Our Valentine’s Day!

This is gonna be a short & sweet (pun totally intended) post filling in the foodie gaps from the last update up to our Valentine’s Day! (I know y’all are probably sick of any and all Valentine’s Day chat by now, so thanks for tuning in anyway!).

Sunday February 10th, we both got up early and went to church. When I came home we were still super low on groceries, so I put together some canned butternut squash puree & a dollop of Fage mixed and heated up with mixed nuts, pumpkin butter and Ezekiel bread. It was surprisingly very satisfying! Ya never can know how those hodge-podge concoctions are gonna go, but it’s often when I discover my new favorite snacks!

The afternoon was just working on school assignments & I think I squeezed a run in.

For dinner I was really getting down to the bare bones in the fridge- I needed some protein, so I whipped up some eggs, beans, and salsa & paired it with homemade pumpkin hummus that I defrosted from the freezer.

February 11th I woke myself up with Fage, oatmeal, PB2, and mixed nuts. The thought of breakfast & coffee causes me to jump out of bed in the morning, haha. For this one, basically anything I could find in the cupboard I was throwing into that bowl.

After doing a ton of schoolwork it was time to finally acquiesce to a full grocery trip. But I will say- TJ’s is the pretty much the adult equivalent of going to the park. On my way I grabbed some Starbucks cause I was feeling chilled to the bone that day! It was one of the colder days of this winter. *Cue the laughs from my midwest friends*

For dinner I defrosted a pack of thanksgiving turkey and made turkey noodle soup for the Deej with some egg noodles I picked up. He enjoyed it even more than I expected! It served as a lunch throughout the week & he usually had it with a slice of lightly warmed buttered brioche.

I had a salad full of the fresh veggies from TJ’s with hummus, Lightlife’s Savory “chick’n” tenders, and lotsa hummus. I like to cook the chik’n till it’s kinda crispy & it almost serves as a kind of crouton in the salads.

February 12th I finally found and tried the Banh Mi Bowl recommended by the lovely Kate over at LiveintheNautical. Y’all this stuff is so guuud. I wasn’t as big a fan of the dressing, but the actual bowl itself was just delish & fresh! The tofu in it was sooo hearty & yummy.

In the evening, I attended School of Leadership. This is a four-week course I’m taking through our Church, and WOW, it’s enlightening. I feel like I’m drinking wisdom from a fire hose. So much knowledge and practical application. I am just loving every second of it & have made some new friends through it. At this point in time there is only one week left- crazy how quickly it flew.

On February 13th I gathered together all my Valentine’s I was making for Boys and Girls Club and paired them with a chocolate. The Valentine’s were 3D which I thought the third graders would like. After I made the Valentine’s I panicked because I realized the Snickers had nuts in them & I didn’t know if any of the kids had an allergy. I switched out any of the Snickers for another type of chocolate & left those for DJ since their his fave anyway!

I was craving some of my “chick’n” so I made it with roasted beets, corn, and topped it off with tzatziki sauce from TJ’s (that tzatziki sauce is the bomb! I’ll include it in my FF).

On February 14th I went to Boys and Girls Club in the afternoon. Holy hyperness… I thought they were sugar filled last week- oh man, you haven’t seen chaos till you’ve seen a third grade classroom on Valentine’s Day! LOL! It was so much fun. I came home to these gorgeous roses from DJ and yummy treats & cards from friends & family. <3 They are the bestt.

Oh, and this was from a friend at church! Tell me this isn’t the cutest little idea for a Valentine ya ever did see?!

I made Deej a little box of some of our faves- our favorite candle, his favorite granola, and then made a little note saying “Will You Accept This Rosé?” As a play on the Bachelor. CHEESY, I KNOW!

For dinner I made him heart shaped grilled cheese on our TJ’s brioche and tomato soup- his favorite weeknight meal. Just when ya didn’t think it could get cheesy-er 😉

For my dinner I had my stuffed purple sweet potato with Fage, avocado, meatless crumbles, and almond vegan cheese. This is one of my personal favorite go-to winter meals.

I also made a big ol’ batch of these cookies for dessert. I think I should have made them thicker because they were a bit too crumbly, but the flavor was wonderful!

On the 15th I woke up at 4:30 am bright and early & could not fall back asleep; I was so excited for the weekend we had before us! I started the day with oatmeal, protein powder, blueberries, granola and stevia.

After drilling my brain with school work, around 3:30 pm we left for SF for a staycation. I was feeling pretty sick, the cold that is going around definitely got me, but I was ignoring it. That’s my go-to when I’m not feeling good- just pretend it’s not there. That is NOT sound nursing advice, hah. I did stock up on Advil, Halls, & Vitamin C to take along. We stopped for gas on the way, and I captured this rainbow. I will share about the weekend in a separate post because it was fun, special & so very memorable. Can’t wait!

One Cheesy Birthday Weekend!

Happy Thursday, Everyone! I am pretty stoked to share this post. Last weekend was just so gouda!

Also, this time last week I was super overwhelmed, but I can tell ya I am feeling 100% better this week. Thank you for all your sweet words of encouragement, wisdom, and perspectives. Can’t explain how much they helped & how thankful I am for y’all! Okay onto the fun-filled weekend!!

Thursday the 10th I finished up my last blog post and enjoyed some butternut squash with vegan butter, salt, pepper and a slice of Ezekiel cinnamon raisin bread as a little snack.

For dinner I made DJ a Bubba burger (his favorite at-home burger) with gruyere cheese & brussels.

I had my big ole’ salad with Nasoya marinated tofu and all the veggies in the fridge.

