer.

In the evening I made pasta for DJ with different cheeses and pizza sauce we had leftover, topped with parm. Pizza sauce is not quite as good as different marinaras we usually use, but still worked!

I was craving my rice/fish/roasted veggie combo. This kick is definitely still going strong. Since we are out of Arizona’s Heat sauce I’ve just been using brown mustard- still a great fixin’ for the dish.

DJ has been making himself overnight oats for breakfast most days, but whenever he runs out make him a standard breakfast of eggs/bacon/toast.

Below are some pics from my morning walk on March 30th. Usually I use walks as a study break to clear my head, but on Saturdays I like to start my day with them.

I was notified on Instagram that I won a giveaway for vouchers to Hotel Valencia’s restaurant on Santana Row. I have never been into the actual hotel although I’ve passed it countless times.

When I went to pick up the vouchers I was blown away by the beauty of the hotel’s interior/restaurant! It overlooks San Jose, and the way it is decorated is just stunning. I am saving these vouchers for when my sister visits, so I’ll be sure to snap pictures then.

In the evening I was in the mood to cook & try something new. I looked at what we had and decided on Caprese chicken. This was chicken stuffed with buffalo mozzarella & marinated sundried tomatoes from TJ’s.

I then topped with breadcrumbs and put in the oven. Easy Peasy!

I decided to roast up some multicolored potatoes and garlic green beans to accompany the dish.

Sunday March 31st, we woke up early pearly for Church. It was a radiant morning.

After church I worked on school assignments all day then met up with Amy in the City for dinner at Dumpling Time. I love going to the City on Sundays- the traffic is so light & parking is FREE!

I loved the feel of the restaurant. When going back through my photos I couldn’t help but giggle that this girl was doing the same thing as the people on the screen without even knowing it.

The whole restaurant had a modern twist on traditional asian cuisine. We decided diet coke sounded so good for some reason. I rarely ever have on anymore, but gosh- it was a refreshing treat and served with the most adorable paper straw.

I was peering envyingly at the other side of the restaurant where natural lighting was pouring in. I’m not even kidding- we were sitting in the darkest corner possible.

So what did I do? Did I let social faux pas and normal etiquette stop me from literally walking to the front of the restaurant to get a picture of each dish? Heck to the no! Bring on the questioning stares, the raised eyebrows, and the confused waitress who tried to stop me from taking the dishes out the door (I promised her I was only going to the front to snap a photo of the gems, not to kidnap them- she then smiled and acquiesced- clearly, I’m not the first “food blogger” to have stepped in here). PS. Amy was an absolute trooper, and cheered me on through my whole shameless display.

So, on with the pics, ya?! First up we have their giant soup dumpling called King-Dum. This dumpling is so large it is served with a straw. Truly, exstrawordinary.

Although I didn’t eat the pork inside, I tried the soup part (so good) and the actual dumpling. It was a treat! If you like pork soup dumplings, I definitely recommend this.

Next up were the Tom Yum Goong dumplings with pork belly, shrimp, and coconut milk, wrapped in a beet skin. Once again, I avoided the pork inside, but the actual dumpling itself was one of my favorites I have ever had! The beet skin was perfectly chewy and incredibly flavorful. The coconut milk was subtle, but added a smoothness to each bite. I would say I liked this even more than the King-Dum.

Now on to the things I ate in full 😉 The shrimp toast!!! This is one of their famous dishes- people rave about it. There ain’t no way I was about to pass it up. It is made of chinese donut, minced shrimp, and spicy aioli. My first bite I didn’t know what to expect, but felt slightly…. underwhelmed. Then I dipped it in their chili & soy sauce- and HELLO, FLAVOR FIREWORKS. It accompanied the rest of the dishes beautifully. It added a nice crunch among otherwise softer foods.

Now, for one of the stars of the show: The main lobster siu mai with chives, butter, and white truffle oil. You know if there is truffle it is a MUST try for me. It lived up to all my wildest dreams of what it may taste like. So. much. yumminess.

Featured below are the vegetarian dumplings with local greens, carrot, mushroom, cilantro, and egg. I didn’t expect much, but man, these were superb. I was blown away by the mix of freshness/flavor/texture. This is the type of dish I could easily eat every single day. Nutritious & delicious!

I’m struggling to find the words to best describe how scrumptious these little guys below were. The Trio of Buns (green tea and milk, beet and taro, and egg yolk bun) stole my heart. This is the type of dish I would drive the over-an-hour into SF for alone. They were fluffy, warm, creamy- utter perfection. I would put this on my list of “must try” desserts in SF. Our favorite flavor was the egg yolk bun followed in second by the green tea and milk bun.

Not pictured because I lost my shameless steam- the seafood gyoza with spinach skin, crab, scallops and spice chili butter. I regret not getting a picture of these gems because WOAH—-They were a show stopper. Truly, I would have a hard time deciding between those & the main lobster siu mai.

Overall, Amy and I both preferred Dumpling Time over City View. It was easier to get in (aka no need to chase anyone down and sternly demand your name be put on the list), the food was more flavorful, and the presentation was visually a treat! Plus the service was wonderful. Our waitress was very kind- not something you always encounter in restaurants around here because patrons are often treated like an assembly line with the mass amount of people. But if you want the real deal experience with the carts and all- I still recommend City View at least once.

April 1st nothing exciting happened besides us eating dim sum leftovers all day & studying. On April 2nd I went on a beautiful walk while the sky held back the rain.

In the evening I made a dinner of almond mozzarella cheese, boca crumbles, dolmas, hummus, and a cabbage mix.

For DJ, I made stuffed jalapeños with Mexican blend cheese, ground beef crumbles, taco seasoning, and salsa con queso. He really enjoyed them, but somehow a super hot chili pepper snuck its way into the bunch which added a not-so-pleasant surprise mid-meal! We suddenly had flash backs of Pepper Gate 2017!

April 3rd I parked it at Nosh out of convenience with a yogurt with berries, honey pecan granola, and stevia. I worked on school assignments and spent a couple hours planning my sister’s bridal shower and bachelorette party. Her bachelorette party is in Miami, so if you have any suggestions for games or places to go please share! (Although, I did take notes from Taylor’s recent posts!).

Recent Eats Roundup!

Hello one & all! I can’t even start this post without first discussing a very important matter: Did you watch the Bachelor earlier this week?!? Hooooly smokes, that episode… I dare say it was the most dramatic episode I have ever seen (WTA was nuts too). Would love to hear your thoughts. Our jaws were on the floor in disbelief… and I actually kinda knew spoilers (they were so hard to avoid this season), but watching it play out was just … wowza.

So since our little Staycation in SF, it’s been pretty hum-drum with work, school work, and general life maintenance. This post basically highlights some our favorite things we’ve munched on the past couple weeks with little random tidbits sprinkled throughout.

I mentioned how I wasn’t feeling 100% going into our best SF weekend, but just ignored the bug creeping in. Wellll, although I survived our time in The City, when I woke up on February 17th, I felt like a train had hit me. I think I overdid it a bit, but still wouldn’t have changed anything! I was basically bed-bound for the day and watched church online. Also if you are interested in our church’s sermons you can find them here. For breakfast I was craving something warm & comforting- so I enjoyed a purple sweet potato with Fage, avocado, boca crumbles, vegan cheese, hummus, and tzatziki.

On February 18th, aka Bachelor Monday, I woke up feeling much better. Not 100%, but definitely more like a human being. I started my day with oatmeal, blueberries, fage, protein powder, and a sprinkle of stevia.

