Friday Favorites #17!

Happy Friday, everyone!!! I was not planning on publishing a Friday Faves today, but I am having the worst time focusing on school this morning. It smells thick of smoke from the wildfires and my eyes are dry- it’s making it hard to read and absorb the info. My thoughts and prayers are with everyone affected by Camp Fire (and the shooting). My stomach hurts thinking about everything going on 🙁 So scary, so awful. What’s happening to us, guys? *Sigh* I didn’t even plan on mentioning this, but my heart is breaking for the pain & loss being experienced by so many.

Anyways, Friday Favorites are always some of my favorite posts to post (Did that sentence even make sense?). Publishing one always brightens my spirits, and I hope it brightens yours as well! I’m currently enjoying an extra cup of pumpkin spiced joe (it’s a three cup of coffee type morning) and am excited to share some highlights before hitting the books again. Luckily, I have the whole weekend to just focus on a massive paper I have due soon. Alrighty ! Leggo!

  1. Apple Cider Donuts from Trader Joe’s. We haven’t been great this year about doing all the traditional autumn activities, but really, all ya need is an apple cider donut (or six) to call your fall a win!!!

2. Brooks Ghost Runners  & Berry Inserts. This has been my go-to shoe/insert pairing for the last six(ish) years, maybe more! Before using this combo I had horrible shin splints. I have been fighting some serious knee pain recently, then realized I haven’t replaced my shoes in nearly five months. That’s far too long when you are marathon training. Since replacing them my knee already feels much better, but I’m gonna take it easy this week to try to let it heal up.

3. TJ’s Lightlife Smart Tenders. Oh, how I love Lightlife. Their smart tenders are just insanely good, vegan, and super high in protein.

I like dicing up the tenders, heating them up, and throwing them in my salads. For thanksgiving, I am going to eat these with gravy as my “turkey”. (Of course I’ll make a real turkey too for the meat eaters 😉 ).

4. Dang, this is quickly becoming a TJ’s Friday Fave! Have y’all tried these pumpkin cranberry crisps yet?! OH man they are good! I like dipping them in greek yogurt for an afternoon snack. Mm mm. I may need to go grab some now!

6. My sister asked me to be her maid of honor!!  After a lot of contemplation and ambivalence about my answer (jk jk), I said yes! I am so so excited. She asked me with this cute little scratch off  & a wine glass that had an inside joke engraved on it. Her wedding is next July 🙂

Although speaking of which- can you believe Kaitlyn and Shawn’s breakup (bachelor franchise reference)?! *insert shocked emoji*. Although I’m not alll that shocked. There were some signs. Okay, I need to move on. Hahah.

7. We are a bit late to the game with this one. But we are LOVING The Haunting of Hill House on Netflix. We watched the first episode and weren’t sure how we felt, but after the second one we were glued to the series. I think we may binge it tonight depending how much work I get done to try to finish the ‘sodes. We have three left!

8. This is an unusual Friday Fave- but this past week when checking out at my local Target I was chatting away with one of my favorite cashiers, and right before I left she threw a bunch of free goods into my shopping bag! I used up everything already except the lavender + sage soap (which I smells delightful and I’ll be opening it up today). I particularly loved the lemon sage lotion– yummy!  Shoutout to my local TarJay employees – y’all are the real MVPs!

Lake Tahoe Travels!

HAPPY SATURDAY!

I am so excited to share this travel post with you all. There is a ridiculous amount of pictures and detail in this post, but Tahoe deserves nothing less! I also love my travel posts to be super informative for anyone that might go to one of these places in the future. It was one of the most gorgeous places I have ever been. I tried to capture the beauty, but the pictures do not even do justice! 🌲

DJ and I discovered early on last week that we both had last weekend off (6/10). It’s the first weekend we both had off at the same time since I started my job in March. We took full advantage and planned a trip to Lake Tahoe. It just sounded like the perfect, most peaceful location to go to get away from the chaos of our everyday.

The drive in alone was a special experience. The views were awe-inspiring. With every turn, ascent, and descent, we were accompanied on either side by an endless sea of trees, waterfalls cascading in the mountain sides, and snow comfortably resting atop the vast mountains illuminated by the Tahoe sun. I half expected a greeting from bobcats, rams, and fox as it felt as though we had stumbled upon a real world Cabelas.