I also sliced up the rest of our cheesecake thingy-ma-bob from New Years to freeze. No way we could finish it all. (I took off the top layer of the cookie to finish off though, lol!).

Friday the 11th I just cranked out school work- it felt good to make a dent and get a few assignments done.

Saturday the 12th was the The Great Mac ‘N Cheese melt off at Soma StrEat Foodpark in SF. Amy and I had talked about maybe going, but I messaged her the night before unsure if I would be able to go with the school load. However, I got up extra early on Saturday, got my 10-mile training run in, finished my assignments for the day, then texted her since we could make the last couple hours!!! DJ and I hit the road taking beautiful 280 into the City.

I believe they had twelve food trucks all serving their usual food and a special mac ‘n cheese dish at each stop.

There was a Kevita stand too. I was soo thirsty after my run & the hour-drive, so I made a dash for the tent. The guys there said they weren’t actually selling them, but since they were closing they decided to give me a bottle for free- hey, I’ll take it! The apple cider vinegar is one of my faves.

The lines were CRAZY long. So the three of us split up to different trucks.

I stood in line to try the “tex mex mac” from the Grilled Cheez Guy.

It was oookay. Not the best compared to the others. The best part were the candied jalapeños on top!

Now for the good stuff! Amy stood in line to get the “almost famous” garlic (your left) and the classic with a crispy fried bacon-gruyere mac n’ cheese ball from Jackrabbit (right). Oh me oh my! They were both delicious- I could have ate that garlic one all day, but DJ’s fave was the bacon-gruyere.

Here is the inside of it! It really was so good. And that’s coming from someone who doesn’t like bacon! Then again, this may have changed my mind…

The three of us all joined back up in line with DJ as we ate the dishes Amy and I grabbed. The line DJ was in was the longest at the fest- I think it took about 45 minutes to get to the front to even order. While we waited and passed other food trucks as we moved up, we grabbed a couple more dishes to sample and share.

Below was the favorite of Amy and DJ’s over all! This was probably my second favorite! It is a hot cheeto mac and cheese with corn from sip n’ slurp. Corn in mac n’ cheese is soooo goood- why is that not a common thing?!

img_7314img_7010Then The American Grilled Cheese Kitchen had some BOMB crab mac n’ cheese. Wow oh wow this was good. I loaded it up with hot sauce and that added to it- yummm.

And for what we waited a loong time for- these mac n’ cheese balls from Chef’s Food truck. These balls were deep friend m n’ cheese with truffle oil and parmesan. All I have to say is worth the wait. One of the greatest bites of anything I have ever had in my whole life. YUMMMMMMMM.

To end, we had to vote for our faves! It was hard to choose. When you entered the fest you were given a noodle to vote for your favorite dish.

We voted for Chef’s Truck, Slip n’ Slurp  & Jack Rabbit. The winner when announced were #1. Chef’s Truck (the mac n’ cheese ball- AMEN) #2. The American Grilled Cheese Kitchen (crab mac- I totally get why they placed!) and #3. JackRabbit (absolutely deserved to place, all their mac was out of this woooorld).

DJ wanted to take the long route back home. The views were stunning along the bay.

On Sunday January 13th it was my 25th bday. Cue the quarter life crisis!!! DJ got up around 5 am to go help set up venue for church, and I woke up around 6 am to join up with the welcome team. It’s such a blessing to have weekends back. I missed serving & spending time with my Church fam.

After church, we decided to try out one of the best breakfast spots in town for a little bday brunch- Joanie’s.

This gem is a french restaurant in the heart of Palo Alto. In order to get seated you have to first put your name on the waiting list- I kind of liked this method rather than hunting down the host to put your name on the list.

We knew we’d have a crazy long wait (about an hour) so we perused the Farmer’s Market right outside for a while.

It was the most interesting & diverse Farmer’s Market I have ever been to! They had everything from dim sum dishes to avocado toast specialties and german bread. If we weren’t waiting to eat breakfast I could have found plenty to nom down on there. We’ll have to go back!

I ordered a Mimosa, and this is how it came! So cute. And it was less than $10. That is unheard of around here.

I ordered the Tuscana omelette with zucchini, cherry tomatoes, red onions, provolone cheese, and basil pesto sauce. Goodnessss this was good. Only second behind Bill’s epic omelette. But this was a very close second. The hash-browns were just to die for. And the blueberry muffin was easily the best muffin I have ever had. I’ve raved about it to basically everyone I have come in contact with since.

DJ had their breakfast medley and said it was one of the best brunch meals he has had in the Bay.

We LOVED Joanie’s. I would say it is a contender for the best brunch spot in the bay, yes, even up against Bill’s.

After brunch we decided to go the mall to look around. I grabbed a lolli from See’s candy of course!

When we came home I picked up the mail and found the best treat ever in it! Cyranny from Cyranny’s Cove sent the sweetest holiday greetings & it arrived right on my bday- serendipitous? I think so! It made my day! She even incorporated a little inside joke to the postage, hehe <3

In the evening I whipped up a Bubba burger for DJ & alll I wanted for my bday was mushroom & black truffle flatbread from TJ’s. I had been saving it in the freezer for my bday for a couple weeks now! I told Deej all I wanted to do was eat this flatbread, sip on some red wine, and blog for my birthday. So that is what we did!

I added some crushed red pepper and tabasco to the flatbread, and it was so yummy. Then we just opened up some cards & gifts- It was a perfect birthday & I felt so loved!!

Monday the 14th it was back to school full force and all I’ve done is school the last couples days since. We are gearing up for our marathon this weekend though. My mom and Pete are joining us in San Diego!

Marin Headlands Hiking & Home Cafe!

