Friday Favorites #20!

Hey hey–Happy Fridayyyy! Even though I’m in school full time, & weekends are basically filled with school work anyways, there is something about the energy of a Friday I still love 🙂 Also I usually try to get most of the heavy lifting done by now so I can at least move at a somewhat slower pace once Saturday rolls around. Anyways, I have a long list of Friday Favorite items saved & catalogued from Christmas till now. I can’t wait to release them over the coming weeks 🙂 I got up early this AM to try to get a post in since I’m so behind- what is new?!

  1. This mug! How stinking cute is this? I feel so fab sipping my coffee in the morning with it! I couldn’t find this exact one, but I linked up one similar on Amazon (not quite as cute).. there are a plethora of  fun options on there though.

2. Candy Sushi!!! Yes you heard right- Candy Sushi! I first saw this at Candytopia & then Taushah posted about it. After that I just needed to try it! Okay, I expected it to be more of a novelty thing, maybe not the best tasting candy ever-  but it was all soo yummy. The little red sour gummies were my favorite followed by the gummy fish. This was too fun!

3. When I came home from SD, I had this super thoughtful card & gift awaiting me from Kate. She has just the sweetest heart!!! This lush green coconut bath bomb scent is out of this world- holy moly. Everything in Lush smells great, but this might be my favorite scent yet. AND she paired it with a toasted coconut peanut butter cup. It did not last long, lol. It was such high quality chocolate- so. stinking. good.

4. My mom got DJ and I hooked on these Icon Meals when we were in Texas! These are a great snack when you just need a handful of something sweet and also a protein boost. Highly recommend! The dark chocolate sea salt is my personal fave.

5. Norwex Envirosponge. Y’all. My mom got them for us for Christmas, and they are game changers!! They do not stink at all or have that musty scent that traditional sponges have after a few uses. Seriously do not know how I went so long without them. We have saved many paper towels by using these too. Bye bye green & yellow sponges!

6. This Lavender & Lemon Soy Candle. This was another gift that is one that is great to get, but also wonderful to give. If you read on the label, the proceeds go to helping survivors of human trafficking. Such a worthy cause, and the candle smells just lovely. I couldn’t find the exact one- but I found a vanilla scented one.

7. This video. I felt personally attacked but also laughed so hard. Trust me, worth the watch!

8. This planner below. I’m a bit late to the game posting about my planner, but it was a winner getting me through January. I’m just lovin’ it even though it’s super basic 😉 I got it for $5 at TJ Maxx!

9. The Moth Podcast. This podcast is different than ones I usually listen to, but it’s a nice change of pace. I feel like I have been kinda high-strung lately, so listening to high energy podcasts that I usually do seem to just make me more anxious. This podcast almost calms me down. The stories that people tell are fascinating, mind blowing, make you think, and bring you back down to earth. They are humbling and perspective changing.

10. Ozark. DJ and I are deep into Ozark. I think you suggested it, Kaci, so thank you for that!! We finished Season 1 last night & oh boy, is it a good show. It is extremely well done. In an interview, one of the producers said their goal was to never have a bad or “throw away” scene. I’d say they accomplished that goal with flying colors. Every single moment of the show will keep you on the edge of your seat! I look forward to watching an episode every evening with DJ before bed while eating my nightly ice cream cone, lol.

French Brunchin’ & Rome Dreamin’: A Weekend Recap

Hi Friends!!!

How ya doing?! Sooo I’ll be totally honest and say the struggle. is. very. real. Imma dive right on in. This past week/weekend have been hyper-emotional for me, laced with overwhelming anxiety. It has easily been the worst week I have had since beginning my job. The assignments have been tremendously heavy lately, and I feel like I’m barely staying afloat. Then applying for grad schools and random other things going on… I am down in the deep, deep dumps.(Well, why don’t ya tell us how you really feel)

I think part of it, perhaps subconsciously, is the emotions that come with November- the month I lost my Dad. Even though I tend to directly point to whatever else is going on in life as the source of the sadness, that’s probably a larger part of the equation than I acknowledge. In reality, this time of year traditionally does tend to bring up suppressed emotions and memories.

BUT, whenever I have been feeling down lately, taking this time to reflect and highlight everything good going on really has helped lift my spirits. Scripture, prayer, conversations, cards, encouragement from DJ and others… man, I do not know what I’d do without every little bit right now. DJ just keeps saying, “once you make it through this year, imagine how strong you’ll be”. Cue Kelly Clarkson!! (But for real… cliche quotes and songs have been my jam as of late— Whatever it takes- Imagine Dragons, Stronger- Kanye West……..).

My mom also keeps reminding me.. we are more than conquerors in Christ (Romans 8: 31-39). That is so powerful. Not just conquerors, more than conquerors.

Nope, I cannot do this alone. Not even gonna try because I’d be falling flat on my face.. but with Christ, I know I’ll make it because it is on His strength I rest, not my own. I know I should be spending this time working on my next application- but I don’t think I’m quite in the right head space for that yet. There have been some truly special memories in the last couple days.. and I would love to share them with you! (Plus blogging always gets me in a good mood- especially when I can share things like THIS…

Friday (11/3)…zoomed into Target post-shift to snatch some mint chocolate chip ice cream (the ultimate post cry ice cream) & an endless supply of Candy Corn. Anyone else stock up on candy corn for the rest of the year? ya? no? Jus’ me? Jus me & Doug?

Saturday (11/4) Deej and I had a date night at the row!! Wooohooooooo! Been a hot tick since a real date night for us. This was too fun. We decided to go to Yard House.

I even got to do my make-up for once in probably the last three weeks! Haaack ya!

DJ sampled their pork spare ribs with spicy bbq sauce, creamed corn & bbq pinto beans like the good midwest man he is.

I had their vegan burger (holy maloly) and side salad like the California hippie I am. This burger was flame. So tasty. I love how many options they have for vegetarians and vegans here.

Such a great meal and conversation with the hubs <3 We both agreed that Yard House is a tad overpriced especially for the portions.. but we also agreed that meant room for dessert!

We spent sometime strolling the Row, but the weather actually cooled down quite quick, so we zoomed back home to have cookies and watch some Parks & Rec.

Sunday (11/5) Dj went in early to Church to help with venue set up. I snatched a few extra Zzzzs and woke up for some coffee and toast with toasted vanilla coconut yogurt, chia seeds, oats, a sprinkle of stevia, and apricots.

At Church, we found out the next location our Church is expanding to is …. *drum roll* …. ROME. Yep, ROME. Our Church is only five years old…five. The audacious faith that our Pastors have is truly incredible to roll out five campuses in five years. God’s hand is so evident and revival is happening. I have no words to explain how ecstatic we are to see this vision come to fruition and to be a small part of it.

After Church, Deejers also helped tear down and while he was doing that I finished up some laundry then decided to run from home to the place we were meeting for brunch. The run is about four miles from the apartment, but I made it about a seven miler- it was such a beautiful day, a beautiful service, so I just listened to some uplifting music while allowing adrenaline to replace the nagging anxiety.

We met at Left Bank to enjoy their fabulous French cuisine on the twinkle light lit patio. It is one of those locations that provides the full experience, not just the food.

I visited this restaurant with my mom about a year ago (that was the last and only time we have been). She ordered a Bloody Mary, and I decided to try one since I knew I liked it the last time I tried one in Santa Cruz. This one was okay.. the Santa Cruz one was much better! (DJ snagged the bacon ;)).

I ordered their salmon hash (again). Last time I had it I remembered how absolutely savory it was, and it sounded like a perfect brunchy meal on the chilly afternoon. All I can say is …Délicieux!!!! Absoutely magnifique!

DJ ordered their sausage hash and downed that thing before either of us blinked (of course, post picture 😉 ). I assume he liked it.

We walked around the row for the second time that weekend (becauuuuse it’s the ROW!). We popped into their little boutiques and I saw this on a card…

I started tearing up. (Yes, I’m that friable emotionally right now… I actually took a pregnancy test because I am giving Niagara Falls a run for its money… and I’ve been uncharacteristically craving Diet Dr. Pepper – obviously the test was negative.. but that’s how crazy it’s been. Is that TMI? I’m a nurse.. there is really no such thing).

Monday (11/6) morning, I decided to try something different with my toast! I mixed in Matcha powder in my yogurt, topped it with oats and chia seeds and honey. It was pahretttty tasty.

In the morning I cranked out chores while listening to podcasts, snuck in a nice long run, and stopped by Tea Chansi on Main Street for their Boba, which I was craving something fieeerce.

In the evening, DJ and I went to our Church Group. Gosh, I haven’t been able to go in for FOREVER, and it was incredible to connect with everyone and see our friends I have been missing something terrible. These are the snacks I whipped us for us and my good friend Danielle made some out-of-this-world delicious homemade soup & homemade bread.

It was a much needed night discussing the message Sunday, our vision for our own lives, and praying over each other.

