Recent Eats Roundup!

Hello one & all! I can’t even start this post without first discussing a very important matter: Did you watch the Bachelor earlier this week?!? Hooooly smokes, that episode… I dare say it was the most dramatic episode I have ever seen (WTA was nuts too). Would love to hear your thoughts. Our jaws were on the floor in disbelief… and I actually kinda knew spoilers (they were so hard to avoid this season), but watching it play out was just … wowza.

So since our little Staycation in SF, it’s been pretty hum-drum with work, school work, and general life maintenance. This post basically highlights some our favorite things we’ve munched on the past couple weeks with little random tidbits sprinkled throughout.

I mentioned how I wasn’t feeling 100% going into our best SF weekend, but just ignored the bug creeping in. Wellll, although I survived our time in The City, when I woke up on February 17th, I felt like a train had hit me. I think I overdid it a bit, but still wouldn’t have changed anything! I was basically bed-bound for the day and watched church online. Also if you are interested in our church’s sermons you can find them here. For breakfast I was craving something warm & comforting- so I enjoyed a purple sweet potato with Fage, avocado, boca crumbles, vegan cheese, hummus, and tzatziki.

On February 18th, aka Bachelor Monday, I woke up feeling much better. Not 100%, but definitely more like a human being. I started my day with oatmeal, blueberries, fage, protein powder, and a sprinkle of stevia.

February 19th, we woke up to no water in our apartment. A HUGE main water line broke on the second floor of the building environmentally evicting everyone on that floor & shutting down businesses nearby 🙁 We ended up having no water for about three days. I have told people it was like experiencing our very own Fyre Festival. I had to make a couple trips to the local Target to stock up on gallons of water. Let me say, I have never been so thankful & relieved to take a full shower when the water came back on. I will never take a shower for granted again. On that morning I was craving a cafe au lait, so I went to the Starbucks located inside the Tarjay where I stocked up on some water.

This is a new one to add to the list, Cyra! “Nancy”… “Mackenzie”….. Same diff.

When I got home I dumped my cup into an actual coffee mug to rewarm it- gotta have it pipin’ hot.  Also, I am back on my avocado smoothie kick . I paired this with some oats topped with granola. I love mixing these textures & flavors.

One of my favorite snacks during the day was a brioche grilled cheese with TJ’s vegan cheese & tomato soup. Mmm. Since I still wasn’t totally up to par, this was a great little combo.

In the evening I went to School of Leadership with my dinner packed in hand. I had to leave the house at 6 to get there by 7 because of traffic (even though it’s only 15 mins without). We are there till 9:30 ish so I had to make sure to pack my food.. otherwise my hangry Hyde would come out of hiding. No bueno.

On February 20th I woke up with the same avocado smoothie. Midday for a study break I concocted a snack of purple sweet potato, an over medium egg, hummus, more avocado with pink Himalayan sea salt and crushed red pepper.

In order to clear my head in the afternoon I got a quick run in on the tread & lifted some weights. I’ve been doing short little 10 min lifting workouts every few days and am loving how much stronger I feel in general. It’s not much- only up to about 5- 12.5 lb. dumbbells, but it’s an improvement!

After, I threw together my trough salad with alll the whole garden, vegan crumbles, cheese, and tons of hummus.

February 21st I baked us tilapia with brown rice and roasted zucchini with Koop’s Arizona heat all over it. That sauce is tooooo tasty. I know it’s a bit much to just slather the whole dish with it, but it’s that good & goes with everything.

February 22nd was more Avo smoothie for breakfast and this time I topped it with some granola.

So, here’s a picture of the second floor after the flood. They had to rip out the entire carpet and flooring. I feel awful for the people that live there.. our main elevators are broken because of it now too. Ugh, what a mess.

Anywhoooo, that evening DJ and I decided on a little easy date night. There is a new spot that opened on Main Street in Cupertino that looked like a fun vibe. We decided to give it a go.

We arrived around 6:30 pm, and basically had the whole place to ourselves. I loved the interior- I’d describe it as a chic sports bar.