We are just zoooming right along! My type-A side is very bothered that my recaps are not in the present time just yet, but we are almost there!!

Thursday September 13th I woke up and made the Ezekiel bread again with nuts and dried fruit.

I went for a run and still spotted some new blooms.

I then drove to the Post Office to drop off some Poshmark sales! woot woot!

I worked on schoolwork at Peet’s all day (with my packed lunch- I literally have a full spread of my snacks on “my” counter there, make myself right at home) then headed back home. I had my massive salad again for dinner (I get on kicks) and made DJ some beef tacos.

Nearly every evening this past couple weeks we have watched an episode or two of Dexter before bed- SO good!

And whaddya know- Friday September 14th I had Ezekiel bread again with chopped walnuts and craisins.

In the evening I had a nice chunk of time to blog, which was nice. After eating leftovers, DJ and I watched Dexter for the rest of the evening. Such a restful Friday! Since we aren’t planning many events right now it’s been nice having free weekends to just hangout at home. I suffer from serious FOMO but am discovering how relaxing it is to have an uncluttered schedule on the occasional weekend.

Saturday the 15th I woke up around 7, ate some avocado on rice cake and then headed to SF to hike with Amy and my fur-nephew, Pool Noodle!

Driving into the city the sky was so crystal clear! This is a rarity and the views were just breathtaking.

We decided to meet at Marin Headlands- a place on the ole’ Bucket List.

After the fact, we went to Home Cafe to have some nice lattes and treats! Home is alsooooo on the Bucket List. I hope you don’t take a shot every time I mention that thing. It literally drives our plans anytime we go into the city.

I’ve had Home on my radar for a while because they make the prettiest latte art and serve up some one-of-a-kind toast! Check out the menu… I need to go back and just try one of each!

I was still pretty full from a protein bar I had before our hike, so I just tried one of their Japanese Mochi donuts. It was okay- nothing to write home about, but still a nice accompaniment with the coffee!

Amy had their cookie monster latte- I had a sip- and let me tell you- maybe one of the tastiest sweet lattes I have ever sipped!!! It was divine. Tastes like you are straight up drinking a chocolate chip cookie (but in the best way!).

I had their birthday cake latte, and it was ever so satisfying!!! I highly recommend this too. Also, you can taste how high quality the espresso is, yum!

In the afternoon in Cupertino, it was such a gorgeous day I decided to listen to podcasts and take a walk since I was almost all caught up on school assignments. I have a new podcast I’m obsessed with- that I shared in my recent Friyay Faves– Dr. Death. The rest of the day was basically tying up loose ends with assignments for the week.

In the evening, I made Deej chicken tacos & I had my big salad, yes again. I start to crave this thing! I will get sick of it soon, but I am deep in my salad kick.

On Sunday the 16th, DJ and I went to church then DJ went to work the Almaden Valley Art & Wine Festival. I just worked on laundry, cleaning, dishes, fill in groceries through the day, etc.

When he returned later in the afternoon, he had a big box with him that had a ribbon. I was so excited he let me open it, haha. It was from the festival thanking the Giants for making an appearance there- they gave us a big bottle of nice Merlot, a beer glass, and a wine glass! It’s Christmas y’all! Savings September karma!

In the evening, I tried a glass of the delicious wine while we watched Dexter and then Monday it was back to the grind. Hut hut!

French Brunchin’ & Rome Dreamin’: A Weekend Recap

Hi Friends!!!

How ya doing?! Sooo I’ll be totally honest and say the struggle. is. very. real. Imma dive right on in. This past week/weekend have been hyper-emotional for me, laced with overwhelming anxiety. It has easily been the worst week I have had since beginning my job. The assignments have been tremendously heavy lately, and I feel like I’m barely staying afloat. Then applying for grad schools and random other things going on… I am down in the deep, deep dumps.(Well, why don’t ya tell us how you really feel)

I think part of it, perhaps subconsciously, is the emotions that come with November- the month I lost my Dad. Even though I tend to directly point to whatever else is going on in life as the source of the sadness, that’s probably a larger part of the equation than I acknowledge. In reality, this time of year traditionally does tend to bring up suppressed emotions and memories.

BUT, whenever I have been feeling down lately, taking this time to reflect and highlight everything good going on really has helped lift my spirits. Scripture, prayer, conversations, cards, encouragement from DJ and others… man, I do not know what I’d do without every little bit right now. DJ just keeps saying, “once you make it through this year, imagine how strong you’ll be”. Cue Kelly Clarkson!! (But for real… cliche quotes and songs have been my jam as of late— Whatever it takes- Imagine Dragons, Stronger- Kanye West……..).

My mom also keeps reminding me.. we are more than conquerors in Christ (Romans 8: 31-39). That is so powerful. Not just conquerors, more than conquerors.

Nope, I cannot do this alone. Not even gonna try because I’d be falling flat on my face.. but with Christ, I know I’ll make it because it is on His strength I rest, not my own. I know I should be spending this time working on my next application- but I don’t think I’m quite in the right head space for that yet. There have been some truly special memories in the last couple days.. and I would love to share them with you! (Plus blogging always gets me in a good mood- especially when I can share things like THIS…

Friday (11/3)…zoomed into Target post-shift to snatch some mint chocolate chip ice cream (the ultimate post cry ice cream) & an endless supply of Candy Corn. Anyone else stock up on candy corn for the rest of the year? ya? no? Jus’ me? Jus me & Doug?

Saturday (11/4) Deej and I had a date night at the row!! Wooohooooooo! Been a hot tick since a real date night for us. This was too fun. We decided to go to Yard House.

I even got to do my make-up for once in probably the last three weeks! Haaack ya!