Today has been hard. I’ve been pacing, anxious, and not able to really focus. I go back to work tomorrow after a stretch off. I haven’t been productive AT ALL with my applications. I am going to just focus on getting in a good head space- go for a run, clean the house, blast some feel good oldies, and maybe just read a book. I thank you all for allowing me to be honest in this season, and also for being ever so patient with me. Y’all are the BEST <3

PS. Ya all know we keep it one hundred around here…. I put up a post last night that I ended up setting to Private. If you did read it, I don’t think I was communicating very well what I meant to. I essentially was trying to say that sometimes perception is not the reality in the nurse/patient relationship, and it may be hard to see the nurse’s heart in light of the system in place and the demands placed upon us. I honestly didn’t intend to annihilate myself, but rather, speak from the heart to the patients I wish I could do more for. I also wanted to debunk the idea of a “good” vs. “bad” nurse that is often discussed (eg. often the perceived “bad nurse” on paper actually might care more than you know). I realize it came across pretty bleak, but I wrote it with the intent to be an artistic/poetic form rather than a woeful monologue. Not one of my best articulated pieces. However, I truly, truly appreciate those that reached out and left such kind words <3. (Ps. if you want to read it, I will send it privately). Ya live, ya learn, ya blog.

A Foxy Pup, an Ice Cream Battle, & Recyclops!

Hi, Lovies!!! I don’t have a super eventful update— but as always, I want to reflect on the hum drum and find the highlights, you know, find those doggone silver linings (they are there, I promise!). First, I am SO excited to say I have officially submitted my first grad school application. It was a DOOZY. It’s (maybe) my first choice, but I am very confused about the whole decision. I’m applying to schools across the country (and many online schools that pair you with a nearby hospital). I just pray that God will make it clear where we should be. I love California; I love it so dearly, and I love our life here. But we also LOVE exploration  and when else will we have this flexibility to just get up and go (cough cough… kids…..), so who knows… but I don’t know that we can imagine leaving here yet. I don’t know! I guess we will see! Nothing will happen until next fall, so I’m hoping all things will just fall in place the way they should.

Just a little context, I’m sitting here this Sunday evening with my mint chocolate chip ice cream, a glass of cabernet sauvignon, and NYC Housewives playing on the laptop (Uhm, Aviva- take a chill pill girlfran’). I don’t have the GRE or November application deadline hanging over my head (although I have about three more coming up in November- March), but for today, we will relish in the moment. DJ has the World Series playing in the background, and things feel actually OK at this second.

I think we left off right after the GRE. I went back to work for a few days, and DJ headed to Ohio! I wish I could have went back, but work owns me. I am thankful he had such a fantastic weekend with his family, but I am honestly a bit jealous because I miss them all terribly.

On Saturday, October 21st, my dear fran Sara, (you may remember this chica from here, here, and here), stopped by to hangout and catch up while DJ was spending his last day in Ohio. We decided to go to Steins for an appetizer and a drink to catch up!

The waiter brought us the cutest little mini beer mugs to try their featured sour flavor. It was cute, but wayyy too sour for our liking. Plus neither of us are big beer guys.

We tried a recommended featured cocktail with capurro pisco (not sure what that is), but it ruined the flavor. We were not fans of this cocktail. However, their beer garden cooler was delish and refreshing. Highly recommend if you end up finding yourself here.

Also, highly, HIGHLY recommend their truffle fries- TO. DIE. FOR. Perhaps the best truffle fries ever. I think the only other ones that contest were the ones in Santa Cruz.

ANNNDDD Sara surprised me with Foxy Lady (that’s literally her name) (you may remember her from this post). I was ecstatic. I just love this pup so much.

We hung out, laughed, had an aggressive battle with a Talenti gelato mint chocolate chip pint (if you follow me on Instagram @ __mackenzie.marie__ you probably saw) and chatted until about 11 pm.

We literally wrestled with a Talenti container for probably twenty minutes. We tried EVERYTHING from knives, to rubber twist jar openers, and finally rubber oven mitts….it was a scene. Beware the Talenti.

Anywho, It was such nice, much needed girl time!!!

On Sunday October 22nd, I woke up bright eyed and bushy, but realized I didn’t have yogurt for my toast. I panicked, but no worries- there is a Target just down the road. I picked up my coffee mug (didn’t even bother putting it in a tumbler) and headed to Target to snag some yog. I know all the workers, considering I stop by there nearly every day, so they didn’t blink at me showing up disheveled with my half finished cup of coffee and zombie affect. It happens more than I probably should admit. After I was all caffeinated, I zoomed to pick Deej from the airport!

When we came home, DJ had to whip off to work for a couple hours. When he came home, we decided we were in the mood for some lunchy brunchy food. We have been wanting to try out the local Bob Evans (Aka Holder’s Country Inn). It received great reviews on Yelp, and it sounded like the perfect Sunday afternoon meal.

I had their veggie scramble with egg whites, peppers, mushrooms, salsa, and avocado. Every ingredient was immensely fresh and satisfied the craving to a tee.

DJ tried their pancakes… now, if you follow along, DJ is on the hunt for the best pancake. So far the best ones we have found in the area are Bobbie’s. They have yet to top the Bellagio’s from Las Vegas, or his mom’s (DUH!).

He also had the country fried steak with eggs. Doesn’t get more Bob Evans-ey than this, folks.

After we returned home, I decided to take advantage of the glorious day and go for a nice jog outside.

The leaves are changing, the colors are vibrant, and the weather is finally cooling its jets (it has been ridiculously hot here). When I came back home I whipped up my new absolute favorite meal. I was going to wait until a Friday Faves, but I can’t. It’s too good!

My all time favorite potato is the sweet purple white potato (purple outside, white inside). It actually has more antioxidants than a regular orange sweet potato, and I swear tastes better. You can find different varieties- some have a white colored inside, and some have a vibrant purple.

I stir fry together white onion, mushrooms, Lightlife tempeh, and eggplant with liquid aminos.

Once it’s all caramelized and the sweet potato is cooked to tenderness, I stuff the tater! So easy, so absolutely delicious, satisfying, and high in protein/complex carbs.

And the caprese salads are still going strong for DJ!

He and I have not been able to do many of the “fall activities” this year ( cue melancholy soundtrack), but I have been listening to a plethora of crime podcasts, have eaten an embarrassing amount of candy corn, and we watched Cropsey together on Amazon prime over the course of a few days. SOooOOO sort of taking advantage, yah?

I even found this wine to accompany the documentary  because it seemed appropro. DJ always laughs at how excited I get about the “idea” of something.. I like things to be themed, anyone else feel meh?! Why just watch a crime documentary when you can watch a crime documentary with CRIME wine on the heels of listening to crime podcasts in the midst of Halloween hype?! PS. Documentary was tremendous.

And I mean these socks are basically me after a couple shifts so… had to invest..

We both worked Monday October 23rd, but the 24th I picked up my bridesmaid dress for the November wedding (EEEK!!!!), and then later in the day grabbed a massage (much needed). There was a $30 off coupon online for a super nice salon in Sunnyvale. I jumped on it, and enjoyed every stinking second of that massage.

After the massage, I stopped by Safeway to pick up my Ice Cream (Oatmeal chocolate chip cookie dough….. it says limited edition but I’m convinced I am keeping them single-handedly in stock). I also stumbled upon this RXBar. Mint chocolate chip you say?!? Yesss sirrr-eeeee.

I still prefer the Chocolate sea salt, but I see they now have pumpkin and maple. Uhm, yuhm. I need to hunt those down!

On Wednesday, the 25th, and Thursday the 26th, I buckled down on my application. I spent the full days slaving over that booger. It was in-stinking-tense. I definitely needed a break to clear my head… this called for an extra long run, which turned into an impromptu half marathon. #procrastinationnation.

And on the heels of any long run, candy corn is EXTRA necessary.

Later in the day I stocked up on groceries for the next few days from Sprouts Farmers Market. This is one of my favorite grocery stores around.

In the evening, I decided I needed some sushh. It has been a hot minute!!! I went for my go-to sunset roll with unagi, ahi tuna, and lemon with a side of wakame salad and extra ginger.

I worked Friday and Saturday. Friday morning was bad, bad, bad. BAD BADDDDD. First, I was out of coffeee (nough said, right?). I drove to work early so I could make a cup, and when I checked my phone, it said my time off request for the wedding the end of November was NOT approved. A few months ago I had a face to face conversation with my manager confirming that it wouldn’t be a problem. So now.. I panicked, the anxiety set in, I couldn’t see straight. I started bawling in the bathroom before my shift. I quickly messaged her explaining I had already bought the plane ticket and told the Bride I could be in the wedding based on our conversation. I spent the whole morning sick to my stomach, holding back tears, and gritting my teeth through my assignments. Halfway through the day she e-mailed back saying it was approved, she just had to go back and adjust the way it was formatted in our system. I have never been so relieved. I cried again— tears of relief. I was a MESS. I would not have made it through the morning without the support from my family who sent scripture and prayed over the situation when I frantically filled them in before the shift began. Thank you Jesus for answering that prayer. I still take deep breaths just thinking about it.

But on a much brighter note….. .on Saturday the 21st, DJ headed to his family’s for a costume party. I was bummin’ I missed it this year. You can check out the post from last year if you would like 😉 Our costumes were certainly something! Haha. This year DJ was Recyclops from the Office! He nailed it. The rest of the family’s costumes were amazing too. I wish I could have been there to see them in person!!

Sunday (the 22nd) I accidentally slept in wayyyyy too late after working all weekend. Whoops. I can’t interact with anyone the day after working a few in a row and my body cannot physically function. I get in a fuzzy funk from the exhaustion and move the pace of a sloth. I decided to wake up my body with a run before finishing up my application.

It was perfectly brisk, with cloudy skies, and the weather finally exuded those autumnal feelz <3 I love LOVE cloudy Sundays. Sundays in the fall are the ultimate relaxing day after Church, naps, football, and candles. A cloudy day just enhances the whole experience and I feel like “gives me permission” to be lazy.