We had dinner arrangements, but wanted to drop off our luggage at the hotel first. I use the word hotel lightly here. With my improptu planning, I found somewhere on Groupon for dirt cheap. Ya’ll know I swear by Groupon. I haven’t had many, or any, bad experiences with Groupon. I found a place that looked decent on their site, but didn’t do too much research (A. I didn’t have any time and B. Everywhere else was $$$$$).

Welllllll—– when we arrived it was…. *dramatic pause* not quite a “romantic getaway”. The entire building was entirely dilapidated, the sketchiest of folk were hanging out in the corridors, the lobby smelled of a mix of cigarettes and mildew. I sent a quick text to DJ at check-in, “I am so sorry!”. He assured me it was fine, and we just had to see our room before making any judgement. Once we finished checking in, which took an hour in and of itself, we lugged our luggage to our room (We had to take an elevator that I was convinced was going to break under the weight of my skepticism). The whole way there I was panicking, What have I done, I thought. DJ was being somewhat optimistic, and just kept saying, “let’s just see what the room is like.” When we stepped into what I was expecting a cozy, romantic lodge with an overlook of the lake we were blasted with the most horrendous smell, a moldy bathroom, dusted furniture, and bent curtain rods with haphazard curtains that looked as though they were bought from a garage sale…. a garage sale from the fourties. I broke down in tears, not sure from emotions or from the severe allergens in the room. Our one weekend we finally had together I was convinced I had ruined. We had a reservation at our restaurant at 6:30 pm, and it was currently 6:00. We brainstormed what to do, going back and forth between staying or finding somewhere else. We finally decided that since we didn’t know the next time we would have this time together, it was worth it to make this trip something nice and decided to swallow the money.

We quickly booked another hotel at somewhere nearby and took a deep breath. Time for dinner. **PS. I hear Air BnB is a great option for Tahoe!** **PSS. One day we WILL get the full on camping gettup!**

I put on my forest green laced dress and finally had the chance to paint my nails! I don’t ever have my nails painted for nursing, but was so excited that I finally could pull out some of my favorite dark brown Zoya polish for the occasion. Naturally, I painted my nails in the car, because that’s what ends up happening 99% of the time.

I even put on my fern earrings to really get in the spirit 😉 DJ always slightly pokes fun at how “all in” I get about encompassing the idea and essence of different events/holidays/etc.

We headed to Edgewood Restaurant, which provided one of the greatest meals of our entire lives. That’s a bold statement ya’ll.

The snow capped mountain and icy blue water views alone were fabulous. I felt like I could breathe for the first time since starting my job. It was as though the earth was back on it’s axis and I could actually be, exist, in the moment.

We joked that they knew I was coming with Himalayan salt readily available, an assortment of olives, and sea salted herb and ciabatta bread. Olives, bread, and salt. OK- all we need is red wine, and this girl is set!

It was the most tremendous start to any meal I have ever had.

Next, I know most times when we go out we avoid the meat based appetizers (considering I’m pesce). I told DJ I wanted to order something that had a meat base since we never usually do. (I also mayy have been trying to make up for the minor hotel fiasco). A bit surprised, but obliging, we ordered the lamb ragu with gnocchi and wild mushrooms.

Excuse me…

I needed to go get napkins to wipe the drool off the corners of my mouth as I reminisced..  🤤 This dish was heavenly. I didn’t try must of the lamb, but the gnocchi and mushrooms alone blew me away. The flavor was dynamically savory- bringing that word for me a whole new meaning!

DJ and I both followed the appetizer with the Chilean Sea Bass over lobster bisque with fingerling potatoes. Basically all good things on earth on one plate. HOW. I told DJ on the spot this was hands down the best fish dish I have ever had.

There was a couple that was looking to get their picture taken at the table next to us. I jumped in to ask if they would like us to take it for them since the waiter seemed busy. We headed outside and chit chatted briefly. It allowed for us to grab some pictures of the brilliant sunset as well.

They asked us if we had the halibut for dinner. I excitedly said “Yes! It was SOOO good”.. I went on and on about how it was the best dish of my life only for DJ to whisper to me that we had the sea bass. Whooops. 🤷🏼‍♀️😂

When we left Edgewood, we headed to our new hotel. This one did not disappoint, not one bit. We HIGHLY recommend The Landing, voted the #1 Boutique North American Hotel, with good reason. It was absolute perfection.

I loved the detail and care that went into each room. It was unusual, eclectic, modern, and yet cozy. The fireplace was my favorite part.