February 19th, we woke up to no water in our apartment. A HUGE main water line broke on the second floor of the building environmentally evicting everyone on that floor & shutting down businesses nearby 🙁 We ended up having no water for about three days. I have told people it was like experiencing our very own Fyre Festival. I had to make a couple trips to the local Target to stock up on gallons of water. Let me say, I have never been so thankful & relieved to take a full shower when the water came back on. I will never take a shower for granted again. On that morning I was craving a cafe au lait, so I went to the Starbucks located inside the Tarjay where I stocked up on some water.

This is a new one to add to the list, Cyra! “Nancy”… “Mackenzie”….. Same diff.

When I got home I dumped my cup into an actual coffee mug to rewarm it- gotta have it pipin’ hot.  Also, I am back on my avocado smoothie kick . I paired this with some oats topped with granola. I love mixing these textures & flavors.

One of my favorite snacks during the day was a brioche grilled cheese with TJ’s vegan cheese & tomato soup. Mmm. Since I still wasn’t totally up to par, this was a great little combo.

In the evening I went to School of Leadership with my dinner packed in hand. I had to leave the house at 6 to get there by 7 because of traffic (even though it’s only 15 mins without). We are there till 9:30 ish so I had to make sure to pack my food.. otherwise my hangry Hyde would come out of hiding. No bueno.

On February 20th I woke up with the same avocado smoothie. Midday for a study break I concocted a snack of purple sweet potato, an over medium egg, hummus, more avocado with pink Himalayan sea salt and crushed red pepper.

In order to clear my head in the afternoon I got a quick run in on the tread & lifted some weights. I’ve been doing short little 10 min lifting workouts every few days and am loving how much stronger I feel in general. It’s not much- only up to about 5- 12.5 lb. dumbbells, but it’s an improvement!

After, I threw together my trough salad with alll the whole garden, vegan crumbles, cheese, and tons of hummus.

February 21st I baked us tilapia with brown rice and roasted zucchini with Koop’s Arizona heat all over it. That sauce is tooooo tasty. I know it’s a bit much to just slather the whole dish with it, but it’s that good & goes with everything.

February 22nd was more Avo smoothie for breakfast and this time I topped it with some granola.

So, here’s a picture of the second floor after the flood. They had to rip out the entire carpet and flooring. I feel awful for the people that live there.. our main elevators are broken because of it now too. Ugh, what a mess.

Anywhoooo, that evening DJ and I decided on a little easy date night. There is a new spot that opened on Main Street in Cupertino that looked like a fun vibe. We decided to give it a go.

We arrived around 6:30 pm, and basically had the whole place to ourselves. I loved the interior- I’d describe it as a chic sports bar.

We weren’t planning on having a full dinner, just a drink & an appetizer. We shared a platter of their house potato chips & dip. Okay, I’m not a big potato chip person, but these were ridiculously yummy. That dip *insert drooling emoji*…. mmmmm!

& It paired well with their beautiful paper crane martini. This was a tiny too sweet for my liking, but still good- I think most people would enjoy it. I just really don’t prefer mixed drinks- Every time I try to venture out I just end up wishing I’d ordered a simple glass of wine instead– they just taste “sticky” to me, lol. but hey, it was pretty!

When we came home I made our dinner-dinner. For Deej: a Bubba Burger with french onion straws, gruyere cheese, and ketchup/mustard.

For me: fish, roasted beets, roasted eggplant, and brown rice. I was on a kick of fish that week. Also, I’ve been using the original Mrs. Dash which has been a total game changer in seasoning. Although I still have to mix in my pink himalayan sea salt 😉

February 23rd was a long study day. Then in the evening I made us another meal of tilapia, roasted zucchini, and brown rice.

DJ enjoyed an after-Church snack of a caprese salad with pita chips, hummus, and salsa con queso. The pita chips from TJ’s are perfectly salty, crunchy & versatile- they go with basically any dip.

That evening I made DJ another burger & whaddya know I had fish with brown rice and tons of veggies (Don’t worry- I won’t post such a redundant shot).

I mixed some cauli mashed potatoes with cottage cheese warmed up with black bean burger and hummus. Sounds a bit strange, but it was reallly savory and delicious.

You know at some point tacos had to be in the mix! Caprese salads actually pair pretty well because they are so light & refreshing mixed with the spicy tacos.

I had a stuffed sweet potato with about four egg whites with veggies, hummus, and cottage cheese (most of it is under the egg), and tabasco in lieu of tacos since I was out of boca meat. It was a surprisingly great combo.

In the evening we had our last school of leadership. I have officially completed the first session! There are three total. I’m not sure I’ll be able to do all three right now, but after a little break I may do #2 in a month…. we’ll see! I really enjoyed the first round & learned a ton.

In the morning of Wednesday the 27th I had to run to the store for a few items, and looked to my right greeted by a double rainbow. Not a bad way to start the day 🙂 There have been buckets upon buckets of rain here lately that I feel like I’ve seen more rainbows in a couple months than my entire life combined.

After being cooped up with school all day, I was ecstatic to get out of the house and meet up with some dear friends from my nursing cohort. I decided to walk to Santana Row to clear my head (it’s about a four mile walk). We’d be finishing dinner when DJ left work, so he said he’d just pick me up since it’s right on the way home. On my way I saw this license plate…. ha! Love this person’s sense of humor.

I had the goat cheese and kale pizza… one of my favorite pizzas I’ve ever had. It was actually way better than the pizza I had last time I was here too. Their homemade crust is realllly well done.

On Thursday the 27th, I was out of avocados, but I whipped up a dragonfruit bowl and had it with two protein bites.

Apparently… I Eat a lot of Green Cuisine!

Hey y’all– time for a little update, whaddya say? On Monday September 17th, I woke up early, looked at my new round of assignments for the week, headed to Peets and did school work with my packed snacks all day long. Obnoxiously large salad for dinner. Dexter in the evening. Same ole’ same ole’.

Tuesday September 18th, I woke up and immediately inhaled a buncha coffee and noshed down on a rice cake with Dannon’s vanilla yogurt, a sliced dried apricot, a couple raisins, and a chopped up walnut. Mmmm!

I went for a nice run in the morning (I prefer long runs on Tuesdays because it’s when all the new episodes for the podcasts I listen to are released!).

There are so many fruit trees in this neighborhood. I just loved how this apricot tree was cascading over this fence. 🍑

After making a dent in my schoolwork for the day and downing my massive salad, I decided to get creative with a dinner for DJ. I had tomato sauce, chicken, eggs, cheese, and leftover crackers.

I crushed up our cracker crumbs to make bread crumbs, basted the chicken in some eggs and then put the cracker crumbs on top. I baked it in the tomato sauce and put cheese on top too. I told DJ I made chicken parm, since that’s what it most resembled. It felt good to use up those cracker crumbs that probably would have gone stale sitting in the pantry otherwise.

I wasn’t home when he had it because I had already headed to SF to see A Simple Favor with my sister in Law, Amy. I was so excited when he said he loved the dish- it was definitely a shot in the dark without following any recipe.

I enjoyed a beautiful drive into the city. SF never gets old. I love the pastel colored apartments and the character on every street corner.

The sunset was stunning too with contrast of the clouds. Hard to capture, but I gave it a go!

I know I mentioned it in my FF post, but A Simple Favor was soo good. It’s a must see. Never have I ever seen anything quite like it.

Wednesday September 19th, I reverted back to my summer go-to of rice cake with avocado toast and hummus. And here we have green food #1.

I had an interview in the afternoon for a new organization I’ll be volunteering with then made DJ ground turkey tacos for dinner! He’s not sick of the different takes on tacos just yet! Haha.

Thursday the 20th and Friday the 21st included more just cranking out school work, grabbing fill in groceries from TJ’s, and of course, cranking out more Dexter episodes right before going to sleep. However, we did have a wonderful date night on Friday night. We tried for the first time ….. GEORGIAN FOOD. Yes, food from the country of Georgia!