One of the houses along my run had a little garden out front and was growing butternut squash(es), squash? I think just squash. Can you say #GOALS?!

I also saw this beautiful flower and couldn’t help but snag a picture. Is it weird that I thought of a Punnett square when I saw the unusual distribution of colors?! I will always be a bio nerd at heart.

For dinner, we tried the Daiya vegan Margherita pizza. Not only does DJ love the Vegan burgers, but now is on board with the vegan pizza. He said it was easily just as tasty as a regular one.

And that’s a wrap! As I finish up this post, it’s actually morning now, I am sipping coffee, eating a protein bar and my toast, and for the first time in a LONG time I don’t have something hanging over my head for the day. I am gonna finish up my breakfast, go for a run, answer some blog comments, and read Harry Potter until my eyeballs fall out. Woohooo!!!!!

20 Things that Happen When you Become a Long-Distance Runner

1. Your tan lines are def not cute, but for some reason that tank stripe down your back, the especially awkward white thighs, and permanent socks create some feelings of pride because #commitment.

2. Weekend long runs= weekday carb load. ‘Nough said.

3. While we are on that food topic…. on your long run you think about the endless amounts of food you will then proceed to devour the rest of the day.

4. Sometimes you get lost in deep, philosophical thoughts for miles. Seriously- all the epiphanies come on long runs, but you forget them all the minute someone mentions pizza.

5. Oh, and there’s that first time when you realize there is nowhere to pee and you’re ten miles out.

Annnnd that glorious moment you get your first runner’s high, and you begin to rethink your whole life because you are suddenly convinced you could do absolutely anything you set your mind to: Starting an orphanage in Timbuktu while writing a NY Times Best Seller and getting your pHD in Quantum physics suddenly sounds feasible.

11. But then you have your beloved fanny pack/pockets/sports bra (Come on, ya know you do it too) filled with gu, jelly beans, waffle zingers, and twizzlers to get you through those last few miles. Don’t mess with a runner’s sugar supplies.

12. There’s also that moment you realize that you can actually call yourself, “A runner”.

13. You additionally start scheduling your whole weekend around your long run.

14. Oh shoot, and then there are those times people ask how many miles you run each day, and you panic, because A. There is no set number per day and B. You are nervous you will eventually have to explain that F word: Fartlek.

15. After 100 cobwebs, 20 mosquitoes, and calves full of mud, you finish up that trek feeling like the nature warrior you are.

16. When folding your laundry, your running clothes greatly out number the “normal person” clothes because you also wear your running clothes even on days off. Did I really wear all sixty-two of these sports bras in one week?!

18. And we all know when you see a someone else with the same pair of running shoes you use, or even the same brand, you automatically know they are probably a really decent human being, and you want to be their friend.

I Accidentally Stole From Target & Other Recent Happenings

HOWDY! Excuse me while I unleash my good ole’ southern side (I just booked a quick four day trip to Dallas in August!). YEEHAAW. My schedule only comes out about three or four weeks before, so I’m doing all my planning last minute, but I’m learning to navigate it.

I’m thrilled to tell ya’ll that things are getting mucho better. I think after I wrote my last big nursing update post I began truly coping. I’m able to sleep through the night most nights without taking an absurd amount of melatonin, and I am able to separate work from home a bit better. I actually have some energy outside of work and am becoming motivated to start, idk, do real people things, besides sleep on my off days. I’ve still had days that would consume me at the beginning, but now I try to just see them as a learning experience. I feel that I am contributing more to my patients’ care too. One of my patients was just a bit too drowsy for my likin’ and had sluggish pupils. I let the doctor know, and when they did the CT scan it turned out he did have a re-bleed in the brain. As much as I wish these types of complications didn’t happen, it was incredibly rewarding to feel like I actually made a true difference for a patient. I still have an infinite amount to learn, but I don’t get nauseous every single day walking into work. I’ve actually had a few times where I’ve been somewhat excited to go back in because I knew I was getting my same patients back from the prior day! This turned corner is all, 100%, due to the tremendous support I have received in the last couple months and spending time in God’s Word has truly helped change my perspective. I don’t think I could have survived the first three new-grad nursing months from h-e-double hockey without you all, DJ, my family, my friends, and other coworkers. It sounds supes cliche, but it’s the truth. I have just a couple months until my probation period ends and I think I might just make it, guys! Then I will officially be a Clinical Nurse II! Just gotta keep peddlin’ on. (I needed to work in this photo somehow).

Also my coworkers have jokes… I walked into this when I worked last Sunday and found it hilarious.

When going through my Camera roll as of late I noticed two things. A. All I do is take pictures of food. and B. I make some weird crap. But I swear, it’s delicious crap.

Ok, exhibit A….

I decided to try a portobello mushroom cap stuffed with baked tilapia, blistered tomatoes, hummus, kalamata olives and seasoned with Za’tar. I had a side of quinoa & brown rice. It turned out crazy good. I made it the next day. DJ really enjoyed it as well and commented how good the house smelled when it was all cooking.

I also have been craving tofu lately! Last week I made a medley of roasted veggies, vegan turmeric cauliflower mashed potatoes, and pan roasted tofu with tomatoes.

I then bought giant collard green leaves and stuffed them with the above plus a dollop of hummus.

Last Monday (7/10), I finally FINALLY was able to see one of my girlfriends, Sara. Our schedules haven’t been lining up lately, but they matched for once! DJ had to work super late that night so it made for a great impromptu girl’s night. I still had to work on Tuesday, but not until 2:30 pm, so I didn’t have to go to bed at 9 pm. She came over and we watched Bachelorette, sipped champagne, and ate cookies & chocolate. It was sooo needed.

Tuesday (7/11) DJ and I worked our toosh’s off, but Wednesday (7/12) we both had the same day off! *GASP*. The same day?!? Yes, yes… I know it’s hard to believe, I was looking for the pigs flying overhead too. We were both pretty exhausted from the day before and decided to just take a chill day. We started our morning with a breakfast at Bobbie’s Cafe. This is a staple breakfast place in Cupertino. It’s your typical mom-and-pop dive with great staple breakfast options, phenom service, and friendly folks who appear to frequent the diner for their morning cup of Jo and side of eggs.

DJ says Bobbie’s pancakes are some of the best around here. I tried them, and definitely concur. I say they taste similar to Heidi’s– light but full of flavor.

In the evening I made DJ a pepper jack crusted chicken with a sprinkling of pita breadcrumbs and pasta. For myself, I ate a collard green/cauliflower/veggie/hummus/tofu whatever-the-heck you wanna call it wrap.

Since we graduated our FACC series class, we are only having one class with our Cohort every couple of months. We begin our research project in September. Eeeek! I am too pumped. I already know what our topic is gonna be, and I’m nerding out hard core.

They surprised us Thursday morning (7/13) ( with the most gourmet breakfast! I quickly snuck a picture when no one was around 😉 ) #DOITFORTHEBLOG.

It included all kinds of fruit and bagels with cream cheese, capers, and smoked salmon. I told one of my coworkers that every single tear in the last few months was worth it for this very moment.

After a long week of work, DJ and I set out to Oren’s Hummus shop on Main Street lateee on Friday night (7/14). It was a super spontaneous date night, neither of us thought we would be home as early as we were (I actually got out on time!).

If you want the run-down of Oren’s, go here, such a throwback post. It’s one of our all time favorite spots, and they have some of the best hummus in the whole wide world.

For an appetizer, make sure to order their original hummus with a side of whole wheat pita. Greatest life decision, I promise.

Funnnnnyy story: We stopped by Target afterwards to pick up a few groceries and a card for a friend. I picked out the card and walked around with DJ for the rest of the food he wanted to pick out. When walking back to our apartment, I realized I still had the card under my arm and hadn’t paid for it. I FREAKED out, classic “me” mode, and started sprinting back to Target hollerin’ to DJ, “I accidentally stole it!” When I looked to my right there was a Sheriff stepping out of his car in the parking lot. I dived into Target half expecting him to chase me. I’ve always loved the show Cops, just never expected to be on it. Nothing ended up happening. I walked up to the cashier and explained what happened, they couldn’t have cared less, but I clutched that receipt ready to explain myself as I left the building!

On Saturday morning (7/15), or any day I have off, you can almost definitely find my in my lil’ egg basket. I just swing, swing, and swing while enjoying my coffee, avocado smoothie, and oatmeal chocolate protein cookies. It’s hands down my favorite part of the whole day!

DJ and I both had Saturday off too. DJ played some basketball with the guys in the morning and I went on a nice, loooong run. We also snuck in a few episodes of Game of Thrones and before we knew it, it was dinner time!

DJ suggested Mod Pizza. How I haven’t been here yet is beyond me. They have them all over the US- anyone tried it?! It’s basically a subway for Pizza and it’s amazing.

The crust/sauce/and topping options are endless AND they are reasonably priced. Around here that is a BIG deal. (literally). SUNS OUT, PUNS OUT.

Deej ordered a Chocolate Milk Shake- I tried a sip. If you are a shake lover, you should definitely order one of these. Wowza! It was sweet, but the chocolate flavor was sending me into a whirl like the Cuckoo bird in the Coco Puffs commercial.

I did a Mini-Mod with red sauce, all the veggies, and fig balsamic glaze to top it.

After we devoured every bit of our pizzas, we headed to the Row to be out and about (like I said, I’m beginning to turn back into my old self a bit more!).