Nowwww I may have created one more dilemma, which thankfully we laugh about now. I decided before bed I wanted to try to use the Jacuzzi, so while it was running, DJ and I stepped out on the balcony and see what views we could see from the room. When we stepped back in, I saw water overflowing from the tub. Then the phone rang. The front desk asked if we had any kind of water leaking. The tub literally filled in .5 seconds. We couldn’t have stepped out for more than 3 minutes. We frantically used every single towel we had to sop up the floor. Apparently it was leaking through to the room below. It was one of those moments where I didn’t know if I should laugh hysterically or cry.😂

To make it worse—- when we called back to see if it was taken care of below the lady informed us it was a bride and groom below us, that apparently were too inebriated to care at the moment, but we still wrote them a note apologizing and tried to compensate them for any issues. Maybe I was just trying to help?! Don’t they say rain on your wedding day is good luck?! Rain into your bedroom must be like the BEST luck, ya?!?

Two strikes in one day for me guys. ROUGH. DAY. 🙌🏻

Just kidding.. it was an absolutely amazing day, I simply share these mishaps because I think they are hilarious!

After getting a  fantastic night sleep, I got up a bit earlier than DJ and headed down to squeeze in an eight mile run before the festivities ensued for the day.

On our way out of the hotel, we asked one of the employees where the best breakfast spot was. He recommended Heidi’s, and if a local says this is the place to go, count us in!

This pancake house was super quaint, 50s/60s vibin’ with Christmas lights strung year round. I loved it. The line was out the door, and clearly was the place to be for breakfast. We only had to wait about 20 minutes, surprisingly.

We tried their homemade blueberry muffin and biscuit.. yurm. Not quite on Cracker Barrel level (which we have lately been craving since there are none out here).

However, this Veggie Omelette blew my taste buds away. The waiter recommended their house potatoes with onion and garlic- I understood why quickly- suh guuuuud!

DJ ordered their short stack and said they were some of the best pancakes he has ever had. He is always on the hunt for some doggone good cakes, but it’s hard to find ones that he loves! Soo for him to say these were some of the best was both shocking and demanded that I try an obnoxiously big bite nibble.

They were light and airy, and yet full of buttery, sugary, and delicious flavor. I agree- some of the best! Also makes sense why they deem themselves a pancake house!

After breakfast we headed to Eagle Falls Trailhead to hike and soak up some views. There are endless trails to go to in the area, but EFT seemed decently close to us (about a twenty minute drive) and had good reviews.

After passing a renaissance fair (which I hard core tried to convince DJ to go to with me, but it was a no-go…. not even the lure of giant turkey drumsticks could get him to go, darnit)… we scoped out for a place to park the car.

Parking was a boogar, but we lucked out and found some right near the trailhead after searching for a few minutes.

We had a blast exploring. Being in nature is 100% relaxation time for me. I love getting my adrenaline up with climbing and jumping through the cliff sides, over waterfalls, and feeling like a child again, exploring the earth’s crevices- the most magnanimous playground.

We were wrapped by the chilling, yet soft, breezes that at times carried snowflakes. I haven’t seen snow in wayyy too long. I thought I would never miss the cold moving out here, but the cold brought me solace, and I absolutely relished in it.

After our wilderness exploration, we decided to explore the downtown area as well. To start off, we needed to refresh with some throwback sodas from the Old Fashioned candy store- Rocket Fizz (love that place. I always have to stop in when I see one!).

I adored all the shops and downtown stores. DJ and I had fun perusing the boutiquey stores, art shoppes, and became quite inspired for Christmas gifts in this year to come.

There was live music playing always within ear shot, and chair lifts occasionally would fly above our heads. I can’t imagine what this is like in the winter! I also love that the city seems to keep up it’s Christmas lights year round. It felt like we reverted back in time to a little Christmas vacation with the chill in the air, the lights, the chair lifts, the lodgy hotel, and the magic of the snow capped mountains.

After exploring little downtown Tahoe, DJ and I went back and snoozed for a couple hours. We were exhausted from the early start and hike.

It felt soooo nice to turn up the fireplace and take a NAP. Guys, I cannot remember the last time I actually took a nap. Seriously, I cannot remember.

In the evening, DJ and I took off to go to a Wine tour.