We weren’t planning on having a full dinner, just a drink & an appetizer. We shared a platter of their house potato chips & dip. Okay, I’m not a big potato chip person, but these were ridiculously yummy. That dip *insert drooling emoji*…. mmmmm!

& It paired well with their beautiful paper crane martini. This was a tiny too sweet for my liking, but still good- I think most people would enjoy it. I just really don’t prefer mixed drinks- Every time I try to venture out I just end up wishing I’d ordered a simple glass of wine instead– they just taste “sticky” to me, lol. but hey, it was pretty!

When we came home I made our dinner-dinner. For Deej: a Bubba Burger with french onion straws, gruyere cheese, and ketchup/mustard.

For me: fish, roasted beets, roasted eggplant, and brown rice. I was on a kick of fish that week. Also, I’ve been using the original Mrs. Dash which has been a total game changer in seasoning. Although I still have to mix in my pink himalayan sea salt 😉

February 23rd was a long study day. Then in the evening I made us another meal of tilapia, roasted zucchini, and brown rice.

Sunday the 24th we went early to serve at Church- I loved this idea from hospitality team! Bahaha. Their puns are on point.

For lunch I had some oatmeal with frozen raspberries, almonds, coffee protein powder, and Fage.

DJ enjoyed an after-Church snack of a caprese salad with pita chips, hummus, and salsa con queso. The pita chips from TJ’s are perfectly salty, crunchy & versatile- they go with basically any dip.

That evening I made DJ another burger & whaddya know I had fish with brown rice and tons of veggies (Don’t worry- I won’t post such a redundant shot).

I mixed some cauli mashed potatoes with cottage cheese warmed up with black bean burger and hummus. Sounds a bit strange, but it was reallly savory and delicious.

You know at some point tacos had to be in the mix! Caprese salads actually pair pretty well because they are so light & refreshing mixed with the spicy tacos.

I had a stuffed sweet potato with about four egg whites with veggies, hummus, and cottage cheese (most of it is under the egg), and tabasco in lieu of tacos since I was out of boca meat. It was a surprisingly great combo.

February 26th I baked up some of my PB & chocolate oatmeal protein bites to have with avocado smoothies in the mornings.

In the evening we had our last school of leadership. I have officially completed the first session! There are three total. I’m not sure I’ll be able to do all three right now, but after a little break I may do #2 in a month…. we’ll see! I really enjoyed the first round & learned a ton.

In the morning of Wednesday the 27th I had to run to the store for a few items, and looked to my right greeted by a double rainbow. Not a bad way to start the day 🙂 There have been buckets upon buckets of rain here lately that I feel like I’ve seen more rainbows in a couple months than my entire life combined.

After being cooped up with school all day, I was ecstatic to get out of the house and meet up with some dear friends from my nursing cohort. I decided to walk to Santana Row to clear my head (it’s about a four mile walk). We’d be finishing dinner when DJ left work, so he said he’d just pick me up since it’s right on the way home. On my way I saw this license plate…. ha! Love this person’s sense of humor.

I had the goat cheese and kale pizza… one of my favorite pizzas I’ve ever had. It was actually way better than the pizza I had last time I was here too. Their homemade crust is realllly well done.

On Thursday the 27th, I was out of avocados, but I whipped up a dragonfruit bowl and had it with two protein bites.

For a snack at some point I had a stuffed sweet potato with hummus, cottage cheese, and tomatoes.

For DJ I put together two gyros with meat from TJ’s with vine ripened tomatoes and tzatziki sauce on fresh pita.

Friends, Flowers & Pizza!

I am desperately trying to keep up with my recaps to present time- I’ve been preferring whipping up somewhat shorter recaps rather than crazy long ones that won’t crash your computer– which do you prefer? Here we gooooo!

Tuesday September 25th, I had some oats with stevia, better n’ peanut butter and Fage for breakfast. I’ve been having this on repeat this past week; it’s like comfort food. The tang of the Fage mixed with the sweetness of the PB and crunch of the oats resembles dessert! (I have a feeling Kori subliminally influenced this combo ; ) ).

I went for a lovely walk in the afternoon and found maybe one of the most gorgeous flowers I have seen yet on Floral Row as I have started calling it.