The parking was super limited on a Saturday night, so we had to park on tippy-top of the parking garage. We didn’t mind though, the view of the Sunset was perfect, and we made it just in time!

On Sunday (7/16) we went to Church. It was one of the first Sundays since starting this job that I actually had off and could actually go. It did something good for me to see all my friends. I missed everyone so doggone much!

After I did a quick grocery trip. I love grocery shopping- I just put my headphones in, listen to a podcast, and stroll the magical Safeway aisles.

In the afternoon I meal prepped a bit- cutting up veggies, getting meats ready, yada yada yada, and then I made my faveeee oatmeal chocolate chip protein cookies. I cannot get enough!

DJ has been asking me lately to make the Dixie Stampede soup. Dixie Stampede is a Dolly Parton owned show/restaurant in a few locations. DJ went with the basketball team in college to the one in Branson, MI, and came back raving about the soup. I whipped up a big ole batch that lasted all of three days.

It is currently Wednesday (7/19) after working Monday and Tuesday. Today I am going out on a long run to catch up with podcasts and then I’m not sure what the evening holds! Tomorrow is pretty busy though, I’m excited to share all about that in my next recap post. Now that I’ve downed basically an entire jar of PB2, I’m off to run and soak up some beautiful sun! A Super Quick Update!

HEY YA’LL!

Long time no seeeeee.

I have a sweet & short post about what we have been up to lately (well, relative to my other posts) . I received a text from my mom yesterday saying she was concerned since I haven’t made much contact with anyone the last week or so. NO WORRIES- all is well & good just busy, busy.

It reminded me that I haven’t updated the good ole’ blog baby in a while. I need to write an entirely separate post soon about what I have learned this past month in regards to nursing, faith, and dealing with some intense emotional battles. It’s been nothing short of a glorious, ferocious, awful, and beautiful rollercoaster.

That will come soon… I travel to Pittsburgh this weekend so I’m thinking the flight may be a good time to unravel that one.

But for now, for all our friends and family that are all, “How the heck are ya, where the heck are ya, and what the heck are ya up to?!” … this is my response!

I graduated from the FACC series class last week (Foundations of Acute and Critical Care Training). That means wayyy less online work, aka less free time sucked up, and more consistent 36 hour weeks in the hospital rather than sporadic classes mixed with shifts. HALLELUJAH! I learned so much through this series and while it was a major time leach, I am incredibly grateful for all I learned.

. Hahahahha. I know it’s bad, but I couldn’t help but share. Our FACC leaders definitely have a good sense of humor (which I have learned is entirely necessary in nursing).

DJ’s doing amazing at his job working with the SJ Giants in marketing. I admire him beyond words with the way he has handled this job and the integrity with which he also handles the challenges. He has been an outstanding leader in our small group through church as well. Unfortunately, I haven’t been to our small group because of work, but DJ has been leading a good deal of the sessions. I am just thankful I have him as my rock as we go through this hard, hard year.

We both are in such similar places of navigating the season of NEW. New jobs, new coworkers, new schedules, new responsibilities, new frustrations, and new memories! We still hardly see each other but soak up every second when we do.

Many evenings I get home and go straight to sleep after a 12 hour shift, and can’t do much the night before a shift considering I have to get up at 4/4:30. But some nights when I don’t have to go back the next day I try to just soak up that alone time.

One of my favorite ways to enjoy those quiet evenings are in my feng shui hangout eating sushi, drinking some wine, and reading or watching a reality show. Call me basic if you wish, but these sushi rolls are ANYTHING but basic.

A place near our apartment called Azuma can be delivered through GrubHub. I oscillate between the 49ers roll (eel, avocado, and other assorted fish), and the sunshine roll (lemon, tuna, eel, green onion, and avocado)…. with brooownn rice. Brown rice adds a texture and heartiness to the roll that I love.

It’s all so delish. Probably the two best sushi rolls of my life. But I have a problem. When DJ and I went through the budget/spending this month I embarrassingly replied “Sushi” when he asked what each purchase on my card was from. Whoops. Girl’s gotta eat. #sorrynotsorry. #sushinotsorry.

Speaking of eats! Here are our other recent ones..

I have been LOVING my turmeric cauliflower mashed potatoes with black bean burgers, hummus, and parmesan asparagus. You know I get on kicks, and this is the most recent! I also love topping it with basil.

Flat-out pizzas are always a good go-to. If you’ve never tried a good flat-out pizza, it’s definitely worth a try- especially if you are a lover of thin crust pizzas! Each flatbread is only 100 calories, and then I top with vegan cheese, tomatoes, basil, and oregano to make a mean vegan margarita.

It’s also been a while since I’ve made Indian. When we lived in our Toho in Indiana this was one of my favorite meals to make! DJ loves it too. For myself I make a vegetarian version with dosa, idli, and tons of curry laden veggies. For DJ I make chicken tikki masala with jasmine rice and naan. Who doesn’t love naan?! If you don’t know what naan is, you don’t know what life is, so please stop reading this and go try some naan.

Alsooo, I may have casually ordered a jillion gallons of PB2 on Groupon. It was a steal!!!! Pb2 is so dang expensive, so when I saw this Betty bargain steal I had to jump.

Ok, ok you caught me. When going through the budget and spending it goes like this … Sushi, sushi, PB2, sushi, overage data fees while blogging about sushi and PB2, sushi.

I’ve also been running a ton to deal with my stress. Lately I’ve been listening to podcasts rather than music. Just wait for the next Friday Faves, folks, and I will divulge some of my loooves. Anyone have favorites out there?!

Last Thursday I got my hair did! Wooohoo!!!! The roots were so bad. I am in the wedding Saturday, so I felt like I had to be somewhat presentable for someone else’s forever wedding photos.

After getting the roots all touched up and a nice (MUCH NEEDED) trim, I was craving me some boba. Luckily, next to the Aveda salon on Santana row there is an amazing Boba shop It hit.the. spot. Especially because it was way too hot that day. Raise your hand if you love boba?!

FINALLY one of DJ and I’s days aligned for a day off last Friday. We started our day off by sleeping in until the cows came home.

Then I was craving boba, … so… boba.

We also decided to try out Game of Thrones. Holy maloly- it’s entralling! Does anyone watch? Yes, it’s pretty dang explicit, but I know most shows are out of the gate to get more ratings. The story line is just insanely good. Any thoughts?! We love it.

For dinner we tried the newest addition to our little Cupertino downtown- Stein’s Beer Garden.

I loved the feel. It was beery unique! There is a literal wall lined with faux foliage in a modern, industrial environment.

The staff was super friendly off the bat. While there was a bit of a wait, it was worth it.

We started with complementary pickled veggies in a jar. I don’t know why more places don’t do this! It was such a great mini app. I didn’t even miss the typical starter bread (GASSSSPPPP!).

I’m not big on beer, but felt like I should at least try one, considering it’s in the restaurant’s name. The only kind I really like that I’ve tried are Sours. Their Mango Gose was surprisingly refreshing with the meal I had!

I tried the roasted beet & smoked salmon salad with arugula, chevre goat cheese, and spiced pecans. It was fantastic! (Also- PS. I just have to tell my Aunt that she would LOVE this place, it’s so up her alley, so ya’ll need to come back soon!).

DJ tried the Yucatan Pulled Pork Sliders with chili paste marinated pork shoulder with chipotle aoili chicharon, cilantro slaw, jalapeno, and roasted tomato salsa.

The rest of the night we flew through a couple episodes of GOT, then we both worked all weekend.

Fast forward…

It is currently Wednesday evening, I’m on the heels of 4- 12 shifts nearly in a row. I’m not sure my mind is all here and this post probably has a million errors haha. I’m haphazardly watching bachelorette and realizing I have a million things do before 10 am tomorrow. Oh well. It will get done, it always does.

I leave tomorrow for Pittsburgh and don’t return until Sunday. I plan during that time to catch up on blog comments and your blogs too (although, I’m not sure the 7 hour traveling day in the air will have wifi?!)..

Monday is back to work and then I won’t see DJ again until Tuesday, but he works most of the time too. Also- my best friend’s baby is due this week, and I can hardly stand it. This time of life is wild, and hard, fun, challenging, and rewarding. I know we will look back on this year and see it as one of the most transformative for the both of us.

Life Lately: Skating into 2017 with a Few Laughs & Vegan Eats!

Well whaddya say? Time for an update?!? I haven’t done one in the New Year, so I probably should get on thatttt before it’s 2018.

First though- THANK YOU to everyone who stopped by the Birthday Meet & Greet! Ah, it was so fun making new friends, chatting with old ones, and hearing some super interesting birthday tales too! I hope you all had fun 🙂

Also- I have been a SLACKER lately on responding to blogging awards. Man oh man, I can’t tell you how much they mean to me. I have been meaning to sit down and respond to them, but I am a little big time behind now. I would love to do something special in the future though 😉 Wheels are turning! Time for an update! 

SO. Let’s see here. Welp, I made a post last week about the Daniel Fast that DJ and I are doing with our Church. I ended up putting it back in drafts for now because I want to be able to link the recipes for all the meals with the post! So I promise that will be going back up soon 🙂 He is all in on it, 100%, I’m doing a modified version, and won’t chat too much about it, but if you are wondering why our diet looks slightly different (*cough cough*, no sushi), that is why!

Here is a quick little snapshot of the week’s eats!