Funny story… when the Uber dropped us off at the pier from Google maps, we could not find where we were supposed to go. I watched the clock tick closer and closer to our departure time. I started freaking out and when the time hit ten minutes to departure, I went into full on panic mode. I just looked at DJ and realized we could not find the pier and I took off in the only direction we hadn’t explored. #FLIGHTORFIGHT. Literally- I was running in the opposite direction like a chicken with its head cut off. In the meantime, DJ kept his cool, called the boat, and found out exactly where to go. As I was in my dedicated sprint, I called the same number hurriedly.

Me: “HI!.. My husband and I booked a wine tasting tonight, and we can’t find the pier, and I know we are supposed to be there now!”……

Staff member: “I think we just spoke to your husband, are you by him by chance?

Me: “I am running back toward him right now”

Staff member: “Ok- see you two soon!”.

Lemme jus say- DJ gave me a hard time about that one. Heck, I can’t help it- I’m a runner. When I don’t know what to do, I just run!

We boarded the intimate Golden Rose. There were three other couples with us, two from NY and one from Redwood City, CA. We actually ended up exchanging numbers at the end and are potentially grabbing some dinner together soon!

The wines we tried were phenomenal, but even more intoxicating were the serene views of the lake.

The rainbow clouds, mountains, and eagle nests all in one landscape were unlike anything I’ve ever seen.

Just hours before we were looking down on Emerald Bay, and now we were actually on it!

We packed cheese, crackers, and hummus as we floated along.

Naturally, I was convinced we should move here. I inquired about the nearest hospital in our Uber. I am still pushing for it… *cough cough, hubby*….

After the tastings we had to have some good dessert. I did some serious research and found that Riva Grill had some flame options.

We stopped by and placed orders for some insanely delish cheesecake and deep fried oreos- Hello all things good.

We ended our evening with the hottub, which luckily we got to ourselves. I think most people headed home Sunday night because it seemed pretty quiet come Monday.

In the morning I ran a quick 9-miler and then we headed to the Driftwood Cafe, a notoriously yummm place for brunch.

I ordered their veggie omelette with parmesan and sprouts on top with cottage cheese and their bran blueberry muffin on the side. It was the quintessential hearty & heathy breakfast.

DJ ordered the Carolina Connection which included two potato pancakes topped with grilled ham, two over-medium eggs, and country gravy served a buttermilk biscuit. I tried a bite of the gravy which was annoyingly good.

Let’s just say we both left with beyond satisfied tummies.

And then it was time to head back to the real world. This trip gave me the rekindling and energy to move forward. I needed this time desperately with DJ and feel even closer to him after this trip. It also helped put things just a bit more into perspective. Life is still good. I can’t wait for the next time we can explore the world together.

Friday Favorites #4!

It’s FRIYAY, FRIYAY, Gotta get down on FRIYAY!!!

It is 9:00 pm, I am home from work and happy to report this week was SO MUCH BETTER!!!!! I can’t tell you how IMMENSELY encouraging all your comments and texts were from my last post. It truly changed my whole disposition. I went in with a determination to face it all head on, learn what I could, and forgive myself (I think that was pivotal). And although I have endless learning and experience to be gained, I felt like I wasn’t totally lost. One HUGE thing I was reminded of that stuck with me was just the the Lord wouldn’t bring me to this point to leave me hanging. That gave me a whole new wave of confidence.

I also see now how no matter how rough the day is, that ONE moment sincerely makes it all worth it. Today that moment for me was making my patient laugh. Even if I’m not the best nurse in the world yet, don’t they say laughter is the best medicine? 😉 Tomorrow (it’s Thursday while I’m writing this) might be different, but for now, I’m basking in the giddiness of success not horribly, epically failing.

NOW, before I go to bed I want to whip up a quick post. I have been collecting pictures for a Friday Favorites post all week and can’t wait to share!

  1. Peets Coffee. I’m not sure that I have given Peet’s a proper shout-out in my Friday Favorites. Due time! My go-to is an almond milk cafe au lait. YURM. Also, my friends that I made while I was studying for my NCLEX still work there, and when I had to do some module work online this week I went back in. It was great to catch up with them!

2. Cereal Quest Bars! I’ve been sitting here for a minute trying to conjure up a description that does these little devils justice- but nothing will. They are beyond delicious. If you don’t believe me I guess you will just have to try for yourself!!! I’m OBSESSED. I love the chocolate flavor most, but all the flavors are terrific.