DJ sampled their pork spare ribs with spicy bbq sauce, creamed corn & bbq pinto beans like the good midwest man he is.

I had their vegan burger (holy maloly) and side salad like the California hippie I am. This burger was flame. So tasty. I love how many options they have for vegetarians and vegans here.

Such a great meal and conversation with the hubs <3 We both agreed that Yard House is a tad overpriced especially for the portions.. but we also agreed that meant room for dessert!

We spent sometime strolling the Row, but the weather actually cooled down quite quick, so we zoomed back home to have cookies and watch some Parks & Rec.

Sunday (11/5) Dj went in early to Church to help with venue set up. I snatched a few extra Zzzzs and woke up for some coffee and toast with toasted vanilla coconut yogurt, chia seeds, oats, a sprinkle of stevia, and apricots.

At Church, we found out the next location our Church is expanding to is …. *drum roll* …. ROME. Yep, ROME. Our Church is only five years old…five. The audacious faith that our Pastors have is truly incredible to roll out five campuses in five years. God’s hand is so evident and revival is happening. I have no words to explain how ecstatic we are to see this vision come to fruition and to be a small part of it.

After Church, Deejers also helped tear down and while he was doing that I finished up some laundry then decided to run from home to the place we were meeting for brunch. The run is about four miles from the apartment, but I made it about a seven miler- it was such a beautiful day, a beautiful service, so I just listened to some uplifting music while allowing adrenaline to replace the nagging anxiety.

We met at Left Bank to enjoy their fabulous French cuisine on the twinkle light lit patio. It is one of those locations that provides the full experience, not just the food.

I visited this restaurant with my mom about a year ago (that was the last and only time we have been). She ordered a Bloody Mary, and I decided to try one since I knew I liked it the last time I tried one in Santa Cruz. This one was okay.. the Santa Cruz one was much better! (DJ snagged the bacon ;)).

I ordered their salmon hash (again). Last time I had it I remembered how absolutely savory it was, and it sounded like a perfect brunchy meal on the chilly afternoon. All I can say is …Délicieux!!!! Absoutely magnifique!

DJ ordered their sausage hash and downed that thing before either of us blinked (of course, post picture 😉 ). I assume he liked it.

We walked around the row for the second time that weekend (becauuuuse it’s the ROW!). We popped into their little boutiques and I saw this on a card…

I started tearing up. (Yes, I’m that friable emotionally right now… I actually took a pregnancy test because I am giving Niagara Falls a run for its money… and I’ve been uncharacteristically craving Diet Dr. Pepper – obviously the test was negative.. but that’s how crazy it’s been. Is that TMI? I’m a nurse.. there is really no such thing).

Monday (11/6) morning, I decided to try something different with my toast! I mixed in Matcha powder in my yogurt, topped it with oats and chia seeds and honey. It was pahretttty tasty.

In the morning I cranked out chores while listening to podcasts, snuck in a nice long run, and stopped by Tea Chansi on Main Street for their Boba, which I was craving something fieeerce.

In the evening, DJ and I went to our Church Group. Gosh, I haven’t been able to go in for FOREVER, and it was incredible to connect with everyone and see our friends I have been missing something terrible. These are the snacks I whipped us for us and my good friend Danielle made some out-of-this-world delicious homemade soup & homemade bread.

It was a much needed night discussing the message Sunday, our vision for our own lives, and praying over each other.

Today has been hard. I’ve been pacing, anxious, and not able to really focus. I go back to work tomorrow after a stretch off. I haven’t been productive AT ALL with my applications. I am going to just focus on getting in a good head space- go for a run, clean the house, blast some feel good oldies, and maybe just read a book. I thank you all for allowing me to be honest in this season, and also for being ever so patient with me. Y’all are the BEST <3

PS. Ya all know we keep it one hundred around here…. I put up a post last night that I ended up setting to Private. If you did read it, I don’t think I was communicating very well what I meant to. I essentially was trying to say that sometimes perception is not the reality in the nurse/patient relationship, and it may be hard to see the nurse’s heart in light of the system in place and the demands placed upon us. I honestly didn’t intend to annihilate myself, but rather, speak from the heart to the patients I wish I could do more for. I also wanted to debunk the idea of a “good” vs. “bad” nurse that is often discussed (eg. often the perceived “bad nurse” on paper actually might care more than you know). I realize it came across pretty bleak, but I wrote it with the intent to be an artistic/poetic form rather than a woeful monologue. Not one of my best articulated pieces. However, I truly, truly appreciate those that reached out and left such kind words <3. (Ps. if you want to read it, I will send it privately). Ya live, ya learn, ya blog.

A Foxy Pup, an Ice Cream Battle, & Recyclops!

Hi, Lovies!!! I don’t have a super eventful update— but as always, I want to reflect on the hum drum and find the highlights, you know, find those doggone silver linings (they are there, I promise!). First, I am SO excited to say I have officially submitted my first grad school application. It was a DOOZY. It’s (maybe) my first choice, but I am very confused about the whole decision. I’m applying to schools across the country (and many online schools that pair you with a nearby hospital). I just pray that God will make it clear where we should be. I love California; I love it so dearly, and I love our life here. But we also LOVE exploration  and when else will we have this flexibility to just get up and go (cough cough… kids…..), so who knows… but I don’t know that we can imagine leaving here yet. I don’t know! I guess we will see! Nothing will happen until next fall, so I’m hoping all things will just fall in place the way they should.

Just a little context, I’m sitting here this Sunday evening with my mint chocolate chip ice cream, a glass of cabernet sauvignon, and NYC Housewives playing on the laptop (Uhm, Aviva- take a chill pill girlfran’). I don’t have the GRE or November application deadline hanging over my head (although I have about three more coming up in November- March), but for today, we will relish in the moment. DJ has the World Series playing in the background, and things feel actually OK at this second.