The first week back from traveling I ran all around town to stock up on groceries, necessities, organized for the New Year, cleaned out house, watched football (DJ more than I), and wrote thank you cards!

We also finally took down our Christmas tree last Sunday :(. It was time. *Sigh* Also, our apartment has a regulation that it had to be down by last week, so I milked that time frame for all it was worth. Otherwise I would have tried to keep the critter alive until Christmas in July.

I have been applying for jobs, going to hiring events, working on 5 behavioral interview questions per day, and I even went shopping for big girl interview clothes.

Think I can fool them? I came home after this hiring event and put on the TV, which happened to have the news on. I started chopping vegetables up for dinner and I had a moment of epiphany.

Reflecting, the event went well, but they had far too many candidates to do all the interviews in one day. They collected our resumes and said they would be giving calls back soon! *FINGERS CROSSED*.

Segue without a segue:  I’ve tried lifting more weights since the New Year! So far, I’ve lifted.. *thinks to self* one….two…….. TWICE for about 15 minutes, so…. progress, yah?

I also FINALLY ordered new running shoes and inserts. Yes, yes, I know you are supposed to swap them out every 300-500 miles, and I haven’t changed them since last May. Big whoops. Better late than never?! I HIGHLY recommend trying out these shoes if you have shin splints. However, everyone has a different step/stride/foot, so go to an expert at a running store to fit you for your personal needs! These little guys are Brook’s Ghosts with Berry Inserts. When I was in high school I had horrible shin splints to the point where I had bruises on my shin bone. It was painful to even walk. Once I started using these with the inserts, they went away and have not returned!

DJ also got me these for Christmas for cross training, and I am in love. They are Nike Zoom Elite 8. I love them for cross training because they offer tons of support, but are also pretty light!

Although coffee is not technically “DF” approved, I’m doing a modified version, and still having a cup each day as I go through behavioral questions. Especially in nursing, behavioral questions (situation, action, outcome/result) are HUGE in interviews. It’s been a good time for me to reflect on my previous clinical experiences, read through old clinical journals, and remind myself why I love this profession so dearly.

THIS IS NOT MY ULTRASOUND before anyone has a heart attack. Hahah. I won’t pull another “Our family is growing” on ya. But I did want to share this little peanut up here. One of my best friends since middle school, Clair, is pregnant and having this little bundle of joy in July. She calls me “Mo” so when I received a call from her a few months ago saying, “How do you feel about being Aunt Mo?” I was ecstatic. I asked her if I could share this with you all and she was happy to! She is having her big gender reveal on the 29th which I am devastated I won’t be able to make, but at the same time I am super sure it’s a boy, so I don’t think a reveal is entirely necessary 😉 I am ADAMANT that baby is a boy. What is your guess?!?

In light of how random and non-sequential this post is… next topic….

The rain here has been NON.STOP. I swear we take the bad weather with us wherever we go! But Cali needed it, so I guess it’s a good thing!! I also don’t mind rainy days, especially when I have a decent amount to work on inside… or when I want to be incredible lazy (so basically one end of the spectrum or the other). I savored working through my interview prep most of the week in Peet’s with a cafe au lait and the rain falling outside.

BIRTHDAY WEEKEND RECAP

Friday

Time to dive right into this past weekend’s birthday recap! WOW. It was a lot of fun, but unconventional from usual bday celebrations (which traditionally include Indian food). I spent the morning enjoying a nice, long run outside in the SUNSHINE! It was the first time the sun shined in a couple weeks like that, so I took full advantage.

With the fast we had to get creative for a “birthday dinner” and also for the rest of the weekends festivities. BUT we figured it out— with a little fasting compromise 😉 I was a tiny teensy bit emotional, missing my friends and family from back home horribly, but I was thankful I had Deej by my side. My friends out here and I are planning on doing something big in February to celebrate a few of our birthdays after the fast is over!

First, we went to Santana Row in San Jose to walk around, peaked in a few stores, and ate dinner.

Real quick, I just have to mention this experience at Urban Outfitters. I’ve gotta say, I know I’m not always in on the latest and greatest styles- but some of these men’s clothes now-a-days confuse me…  Like this….

I call this one, “Pay 35 dollars for someone who accidentally used bleach in their laundry” Or “I wanna be tie-dye, but I’m not sure”

This is my next personal fave… now, you can actually purchase farmer Joe’s beat up overalls with a beat up hat, and it’s all the rage 😉 Don’t try this at home though kids, make sure you pay and arm and a leg for it… like this mannequin.

Oh wait, I lied, this is my personal favorite… the guy who borrowed his sister’s skinny jeans, and the giant GUESS logo on their shirt. Okay, okay.. I know that “GUESS” is a brand, I’m not that fashionably inept, but this man may confuse some old ladies out there… I can hear them now, *In cute Granny voice* “Johnny, what is it I am supposed to Guess? I’m gonna guess that you stole your sister’s pants and that your jacket is an interesting color green and two sizes too small”…..

OPE! We found the sister. Johnny should really give her the pants back, not a good look in public. Then again we do live in Cali where anything seems to go..

But in all reality- I’m sure whoever buys those clothes pull them off well! I don’t know the first thing about men’s fashion, so please do not be offended by my… bewildered evaluation, shall we say.

Next stop: VeggieGrill! Oh how I loved this place!

EVERYTHING on their menu is vegan. How great is that?! It *almost* fit into the Daniel Fast.

DJ ordered the Seoul Bowl with chargrilled veggie-“steak”, korean super grain + rice mix, gochujang sauce, carrots, house red onions, cabbage, arugula, scallions, sesame seeds. I had a bite and it was so good! Not sure it could pass as a real steak, but it certainly gave that savory meat flavor. DJ thoroughly enjoyed it!

We also shared “Buffalo Wings” served with celery and vegan ranch dressing. They were out of this world. I haven’t had a chicken wing since my freshman year of college and these really gave me a wing fix. SO GOOD.

For my salad, I ordered the Banh Mi with glazed tofu (although it came breaded, which I wasn’t expecting, but still tasty), chargrilled eggplant, carrots, white cabbage, cucumbers, daikon, fresh jalapenos, basil, cilantro, mint, and kale. I ordered the sauce on the side AND a “crab” cake which was also 100% vegan, but you could have fooled me! The thing I miss the most on the daniel fast is probably fish, so I was surprised (and excited) at how well this imitated it!

Ok… ok. Totally breaking all the fast rules here, but it is sorta birthday tradition to get one slice of cheesecake from cheesecake factory (I’ll add a day to the fast 😉 ). DJ did not indulge, just to clarify. I tried the white chocolate macademia nut for the first time and it was OUT of this world. Anyone have a favorite flavor? The one I still want to try desperately is the lemon meringue, but this night I was craving caramel (which is in the macademia nut). Any one have the lemon meringue? Worth it? I could talk Cheesecake Factory all day long ya’ll..

Friday night we had plans to go to a Comedy show in San Jose. We went to the location, walked in and up to our reserved seats, and people were sitting in them. Oh, here we go, I thought. Gotta’ give them the boot. I showed them our tickets and then realized our tickets were for Saturday night, not that night. With a few extra apologies thrown in for the inconvenience, we booked it out there, laughed about the mix-up, and watched Netflix the rest of the evening (We are moving through Dexter quite quickly!). We decided to give it a go again the next night for when the tickets were actually valid!

So, we’ve been wanting to go ice skating for a while, but when we tried to go in Union Square, it looked like it was “kids only” hour, so we vouched out of that. We had heard from a friend that Winter Lodge in Palo Alto was a great place to go, so we tried it out. Once again, SWARMED with youngins. Oh well, we were there, and we were determined to get our skating fix (ok, maybe it was more my skating fix, and DJ was just a trooper along for the ride).

^^Fun fact: The mirror in the guest room accidentally became a guest book, so we just kinda left it that way. Not sure what we’ll do when it’s all filled up- it’s an awfully large guest book to store. Ha!

We didn’t fall once. I can hardly believe it. If nothing else, the weekend was a success simply for that reason alone!

After skating, we walked around downtown PA for a little bit and worked up quite an appetite. We decided to try a place right on one of the downtown strips called Nola. I had heard of this place before from several others, and then another SF blogger, KB, did a write up on it. I noticed they had a vegan jumbalaya that appeared to be DF approved, so we decided to try it out!

I LOVED the ecclectic, cultural fusion that this place vibed. It is unlike any restaurant I have ever been to. It’s menu has just about anything you can imagine from chicken and waffles to gourmet skirt steak. You could classify it as mostly Cajun/New Orleans cuisine. It was fantastic. We will definitely be going back to explore more of their menu. Plus the service was OUTSTANDING.

We split their vegan jumbalaya with the sauce on the side and savored every nibble. This had roasted confetti cauliflower, brussels sprouts, and butternut squash, procini & button mushrooms, roasted tomatoes, crushed garlic, cajun spices, and scallion rice. We ordered the sauce on the side. It was perfect for a slightly chilly day and filled us right up, even with splitting it.

We also split their Garlic Sauteed Green Beans (they were ok- I think a bit al dante for our liking). We also split their steamed vegetables which were super yummy.

We headed back home for a short while to watch some football, then headed to Stage 4 Improv in San Jose. We actually had the date and time right this time 😉 Unfortunately, we were comparing it to Four Day Weekend in Fort Worth, so this didn’t really hold it’s own. But it did warrant a few giggles. Improv can be tricky too depending on the type of night the comedians are having… I would give the show a second chance, as they did receive five stars on Yelp!