I also received a delivery while I was “going to school” ….A bottle of #Besties wine from Trending Wine in Napa!!! You may remember this winery from when Kels and I visited. Take a look at that link if you want more details about it 🙂 I have never received a complimentary bottle from any winery like this; it was so kind & the best surprise! You are guaranteed laughs, fun and unforgettable memories if you decide to make the trip here. There is now has a spot in SF, so you know we’ll be tryin’ that out someday!

After working up another appetite, I decided to have my stuffed purple sweet potato. Gosh, I wake up in the morning already thinking about when I can have this during my day. I crave it all the time.

Unfortunately, at some point in the afternoon, I noticed my hair had a serious reddish/pink tint to it. Not that I have anything against pink hair- some people rock it so well- but when it’s not intentional and haphazardly pink, it can look a bit funky.

I had noticed it days earlier.. and DJ had too, but I thought maybe if I washed it again and toned it, it would be better… but it seemed to have gotten worse. I messaged my hair lady, and she said to come in the next day to get it fixed.

That evening I went to my friend Sara’s house to watch our show and catch up. I got to hang with Foxy again!!! I love when Sara is dog sitting this cutie <3

I took my giant salad with me. I have started adding pita chips to my salad and it’s sooo good mixed with the hummus & adds a great crunch.

Wednesday the 26th I had my hair fixed while catching  up on e-mails…. it still has a slight reddish tint to it at the roots, but nothing too noticeable unless you’re looking for it. She offered to go darker to get rid of it totally, but I don’t want to spend another hour in that chair or another cent or hurt my hair anymore. It’s just hair!!! I’m happier with it now, but I occasionally see the pinkish red. Hunida told me it’s perfect for autumn, and I love that way of thinking!

On Thursday the 27th I did an two intense 20 minute body workouts in the morning. I usually do Insanity on my archaic super slow laptop on which it’s downloaded, but DJ took the charger we share for that type of laptop out of town with him. I decided to try out the HITT routines our apartment has in the workout studio for the first time, and they were such a nice change! I will continue to work them into my weekly routine. I was soooo sore the next day.

After, I could barely focus on my school assignments because I was so excited to get together with my closest friends from my Stanford neurosurg. cohort.

We met at Pizza Antica and chowed down on some tasty pizza, shared a bottle of wine and caught up on each-others’ lives. It was my favorite night of the week and helped lift my spirits with DJ being out of town!

I had their bianca pizza (which isn’t technically on the menu- but it used to be- and they will still make it for ya!) & added mushrooms and arugula. Leave it to me to basically get a salad on top of pizza, lol.

Friday the 28th, I officially came down with a cold. I could feel it coming on the day before right after my intense workout, but it went into full fledge I-can-barely-move mode Friday. I could barely walk from the soreness in my legs, but I also felt just so weak overall. I tried to wake up with some my new go-to breakfast and coffee, but still didn’t feel 100% after.

After picking DJ up from the airport and hearing all about his trip, I worked on a couple quizzes and school assignments before having my stuffed purple sweet potato for lunch.

He had a great time in Des Moines!! He said it was a charming city, and he would love to go back together.

In the afternoon, after DJ worked on grad school apps and I tried to get some work done, we then watched a few episodes of Dexter, because a whole week without Dex was near torture! #irony. We just had leftovers for dinner and headed to sleep pretty early.

And that about sums it up !!

Friday Favorites

Woah, woah, woah hold the phone, Mack is actually doing something semi-normal on her blog? Yes, yes. I can hardly believe it myself. I am doing a Friday Favorites post! Woot woot! I had a few things I wanted to share in the last post, but I felt like doing a friday faves would help shorten the other post a bit! Not sure if I’ll end up doing them every week; I have a problem with commitment as you know by my inability to actually post recipes when I say I will *sigh*. But nevertheless, I’ll do my best.

  1. They’re Real Mascara. My sister and I don’t splurge on hardly anything makeup wise, but when it comes to this mascara we cannot find one better. We are obsessed.