I think we left off right after the GRE. I went back to work for a few days, and DJ headed to Ohio! I wish I could have went back, but work owns me. I am thankful he had such a fantastic weekend with his family, but I am honestly a bit jealous because I miss them all terribly.

On Saturday, October 21st, my dear fran Sara, (you may remember this chica from here, here, and here), stopped by to hangout and catch up while DJ was spending his last day in Ohio. We decided to go to Steins for an appetizer and a drink to catch up!

The waiter brought us the cutest little mini beer mugs to try their featured sour flavor. It was cute, but wayyy too sour for our liking. Plus neither of us are big beer guys.

We tried a recommended featured cocktail with capurro pisco (not sure what that is), but it ruined the flavor. We were not fans of this cocktail. However, their beer garden cooler was delish and refreshing. Highly recommend if you end up finding yourself here.

Also, highly, HIGHLY recommend their truffle fries- TO. DIE. FOR. Perhaps the best truffle fries ever. I think the only other ones that contest were the ones in Santa Cruz.

ANNNDDD Sara surprised me with Foxy Lady (that’s literally her name) (you may remember her from this post). I was ecstatic. I just love this pup so much.

We hung out, laughed, had an aggressive battle with a Talenti gelato mint chocolate chip pint (if you follow me on Instagram @ __mackenzie.marie__ you probably saw) and chatted until about 11 pm.

We literally wrestled with a Talenti container for probably twenty minutes. We tried EVERYTHING from knives, to rubber twist jar openers, and finally rubber oven mitts….it was a scene. Beware the Talenti.

Anywho, It was such nice, much needed girl time!!!

On Sunday October 22nd, I woke up bright eyed and bushy, but realized I didn’t have yogurt for my toast. I panicked, but no worries- there is a Target just down the road. I picked up my coffee mug (didn’t even bother putting it in a tumbler) and headed to Target to snag some yog. I know all the workers, considering I stop by there nearly every day, so they didn’t blink at me showing up disheveled with my half finished cup of coffee and zombie affect. It happens more than I probably should admit. After I was all caffeinated, I zoomed to pick Deej from the airport!

When we came home, DJ had to whip off to work for a couple hours. When he came home, we decided we were in the mood for some lunchy brunchy food. We have been wanting to try out the local Bob Evans (Aka Holder’s Country Inn). It received great reviews on Yelp, and it sounded like the perfect Sunday afternoon meal.

I had their veggie scramble with egg whites, peppers, mushrooms, salsa, and avocado. Every ingredient was immensely fresh and satisfied the craving to a tee.

DJ tried their pancakes… now, if you follow along, DJ is on the hunt for the best pancake. So far the best ones we have found in the area are Bobbie’s. They have yet to top the Bellagio’s from Las Vegas, or his mom’s (DUH!).

He also had the country fried steak with eggs. Doesn’t get more Bob Evans-ey than this, folks.

After we returned home, I decided to take advantage of the glorious day and go for a nice jog outside.

The leaves are changing, the colors are vibrant, and the weather is finally cooling its jets (it has been ridiculously hot here). When I came back home I whipped up my new absolute favorite meal. I was going to wait until a Friday Faves, but I can’t. It’s too good!

My all time favorite potato is the sweet purple white potato (purple outside, white inside). It actually has more antioxidants than a regular orange sweet potato, and I swear tastes better. You can find different varieties- some have a white colored inside, and some have a vibrant purple.

I stir fry together white onion, mushrooms, Lightlife tempeh, and eggplant with liquid aminos.

Once it’s all caramelized and the sweet potato is cooked to tenderness, I stuff the tater! So easy, so absolutely delicious, satisfying, and high in protein/complex carbs.

He and I have not been able to do many of the “fall activities” this year ( cue melancholy soundtrack), but I have been listening to a plethora of crime podcasts, have eaten an embarrassing amount of candy corn, and we watched Cropsey together on Amazon prime over the course of a few days. SOooOOO sort of taking advantage, yah?

I even found this wine to accompany the documentary  because it seemed appropro. DJ always laughs at how excited I get about the “idea” of something.. I like things to be themed, anyone else feel meh?! Why just watch a crime documentary when you can watch a crime documentary with CRIME wine on the heels of listening to crime podcasts in the midst of Halloween hype?! PS. Documentary was tremendous.

We both worked Monday October 23rd, but the 24th I picked up my bridesmaid dress for the November wedding (EEEK!!!!), and then later in the day grabbed a massage (much needed). There was a $30 off coupon online for a super nice salon in Sunnyvale. I jumped on it, and enjoyed every stinking second of that massage.

After the massage, I stopped by Safeway to pick up my Ice Cream (Oatmeal chocolate chip cookie dough….. it says limited edition but I’m convinced I am keeping them single-handedly in stock). I also stumbled upon this RXBar. Mint chocolate chip you say?!? Yesss sirrr-eeeee.

I still prefer the Chocolate sea salt, but I see they now have pumpkin and maple. Uhm, yuhm. I need to hunt those down!

On Wednesday, the 25th, and Thursday the 26th, I buckled down on my application. I spent the full days slaving over that booger. It was in-stinking-tense. I definitely needed a break to clear my head… this called for an extra long run, which turned into an impromptu half marathon. #procrastinationnation.

And on the heels of any long run, candy corn is EXTRA necessary.

Later in the day I stocked up on groceries for the next few days from Sprouts Farmers Market. This is one of my favorite grocery stores around.

