I Accidentally Stole From Target & Other Recent Happenings

HOWDY! Excuse me while I unleash my good ole’ southern side (I just booked a quick four day trip to Dallas in August!). YEEHAAW. My schedule only comes out about three or four weeks before, so I’m doing all my planning last minute, but I’m learning to navigate it.

I’m thrilled to tell ya’ll that things are getting mucho better. I think after I wrote my last big nursing update post I began truly coping. I’m able to sleep through the night most nights without taking an absurd amount of melatonin, and I am able to separate work from home a bit better. I actually have some energy outside of work and am becoming motivated to start, idk, do real people things, besides sleep on my off days. I’ve still had days that would consume me at the beginning, but now I try to just see them as a learning experience. I feel that I am contributing more to my patients’ care too. One of my patients was just a bit too drowsy for my likin’ and had sluggish pupils. I let the doctor know, and when they did the CT scan it turned out he did have a re-bleed in the brain. As much as I wish these types of complications didn’t happen, it was incredibly rewarding to feel like I actually made a true difference for a patient. I still have an infinite amount to learn, but I don’t get nauseous every single day walking into work. I’ve actually had a few times where I’ve been somewhat excited to go back in because I knew I was getting my same patients back from the prior day! This turned corner is all, 100%, due to the tremendous support I have received in the last couple months and spending time in God’s Word has truly helped change my perspective. I don’t think I could have survived the first three new-grad nursing months from h-e-double hockey without you all, DJ, my family, my friends, and other coworkers. It sounds supes cliche, but it’s the truth. I have just a couple months until my probation period ends and I think I might just make it, guys! Then I will officially be a Clinical Nurse II! Just gotta keep peddlin’ on. (I needed to work in this photo somehow).

When going through my Camera roll as of late I noticed two things. A. All I do is take pictures of food. and B. I make some weird crap. But I swear, it’s delicious crap.

Ok, exhibit A….

I decided to try a portobello mushroom cap stuffed with baked tilapia, blistered tomatoes, hummus, kalamata olives and seasoned with Za’tar. I had a side of quinoa & brown rice. It turned out crazy good. I made it the next day. DJ really enjoyed it as well and commented how good the house smelled when it was all cooking.

I also have been craving tofu lately! Last week I made a medley of roasted veggies, vegan turmeric cauliflower mashed potatoes, and pan roasted tofu with tomatoes.

I then bought giant collard green leaves and stuffed them with the above plus a dollop of hummus.

Last Monday (7/10), I finally FINALLY was able to see one of my girlfriends, Sara. Our schedules haven’t been lining up lately, but they matched for once! DJ had to work super late that night so it made for a great impromptu girl’s night. I still had to work on Tuesday, but not until 2:30 pm, so I didn’t have to go to bed at 9 pm. She came over and we watched Bachelorette, sipped champagne, and ate cookies & chocolate. It was sooo needed.

Tuesday (7/11) DJ and I worked our toosh’s off, but Wednesday (7/12) we both had the same day off! *GASP*. The same day?!? Yes, yes… I know it’s hard to believe, I was looking for the pigs flying overhead too. We were both pretty exhausted from the day before and decided to just take a chill day. We started our morning with a breakfast at Bobbie’s Cafe. This is a staple breakfast place in Cupertino. It’s your typical mom-and-pop dive with great staple breakfast options, phenom service, and friendly folks who appear to frequent the diner for their morning cup of Jo and side of eggs.

I ordered their poached eggs over an english muffin with a side of cottage cheese. It hittt the spot!

DJ says Bobbie’s pancakes are some of the best around here. I tried them, and definitely concur. I say they taste similar to Heidi’s– light but full of flavor.

In the evening I made DJ a pepper jack crusted chicken with a sprinkling of pita breadcrumbs and pasta. For myself, I ate a collard green/cauliflower/veggie/hummus/tofu whatever-the-heck you wanna call it wrap.

Since we graduated our FACC series class, we are only having one class with our Cohort every couple of months. We begin our research project in September. Eeeek! I am too pumped. I already know what our topic is gonna be, and I’m nerding out hard core.

They surprised us Thursday morning (7/13) ( with the most gourmet breakfast! I quickly snuck a picture when no one was around 😉 ) #DOITFORTHEBLOG.

It included all kinds of fruit and bagels with cream cheese, capers, and smoked salmon. I told one of my coworkers that every single tear in the last few months was worth it for this very moment.