Tonight is BACHELOR! Ya’ll know where we will from 8-10 pm tonight. Except, I can’t wait till we can start up the tradition of wine, cookies and chocolate milk, and ice cream for bachelor nights again in about a week!

Happy New Year from Mack & DJ (A NYE Weekend Recap in SF!)

HelllllooooOOOooOO everybody! I have a short (ish) post for you today. Which many of you would be skeptical of unless you saw it with your own eyes… So, hey, guess you’ll have to come in and see for yo self 😉 I missed my calling as a sales woman. I realize.

After DJ and I arrived back from Ohio, we tried to adjust to the jet-lag, unpacked (there is always wayy more laundry than you bank on), ate Subway because we were craving us some subs, and watched Dexter.

On Friday, December 30th, Annie (you can get the low down on our friendship here) and I decided to have a girllzzzz night in SF. As much as she is our fave third wheel, (or maybe Deej is the third, not sure), DJ is incredibly supportive of girl time. It’s been a while since we’ve seen each other, and with the next few months being crazy and unpredictable, we decided to try to squeeze in hanging out one more time before the new year dawned.

Driving into SF that night was exhilarating. The sky was bright blue in some parts and dark gray in others. The contrast was magnificent! Additionally, the way the clouds roll into the city over the bay fascinates me the whole time I drive down the highway.

When I arrived to Annie’s apartment, we finished up getting ready then headed out to one of my personal favorite restaurants in all of SF. I had two “free drink” coupons from Eat/Drink SF, and it would be a darn shame for those to go to waste. Hence, girlz night.

Something I just absolutely love about Farallon is the jellyfish lounge. It is truly so unique! I give a full synopsis of this spectacular restaurant in a previous post.

Imma’ rant for a quick tick: One personal stipulation that I have for determining a good restaurant is their bread factor. I’m a runner, and I take my carbs seriously. So when I see that grainy, yummy, doughy piece of deliciousness with a pad of buttery perfection next to it, I do what any normal person does: salt the heck out of my butter before putting it on my bread. Right? RIGHT?! Ok, well DJ apparently thinks my methods are a bit strange with the salt, but Farallon agrees that salt on butter is the way to do it. And for this reason, Farallon wins sooo many brownie points in my heart

In all seriousness though… that lava salt and butter and bread was the BEST I have ever had. Sorry, Outback & Olive Garden & Macaroni Grill …. you have some competitionnnn. Now, I’m all curious– what is your favorite restaurant for bread?

We didn’t want to spend a ton (and this place is pretty pricey), so we decided to split an appetizer and entree. For the appetizer we did the Mezcal Ceviche with Avocado Mousse and Spiced Tostada. This dish was SPICEY! The avocado mousse helped TAME THE FLAME a bit. It was eye-watering, nose-dripping YUM. Yet, I feel like that doesn’t sound appetizing when I put it that way? And those spiced tostadas were like some kind of fancy schmancy Doritos.

For our entree, we split the pan seared scallops with spaghetti squash, brussels sprouts, huckleberries, & bacon (on the side).

I can say this with extreme confidence: It was the best one and a half scallops I have ever had. Yes, 1.5. We savored the heck out of that dish. Like the smallest bites you can imagine but each small bite was bursting with LARGE flavor. The combination of the huckleberries, brussels, and squash was unique, but it worked so well. If you ever go to Farallon, get this. You will not regret it. Especially if you like scallops. (But really anything on their menu is spectacular! We had some of the best food of my life the last time we were there too!).

The food was TREMENDOUS. Don’t get me wrong. But we definitely had wayy more room. So we did what anyone does right after a big splurge dinner… go to the nearest grocery store for more food.

Allow me to present dinner numero dos: Snyder’s Hershey’s Dark Chocolate pretzels, Halo Top Ice cream (Strawberry is suhh guuhhdd), SUSHI!, & wine.

Best. Girlz. Night. Ever.

On the way out in the morning I had to take a picture of this.

Is she smart or what?! I need to do this, and get that rug that says, “Turn off your straightener”!

I drove back from SF to Cupertino, did a seven-miler on the treadmill while reading Cutting for Stone (phenomenal book, btw), then got snazzed up with Deej when he came back from playing basketball. We then, once again, started the drive back to SF. Deja Vu!

I wanted to spend SF in the city, but obviously hotels in the city are already outrageously priced and with living so close it’s hard to justify paying to stay overnight. But, at the same time, it’s incredibly dangerous to drive on New Years Eve. See my predicament? Our solution: GROUPON!!!!!!!!!

A couple months ago, I found a room slashed at Le Meridian to more than half the original price for New Year’s Eve. It was so cheap we kept joking that it probably had smoke damage, or the shower didn’t work, etc. etc., but it was perfect!!!!!

It was also centrally located, and we could see the Bay Bridge from our window!

I was able to wear my wedding shoes for the first time since the actual wedding! I was pumped about this.

We had some extra time before our dinner reservation, so we put on the OSU game and then DJ graciously took selfies with me. He is such a trooper about that.

More time to kill…. more selfies… more filters… more proving that I fit into such a stereotype (eyerolllll) .** Also I need serious help in the hair curling department, I always just wand it because I can’t figure out how to curl. Yes, 22, and still don’t know how to curl my hair to this day.

Dinnerrr timeee! I was getting hangry. Poor guy. I got really upset about something random and small (and not worth getting upset about) and he goes, “Time for food!”. He knows me well.

Our restaurant of choice was Perbacco. We had a giftcard for Open Table from DJ’s birthday and hadn’t used it yet since DJ was in law school during this time. **SUCH a great idea for a gift, I didn’t even know Open Table had giftcards!** This was the perfect occasion to save it for! It was within walking distance for us which was super convenient since them heels weren’t necessarily high on the comfort factor.

They sat us quickly, but it was a bit too close for comfort between tables, & the waiting staff was not very amicable. I always try to give people grace on the holidays who have to work, because I get it! Not fun! A lot of the reviews on Yelp that I read after the fact said the same thing about the service, but that it was out of the norm for them, and usually it’s a wonderful experience. We’ll choose to believe that! 😉 Regardless, we were thankful for the time together and this meal in the first place <3

We started with the piastra roasted octopus which had olive oil crushed potatoes, garum vinaigrette, radish, and salsa verde. This was one of our favorites of the night. But, I do have to say, the Spanish Octopus from Marco Prime in Marco Island still takes the cake!

Next we tried the Marinated King Crab with citrus burricota, shaved fennel and seasonal citrus. It was good, I’d give it a 7 on a scale of 1-10.

I tried the Black Sea Bass “Alla Piastra” which had king crab and artichoke ragout and esplette-urchin butter. It was fantastic! I especially loved the large lentils.

DJ had the Osso Buco “Milanese” with braised veal shank, roasted bone marrow, gnocci, and gremolata. DJ loved it! I had a nibble of the bone marrow gnocci and it was to die for.

We usually are stuffed by dessert, but #NYE. We decided to try the dark chocolate bonet with pinot noir sea salt, sesame seeds, and crimson grapes. This was maybe the best part of the meal. It was exquisite. DJ isn’t a huge dark chocolate person, but he loved loved loved this.

After dinner we headed to Union Square. It was Lit. LITERALLY.

We sought out our NYE party that I bought us tickets to a while back…have to complete the whole experience, ya’ know? We thought it was in the Westin in Union Square (but the place we were actually at was in the former Westin). We still grabbed a few pretty pictures of the Westin lobby while we were at it. Why not?!

We then went and found our actual place (Park Central Hotel) and waited in line. Us, being the old farts we are, got there on the dime. (Don’t show up to these things on time because no one does). Aka fashionably late. It was so strange getting texts from all our family and friends at around 9 because back in Ohio/Indiana, it was midnight!!! It felt like we were stuck in the past a bit!

Soooooo we may or may not have stayed for a grand total of a half an hour before deciding we were pooped and still trying to fight jet-lag and justified leaving with tons of other reasons. We Ubered back to the hotel, got in our comfy clothes, ordered desserts, and watched Netflix. Now that’s what I’m talking bout’! I may or may not have fallen asleep before midnight … I think that’s the first time that’s happened since I was like.. eight. (BUT I did make it midnight east coast time).

DJ kindly woke me up when the fireworks started outside our window over the Bay Bridge. It was an all-time fireworks display. I was thrilled that we had such a cozy seat for the show!

Fort Worth, TX Recap!

Hey Ya’ll! Long time no chat! I am so behind on these posts, comments, everyyything- so I apologize but I will get caught up very soon 🙂 I have so many good memories to record and share. I am taking us wayyy back in time to December 15th when I arrived in Fort Worth, Texas. My mom and step dad, Pete, live there and my sister, Halston, flew in as well. DJ had to stay in Cali for work! I already recapped San Antonio, which was a weekend trip, so this post is the bookends of that weekend!

Thursday (12/15)

I woke up in the morning sick as a dog. I definitely caught whatever had been going around. DJ took me to the airport, and we realized this would be the longest we would be apart since we got married. Anyway, I comically lugged my three suitcases through the airport, unable to keep them stacked in a way that I could physically move them in unison. I’d go five steps then *flop* the one would topple over, another five steps then *flop*- I continued dropping the luggage every few feet and certainly was someone’s entertainment for the day. I honestly didn’t care, I just wanted to get through security to my darn gate. I handed off my checked luggage and was finally free from the luggage juggling circus act. Once through security, I started craving soup more than I can ever remember in my whole life. The chills were pretty bad. I walked through the airport strip and had about given up on finding soup and instead started hunting down my gate. When I was close to my gate I saw the San Francisco Soup Company and was never so ecstatic to see a soup place in all my years.