In the evening, I decided I needed some sushh. It has been a hot minute!!! I went for my go-to sunset roll with unagi, ahi tuna, and lemon with a side of wakame salad and extra ginger.

I worked Friday and Saturday. Friday morning was bad, bad, bad. BAD BADDDDD. First, I was out of coffeee (nough said, right?). I drove to work early so I could make a cup, and when I checked my phone, it said my time off request for the wedding the end of November was NOT approved. A few months ago I had a face to face conversation with my manager confirming that it wouldn’t be a problem. So now.. I panicked, the anxiety set in, I couldn’t see straight. I started bawling in the bathroom before my shift. I quickly messaged her explaining I had already bought the plane ticket and told the Bride I could be in the wedding based on our conversation. I spent the whole morning sick to my stomach, holding back tears, and gritting my teeth through my assignments. Halfway through the day she e-mailed back saying it was approved, she just had to go back and adjust the way it was formatted in our system. I have never been so relieved. I cried again— tears of relief. I was a MESS. I would not have made it through the morning without the support from my family who sent scripture and prayed over the situation when I frantically filled them in before the shift began. Thank you Jesus for answering that prayer. I still take deep breaths just thinking about it.

But on a much brighter note….. .on Saturday the 21st, DJ headed to his family’s for a costume party. I was bummin’ I missed it this year. You can check out the post from last year if you would like 😉 Our costumes were certainly something! Haha. This year DJ was Recyclops from the Office! He nailed it. The rest of the family’s costumes were amazing too. I wish I could have been there to see them in person!!

Sunday (the 22nd) I accidentally slept in wayyyyy too late after working all weekend. Whoops. I can’t interact with anyone the day after working a few in a row and my body cannot physically function. I get in a fuzzy funk from the exhaustion and move the pace of a sloth. I decided to wake up my body with a run before finishing up my application.

It was perfectly brisk, with cloudy skies, and the weather finally exuded those autumnal feelz <3 I love LOVE cloudy Sundays. Sundays in the fall are the ultimate relaxing day after Church, naps, football, and candles. A cloudy day just enhances the whole experience and I feel like “gives me permission” to be lazy.

One of the houses along my run had a little garden out front and was growing butternut squash(es), squash? I think just squash. Can you say #GOALS?!

I also saw this beautiful flower and couldn’t help but snag a picture. Is it weird that I thought of a Punnett square when I saw the unusual distribution of colors?! I will always be a bio nerd at heart.

For dinner, we tried the Daiya vegan Margherita pizza. Not only does DJ love the Vegan burgers, but now is on board with the vegan pizza. He said it was easily just as tasty as a regular one.

And that’s a wrap! As I finish up this post, it’s actually morning now, I am sipping coffee, eating a protein bar and my toast, and for the first time in a LONG time I don’t have something hanging over my head for the day. I am gonna finish up my breakfast, go for a run, answer some blog comments, and read Harry Potter until my eyeballs fall out. Woohooo!!!!!

Friday Favorites # 7

Hey y’all! Happy FriYAYYY! I actually get this weekend off too, so I’m pretty excited about that 🙂 DJ has been in Tahoe since Tuesday for work, and I miss him something fierce, butttt we’ll get to see each other this weekend! Without further adieu…. Here are this Friday’s Friday Faveeesss!

  1. The yogurt/toast is backkkk!!!! I am tucking away my avocado smoothie recipe from the summer and bringing back my yogurt/toast combo. I use either Dave’s or Ezekiel Cinnamon Raisin bread topped with Fage yogurt, low sugar craisins, stevia, and granola. It’s so stinking gooood.

2. Pumpkin decor!!!! I picked these little punkins up last year and shared them with y’all then, and I was stoked to pull these back out from storage and blow off the dust! DJ said my autumnal excitement is a bit premature, but I say there is no such thing. Where is y’alls favorite place to find home holiday decor? Mine couldn’t be more predictable: Homegoods and Tarjay.

3. I’m trying my hand at gardening for the first time ever with eco-culture herbs! My Aunt Terry (who was here nearly a year ago, SERIOUSLY, how has it been so long?!?) gifted these to us, and I am obsessed. These are little planters that you can actually plant indoors in the natural window light or outside. I am currently growing basil, cilantro, and parsley. Next I’ll be growing sweet marjoram, sage & garlic chives. They are so easy to use, and gardening (my albeit baby step gardening) is such a cathartic process. Stayyyy tuned!

4. Just ….fall.. Can fall be a Friday Fave? I say yes. Leaves are falling (or one fell) & autumn is thick in the air (well I got a whiff). While out on my run yesterday I spotted these gorgeous Japanese maples & vibrant bright colorful landscaping. **Side note: I can identify many leaves after a biology project in high school- we had to identify tons of leaves as part of a final project, and weirdly, most have stuck with me. So if you need a leaf identified, send it over, lol.** **side side note : Ironically, I can’t identify flowers for crap though 😂**

5. If you are a nurse, you have to follow nurse abnormalities on Instagram and also her blog here. Danielle has a real talent for encouraging new nurses as they begin this challenging career. She articulates phenomenally well about the realities and true abnormalities of being a nurse from the good the bad the weird, the hilarious and the absolutely beautiful. Recently her post to new grads hit home big time for me.

img_16676. The Black Tux! Ok, so I’m pretty bummed I just discovered this site, as it would have been SUPER ideal for our wedding. I know several of you are engaged or will be soon, so I figured I’d share this. Basically at Black Tux, you can rent tuxes/suits for wayyyyyyy less than typical rental/retail stores while also getting free shipping (and free size exchanges). We had groomsmen from several different states, so this would have made things a whole lot easier for us. Also, they are partnered with Nordstrom, so you know it’s gonna be high quality. If you know someone who needs to rent a tux, this company is definitely worth checking out!