After a long week of work, DJ and I set out to Oren’s Hummus shop on Main Street lateee on Friday night (7/14). It was a super spontaneous date night, neither of us thought we would be home as early as we were (I actually got out on time!).

If you want the run-down of Oren’s, go here, such a throwback post. It’s one of our all time favorite spots, and they have some of the best hummus in the whole wide world.

For an appetizer, make sure to order their original hummus with a side of whole wheat pita. Greatest life decision, I promise.

I always order their Moroccan carrots, marinated beets and veggie skewers, and DJ usually gets their beef hummus.

Funnnnnyy story: We stopped by Target afterwards to pick up a few groceries and a card for a friend. I picked out the card and walked around with DJ for the rest of the food he wanted to pick out. When walking back to our apartment, I realized I still had the card under my arm and hadn’t paid for it. I FREAKED out, classic “me” mode, and started sprinting back to Target hollerin’ to DJ, “I accidentally stole it!” When I looked to my right there was a Sheriff stepping out of his car in the parking lot. I dived into Target half expecting him to chase me. I’ve always loved the show Cops, just never expected to be on it. Nothing ended up happening. I walked up to the cashier and explained what happened, they couldn’t have cared less, but I clutched that receipt ready to explain myself as I left the building!

On Saturday morning (7/15), or any day I have off, you can almost definitely find my in my lil’ egg basket. I just swing, swing, and swing while enjoying my coffee, avocado smoothie, and oatmeal chocolate protein cookies. It’s hands down my favorite part of the whole day!

DJ and I both had Saturday off too. DJ played some basketball with the guys in the morning and I went on a nice, loooong run. We also snuck in a few episodes of Game of Thrones and before we knew it, it was dinner time!

DJ suggested Mod Pizza. How I haven’t been here yet is beyond me. They have them all over the US- anyone tried it?! It’s basically a subway for Pizza and it’s amazing.

The crust/sauce/and topping options are endless AND they are reasonably priced. Around here that is a BIG deal. (literally). SUNS OUT, PUNS OUT.

Deej ordered a Chocolate Milk Shake- I tried a sip. If you are a shake lover, you should definitely order one of these. Wowza! It was sweet, but the chocolate flavor was sending me into a whirl like the Cuckoo bird in the Coco Puffs commercial.

I did a Mini-Mod with red sauce, all the veggies, and fig balsamic glaze to top it.

After we devoured every bit of our pizzas, we headed to the Row to be out and about (like I said, I’m beginning to turn back into my old self a bit more!).

The parking was super limited on a Saturday night, so we had to park on tippy-top of the parking garage. We didn’t mind though, the view of the Sunset was perfect, and we made it just in time!

On Sunday (7/16) we went to Church. It was one of the first Sundays since starting this job that I actually had off and could actually go. It did something good for me to see all my friends. I missed everyone so doggone much!

After I did a quick grocery trip. I love grocery shopping- I just put my headphones in, listen to a podcast, and stroll the magical Safeway aisles.

In the afternoon I meal prepped a bit- cutting up veggies, getting meats ready, yada yada yada, and then I made my faveeee oatmeal chocolate chip protein cookies. I cannot get enough!

DJ has been asking me lately to make the Dixie Stampede soup. Dixie Stampede is a Dolly Parton owned show/restaurant in a few locations. DJ went with the basketball team in college to the one in Branson, MI, and came back raving about the soup. I whipped up a big ole batch that lasted all of three days.

It is currently Wednesday (7/19) after working Monday and Tuesday. Today I am going out on a long run to catch up with podcasts and then I’m not sure what the evening holds! Tomorrow is pretty busy though, I’m excited to share all about that in my next recap post. Now that I’ve downed basically an entire jar of PB2, I’m off to run and soak up some beautiful sun! Los Angeles- WEHO Part One

To say this past weekend was fun would be a tremendous understatement. It was truly one for the books, and I can’t wait until the chance to go back to LA! I went down with a couple girlfriends super last minute. DJ and I were planning on maybe going to Napa for President’s Day Weekend, but he had to work (or thought he would have to), so this trip worked out super well! He knew I had been dying to go to LA ever since we’ve moved out here and encouraged me to go especially before the job starts. I have never been (neither has one of my friends, Dani- dark hair). SO, Tammy (blonde hair), lived in the OC for a good part of her life and offered to show us around West Hollywood (WEHO). Best tour guide ever!!!!!!!!!