I ordered their summer corn chowder and it hit.the. spot. It took that achy chill out of my bones and made the rest of the wait bearable!

On the flight I read the latest issue of the American Journal of Nursing, wrote some Christmas cards, and used the tray table as a pillow. What do you guys do on flights?

After I landed, my family and I exchanged hugs and “Ah! I don’t want to get you sick”(s) and “I don’t care!”(s), then hit the road to head to Keller (a suburb of Fort Worth). On the way we stopped by the Gaylord Texan in Grapevine, TX. My sister’s boyfriend, Kevin, was there for one more night and we said he couldn’t leave without seeing this place. It’s quite the spectacle! It’s one large hotel, but they deck it all out for Christmas. You know the saying, “Everything is bigger in Texas”? I’m pretty sure that originated with this hotel. It’s worth a quick walk through if you are ever in the area!

They have an imitation San Antonio Riverwalk on the lower level. It’s even completed with Mexican restaurants all around it. How cool is that!??!

Once home, I was greeted by my puppy, Jade, that I haven’t seen in so long.

On Friday (12/16) Kevin left (sad day!), and I had my hair did (insert hand flip emoji) at a Lemongrass Salon by Aveda while my mom and sister shopped. I accidentally missed my appointment that I had scheduled in California (I thought it was 1 but it was 11), so my mom graciously helped me schedule this one. I still was not feeling 100%, so it was a good day to knock this out. Getting your head massaged and roots covered is a sure fire way to make a girl feel better 😉 I swear by Aveda salons for a good blonde!

Friday night mama Jill whipped up a delicious dinner!!! It was cauliflower Arancini via GreenChef, and we loved it! However, we both agree after using both services that Blue Apron is still the better of the two.

I liked using the leftover cauliflower bites to dip in hummus. They were even better the next day.

That night we went to the movies. I LOVE the movie theaters with the Cafe and Bar areas. We watched Collateral Beauty. I thought it was just OK, but the rest of my family loved it. Either way it was great family time and sparked good conversation. I won’t give a full synopsis- but if anyone has seen it I would love to hear your thoughts!

Saturday morning (12/17) We left first thing in the morning for San Antonio!!!!!!!! You can read all about our Saturday morning to Sunday evening here.

Monday (12/18) was a chilllllllll day filled with sleeping in, a workout at the local recreation center with my mama, baking Christmas cookies, and sushi for dinner. A perfect day if there ever was any! The last couple times we have been in Fort Worth have been pretty tourist packed, so we decided to take it easy this round and just relax- a word that isn’t really in my vocab too often.

At breakfast, the little stinker put on her sweet begging face. Sorry, Charlie, I like my toast too doggone much to share.

Christmas Bakin’! I wish I could take credit for any of this, but Mama Jill was the baking wizard all the way. Her coconut macaroons are the BOMB (they are the white morsels). And there is truly something about homemade rice krispy treats!

Tons of sushi from Kroger with seaweed salad and asian thai salad was on the agenda for dinner. (I know grocery store sushi may not sound super appealing, but I have never been disappointed!).

After sushi, we went over some family friends’. I met them last spring when I was in town and had a ball with them. I couldn’t wait to hang out again. Their house is the most festively decorated home I have ever seen. I think the said they have eighteen Christmas trees total? Each one is decorated with a specific ornament theme. For example, they have a Christmas tree with only shoe ornaments, another with only wine bottle ornaments, another with only santa ornaments, etc.; it was an actual winter wonderland.

Also we had carolers stop by, and they were the most precious two little girls in the world.

Tuesday (12/20)

This was lounge day round two! We watched Netflix, home videos, Hulu, and grazed all day long.

Every single night us three girls hot-tubbed, chatted, and sipped on wine. It was perfection. Pete was so sweet to encourage us to have our girl time.

The neighbors next-door just had a baby, so we dog-sat a couple times in the evenings for them to lighten their load. This video makes me belly laugh every time I watch it. It is of one of the dogs (the most lovable Pitbull in the world) thoroughly enjoying a tummy rub. Yes- that is a dog making that noise. My mom at the end of the video goes, “Why are you crying, Buster?!” *That’s the dog’s name 😉

Wednesday (12/21)

Halston, my mom, and I woke up and did Insanity in the living room. All ya’ gotta do is move a few couches out of the way and you’ve got a nice gym!!

After our big family workout, we went to brunch at Another Broken Egg Cafe per my stepdad’s suggestion. I think I thanked him at least ten times for suggesting this place, because it was one of the BEST brunchy places ever. Ugh, I say that every time, but I do mean it!

They had such a uniquely delicious selection of food, and their coffee was served in handcrafted stone mugs. Doesn’t get much better than that.

My mom and Pete said we needed to try the Beignet doughnuts. These are like the best-donuts-you’ve-ever-had and then some. SO. GOOOD. And they are served with a honey marmalade. I donut know how I have gone my whole life without them. And I donut know how I have gone so long without making an awful pun. You’re welcome.

Us girlies tried the skinny omelette which had herbed egg whites with blanched asparagus, roasted red peppers, green onions, goat cheese and roasted garlic cloves with an english muffin and a fruit dish. They seasoned it with the most palatable herbs!!!! My mom and I placed our bets on what they were, and we actually nailed it! Thyme, rosemary, and parsley. If you’ve never tried that on an omelette, DO IT! It’s extraordinary, or shall I say “Egg-straordinary”! Ok, ok, I’m done now 😉

Pete chose the lemon ricotta pancakes. He graciously offered us all a bite, and obviously I graciously accepted a big ole’ one. My sister gets mad because she says when I “try” something, I end up eating half of it. But, hey, tomat-oh, tomah-toe. You say “try”, I hear “sample half the plate”. Anyways, these were lemony ricotta-ey pancakey perfection.

Wednesday night we had the Candlelight celebration at church. It worked out perfectly because this was our “faux” Christmas Eve. Although we couldn’t celebrate actual Christmas day all together, the fact that we could go to this candlelight service definitely made it feel like a true Christmas Eve celebration. It was moving, and I love seeing the sanctuary lit up by candlelight.

When we came home we had apps while we finished up cooking dinner! The cheese was a mix of vegan and regular. I truly could not tell the difference between which one was vegan and which one was not. Usually good vegan cheeses are hard to come by, but this stuff was a facsimile; it blew my mind! We could not get enough!

Fun tip: If you need a fancy, yet incredibly easy, appetizer- try doing pita crackers + hummus + roasted red pepper + roasted onion + a drizzle of balsamic glaze.

It was nice to sit around and enjoy our apps around the gorgeous tree. It’s these moments that define the word “content” for me.

Dinner started with goat cheese “croutons” atop a salad with pears, pecans, and mixed greens. THIS. This is going to be a tradition.

Momma made ribs for Pete… yes, that whole thing was for Pete considering none of us eat meat. LOL. The girls had a sesame crusted tuna. I forgot to take a picture because I was a bit ravenous!

Dessert followed with my mom’s marveeeeelous Christmas cookies and my step dad’s famous pumpkin crunch which I am beyond bummed that I don’t have a picture of. We gobbled that thing up so quick! It’s one of our favorite parts of Christmas. It’s truly something I look forward to year round.

On Thursday (11/22) we had our “faux” Christmas Day!!!!! It was a magical morning followed by a breakfast of eggs, toast, and BEER JELLY! I found these on UncommonGoods for Pete. We had fun sampling all of them! Uncommon Goods is an AMAZING site for unique gifts for the family. I find most of my gifts here each year!

Annnnnd my stocking, as well as Halston’s, was stocked with five gum, NO COW bars (lemon meringue- the best), and Quest bars. We may have a bit of an obsession to say the least…

After opening gifts and having breakfast, I went for a nice long run. Unfortunately, the sun didn’t want to peak through too much, but it was still enjoyable. I lived in Texas in the Summer of 2015 before traveling to India, so the familiarity feels like home, even down to the running trails.

Friday (11/23) I woke up early to go to the local recreation center in Keller to get a workout in before getting ready to head to the airport. My sister had a different flight than me (a much earlier one), so she was landing in Ohio as I was taking off. This is how I caught up on reading everyone else’s blogs from the week! People probably think I’m such a crazy ellipticallyng (spelling?) with a laptop, but you’ve gotta do what you’ve gotta do!

When my mom got back from the airport, I finished packing up and then we decided we had time for one last lunch before heading out. She recommended a favorite of her’s and Pete’s in town, Devivo Bros. Eatery. It is considered rustic comfort food, but has an Italian flare! So essentially all the good things..

We split the Kale salad with fresh kale, dried cranberries, pumpkin seeds, crispy tortilla strips and candied almonds tossed in a jalapeño ranch dressing as well as the white bean tomato basil soup.

It all hit the spot perfectly, and I was so thankful for this small chunk of time we could treasure before my flight.

Beaches & Pups & Coffee Cups! ☕️

First off- thank you to everybody who popped into the Mingle & Jingle!!! I wasn’t sure what to expect hosting one, but you all made it such fun!!

So…. I am a bit guilty on not doing an update post for a while…. and you know what that means…. a loooOOOooong one! But puppies & french fries are included- so it will be worth your time.