3. Safeway Monopoly. Our local grocery store has a monopoly game (like the McDonald’s one) that I have been participating in! They have tons of free products you can win by simply shopping at their store! Without boring you to tears, basically you get a board, you earn little “game pieces” when you shop, and then you enter codes online to win or get instant winning tickets for free products. So far I have won a cooking class, Shutterfly photo books, and all the stuff in the pictures below. FREE. Free as a bee!!!!! Now if I can only get those last few game pieces to win one of the big kahunas! DJ isn’t too upset about the free donut I seem to get each time 😉 And who doesn’t want a free 5 lb. bag of flour?! (I do have to say though, I was actually wayyy too pumped about the aluminum foil, because we were out, so perfect timing!)

4. Sprout’s Bags. My “Every Day I’m Brusselin” bag- which was discovered in my very, very first post from Sprout’s grocery store), now has a new friend named, “Turnip For What”. If you know me, you can imagine my minor, massive joyous freakout in the store that maybe borderline, definitely embarrassed DJ when I saw this bag. I was like the needy five-year-old begging their parent for candy at the cash register.

Me: “DJ, I NEED IT! I NEED IT! I REALLY, REALLY DO!”

DJ: “We have so many bags at home, I think you’ll survive.”

Me: NO, I NEEEEEEED IT.

DJ: **Handing over the extra $2.00 to the cashier for my bag of happiness**.

The heart wants what it wants.

5. Dear Mom. Our apartment building has this new vending machine that is basically a grocery store vending machine in our lobby. Plus it has these recipes that hang on the wall next to it saying how to make different meals with the ingredients they provide. I think it’s one of the most ingenious ideas. It has all your basics as well as desserts. Yup, they even have cheesecake (which is a food group of its own). And if I forget anything that I was supposed to get at the store, I always check to see if they carry it before I have to make a second trip!

6. 13 Reasons Why. This is a heavy one. Has anyone watched it or read the books? It’s a Netflix original series. While I was doing some marathon training, cooking, and working on modules, I had this playing and finished the series in about three days. It’s addictive- start to finish. It’s only 13 episodes, but every single one is gripping. But, like I said, it’s heavy. It makes you think. I’d love to hear your thoughts if anyone has seen this.

7. PackIt Freezable Lunch Box. This is the best lunchbox on planet earth. It has built in freezer packs, so you just throw it into the freezer, and when you are ready to go you just toss your food in it. No messing with those awkwardly shaped freezer packs!! It’s super portable, lightweight, and basically I could talk about how much I love this thing all doggone’ day. Like, I have to get up in 6.5 hours, and all I’m doing is typing about a lunchbox. Ummm, #priorities.

8. 100 Calorie Pack Emerald Almonds. MMMM mmm MMMM. These are one of my favorite snacks when I’m on my shifts. I only have 15 minute breaks (and one 30), so these are a lifesaver for super fast energy. I usually pair it with a cereal Quest bar or No Cow bar and am good to go at least for a couple hours!!!!

9. Blogilates. Cassey Ho is the bomb.com. I’m telling you- if you want an insane ab workout, she is your girl. Even DJ is amazed at how hard her workouts are. I DARE you to try one. I think my favorites are

She also has targeted workouts for all other areas too! And they are pretty short, but guarantee you will feel the BURN.

Friday Favorites

Woah, woah, woah hold the phone, Mack is actually doing something semi-normal on her blog? Yes, yes. I can hardly believe it myself. I am doing a Friday Favorites post! Woot woot! I had a few things I wanted to share in the last post, but I felt like doing a friday faves would help shorten the other post a bit! Not sure if I’ll end up doing them every week; I have a problem with commitment as you know by my inability to actually post recipes when I say I will *sigh*. But nevertheless, I’ll do my best.

  1. They’re Real Mascara. My sister and I don’t splurge on hardly anything makeup wise, but when it comes to this mascara we cannot find one better. We are obsessed.

2. Banana Pancakes. This is my most recent breakfast bae. It’s so easy too- 2 large bananas//1/2 cups of oats//splash of vanilla//splash of almond milk in a food processor to get a fluffy batter, cooked like a regular pancakes, some light syrup or blueberry compote on top, and you are golden as a goose. If you are feeding more people, just double the recipe! I also like to add a bit of plain Chobani or Fage on the side to add some protein. I tell ya what, I think I could live on this stuff.