I definitely have to make this post into two parts (maybe even three), because there are SO many pictures and SO many good memories to share! I didn’t think I’d get a chance to blog this yet, but I came down with something bad last night and am stuck in bed. Hence, time to blog. Also- I think this is the fifth time I’ve gotten sick in three months. I’m guessing it’s just all the stress, little sleep, change in climate, and insane amount of activity going on!

Anywho, on our way down Friday the weather was rough. We were getting texts from just about everyone we knew to be careful or to just turn around. BUT us girls are from the midwest (and Washington), so a little rain didn’t deter us.

When we were about an hour into the trip, my tire pressure light flashed on. Of course, because what is a road trip without a little needed car maintenance? We pulled off the next exit and gave the wheels some air. When Tammy was running back inside the gas station to return the tire pressure gauge, I spotted a flash of color out of the corner of my eye. I whipped the car away from view and Dani said, “What the heck are you doing?” I said, “I just saw a Peacock!!!”. She didn’t believe me for a second until the big feathery creature trotted on it’s way in our eye’s view. Sure enough, it was a peacock. So far I have seen wild zebras and peacocks in California, so I’m not sure what to expect next!

When Tammy came out of the gas station she didn’t see us (we had drove around the corner to chase our pretty little friend). I said to Dani, “That’s okay, she’ll call us.” Then we both noticed her phone was still sitting in the passenger seat. We quickly drove back around and she was standing there with the most bewildered look on her face. We had some explaining to do, but we were both laughing so hard it was all we could do to spit out the word “peacock”.

In the evening we arrived at our Air B n’ B! I will say I was a touch skeptical about this service as I’ve never used it before, but it was AMAZING. We were located in the heart of Beverly Hills, walking distance from Rodeo Drive and within short miles from anywhere we wanted to go. The house itself was adorable, clean, and the hostess was easy to communicate with. She left us clear, amicable instructions about keys, the parking pass, and even said we could help ourselves to tangerines on her table. Hospitality is apparently not dead! This was a steal too. It was about $140 for the entire weekend per girl. (I know it’s taboo to talk prices, but I really wanted to emphasize how great this is!). If you have never used Air B n’ B, I highly recommend. But do a ton of research and look at MANY places to make sure you are getting the best/most safe/accessible place around! Traveling is becoming easier and cheaper by the day!

For dinner we went to a place called Saddle Ranch Chop House. I tried to grab pictures, but it was quite dark inside and none of them were showing up. We had snacked a bit on the way and weren’t starving, so we spit their famous jalapeño mac and cheese and cotton candy.

I rode their mechanical bull and since I didn’t fall off I was awarded a second gargantuan cotton candy. I don’t even like cotton candy, but how can you resist this?!

After, we headed to a place called Hyde Sunset Kitchen & Cocktails. Someone had recommended this place as we were on our way out as a good place to go to just hangout. Ready for the most epic part? Where are my bachelor fans at? We saw Chase McNary, Luke Pell, Jasmine G., Christian Bishop, Lace Morris, and ready for the kicker? Amanda and Josh- together. Yep we knew they were back together before TMZ! There were all these articles coming out Monday about them being seen Sunday night together. Haha- we were freaking out when we read this.

In the morning I woke up at 7:30 to go for a run. I got in about 9 miles just running around Rodeo Drive, different neighborhoods, and Winchester Blvd. I LOVED these morning runs, although I was going on little sleep every time I did one.

Once we were ready for an epic Saturday, we headed to the legendary Urth Caffe. If this was close to me, it could be dangerous. They not only have the BEST matcha green tea lattes on planet earth, but their food is phenomenal.

I ordered their salmon scramble which included toasted ancient sprout bread (YUM), roma tomatoes, and chives and then added capers and red onion with egg whites.

Tammy ordered the rustic poached which included two poached eggs over toasted whole wheat bread garnished with capers, basil oil, heirloom tomato, and red onion. Isn’t it pretty?!

Dani ordered the Mexican Omelet which included three organic eggs, roma tomatoes, green chilies, red onions, monterey jack cheese and cilantro, served with salsa. Unfortunately I didn’t get a pic of this for you to salivate with your eyes, but I’ll take her word for it and she said it was delish!

They serve their coffee in a BIG cup. Their coffee is super strong, as is their espresso. If you go here, get the matcha latte!