On Friday the ….*calculating date in head*….*just kidding pulling out phone calendar*…2nd of December… I went to Santa Cruz with a friend! It was her birthday weekend, and she wanted to spend the day frolicking on the beach with this little pup! She has a childhood friend that lives there, and he let us borrow the pup for a day. We took the little guy out on the beach for a while and then followed up with lunch after!

We had her birthday lunch at a place in downtown Santa Cruz called Assembly. I wish I could say I highly recommend it, but pretty much every mistake a restaurant staff could make, they made- to a comical point. I’m not one to get my panties in a bunch about that stuff, but man, it was badddd. Their saving grace was their garlic fries with parmesan & aioli, which- not even kidding-were the best fries I have ever had. I’m not even a big french fry person! I would put up with the worst service in the world for these fries. Which I’m pretty sure we did…. haha. They were so scrumptious, I ended up getting an order for DJ too. It was one of those, “you haven’t lived till you tried this” type foods.

We sat outside on the patio, but the inside  with the antler chandeliers was just darlin’!

After our interesting restaurant experience, we walked around downtown and snuck in some cute little boutiques. Our favorite part while walking around was seeing these pups chilling in a bright yellow car, the one looking like it was in full control of the driver’s seat. This reminded me of the movie, My Dog Skip. Anyone ever seen it? I know my younger sister, Halston, will love this, since it was her favorite movie growing up!

We stopped in a little classic candy shoppe called Marini’s. It had the classic burger and shake bar and the fudge shoppe on the other side. I love these retro places <3

On Friday night, DJ and I went to Main Street Cupertino’s tree lighting. I had this marked on our calendar for the whole month. It advertised that there would be all this festive stuff to do, hot chocolate, photo booth, etc. etc., and I was so excited. However, this was probably the most anticlimactic event and/or tree lighting I have ever seen. You can take a look for yourself! LOLZ. I think it also may have been a requirement to have a little tike, because there was not a single family without kids. The hot chocolate station said, “Kids Hot Chocolate station” so there goes the best part! I joked that we should ‘borrow’ some family’s kids so we could get some of that hot cocoa. Pshh. “Kid only Hot Chocolate”. What a nutty concept, I tell ya what.

After the tree lighting, we went to a Moroccan Restaurant in Mountain View. We were craving it after loving our experiences in Dallas & Indianapolis, and this place had raving reviews.

To our great surprise, there was a belly dancer!!! Ok, to my great surprise…..but DJ… I think he was a smidge uncomfortable about this belly dancer shaking it around us while he was just trying to enjoy his beef tagine. I was just fascinated!

And I’m pretty sure the couple next to us were on a first date. They looked quite uncomfortable, and the music was turned up so loud that no one could hold a steady conversation. The man said something to the server, and the server replied, “No sir, we are not a club”. It took everything in me to not bust out laughing.

Anyway, the place was super authentic and the food was delicious!! I didn’t get good foodie pics, because the lighting was super dim. Trust meh- it was tasty.

Saturday (12/3) … I baked goodies all day long, DJ played basketball with some friends in the morning then lounged while watching sports & ending with some Netflix- it was just a perfect Saturday.

Sunday (12/4), We went to Church followed by Christmas in the Park in downtown San Jose!!!! This was another event that we forgot to bring our kids to. 😉

Mondays are usually my “get yo life together” day of cleaning/laundry/errands/pulling my hair out/etc. On Monday (12/5) night we got together with some friends and had authentic Korean cuisine! We tried the seafood soft tofu dish (left) & the vegetable tofu dish (right). They were still boiling when placed on the table. They are served with two eggs that you crack in each dish and then stir around the broken yolk. It’s family style, and each person gets a bowl of the purple rice to add whatever  side (kimchi, pickled pear, rice noodles, etc.) they wish on top! We have never had an experience like this and it was a fun endeavor! Plus it was excellent quality time with great new friends.

The rest of the week is a bit of a blur. Since the rest of December I am traveling, I had soooo many things to do and figure out to get ready for Christmas and traveling. I felt like I was living in the post office and running around like a chicken with its head cut off. I cooked dinner every night, but I don’t really remember what and apparently nothing was picture worthy. Sorry DJ!

Also… only in California grocery stores….

I don’t know about you- but I like the bread or cracker samples, don’t give me carrots to sample please, sir.

One thing that I have loved during this crazy week was the weather. Apparently, this is the coldest and rainiest winter that the Bay area has had in a while. But I love the way the beautiful leaves are contrasting against the dark backdrop. It feels very much like October would in Ohio. And if this is as cold as it gets- count me in! I’m going to be in for a shock when I go back to Ohio in a couple weeks here… Oh boy. I probably could use some prayers, ya’ll. Not sure my skin is as tough as it used to be in the tundra.

Friday (12/9) Usually Friday is date night, but we decided to take this one easy. I was also craving my cauliflower mashed potatoes with a veggie burger & DJ was craving cereal for dinner, so we deemed Saturday our faux Friday date night instead. A night of binge watching Dexter and eating Christmas cookies was certainly in the mix Friday night.

Saturday (12/10) DJ and I went to downtown SF! We have been wanting to go to Union Square for a while to go ice skating and see the big tree. It was raining when we went, but still a great memory. We didn’t do a ton, but I just love any time I can explore with him.

And about the ice skating—- we forgot our kids for that too. We ended up getting out of line because I think it was “kids only” hour. UGH they get all the hot chocolate & all the cute Christmas ice rinks. SMH. Who do they think they are being all cute and little and innocent and stuff.

We stopped in Target for an umbrella, because the rain was not letting up and I was being Ms. Cranky pants about being wet and cold, stopped in a few shops, and then grabbed a few bites to eat through the day.

For a light lunch, we stopped in Rouge & Blanc. Sounds about as fancy as it was. Their tag line was “Coffee Bar by morning, Wine Bar by night”, which is basically my life mantra, so it reeled me in.

We didn’t want to eat a huge lunch, because we were still planning on having dinner in town before leaving, so we had fries with a bernaise aioli and a prawn flatbread. I savored every bite of that prawn flatbread. I don’t know what they put on it, but it was too good to be true.

For dinner, we had to scramble! I always forget just how important it is to make reservations in the city! Thank gooooodness for Open Table. We found this french restaurant called Cafe Claude. It is super tucked away in a back alley. If not for Open Table, I would have had no idea it even existed. It felt kind of exclusive *hair flip*. We have never actually been to a french restaurant, so this menu was definitely something new to navigate!

REAL FRENCH BREAD! My friends all know I have this dream of riding around France on a bicycle with the basket of french bread. This is the closest I have gotten yet.

Deej ordered steak frites which included bavette steak, bone marrow butter, port-shallot sauce, and pommes frites.

I ordered NIÇOISE which included tuna confit, lettuce, egg, haricots verts, olives, potato, capers, anchovy, and thyme vinaigrette.

The waiter said “Bon appetite” and I realized that this was an authentic bon appetite! I may have gotten too excited about that one.

Sunday (12/11), I woke up at 3 am. I am trying to accustom myself to Texas/Ohio time because I like to get up early before everyone else to squeeze in a workout, but if I’m jet- lagged, that probably isn’t happening! I didn’t intend on getting up quite that early, but since I was up and couldn’t fall back asleep, I went down and ran on the tready and read a book on my kindle, because that’s totally normal at 3 am.

Sunday morning DJ and I helped set up at the San Jose campus, then me and a couple of my girlfriends booked it downtown SF to attend the Christmas Creative at that campus after the 9:30 service started at SJ (I won’t be here next week to see it our home campus). <– wow that was like the most confusing thing I have ever written. Happy deciphering.

Anyway-IT WAS INCREDIBLE! They presented the Christmas story via dance, song, instruments, spoken word, etc. in such a unique way. The talent was phenomenal and the whole service was so powerful.

One of my friends from Church that reads the blog, brought me this as a gift. GUYS. Best Christmas present EVER. She obviously knows me well- PEETS!!!! Dark Chocolate!!! Peppermint Bark!!! PEEETS!!!! Coffee Mug!!!! PEETS!!!!! The thought behind this touched me beyond words. So thankful for this community, I can’t say it enough. Thanks again, Tammy <3 <3 You’re a real life rockstar!

The girlies and I decided to do brunch, because… Oh wait you don’t need a reason for brunch.

We tried the Mission Beach Cafe  because it’s known as an epic brunch spot. It surpassed all expectations. If you live in the area, do yourself a flavor favor and try this place!

I personally ordered the MBC Vegan Breakfast. It included black barley-farro, a butternut squash patty, artichoke hearts, carrot, orach, roasted garnet potatos, and nettles. I don’t know what the heck they put in this, but it was heaven on a plate. We all nibbled on the french toast too- and besides Bora Bora’s french toast, this one would take the cake (or take the toast *womp womp*).

I have never ordered a mimosa before, but the pictures on yelp looked too good to pass up! We all tried grapefruit pomegranate and one of my friends did the orange pomegranate. Is “mimosa” not the most fitting name for what it is?! It just makes ya wanna say MimoOoOssssAaAaa. It was YUMMMM.

A couple last things to update:

  • I will write about yesterdays events in another post- this is long enough! Ya’ll are busy!
  • Our neighbors did stop by again (at 10 pm per usual) and asked for a Coke this time. (In the past they have asked for cilantro & lettuce in isolated incidences). What is your next prediction for what they will want?
  • I leave Thursday for Dallas/Fort Worth!! Woot woot! Blowing dust off my cowgirl boots!