2. Banana Pancakes. This is my most recent breakfast bae. It’s so easy too- 2 large bananas//1/2 cups of oats//splash of vanilla//splash of almond milk in a food processor to get a fluffy batter, cooked like a regular pancakes, some light syrup or blueberry compote on top, and you are golden as a goose. If you are feeding more people, just double the recipe! I also like to add a bit of plain Chobani or Fage on the side to add some protein. I tell ya what, I think I could live on this stuff.

3. These socks. DJ gave me these for my birthday. Thank ya again, sugar love.

4. Homesick candles. I have seen these advertised all over the doggone place and my sister-in-law actually gave me one for Christmas! It is such a thoughtful gift! And if I had to give an objective review, I’d say it really does smell like Ohio! <3

5. Speaking of candles, this Accent Warmer will blow your “get me wine” socks off! It smells fabulous and lasts forever! I burn through candles like nobody’s business, so the length of time an accent warmer lasts is actually a great investment! The soft cashmere amber smells so yummy, and it lights up the room beautifully!

6. Thrifty finds. I loooove thrift stores. It’s like a sport to me. Ever since middle school I have loved hunting down the best deals, finding hidden gems, and paying a fraction of the initial cost. I bet 85% of my closet is from thrift stores, TJ’s, and Marshall’s. Also, I’m about as fickle as they come, so I never have to have “Buyer’s guilt” if I buy something and don’t wear it as much as I think I will. These are a few of my faves I found last week (along with my purse that I found from the same thrift store a couple months ago). Everything was even brand new with the tags still on it. The shirts are from Banana Republic and Ann Taylor originally, the shoes from Forever 21, and the purse Kenneth Cole Reaction. If you aren’t a thrifter, I highly recommend giving it a try- it’s a blast!

7. This planner. –  I have a new found love of Sugar Paper planners. I never usually invest in a cute planner, but I had a giftcard to Target and stumbled across this little guy. LOVE it!

8. & this Wine Cork holder. My friend Morgan (THANKS MO!), sent me this for my birthday. People must think I like wine or something….. Anywho, I love this, and I am so excited to get the corks glued down to hang it up! ** No judging I have collected corks since I’ve turned 21 , so it’s not that many 😉 **

9. This stuffed vegan purple sweet potato. Ok- so I know it seems I always lie about actually sharing recipes, but I will be posting this one next week. It’s too good and wayyy too easy. I’ve had it for dinner almost every day this week 😋

10. Dexter. We love our Dex.  I think it’s one of those shows that picks up over time too, each season gets better and better.

11. Working for Postmates!!!!!!!! LOVE this company and also how easy it is to work around my schedule!

A lot of my friends and family are curious how it works, so I figured I would describe it here:

  1. I signed up, submitted my info, and then they sent me a Postmates credit card and bag
  2. I downloaded the app and activated the card
  3. While working, I show that I am “Online” and when a delivery needs to be picked up, I will be notified and I can choose to “skip” or “accept”
  4. If I accept, I am given the shopping list of the delivery (so it could be a list for items at Target, a grocery store, a food delivery for pick up, etc.), and I go to the store and pick up the items
  5. When I check out, I use the Postmates credit card (This is not a personal card at all linked to my account- it strictly is a Postmates company card)
  6. I then enter the final amount in the app and take a picture of the receipt
  7. I say “Deliver to ____ (person’s name)”, and deliver to the address given
  8. Once I complete the delivery, I am paid instantly and they can choose to tip.

HIGHLY recommend if you need a side job. BUT don’t do it in high heels. I learned my lesson as I was running through the mall to pick up an order from Panda Express and ended up with blisters all over my feet. Lolz.

** Anyway, deliveries usually take less than 20 minutes, and they have “Blitz pricing” where I will be notified when rates are up! You can work literally any hour of the day, but I choose to work during the day for safety reasons. DJ is hounding me to get my bear spray for the Mountain Lions and pepper spray for the crazies that I might deliver to one day… no worries babe, Amazon Prime has my Bear and Pepper spray on the way 😉

WELP guys, I did it. I did a Friday Favorites. I have more I want to add, but I’ll wait till next time! I can hardly believe I actually did such a normal blog post that isn’t a million pages long! Wowza. Love you all and hope this weekend is extra wonderful for each of you!