This restaurant is called Bevri located in downtown Palo Alto. It has a large menu- although it’s quite a challenge pronouncing anything on it!

Luckily, it has black boards across the restaurant explaining what everything means,  what the menu items are, and how to eat them.

They also have crayons on each table so you can draw on their paper tablecloths. Unfortunately, when we sat down we didn’t have any crayons. I was so tempted to steal some from another table- but our table was kinda small and we had to have a ton of room for all our food. ha! Anyways, if I had to give an overall definition of Georgian food I would say it is combined Chinese and Mediterranean food.

We started with eggplant rolls. They were pretty good! They are stuffed with a nutty spinach combo. I felt it could use a bit more flavor, but they were still refreshing.

And the presentation was beautiful!

I also had to try the khinkali with mushrooms. These are a lot like dumplings- and gosh freakin’ dang- they are delish! I have craved these since I tried them. Green food #2.

Now for the star of the show- DJ ordered their must try Adjaruli which is a boat shaped bread boat with cheese, butter, and an egg. It’s freaking phenomenal. It’s like pizza… but even better. (Which I didn’t think was possible to say, because pizza is forever one of the greatest things on earth).

Overall, it was a fantastic meal. The only thing I would say is if you go make sure to order all items to be delivered at the same time. I ordered essentially two appetizers as my full meal, but they were brought over a half an hour before DJ’s food came. My dumplings were a bit cold (but still good) by the time DJ got his food— although he did insist I didn’t wait on him– but I insisted right back that I would be sad when my food was gone and I would have to just watch him eat, so I waited. Anyone else just sad when you finish your food before the other person? Haha.

Saturday September 22nd both DJ and I had a run in the morning, but different lengths. DJ has been running a ton lately too!

We walked out to the starting point together, but I decided a coffee sounded better than running for the time being. I found my SB cardholder card from 2014 (yes, four years ago) and discovered it still had a $10 balance on it. I decided to make it a goal to use this up before buying anymore Peet’s, even though that’s where my loyalty lies (lays? lie?). He went off on his run and I grabbed a coffee and walked for a couple miles before starting my run.

It was also the massive garage sale weekend in Cupertino. I had to stop by even though I wasn’t planning on grabbing anything. It was still fun to poke about though! I think I stopped by about 4 garage sales on my walk.

In the afternoon I was having a hankerin’ for a stuffed sweet potato. I nommed on a purple one with Fage, avocado, morning star vegan crumbles, and Daiya vegan cheese. I’ve been eating this on repeat this past week.

Sunday September 23rd DJ left for a business trip to Des Moines, Iowa. After dropping him off at 5:30 at the airport, I ran about nine miles, went to church, and then hit up Ozumo again with my friend Tammy for some yummy brunch!

I was ready to chow down.

First, we ordered jasmine tea to share. I tried to capture mid-pour with portrait.

But I spilled in the process, lol! Smoooooth.

Speaking of smooth- this tea was so smooth. I am not a huge tea guy- I really gotta be in the mood. But this was just so satisfying and delicious- it didn’t require any sweetener or anything (I usually will put a touch of sugar or stevia in tea).

We started with the Ozumo roll with salmon, cucumber, jalapeno, mango, yuzu sauce, and micro shiso. Their sushi is the definition of fresh. You cannot go wrong here!

This was followed by the Ozumo scramble with onions, bell pepper, sweet potato, kale, cauliflower, eggs and micro wasabi. I don’t know how they roasted these stinking veggies, but they were so full of flavor and complimented the eggs perfectly. I also loved the touch of green onion- this is something I’ll have to try to make at home.

And last, but certainly not least, we had the matcha pancakes with whipped cream, red bean, raspberries and matcha powdered sugar. The red bean was a nice touch!!! Green food #3.

I dare say they are the best pancakes I’ve ever had. It helps that I’m a matcha freak, but I also love thin pancakes that are nice and crisp. These. were. everything. I need to take DJ back to try them since he is the pancake king after all.

The rest of the day was just the same- study, snack, dinner, blog a bit and then hit the hay!

Monday September 24th I ran on the treadmill reading a couple chapters for the week.

I hunkered down to “go to school”, but I was craving some roasted veggies, so I whipped up roasted eggplant to munch on with hummus while watching lectures.

I kept coming back for more pieces throughout the day and by the end of the day there were none left. Didn’t think it was possible to eat an entire eggplant in one day? I am here to tell you it is! 😂

Another snack I loved that day was a purple sweet potato with Fage and cinnamon. This is one of my favorite snacks in the autumn.

Oh, and for those that are curious… here is a sound bite of our upstairs neighbors. Listen about seven seconds or so in, and you will start hearing it. We’re still trying to work things out, but all parties are in communication and aware of how frustrating this issue is- so we’ll see in the next few weeks what our solution will be. Management has been attentive and helpful as they can be.

Kels & Kenz Take on the Bay: Part 1!

This summer is truly one for the books! One of my greatest friends from college, Kelsey, was able to visit & prance around the city with me for a few days last week. You may recognize her from our wedding, but sadly we haven’t been together much since (she went to Uganda our last semester of college!).

I have never done sooo much in a short period of time (Nor am I sure I have ever ate so much, lol). Kels and I set out to knock off things from both of our bucket lists (This was, after all, her first time in CALIFORNIA, y’all!)

It’s so easy hanging with this chica because she is sooo go with the flow, and down with anything & when we’re together it’s just non-stop laughs mixed with great conversation. My heart is full <3 And sooooo are our stomachs. We also have the exact same taste in food, so we split everything the whole weekend which helped cut down on costs a bunch and allowed us to try a variety of nibbles! (and by nibbles I mean large meals that we are are calling snacks- deal?!).

We made the most of every second, and although she was only here for five days- it may take at LEAST four or five blog posts to recap it all. So let’s get toooo itttt!

We haven’t seen each other since the summer of 2016! She landed at around 12:20 at the Oakland Airport on Friday, July 27th. After exchanging the biggest hugs ever, we drove toward downtown SF to get a week of all time started. (wish Deej could have joined, but he had a homestand basically the whole time she was here, I took notes so I can take him back to these places though!).

B Star, a Burmese inspired restaurant, was our first stop. People rave about this spot & swear it is a must try in SF. Their tea leaf salad has been on my foodie bucket list for a while. They also have a sister restaurant- Burma Superstar, that has a similar menu too.

It was a tucked away little place, but the inside was so cute.

We ordered the noodle salad, tea leaf salad, and samusa soup.

The noodle salad was light and refreshing- but nothing to write home about.

The tea leaf salad brought a flavor that we’d never experienced. It was good, but sooo salty. Like almost too salty to enjoy for me. We ended up mixing the noodle and tea leaf and that combo was delicious; they balanced each other well.

Now, the samusa soup was outstanding. This vegetarian soup has falafels, lentils, cabbage, potatoes, and jalapeños. This is, dare I say, the tastiest soup I have ever had. I could eat this everyday for the rest of my life. It was SO good. I am going to take DJ back just to try the soup!

I decided since we were so close I would take Kels through Haight-Ashbury. The houses lining the walk down are a sight to witness! The level of meticulous attention & love poured into these front steps is evident. This one was reminiscent of the 16th Avenue Steps we visited about a month ago.

After Haight-Ashbury, we zoomed to Fishermans Wharf to be tourists doing touristy things.

We ventured through Fisherman Grotto’s area, passed the sea lions, then into Pier 39’s hub! Kels is left-handed, so I was excited to show her the Lefty store.

And what dooo you know? We were hungry again! Kels loves oysters, and I was trying to love oysters, so we looked up the best oysters in the area. The reviews for Sotto Mare were phenomenal, so we gave the joint a go.