9. Welp, we gave in! We done did it. We finally got the Target Red Card after much contemplation. DJ and I aren’t very keen on credit cards for stores, so we chose the debit option (zero risk involved!). Every time you use it you get 5% off. It’s added up a ton. I highly HIGHLY recommend this if you shop a decent amount at Target, or even if you don’t shop that often- it’s still 5%!img_1655

10. Last, but not least, the grocery store was having a huge wine sale, and I decided to grab this bottle for super cheap of Handsome Devil. I am not picky at all about wine, but I do love a dry, yet non bitter cab. This one hits the mark at such a small price!

The Work Grind- One Week Strong!

Hey ya’ll!!! I just got back from work, ate a gargantuan salad, and am sitting down to unwind for the evening. Today is my day off working out- so rather than working out I am using this time to whip up a blog post! My mind is just buzzz buzz buzzzzing! Rather than jump into the studying and work I need to do tonight, I want to take a moment to reflect and write to calmmmm down.

We left off last time after my first day. Ohhhh my lanta, I cannot get over how much information I have been struck with in a single week. This orientation period is going to be non-stop. By the end of the next three weeks, I will be checked off on competencies I learned through nursing school as well as new ones they have assigned us (like dealing with lumbar drains and neuro. specific interventions). I can hardly wrap my brain around it! 😜

My first thought when I saw what skills we would be doing was Wow, how cool. And my second thought was, Wait…. I have to actually do that now... needless to say, the terror began setting in! I haven’t performed these skills in nearly a year (due to the length of time it took me to get approved for my exam), and some of them I didn’t even have a ton of practice with in the clinical setting. On top of that we have hours of orientation training modules outside of our hospital hours, exams to study for as part of our competency testing, and hospital training for the general on-boarding of staff. Basically- I’m just sayin’ it’s gonna be a non-stop train until about May when my initial orientation competency check is done. I may have next to zero free time, especially starting next week, but that’s okay. It’s so worth it and I’m ecstatic to finally be doing what I love. And I am relishing in the review and learning process. I learned more this past week than I probably learned in half a semester of nursing school. It’s nuts! It feels amazing to be a “student” again… but this time I’m not paying to learn, I’m being paid to learn! How neat!

Part of the reason I love blogging is I can look back and see what I was feeling and thinking at a certain point in time and see the progress since. Right now I am feeling totally incompetent, eager, excited, and exhausted- but also exhaustively blessed. The entire staff is eager to help us learn, and I can’t wait to see what skills I will be capable of in just a couple months from now. Every individual I have met has been honest-to-gosh superb. Like I said in my last post, the culture created by the hospital is unlike anything I have ever experienced.

So a typical day from Monday- Friday sort of looked like this:

5:00-6:00 am: Get ready, have breakfast (yummy deliciousness of Ezekiel bread/yogurt/reduced sugar craisins/strawberries & coffee)

6:00 am: Leave the apartment and beat the traffic (with my business casual clothing that I now own). Ha! In NoCal, if you leave the house at 7 going north, you are guaranteed at least an hour of traffic if you are going anywhere over twenty minutes away. I figure by leaving the house at 6 am, I can get to my destination without traffic and be more productive during the waiting period. (I just sat in the parking lot or at Peet’s coffee to get stuff done!)

6:10-8:00am: At the beginning of the week before we had any assignments due I was able to do some blogging, order bridesmaid dresses for my best friends’ weddings (HOLLA!), and get other random stuff done. By the end of the week I was cramming for different exams/reviewing our wealth of information/trying to keep up!

8:00-5:00 pm: Work work work work work!

The first day the director looked at us all and said point blank, “This will be the hardest year of your life.”

While initially I thought, Hmm, not sure you can top sophomore year of nursing school… ,

I then thought…

BRING IT!

Our first week (and the first part of this week) was all the “logistical” house-keeping information, taking “baseline” exams to see where we stand, orienting the units, and going through different skills and lectures. It has been intense, but I wake up excited to get started every single day- even though it’s sorta a challenge getting out of bed. I just think of my coffee- the most powerful motivator in all the land.

For lunch most days, I pack a No Cow bar, an apple, some grapes, carrots, a couple handfuls of boom-chicka pop, hummus, and almonds. A couple of the days where we had a cafeteria I stopped in and made a massive salad with grape leaves, roasted red peppers, hummus, and all the veggies. YUM!

Let’s take a quick tick and just chat. So first week, right? I had too many embarrassing moments it was CRAY! For instance, I somehow had gum stuck to my jacket on my way into the hospital for the first time. Luckily, someone stopped me and let me know (thank goodness for kind people). I also just said some silly things that make me hot in the face when I reflect upon them, dropped an absurd number of miscellaneous items (including my sanity). To sum it up- I was a hot mess. It’s fine though- my coworkers are all so sweet, and I’m pretty sure everyone’s heads were spinning too fast for anyone to notice! Also, my sister calmed me down on the days I was feeling wayyy in over my head! Hermana to the rescue.

Oh, and the 8am- 5pm is just for orientation and classroom training. When I start my shifts I will be 7am to 7pm! (Then halfway through it flips and I will go to night shifts!).

5:00-6:00pm: Sit in traffic, wanting to pull out my hair.

6:00-6:10: Eat something- I am ravenous when I get home after the long day. I usually have something light like eggs & hummus or spoonfuls of PB2 with carrots or PROTES chips.