3. These socks. DJ gave me these for my birthday. Thank ya again, sugar love.

4. Homesick candles. I have seen these advertised all over the doggone place and my sister-in-law actually gave me one for Christmas! It is such a thoughtful gift! And if I had to give an objective review, I’d say it really does smell like Ohio! <3

5. Speaking of candles, this Accent Warmer will blow your “get me wine” socks off! It smells fabulous and lasts forever! I burn through candles like nobody’s business, so the length of time an accent warmer lasts is actually a great investment! The soft cashmere amber smells so yummy, and it lights up the room beautifully!

6. Thrifty finds. I loooove thrift stores. It’s like a sport to me. Ever since middle school I have loved hunting down the best deals, finding hidden gems, and paying a fraction of the initial cost. I bet 85% of my closet is from thrift stores, TJ’s, and Marshall’s. Also, I’m about as fickle as they come, so I never have to have “Buyer’s guilt” if I buy something and don’t wear it as much as I think I will. These are a few of my faves I found last week (along with my purse that I found from the same thrift store a couple months ago). Everything was even brand new with the tags still on it. The shirts are from Banana Republic and Ann Taylor originally, the shoes from Forever 21, and the purse Kenneth Cole Reaction. If you aren’t a thrifter, I highly recommend giving it a try- it’s a blast!

7. This planner. –  I have a new found love of Sugar Paper planners. I never usually invest in a cute planner, but I had a giftcard to Target and stumbled across this little guy. LOVE it!

8. & this Wine Cork holder. My friend Morgan (THANKS MO!), sent me this for my birthday. People must think I like wine or something….. Anywho, I love this, and I am so excited to get the corks glued down to hang it up! ** No judging I have collected corks since I’ve turned 21 , so it’s not that many 😉 **

9. This stuffed vegan purple sweet potato. Ok- so I know it seems I always lie about actually sharing recipes, but I will be posting this one next week. It’s too good and wayyy too easy. I’ve had it for dinner almost every day this week 😋

10. Dexter. We love our Dex.  I think it’s one of those shows that picks up over time too, each season gets better and better.

11. Working for Postmates!!!!!!!! LOVE this company and also how easy it is to work around my schedule!

A lot of my friends and family are curious how it works, so I figured I would describe it here:

  1. I signed up, submitted my info, and then they sent me a Postmates credit card and bag
  2. I downloaded the app and activated the card
  3. While working, I show that I am “Online” and when a delivery needs to be picked up, I will be notified and I can choose to “skip” or “accept”
  4. If I accept, I am given the shopping list of the delivery (so it could be a list for items at Target, a grocery store, a food delivery for pick up, etc.), and I go to the store and pick up the items
  5. When I check out, I use the Postmates credit card (This is not a personal card at all linked to my account- it strictly is a Postmates company card)
  6. I then enter the final amount in the app and take a picture of the receipt
  7. I say “Deliver to ____ (person’s name)”, and deliver to the address given
  8. Once I complete the delivery, I am paid instantly and they can choose to tip.

HIGHLY recommend if you need a side job. BUT don’t do it in high heels. I learned my lesson as I was running through the mall to pick up an order from Panda Express and ended up with blisters all over my feet. Lolz.

** Anyway, deliveries usually take less than 20 minutes, and they have “Blitz pricing” where I will be notified when rates are up! You can work literally any hour of the day, but I choose to work during the day for safety reasons. DJ is hounding me to get my bear spray for the Mountain Lions and pepper spray for the crazies that I might deliver to one day… no worries babe, Amazon Prime has my Bear and Pepper spray on the way 😉

WELP guys, I did it. I did a Friday Favorites. I have more I want to add, but I’ll wait till next time! I can hardly believe I actually did such a normal blog post that isn’t a million pages long! Wowza. Love you all and hope this weekend is extra wonderful for each of you!

A Prison, a Criminal, and a Lawyer

Friday, Friday, Friday! Woohoo! Well this past week just flew, didn’t it?! I have some interesting anecdotes to share from this past week, for sure! Also-sorry for the massive overload of recipes posted. I have had them sitting in drafts for a while and figured I should probably just post them already!

Real quick, last Thursday night I whipped up Blue Apron’s Curried Cod with coconut rice. You need this in your life. I promise. I talk about how Blue Apron works here, if you are curious 🙂

Last Friday we went to the Orioles vs. Giants game with our family. Ya’ll know how we love our Orioles. However, I still jump during the National Anthem when everyone screams, “O’s”. Even after four games this summer I somehow forget that’s the thing to do! It always makes me leap like five inches off the ground. Anyone who has been to an Orioles game knows what I’m talking about. We went to AT&T park with our family, and this baseball park is easily one of the best in the country. I still prefer Camden Yards for it’s retro, 100% your at a cracker-jack-and-peanuts baseball game feel, but this is a close second! It overlooks the bay and you can actually watch boats come in and out of the pier.