They are known for their world famous cioppino, but we still had a dinner planned, and wanted just some light, refreshing oysters. (But if you do venture here, make sure to try their cioppino! It’s now on my bucket list).

We tried 3 East coast & 3 West coast oysters with the bloody mary mix shooters with an oyster in the bottom of the glass. So was it all up to the hype???????……

I started thinking I might be fond of oysters at Sam’s Chowder House, and these even surpassed that! The pairing with the cocktail sauce was a perfect touch too. So…. your girl officially LOVES oysters! Now I just need to get DJ on board.

After slurpin’ down the half shell magic, we walked to Ghirardelli Square for our free samples of chocolate (yes, just go into the building and they are always handing out free samples), perused the niche boutiques, and drooled over the olive oil shop options.

No matter how many times I am here I can’t help but snag a shot of the Powell & Hyde cable car (you can also see it in the full house intro video if you watch closely 😉 ).

We found this interesting little street with books hanging from the wires too in North Beach. I had never noticed this before, and was curious behind the “why”…

I found that it is an art installation called Language of the Birds. The books actually light up at night. There are words on the sidewalk too. It’s pretty cool to see the pictures of it at night.. you can find them here!

In the evening, we did the hour trek back to San Jose area and had a hankerin’ for some Bay Area quality sushi. There are cravings, and then there are sushi cravings. And lucky for us, there is a new place that opened recently on Santana Row called Ozumo.

I prayed it would be up to par since we were both walking in blind & I wanted to make sure Kels got some dang yummy sush while she was here (considering it is also her favorite food group).

It looked brand spankin’ new! It had the chic, contemporary, Japanese restaurant vibes that are pretty popular in downtown SF, but I haven’t found any restaurants like it here… until now, of course!

We decided to sit right at the sushi bar so we could watch the sushi being made. When I say this was the best dining experience we have ever had, I mean it. The service was impeccable. The atmosphere was light, warm, and fun, but not stuffy (like many of the row restaurants can be), the staff was superbly friendly and attentive, and the sushi was the greatest sushi we have ever had.

The sushi chef gave us complimentary octopus to start our meal (yes complimentary, that was absolutely spectacular)…. we were being treated like royalty. I was like, “are they mistaking us for someone important?!” haha. Kels said that lately she has been on a streak for getting things for free, so we chalked it up to her being our good luck charm 😉

I was craving wakame, but they didn’t have plain wakame on the menu. We decided to be adventurous and try their personal take on a seaweed salad- the Kaiso Salad. This included the red & green tosaka seaweed, wood ear mushroom, green onion, sweet chili dressing. I am thankful they didn’t have plain wakame, because it would have been a shame to miss out on this dish! It was perfection. So tasty, so flavorful, and so light.

Then for the best part of the meal (which is saying a LOT), we had their shacho roll with tuna, salmon, scallop, crab salad, takuwan wrapped in soy paper, and lobster sauce. Umami flavors for dayyyyyyyyys.

And we also split the tremendous tuna tataki with thinly sliced seared black pepper encrusted tuna, truffle oil, ponzu, grated ginger, and micro cilantro. Heaven. Heaven straight on a plate. We ate our food soo slowly because we didn’t want it to end. Every single nibble was savored.

We tried the cheapest red on the menu, and it was a perfect accompaniment with the meal- although a bit too generous of a pour to finish it all up.

We walked around the row for about a couple hours. We even witnessed some random motorcycle show out of the blue.

We decided we weren’t quite ready to turn in for the night. There was one other place on my bucket list to knock off and believe it or not, we decided to do dinner number two at around 10 pm…. whoops! It’s not like we were starving, but we were like, “we could eat!” know what I meaaan?

Pizza Antica is always packed out the door, but since it was very late at this point, we were able to get a seat right away.

We split their fantastic margherita pizza. (Their bread is great too!).  I’ll be bringing DJ back to try this ‘za. He really loves a flatbread margherita. Since we were satisfied after about a piece.5 each, we had leftovers that would be perfect for nibblin’ the rest of the week.

And finally, after eating about seven full meals in one HALF day, we called it a night. Yes, that was all one day folks. I’m not sure whether to be proud or ashamed. I’m going proud, yes definitely proud. It’s an investment in the best of memories, ya know? 😉

SF Tourin’ & Big Basin Hikin’

Heyyy yaa! This post is going to be heavily picture laden- but not as heavy on the words (at least as much as usual 😉 ). This week has been busy running around getting ready to go back to Ohio this weekend, BUT I am going to try to squeeze this post out before we take off!

Soooo where did we leave off? I believe it was Thursday the 22nd… DJ and I headed to BW3 (Buffalo Wild Wings) in the evening to meet up with his coworkers. It was a blast, and I can’t wait to see them all again for another get together mid July.

Friday the 23rd kicked off a tremendous weekend. I started the morning (as I have every morning) with some avocado toast using Oren’s Hummus Shop whole wheat pita, hummus, and mashed avocado with pink Himalayan salt & pepper. I can’t get enough of this.

After an Insanity workout, DJ and I headed to Santana Row to do some shopping for him. I was thankful I didn’t have to look for anything for myself because I am overrrrr it! But I always love going with DJ just to tag along & have an excuse to find a cup a jo’ somewhere.

In the evening we drove into SF to attend our Church’s annual conference called If Not For the Hand of God at the Regency Ballroom. We had Mack Brock in the house & a ton of phenomenal speakers over the weekend. Every second was incredible. My notebook is filled with pages and pages of wisdom and conviction from these Pastors.

I also loved getting to see my sweet friend, Tammy, if only briefly Friday night!

DJ and I woke up around 6 am on Saturday morning, the 23rd. We decided we had enough time to try to squeeze in an awesome breakfast before a busy jam-packed day.

I have wanted to try Kitchen Story for a while- it’s one of those well known “Must try” brunch places in SF.

We were seated immediately since it was only 8 am on a Saturday (give it 2 hours and you are looking at least an hour wait).

DJ tried their millionaire bacon. The last time he had the bacon was at Sweet Maple. We had to see how this stacked up.

I had the Primavera with egg whites, spinach, mushrooms, and blistered tomatoes, a croissant, and rainbow potatoes. Such a wonderful start to the day!

DJ had their ricotta pancakes and said they were some of the best he’s had in the city.

Overall, we both agreed we still liked Sweet Maple better… but it was a fantastic breakfast nonetheless.

We attended the first session of conference at 9:30 am, then during the lunch break we scarfed down a couple complimentary sandwiches and decided to explore.

We stumbled across Japantown, a destination in the city we have never been before.

After the afternoon session, we decided to go to the 16th Avenue Tiled steps- a tourist spot we have never explored.

Apparently there was a lady stealing plants from the steps, and they had a picture “shaming” her for stealing. It seemed both ridiculous and hilarious.

After the steps we went to Twin Peaks. You may remember I went on my own a couple months back, and I knew DJ would love the views.

Last on the list for the day was Haight-Ashbury street… a step back in time to the 60s. It is known for being the origin of the hippie culture.

We decided to stop and grab a quick bite to eat to tide us over before heading home. We went to the first place we saw- Magnolia.

I decided to just have the house salad- I wasn’t super hungry since I had been nibbling on snacks I had in my purse all day- any other grandmas in the house?! I have food on me at ALL times.

Haight-Ashbury is also known for the Piedmont Boutique with the flailing-out-the-window-legs. What a hoot.

It truly felt like a step back in time… one of the craziest streets I’ve ever been on. Everyone was exceptionally friendly though- I will say that..

Sunday morning, the 24th, Tammy and I went on a loooong hike at Big Basin in the Santa Cruz mountains!

I’ve been wanting to do this hike for a while and finally a good time we both could go!