6:10-7:10pm: Workout. Trust me, most days I have wanted to do nothing but come home and plop on the couch. But the minute I get outside and start to run or do an Insanity workout I have a sudden renewed energy to get me through the rest of the evening! It also gives me that rush of adrenaline to lift my spirits after fighting the traffic and ease the road rage.

I also love this time to snap some photos. Entering into this new time of life, I am determined to find the beauty in EVERY single day. When I was in nursing school I had this mentality of just doing what I needed to in order to get by. My phrase was always, “I just have to keep my head above water”. Going into this next stage, which will be comparable in the stress/busyness arena, I want to make sure I find the beauty and appreciate that beauty that surrounds me even when I feel like things are just hard! I quite literally have to stop and smell the roses 😉  I have a feeling my patients will be that piece of beauty for me many days <3

7:10-8:00 pm: Shower then dinner!!! Since DJ and I have been married, dinner time has been the one part of the day that we give each other our undivided attention. With his new job, he doesn’t get home from anywhere around 8 to 10pm. I eat dinner on my own while usually playing Grey’s Anatomy or KUWTK to keep me company while I down my food (woah- that sounds so pathetic, but I promise it’s not so bad!). Last week I was on my loaded sweet potato kick (yes, still obsessed), and this week I have craved giant salads with tons of veggies, chipotle black bean burgers, hummus, and balsamic vinegar dressing!

Also- I used to have a recipe posted for this, but I’m not sure where it ran off to. I’m gonna hunt it down soon!

Back to the dinner thing… I’m realizing we have officially passed that threshold into a new stage of life with us both trying to build our careers. Our ebb and flow of the day is changing drastically, all for good reasons, it’s just going to take getting used to. It naturally makes the time we have together all that more treasured. I’m also infinitely thankful for this past year and a half we have had to create endless precious memories and make sure our marriage is on super solid ground before this craziness ensued.

Some days he waits until he gets home (yes that late!) to eat dinner. I try to make sure there is something in the fridge for him. Last week it was salmon, farro, and veggies. This week is crockpot ginger peach chicken with rice, and later this week I am making crockpot ribs! I prepped it all Sunday so that it was good to go for the rest of the week-I don’t have tons of time when I get home in the evenings, so crock pot meals will be our best friends for a bit! I also placed about half of the crockpot meal into labeled freezer bags and for future times that DJ might get home before me, so he can just throw one in the microwave.

8-9pm: Work on misc. tasks that need to be done and work orientation training online.

9 to 10pm: Finish cleaning up the house so it’s tidy, make some overnight oats for DJ to have in the morning. He has been on an OO kick since the Daniel Fast! It’s hilarious to me that something we discovered during a “fast” has become one of his favorite breakfast foods. He also said I need to post my overnight oats recipe, so I may just have to do that!

After that, I get everything together for work, eat an ice cream cone (my mint chocolate chip phase has gone back to cookie dough), and plop into bed to read HP hoping to fall asleep before 10:20. DJ usually comes home right as I’m getting into bed, so I make sure to give him a hug before I hit the hay. I think we maybe saw each other for a total of twenty minutes from Monday to Friday last week- and that’s being generous!

BUTTTTTT……….

FRIYAY DATE NIGHT!!!!!!!!!!!!!

Oook, I may be getting ahead of myself. We both were POOPED come Friday. I seriously could not peel myself off the couch. So we decided to make Friyay Date night into Saturyay date night.

We tried out this restaurant in Campbell called The Socialight. It was one of the most unique menus I have ever seen (slightly reminded me of options that would be on Orchard City Kitchen’s Menu).

I was obsessed with the inner decor. I told DJ if I ever owned a restaurant this is what it would look like. One side was lined with wine coolers, and the other side was a sports bar feel with hanging globe lights down the center. It was the perfect mix of class, elegance, casual, and chic!

Like I said, the menu was fascinatingly eclectic! DJ and I tried as an appetizer their salmon sashimi with avocado and wakami salad served with shrimp chips (my mom used to make these chips at home when we were younger, so this flashed me back to my childhood!).

DJ ordered their fried chicken and raved about how tasty it was.

I ordered their vegetarian Indian Paneer with caulfilower confite and yogurt glaze. It wasn’t bad, but I was a bit disappointed. And the service was epically slow- (we were warned about that on YELP!).


Sunday we went to church.


 After, I meal-prepped and worked all day on orientation assignments. The hardest thing I think about this new job is the feeling of having to say “no” to so much else outside of it. I am undeniably a people pleaser, so when I have to say no I almost feel like I’m doing something wrong, or selfish. I won’t be able to volunteer as much at church as I used to be, and I’m not able to hangout with friends like I used to either. I guess my biggest fear is that people won’t understand- that they will resent me for it. But my mom reminded me that this is God’s calling on my life, and there is nothing selfish in pursuing that. I’ll still be serving, just in a different way. All I want to be able to do is give my everything to this year, learn as much as possible, and take advantage of this residency as much as I can. I want to be the best nurse I can possibly be. I want to be able to give my patient the best care possible, and that is going to come at a sacrifice in this present era of my growth. I don’t mind the sacrifice, I just hope I don’t lose others in the process. Mom L reminded me that those that are truly friends will be supportive and there at the end of it all. It’s true too, I just have to realize change inevitably does bring change in other areas.

ALSO- quick highlight- the lecturer made a pun that I just can’t keep to myself. The best part is I don’t think he even realized it….. but while referring to a colleague, he said, “She’s a cardiac nurse at heart”. BAHAHHAHAHA.

I really want to open up some conversation with you guys- I miss having time to read all the blogs and keep up. I’m gonna try to find a way to fit it all in because goodness gracious I miss it too much! But for now let me just get some feedback…