 

Our dad (DJs side ) got us all baseball caps for the game (Not sure why I’m not wearing it in the picture above?!). But I LOVE baseball caps, and now have a new favorite! I think I have more “bad hair days” than the average person, so a new baseball cap is  a big deal. Plus it represents our team! The Orioles won, just so everyone is clear. Also, walking around San Francisco at night is quite beautiful. The place is always poppin’ and the Bay Bridge was absolutely gorgeous.

DJ and I shared a wonderful breakfast at the hotel before heading out for the day. I have seen smoked salmon and a bagel on many breakfast menus, but usually salmon for first thing in the morning sounds off. That day I was feeling up for trying it, and it was monumentally delicious. The concept is pretty simple too, and I might need to get some ingredients to have this at home sometime. It is paired with dill cream cheese, red onion, fennel greens, and capers. I think DJ probably got annoyed by me saying with every mouth-full, *muffled* “Oh muh gushhhhhhh, its suh guuuuuuuuud”.

IMG_8423We then headed out to *dun dun dun*- Alcatraz!!! I have been so excited for weeks since we planned this trip to go here and it surpassed my expectations! If you are planning a trip to San Francisco, this is worth your time. We took a ferry over, and the views and weather were perfection. We could not have asked for a better day, especially because the temperature tends to drop drastically when you are right on the water. A light jacket did the trick!

We opted to do the audio tour, which is the best way to explore Alcatraz. It takes you on a journey using some of the real voices of previous inmates, guards, and workers. I don’t want to give much away because you have to go for yourself.

** Side note: DJ always makes fun of my hands in pictures because he says it looks like I have a claw or some alien signal, lol.

Before we left for the day we did one of those bicycle carts. It was exhilarating whipping through the city on those!!!!!! Nothing beats a weekend with family. Those two days packed in memories I will always treasure <3!

Saturday night consisted of unpacking, cleaning the house up a bit, and DJ studying away. It is so strange having completely reversed roles. Last year I was studying non.stop. every single day, and DJ was in more of a “transition” year. Now he is the one studying his tush off. However, as soon as I get that approval to test for my nursing boards I am going to crack down! Then we can just be a couple of study bugs together.

IMG_7931Sunday morning we went to Church and it was awesome, cause really, would it be anything else?! I wear workout clothes to run errands and do everything around the house about 95% of the time, so before I changed into said comfy garb, I had DJ snap a shot to prove that I do wear normal people’s clothes for about two hours each Sunday!IMG_8473

For dinner, we had some leftover coconut rice and so I grilled up a whole bunch of shrimp in BBQ seasoning and some pineapple to throw on top!IMG_8474

Monday- Oh, Monday. This day was eventful! It was DJ’s first official day of law school, and I had a hair appointment. The contrast is striking.

I have been trying to get my color back to a more natural state and believe me, up close it was evident I needed to get something done. The roots were pretty bad! We were in one of those salons where each room is separate and owned by one or two hair stylists, but it all makes up one giant salon. Typically on Mondays salons are closed. The hairdresser took me because she was going away for the weekend and wanted to get another customer in. The salon was very quiet. However, as we were letting the color dry, a hairstylist came running from the other side of the salon screaming bloody murder. It was absolute pandemonium. She was running all over the place screaming, “He took it, he took everything!” through hysterical tears. Well apparently, she had just went to the bank, went to her salon, placed her purse on a chair, and used the restroom. When she came out it was gone. She remembered a man following her in, but assumed it was a maintenance worker since they do maintenance on Mondays when the salon is closed. The poor thing, I felt awful. We couldn’t locate him or the purse anywhere around the salon. My heart was definitely pounding. We called the police and they came along with her sons to help console her. Anyways, the hair turned out good (That sounds so absurd to mention on the heels of this horrible situation!). I am also 22 and still have no grip on curling my hair, so I was pumped that I got to rock it curled for the rest of the day.

For dinner, I made our last Blue Apron meal of the package. This one was summer vegetable and quinoa bowls. The flavor was just bursting. I learned so many different ingredients to cook with through Blue Apron, and I definitely would love to try it again at some point in the future!