I have never seen Redwoods in person before and was BLOWN away. I have never seen anything so gargantuan in my whole life.

We had an hearty laugh over this form we had to put on our dashboard. This just instilled allll the confidence in us!

We set out to do the longest hike the Berry Creek Falls- Skyline to the Sea-Sunset loop.

The falls were stunning, located about five miles deep into the hike. The pictures cannot do them justice.

We hiked from about 10:45 am to 4:00 pm. It was a phenomenal and strenuous hike (the sign did not lie). The weather was perfect and the views were breathtaking. No greater therapy than nature.

Monday I cleaned up the house, did a load of laundry, and ran some errands. In the evening I made butternut squash pasta with lemon, garlic, and olive oil topped with sprinkled parmesan, a quinoa medley, and I also decided to make stuffed jalapeños for DJ (with Monterey cheese blend, white onion, and bacon).

Tammy came over to watch the Bachelorette and we snacked and chatted. So thankful for the time we were able to have together this weekend! As the show started, I had this giant salad that I’ve been eating on repeat this week with a black bean burger, tons of veggies, hummus, and balsamic vinegar.

Yesterday, the 26th, I spent the day getting together packages to ship that I sold on Ebay and Poshmark. I also went for a nice long eight-miler. It’s so funny around here- I swear we have two springs… the flowers go into full bloom early in spring then die then all of a sudden bam.. have a full bloom again. Not mad one bit about it.

Today, the 27th, I knocked out a little bit of the remainder of my to-do, meal prepped for when I’m gone next week but DJ is home, and started packing for Ohio! Anyone have any fun weekend plans you’re looking forward to?!

Friday Favorites #11!

Hey y’all! I feel super behind on blogging! Soo many awesome things have happened before and after the cruise, but I’ve been so busy and barely could get those vacay posts out alone. So stay tuned for recaps that are about three weeks late, lol, okay maybe four weeks honestly. But for now- I am quite excited to share a Friday Faves with ya!

  1. e.l.f. matte liquid  lip color. YOU GUYS, this is only $5.00 from Target and is my new obsession. I rarely ever invest in bold shades for the lip, but for vacation I thought it would be fun. I wore it much more frequently than I thought I would. Although it was bold, I felt like it wasn’t too much to pull off like a traditional deep red is.

2. When I came home from the cruise, I had some errands to run in the mall. Occasionally, I love to stop by See’s candies for a butterscotch lollipop after and they always offer free samples of chocolate 😉

3. Spongelle Body Wash Infused Buffer!!! This was a Fab Fit Fun included gift- and I just love it. It smells amazing and is basically a loofa that has soap built in. It is greatly exfoliating, and I’ve already used it probably ten times at least with it still sudsing up for each use!

4. I can’t forget Easter treats!!! Someone gets this crack away from me! Bahah. DJ’s fam sent us some awesome goodies for Easter starting with The Popcorn Factory popcorn & make your own cookies! This caramel corn right here is the most addictive stuff in the world.

We also received the sweetest Olive & Cocoa gift basket from… all the goodies are just too darn delish. You see those little pink puffs at the bottom?…. I took them on the cruise with me and they did not last long at all. SO GOOOD! I need to hunt down more!

5. Trader Joe’s High Protein Tofu. Do any of you have a really hard time finding super firm tofu? I feel like sometimes even the super firm tofu in the grocery store still can crumble while cooking. This stuff does not crumble one bit and has a whopping 14g of protein! It’s my favorite tofu to cook with and throw in salads, sweet potatoes, or have for breakfast as a tofu scramble.

6. Cauliflower Pizza! Y’allll I have tried (and failed) to make Cauliflower pizza on my own many times. I finally pulled the trigger and just bought some from Sprouts. This stuff… life changing. So darn delectable. I could not tell the different between a thin crust pizza & this cauli pizza! You can actually buy it on amazon in a four pack 🙂 You is welcome

7. Korres body butter. Oh. my. lanta… talk about all the yummy smells. This also came in the FFF box! Whenever I put on this lotion I feel like I just rolled around in a coconut. You must try this for yourself! It’s a bit pricey, but seriously worth it, or makes for a great gift.

8. Zodiac. Well this took a hard turn in another direction. DJ and I recently watched the movie Zodiac, a movie based on the true story of a Bay Area serial killer. I love love love thriller/mystery movies, and this movie hit the spot. Fantastic movie with amazing actors too!

9. MantraBand!! My mother-in-law is one of the most thoughtful gift givers, and for my graduation she gave me this mantra band… it says, “Nevertheless, she persisted”. This meant more to me than I can even say. She was a pillar of support for me through the year, and this bracelet has such special meaning to me. (She also got me one that says, “Just Run”! Now if that’s not my mantra, I don’t know what is!).

10. The Hills! You might laugh at me, but I’m actually watching The Hills for the first time and loving it. It’s such great mindless TV while working on other projects, and the drama is pure gold for this reality TV junkie. Can you believe I’ve never watched it?! I’ve seen episodes here and there, but not all the way through! A bit late to the game… but what do they say? Better late than never 😉

French Brunchin’ & Rome Dreamin’: A Weekend Recap

Hi Friends!!!

How ya doing?! Sooo I’ll be totally honest and say the struggle. is. very. real. Imma dive right on in. This past week/weekend have been hyper-emotional for me, laced with overwhelming anxiety. It has easily been the worst week I have had since beginning my job. The assignments have been tremendously heavy lately, and I feel like I’m barely staying afloat. Then applying for grad schools and random other things going on… I am down in the deep, deep dumps.(Well, why don’t ya tell us how you really feel)

I think part of it, perhaps subconsciously, is the emotions that come with November- the month I lost my Dad. Even though I tend to directly point to whatever else is going on in life as the source of the sadness, that’s probably a larger part of the equation than I acknowledge. In reality, this time of year traditionally does tend to bring up suppressed emotions and memories.

BUT, whenever I have been feeling down lately, taking this time to reflect and highlight everything good going on really has helped lift my spirits. Scripture, prayer, conversations, cards, encouragement from DJ and others… man, I do not know what I’d do without every little bit right now. DJ just keeps saying, “once you make it through this year, imagine how strong you’ll be”. Cue Kelly Clarkson!! (But for real… cliche quotes and songs have been my jam as of late— Whatever it takes- Imagine Dragons, Stronger- Kanye West……..).

My mom also keeps reminding me.. we are more than conquerors in Christ (Romans 8: 31-39). That is so powerful. Not just conquerors, more than conquerors.

Nope, I cannot do this alone. Not even gonna try because I’d be falling flat on my face.. but with Christ, I know I’ll make it because it is on His strength I rest, not my own. I know I should be spending this time working on my next application- but I don’t think I’m quite in the right head space for that yet. There have been some truly special memories in the last couple days.. and I would love to share them with you! (Plus blogging always gets me in a good mood- especially when I can share things like THIS…

Friday (11/3)…zoomed into Target post-shift to snatch some mint chocolate chip ice cream (the ultimate post cry ice cream) & an endless supply of Candy Corn. Anyone else stock up on candy corn for the rest of the year? ya? no? Jus’ me? Jus me & Doug?

Saturday (11/4) Deej and I had a date night at the row!! Wooohooooooo! Been a hot tick since a real date night for us. This was too fun. We decided to go to Yard House.

I had their vegan burger (holy maloly) and side salad like the California hippie I am. This burger was flame. So tasty. I love how many options they have for vegetarians and vegans here.

Such a great meal and conversation with the hubs <3 We both agreed that Yard House is a tad overpriced especially for the portions.. but we also agreed that meant room for dessert!

We spent sometime strolling the Row, but the weather actually cooled down quite quick, so we zoomed back home to have cookies and watch some Parks & Rec.

Sunday (11/5) Dj went in early to Church to help with venue set up. I snatched a few extra Zzzzs and woke up for some coffee and toast with toasted vanilla coconut yogurt, chia seeds, oats, a sprinkle of stevia, and apricots.

At Church, we found out the next location our Church is expanding to is …. *drum roll* …. ROME. Yep, ROME. Our Church is only five years old…five. The audacious faith that our Pastors have is truly incredible to roll out five campuses in five years. God’s hand is so evident and revival is happening. I have no words to explain how ecstatic we are to see this vision come to fruition and to be a small part of it.

After Church, Deejers also helped tear down and while he was doing that I finished up some laundry then decided to run from home to the place we were meeting for brunch. The run is about four miles from the apartment, but I made it about a seven miler- it was such a beautiful day, a beautiful service, so I just listened to some uplifting music while allowing adrenaline to replace the nagging anxiety.

We met at Left Bank to enjoy their fabulous French cuisine on the twinkle light lit patio. It is one of those locations that provides the full experience, not just the food.

I visited this restaurant with my mom about a year ago (that was the last and only time we have been). She ordered a Bloody Mary, and I decided to try one since I knew I liked it the last time I tried one in Santa Cruz. This one was okay.. the Santa Cruz one was much better! (DJ snagged the bacon ;)).

I ordered their salmon hash (again). Last time I had it I remembered how absolutely savory it was, and it sounded like a perfect brunchy meal on the chilly afternoon. All I can say is …Délicieux!!!! Absoutely magnifique!

DJ ordered their sausage hash and downed that thing before either of us blinked (of course, post picture 😉 ). I assume he liked it.

We walked around the row for the second time that weekend (becauuuuse it’s the ROW!). We popped into their little boutiques and I saw this on a card…

I started tearing up. (Yes, I’m that friable emotionally right now… I actually took a pregnancy test because I am giving Niagara Falls a run for its money… and I’ve been uncharacteristically craving Diet Dr. Pepper – obviously the test was negative.. but that’s how crazy it’s been. Is that TMI? I’m a nurse.. there is really no such thing).

Monday (11/6) morning, I decided to try something different with my toast! I mixed in Matcha powder in my yogurt, topped it with oats and chia seeds and honey. It was pahretttty tasty.

In the morning I cranked out chores while listening to podcasts, snuck in a nice long run, and stopped by Tea Chansi on Main Street for their Boba, which I was craving something fieeerce.

In the evening, DJ and I went to our Church Group. Gosh, I haven’t been able to go in for FOREVER, and it was incredible to connect with everyone and see our friends I have been missing something terrible. These are the snacks I whipped us for us and my good friend Danielle made some out-of-this-world delicious homemade soup & homemade bread.

It was a much needed night discussing the message Sunday, our vision for our own lives, and praying over each other.

Today has been hard. I’ve been pacing, anxious, and not able to really focus. I go back to work tomorrow after a stretch off. I haven’t been productive AT ALL with my applications. I am going to just focus on getting in a good head space- go for a run, clean the house, blast some feel good oldies, and maybe just read a book. I thank you all for allowing me to be honest in this season, and also for being ever so patient with me. Y’all are the BEST <3

PS. Ya all know we keep it one hundred around here…. I put up a post last night that I ended up setting to Private. If you did read it, I don’t think I was communicating very well what I meant to. I essentially was trying to say that sometimes perception is not the reality in the nurse/patient relationship, and it may be hard to see the nurse’s heart in light of the system in place and the demands placed upon us. I honestly didn’t intend to annihilate myself, but rather, speak from the heart to the patients I wish I could do more for. I also wanted to debunk the idea of a “good” vs. “bad” nurse that is often discussed (eg. often the perceived “bad nurse” on paper actually might care more than you know). I realize it came across pretty bleak, but I wrote it with the intent to be an artistic/poetic form rather than a woeful monologue. Not one of my best articulated pieces. However, I truly, truly appreciate those that reached out and left such kind words <3. (Ps. if you want to read it, I will send it privately). Ya live, ya learn, ya blog.

San Fran & San Jose in 23 hours? You betchya!

Hey guys! I am SO stoked to share this post with you all! My dear friend from college came to visit all the way from ninder nanders (nickname DJ and I use for Indiana). Man, oh man, I missed this girl. We haven’t seen each other since graduation last year. That’s just too much time I do say.  On Monday I worked all day, and after the relief of knowing I was in the clear, I cleaned out my closet and went through clothes to give to good will/ take to Plato’s. Love me some cash for clothes, ya feel? I found some shirts that I was deciding if I wanted to give away, but actually ended up liking them now and kept them after not trying them on for years.

Sarah arrived at about 1230 at Tuesday at the San Jose airport right down the road! We headed to SF to explore the city. I felt so bad because this was Sarah’s first time here, and we could not see the doggone Golden Gate. I have never seen such dense fog before! It was crazy, but still somberly beautiful.

After popping over to the non-existent Golden Gate, we went to the loyal, fog-resistant Ghirardelli square. Chocolate will never let you down.

We grabbed the free samples of the pumpkin spice milk chocolate (uhm, yum) and then explored. The inside of the Ghirardelli shop is so neat- it has a very 50s/60s-esque vibe, and you can actually watch the chocolate churning which fulfills my childhood Charlie-and-The-Chocolate factory dreams.

They are known for their massive, and delicious, sundaes, but it was a wee bit chilly out for us to grab one. If you want to see pictures of the sundaes in all their glory, you can check out our experience here!

BUT what can warm ya up better than a nice glass of wine? There is a cute little winery, Wattle Creek Winery, in Ghirardelli square that I’ve actually wanted to try for some time now. I was excited when Sarah suggest we stop for some- told yaaaaa- we twins.

It’s super unique and has eclectic vibes. It has a mish-mash of decor and colors that could easily come off as tacky, but somehow the way it all pulls together it is nothing but modern class.

After hanging out in the square, we headed down to the pier.

They were being super lazy for us. Prolly grieving the fact that the Golden Gate up and vanished like the rest of us.

We caught glimpses of Alcatraz and then headed down the pier to the shops. If you know me, you know I have a weird love for sock shops.

We finished the walk down to the Ferry building and then turned around to walk back while soaking in the views along the Embarcadero.

We were pretty ravenous after all the walking and decided to try Crab House on the pier. I have never been here before, but the bibs drew us in (you’ll see what I mean ;)).

The crab house can be described in one word: FUN. It is decked out in themed crabs everywhere you turn, the staff is incredibly friendly, the views of the bay were fantastic, and the food. OH. THE. FOOOOOD!

We decided to split a few different items from the menu to get a varied taste of everything. This calamari was the bomb, it was the definition of flavorful and perfectly crispy. 🤤

We also tried their crab chowder. We chowed down like we were from out of town. It was insanely delish.😋

And, of course, we couldn’t pass up their iron roasted mussels and shrimps. Holy maloly. The word tasty has a new definition for me after these little suckers.

We actually survived the whole meal without getting anything on them (I can’t believe it either), and ended up taking some bibs for the road. What didn’t we take with us? Oh, the food, because we demolished every last lick.

Walking back to the car we were unable to escape the mouth-watering scent of baking bread wafting from the Boudin bakery. As we passed the window we noticed an alligator made of pieces of bread.

When we came home we chatted on the balcony sippin’ on wine and eating some ice cream.

In the morning we went to (if you are a long time follower you can probably guess)- Bill’s!!!!!! The actual best breakfast place in the whole world.

We split one of their mimosas (it’s pretty essential for a brunch at Bill’s).

Sarah had their cinnamon roll french toast. Oh. my. word. It was insanely good. Like there are actually no words to describe the deliciousness that is their cinnamon roll french toast.