On Tuesday, I had one of those “I need extra coffee” mornings.

I worked on several projects, and then made a meal I have had posted on the fridge since we came here. For a wedding gift, we received a subscription to Fine Cooking Magazine. This is a fantastic and unique idea for anyone who needs a gift for a couple that likes to cook! I try to clip recipes from there and put them on the fridge to try one when we are planning our meals for the week. It has been so much fun.

This recipe was a sweet and spicy shrimp stir fry with a raisin glaze. It was like nothing I have ever made and it was INSANELY GOOD. However, I may have made it a tad too spicy. That’s saying a lot because usually the spicier the better for us. I will be making it again, but with fewer jalapeños. IMG_8621IMG_8618

Anyone else get annoyed when there are always those one or two last bananas that go bad? Well I hate waste; you would think our mom raised us during the depression. I decided to make three ingredients banana oatmeal raisin cookies. I can post a recipe for them soon! They aren’t the greatest cookies of your life, but they are a great snack with all natural sugars and just enough sweetness to help with a sweet tooth. And they are only 46 calories each, which is pretty good for anything with the name “cookie”. A few are great in the morning with coffee too!

On Wednesday I prayed that it would be better than the one before. AND IT WAS! Guess who conquered the book shelf?! This girl! Uh-huh, that’s right!!!

For dinner, I jumped right on that Zoodle train. I’m not sure why it has taken me so long to make these because they are incredibly easy and tasty!!! I wanted to make an alfredo sauce from scratch and also a vegetarian version, but was running late,  like really late, so I threw in a can of Progresso Alfredo Chicken! I added some shredded chicken, garlic, daiya mozzarella, and a bit of tapioca starch and BAM- zucchini alfredo. DJ loved it. He couldn’t believe that it was actually healthy. I scrounged up some quick leftovers for myself since I was running so behind.

What was I late for? Wednesday night is when our community group meets in Santa Clara. DJ, unfortunately, had to stay home. Law school is no joke, folks. He was feeling pretty overwhelmed at the beginning of the week, but I think is feeling better now. Figuring out exactly what to do, how to study, and what the professor wants is half the battle. He has the second half down (dedication and will), and I have no doubts that he will succeed!!

On Thursday, DJ has his long day at school. I have my hiking group, and have to leave close to, or before, he comes home. I did make sure that there was some dinner for him in the fridge. I made salmon from Monterey Bay with a Hawaiian protein rice blend,and steamed broccoli. I love seasoning the skin on salmon so it crisps up when you bake it.

The views on this hike were absolutely incredible. I love the bonds I am forming with these friends. They are amazing people. We also had a little (meaning a large and furry) friend join us! I have never seen a spider that massive in the states before. Hello, California!

After the hike my friend and I stopped in to a nitrogen ice cream place in Cupertino. They actually make ice cream out of nitrogen gas. Watching the process is quite entertaining. My phone was about to die so I couldn’t grab many pictures- guess I’ll have to go back 😉 The ice cream was sooo scrumptious! We split the Matcha and Salted Caramel. The flavor was vibrant, and yet the texture was incredibly light. It just melted right in your mouth, but was still creamy. We called it confusing, but confusingly delicious!

One last thing I want to share is our new method for prayer. Our dresser was brought in on this giant wooden plank. It sent my creative alarms off, and I didn’t want to get rid of it. I told DJ I would figure out something to do with it and he kinda smirked like, “Oh no, what now?!”. DJ is a trooper to always roll with my makeshift ideas. For example, I made a jewelry holder four years ago out of a cooking pan, and refuse to use anything else. With this plank of wood, I have decided to create a prayer board. With white marker I write a prayer request, and then when it is answered, white it out. Our goal is to have the whole board changed to white to show how awesome God is in answering our prayers. I don’t expect this to be a quick thing, it could take years and years, and honestly it may never be completely white. God doesn’t always answer prayers in our time, but I have no doubt that He is faithful and we should pray expectantly. If you have a request, let me know, I can put it on for you!

This morning I found out one of my my best friends, Rachel, passed her Child Life specialty exam. GO RACH!!!!!! So proud of you!

Tonight DJ and I are finally going to have a relaxing evening together, it’s his deemed “night off” of studying. We are going to try a new restaurant, but not quite sure where yet! Tomorrow I head to SanFran again to visit a friend from high school. (I don’t think I told you that, Mom- But Annie lives here!).