I usually get their Greek omelette, but this time I had their Salmon Benedict with a bagel, capers, onions, smoked salmon, and poached eggs. It hit the spot. I think I muffled out a “mmmm mm” with every bite. It’s easily the best salmon benedict I have ever had.

And, of course, I had to show Sar around the Row after!

At about 1215 I dropped her off at the airport. It was a hard goodbye, but I was tremendously thankful for the short time we had together. It meant so much that she made the time to come see me & the Bay!

This morning (Thursday morning) I stopped by Peet’s to grab a cafe au lait before my residency class. It was super nice to see everyone from my cohort, and also nice to have a class day vs. in hospital day.

I Accidentally Stole From Target & Other Recent Happenings

HOWDY! Excuse me while I unleash my good ole’ southern side (I just booked a quick four day trip to Dallas in August!). YEEHAAW. My schedule only comes out about three or four weeks before, so I’m doing all my planning last minute, but I’m learning to navigate it.

I’m thrilled to tell ya’ll that things are getting mucho better. I think after I wrote my last big nursing update post I began truly coping. I’m able to sleep through the night most nights without taking an absurd amount of melatonin, and I am able to separate work from home a bit better. I actually have some energy outside of work and am becoming motivated to start, idk, do real people things, besides sleep on my off days. I’ve still had days that would consume me at the beginning, but now I try to just see them as a learning experience. I feel that I am contributing more to my patients’ care too. One of my patients was just a bit too drowsy for my likin’ and had sluggish pupils. I let the doctor know, and when they did the CT scan it turned out he did have a re-bleed in the brain. As much as I wish these types of complications didn’t happen, it was incredibly rewarding to feel like I actually made a true difference for a patient. I still have an infinite amount to learn, but I don’t get nauseous every single day walking into work. I’ve actually had a few times where I’ve been somewhat excited to go back in because I knew I was getting my same patients back from the prior day! This turned corner is all, 100%, due to the tremendous support I have received in the last couple months and spending time in God’s Word has truly helped change my perspective. I don’t think I could have survived the first three new-grad nursing months from h-e-double hockey without you all, DJ, my family, my friends, and other coworkers. It sounds supes cliche, but it’s the truth. I have just a couple months until my probation period ends and I think I might just make it, guys! Then I will officially be a Clinical Nurse II! Just gotta keep peddlin’ on. (I needed to work in this photo somehow).

When going through my Camera roll as of late I noticed two things. A. All I do is take pictures of food. and B. I make some weird crap. But I swear, it’s delicious crap.

Ok, exhibit A….

I decided to try a portobello mushroom cap stuffed with baked tilapia, blistered tomatoes, hummus, kalamata olives and seasoned with Za’tar. I had a side of quinoa & brown rice. It turned out crazy good. I made it the next day. DJ really enjoyed it as well and commented how good the house smelled when it was all cooking.

I also have been craving tofu lately! Last week I made a medley of roasted veggies, vegan turmeric cauliflower mashed potatoes, and pan roasted tofu with tomatoes.

I then bought giant collard green leaves and stuffed them with the above plus a dollop of hummus.

Last Monday (7/10), I finally FINALLY was able to see one of my girlfriends, Sara. Our schedules haven’t been lining up lately, but they matched for once! DJ had to work super late that night so it made for a great impromptu girl’s night. I still had to work on Tuesday, but not until 2:30 pm, so I didn’t have to go to bed at 9 pm. She came over and we watched Bachelorette, sipped champagne, and ate cookies & chocolate. It was sooo needed.

Tuesday (7/11) DJ and I worked our toosh’s off, but Wednesday (7/12) we both had the same day off! *GASP*. The same day?!? Yes, yes… I know it’s hard to believe, I was looking for the pigs flying overhead too. We were both pretty exhausted from the day before and decided to just take a chill day. We started our morning with a breakfast at Bobbie’s Cafe. This is a staple breakfast place in Cupertino. It’s your typical mom-and-pop dive with great staple breakfast options, phenom service, and friendly folks who appear to frequent the diner for their morning cup of Jo and side of eggs.

DJ says Bobbie’s pancakes are some of the best around here. I tried them, and definitely concur. I say they taste similar to Heidi’s– light but full of flavor.

In the evening I made DJ a pepper jack crusted chicken with a sprinkling of pita breadcrumbs and pasta. For myself, I ate a collard green/cauliflower/veggie/hummus/tofu whatever-the-heck you wanna call it wrap.

Since we graduated our FACC series class, we are only having one class with our Cohort every couple of months. We begin our research project in September. Eeeek! I am too pumped. I already know what our topic is gonna be, and I’m nerding out hard core.

They surprised us Thursday morning (7/13) ( with the most gourmet breakfast! I quickly snuck a picture when no one was around 😉 ) #DOITFORTHEBLOG.

It included all kinds of fruit and bagels with cream cheese, capers, and smoked salmon. I told one of my coworkers that every single tear in the last few months was worth it for this very moment.

After a long week of work, DJ and I set out to Oren’s Hummus shop on Main Street lateee on Friday night (7/14). It was a super spontaneous date night, neither of us thought we would be home as early as we were (I actually got out on time!).

If you want the run-down of Oren’s, go here, such a throwback post. It’s one of our all time favorite spots, and they have some of the best hummus in the whole wide world.

For an appetizer, make sure to order their original hummus with a side of whole wheat pita. Greatest life decision, I promise.

I always order their Moroccan carrots, marinated beets and veggie skewers, and DJ usually gets their beef hummus.

Funnnnnyy story: We stopped by Target afterwards to pick up a few groceries and a card for a friend. I picked out the card and walked around with DJ for the rest of the food he wanted to pick out. When walking back to our apartment, I realized I still had the card under my arm and hadn’t paid for it. I FREAKED out, classic “me” mode, and started sprinting back to Target hollerin’ to DJ, “I accidentally stole it!” When I looked to my right there was a Sheriff stepping out of his car in the parking lot. I dived into Target half expecting him to chase me. I’ve always loved the show Cops, just never expected to be on it. Nothing ended up happening. I walked up to the cashier and explained what happened, they couldn’t have cared less, but I clutched that receipt ready to explain myself as I left the building!

On Saturday morning (7/15), or any day I have off, you can almost definitely find my in my lil’ egg basket. I just swing, swing, and swing while enjoying my coffee, avocado smoothie, and oatmeal chocolate protein cookies. It’s hands down my favorite part of the whole day!

DJ and I both had Saturday off too. DJ played some basketball with the guys in the morning and I went on a nice, loooong run. We also snuck in a few episodes of Game of Thrones and before we knew it, it was dinner time!

DJ suggested Mod Pizza. How I haven’t been here yet is beyond me. They have them all over the US- anyone tried it?! It’s basically a subway for Pizza and it’s amazing.

The crust/sauce/and topping options are endless AND they are reasonably priced. Around here that is a BIG deal. (literally). SUNS OUT, PUNS OUT.

Deej ordered a Chocolate Milk Shake- I tried a sip. If you are a shake lover, you should definitely order one of these. Wowza! It was sweet, but the chocolate flavor was sending me into a whirl like the Cuckoo bird in the Coco Puffs commercial.

I did a Mini-Mod with red sauce, all the veggies, and fig balsamic glaze to top it.

After we devoured every bit of our pizzas, we headed to the Row to be out and about (like I said, I’m beginning to turn back into my old self a bit more!).

The parking was super limited on a Saturday night, so we had to park on tippy-top of the parking garage. We didn’t mind though, the view of the Sunset was perfect, and we made it just in time!

On Sunday (7/16) we went to Church. It was one of the first Sundays since starting this job that I actually had off and could actually go. It did something good for me to see all my friends. I missed everyone so doggone much!

After I did a quick grocery trip. I love grocery shopping- I just put my headphones in, listen to a podcast, and stroll the magical Safeway aisles.

In the afternoon I meal prepped a bit- cutting up veggies, getting meats ready, yada yada yada, and then I made my faveeee oatmeal chocolate chip protein cookies. I cannot get enough!

DJ has been asking me lately to make the Dixie Stampede soup. Dixie Stampede is a Dolly Parton owned show/restaurant in a few locations. DJ went with the basketball team in college to the one in Branson, MI, and came back raving about the soup. I whipped up a big ole batch that lasted all of three days.

It is currently Wednesday (7/19) after working Monday and Tuesday. Today I am going out on a long run to catch up with podcasts and then I’m not sure what the evening holds! Tomorrow is pretty busy though, I’m excited to share all about that in my next recap post. Now that I’ve downed basically an entire jar of PB2, I’m off to run and soak up some beautiful sun! A Super Quick Update!

HEY YA’LL!

Long time no seeeeee.

I have a sweet & short post about what we have been up to lately (well, relative to my other posts) . I received a text from my mom yesterday saying she was concerned since I haven’t made much contact with anyone the last week or so. NO WORRIES- all is well & good just busy, busy.

It reminded me that I haven’t updated the good ole’ blog baby in a while. I need to write an entirely separate post soon about what I have learned this past month in regards to nursing, faith, and dealing with some intense emotional battles. It’s been nothing short of a glorious, ferocious, awful, and beautiful rollercoaster.

That will come soon… I travel to Pittsburgh this weekend so I’m thinking the flight may be a good time to unravel that one.

But for now, for all our friends and family that are all, “How the heck are ya, where the heck are ya, and what the heck are ya up to?!” … this is my response!

I graduated from the FACC series class last week (Foundations of Acute and Critical Care Training). That means wayyy less online work, aka less free time sucked up, and more consistent 36 hour weeks in the hospital rather than sporadic classes mixed with shifts. HALLELUJAH! I learned so much through this series and while it was a major time leach, I am incredibly grateful for all I learned.

. Hahahahha. I know it’s bad, but I couldn’t help but share. Our FACC leaders definitely have a good sense of humor (which I have learned is entirely necessary in nursing).

DJ’s doing amazing at his job working with the SJ Giants in marketing. I admire him beyond words with the way he has handled this job and the integrity with which he also handles the challenges. He has been an outstanding leader in our small group through church as well. Unfortunately, I haven’t been to our small group because of work, but DJ has been leading a good deal of the sessions. I am just thankful I have him as my rock as we go through this hard, hard year.

We both are in such similar places of navigating the season of NEW. New jobs, new coworkers, new schedules, new responsibilities, new frustrations, and new memories! We still hardly see each other but soak up every second when we do.

Many evenings I get home and go straight to sleep after a 12 hour shift, and can’t do much the night before a shift considering I have to get up at 4/4:30. But some nights when I don’t have to go back the next day I try to just soak up that alone time.

One of my favorite ways to enjoy those quiet evenings are in my feng shui hangout eating sushi, drinking some wine, and reading or watching a reality show. Call me basic if you wish, but these sushi rolls are ANYTHING but basic.

A place near our apartment called Azuma can be delivered through GrubHub. I oscillate between the 49ers roll (eel, avocado, and other assorted fish), and the sunshine roll (lemon, tuna, eel, green onion, and avocado)…. with brooownn rice. Brown rice adds a texture and heartiness to the roll that I love.

It’s all so delish. Probably the two best sushi rolls of my life. But I have a problem. When DJ and I went through the budget/spending this month I embarrassingly replied “Sushi” when he asked what each purchase on my card was from. Whoops. Girl’s gotta eat. #sorrynotsorry. #sushinotsorry.

Speaking of eats! Here are our other recent ones..

I have been LOVING my turmeric cauliflower mashed potatoes with black bean burgers, hummus, and parmesan asparagus. You know I get on kicks, and this is the most recent! I also love topping it with basil.

Flat-out pizzas are always a good go-to. If you’ve never tried a good flat-out pizza, it’s definitely worth a try- especially if you are a lover of thin crust pizzas! Each flatbread is only 100 calories, and then I top with vegan cheese, tomatoes, basil, and oregano to make a mean vegan margarita.

It’s also been a while since I’ve made Indian. When we lived in our Toho in Indiana this was one of my favorite meals to make! DJ loves it too. For myself I make a vegetarian version with dosa, idli, and tons of curry laden veggies. For DJ I make chicken tikki masala with jasmine rice and naan. Who doesn’t love naan?! If you don’t know what naan is, you don’t know what life is, so please stop reading this and go try some naan.

Alsooo, I may have casually ordered a jillion gallons of PB2 on Groupon. It was a steal!!!! Pb2 is so dang expensive, so when I saw this Betty bargain steal I had to jump.

I’ve also been running a ton to deal with my stress. Lately I’ve been listening to podcasts rather than music. Just wait for the next Friday Faves, folks, and I will divulge some of my loooves. Anyone have favorites out there?!

Last Thursday I got my hair did! Wooohoo!!!! The roots were so bad. I am in the wedding Saturday, so I felt like I had to be somewhat presentable for someone else’s forever wedding photos.

After getting the roots all touched up and a nice (MUCH NEEDED) trim, I was craving me some boba. Luckily, next to the Aveda salon on Santana row there is an amazing Boba shop It hit.the. spot. Especially because it was way too hot that day. Raise your hand if you love boba?!

FINALLY one of DJ and I’s days aligned for a day off last Friday. We started our day off by sleeping in until the cows came home.

We also decided to try out Game of Thrones. Holy maloly- it’s entralling! Does anyone watch? Yes, it’s pretty dang explicit, but I know most shows are out of the gate to get more ratings. The story line is just insanely good. Any thoughts?! We love it.

For dinner we tried the newest addition to our little Cupertino downtown- Stein’s Beer Garden.

It was one of those places that just has pizzazz.

I loved the feel. It was beery unique! There is a literal wall lined with faux foliage in a modern, industrial environment.

The staff was super friendly off the bat. While there was a bit of a wait, it was worth it.

We started with complementary pickled veggies in a jar. I don’t know why more places don’t do this! It was such a great mini app. I didn’t even miss the typical starter bread (GASSSSPPPP!).

I’m not big on beer, but felt like I should at least try one, considering it’s in the restaurant’s name. The only kind I really like that I’ve tried are Sours. Their Mango Gose was surprisingly refreshing with the meal I had!

I tried the roasted beet & smoked salmon salad with arugula, chevre goat cheese, and spiced pecans. It was fantastic! (Also- PS. I just have to tell my Aunt that she would LOVE this place, it’s so up her alley, so ya’ll need to come back soon!).

DJ tried the Yucatan Pulled Pork Sliders with chili paste marinated pork shoulder with chipotle aoili chicharon, cilantro slaw, jalapeno, and roasted tomato salsa.

The rest of the night we flew through a couple episodes of GOT, then we both worked all weekend.

Fast forward…

It is currently Wednesday evening, I’m on the heels of 4- 12 shifts nearly in a row. I’m not sure my mind is all here and this post probably has a million errors haha. I’m haphazardly watching bachelorette and realizing I have a million things do before 10 am tomorrow. Oh well. It will get done, it always does.

I leave tomorrow for Pittsburgh and don’t return until Sunday. I plan during that time to catch up on blog comments and your blogs too (although, I’m not sure the 7 hour traveling day in the air will have wifi?!)..

Monday is back to work and then I won’t see DJ again until Tuesday, but he works most of the time too. Also- my best friend’s baby is due this week, and I can hardly stand it. This time of life is wild, and hard, fun, challenging, and rewarding. I know we will look back on this year and see it as one of the most transformative for the both of us.