After breakfast we walked around to check out all the shopping on Rodeo Drive! These stores astounded me. WOW- just the pure wealth is mind-blowing. We were wide-eyed at the price tags on everything 99% 100% of the time! We were waiting in line for the restroom somewhere and one woman said, “I love your shoes! Who are they?”to a girl standing next to me. Lol. “Who”. Glad she didn’t ask me because I’d be like, “Uh, my boy Target”.

So the thing that sparked this trip initially was our bonding over Vanderpump Rules and Housewives of Beverly Hills. I’m honestly so embarrassed to admit that, but we all have our guilty pleasures, right?! Pure entertainment. I consider them more comedies than anything 😉

Anyway, stopping by and seeing Kyle’s store was essential for us. The clothes were crazy expensive like everything else, but ridiculously soft. I don’t know if I have ever felt such soft clothing in my life.

After walking around there for a while we went to get the classic Hollywood sign landmark!!!! I was ecstatic when the renowned block letters came into view. I’m such a sucker for the touristy attractions.

Our last stop was the Bel-Air House, but we needed some coffee from The Coffee Bean & Tea Leaf to give us a pick-me-up. (Peet’s still takes the cake 😉 ).

We then headed back to our Air BnB to get ready!

The excitement could not be contained. We were finally going to SUR!!!! If you watch the show, you know this is a huge deal. If you don’t, then just don’t mind me while I lose my cool a bit.

When we arrived we didn’t have reservations, and there were only three tables that were “First come, first serve”. It looked like a group of married couples was about to leave, so we asked them if they were. They said they might leave soon, but weren’t committing. However, they said we could sit with them if we wanted to to order food! It was incredibly kind of them to offer. We finally were able to get some grub- we were STARVING.

We all agreed we had to try the famous goat cheese balls. I’ve got to say, they were even better than I had anticipated. If you are ever in WEHO, you MUST stop in SUR for an order of goat cheese balls. We also tried the ahi tuna and Dani & Tammy tried the sliders. It was all insanely delicious.

Now, I know many of you are wondering, “Well did you see any of them (the cast)?”. The answer is a big ole’ YES! We didn’t see many waiters or waitresses, but we saw Peter, Ken, Lisa, and Giggy! We were all fan-girling so hard.

WEHO is popping in the evening. We walked around the strip, stopped in a few different places, and then were hungry once again since we hadn’t had a huge dinner. We stopped by Mel’s Drive In for one of the best veggie burgers/milkshakes/and sweet potato fry meals before heading home! I had wanted to try Mel’s for a while, and it certainly lived up to the hype. I can’t wait to take DJ there.

Forth Worth, TX!

Happy Tuesday!!!! Boy, do I have a treat for you! I slowly have been recapping our travels on our cross country trip in between present day California updates. It’s like one of those super confusing movies where they flip back and forth between past and present, and sometimes you can’t figure out which one it is, ya feel? Anyways, after our amazing Hot Rolls experience in Ozark, MO, we headed south to the good ole’ state of Texas! My parents moved there a couple years ago. When I was planning our wedding last summer (2015), before my trip to India, I spent the entire month in Fort Worth. I just fell in love with the area. Everyone is incredibly friendly, and if anyone knows you are from out of town, you will get a big smile and a “Welcome to Texas!” guaranteed. The energy in the city is contagious. We wanted to stop and say hello to our parents before continuing on and we managed to squeeze a decent amount of activity in our twenty-four hour period!

After a long day of driving, we arrived in the evening and definitely needed some R and R (can you tell?) No better place to relax than Mama’s back patio. She has it decorated so gosh-darn cute.

When my family gets together (even if it’s a small get- together) it’s about guaranteed that there is going to be some kind of cocktail/appetizer hour followed by  dinner… AKA two dinners. For our apps we had baked brie with granny smith apple slices and sushi. It was a delicious, and I wish I had taken a picture! As usual, I gobbled it all up before the thought crossed my mind! Dinner consisted of delicious chicken (at least I heard it was delicious 😉 ), russet potatoes, and a vegetable platter from Texas Bleu. Look ya’ll, if you ever go to Fort Worth/Keller area, you MUST go to Texas Bleu. It is one of the best steakhouses of yo life!

We went to sleep pretty early on because we were whooped! The next day my mom and I started the day early by going to the local gym together. Lately she has really prioritized exercise and gets up most days before 5 am to go to the gym. (Go mom!) After exercising, we went to the local Farmer’s Market and tried watermelon juice from one of the cute little stands. It was insanely refreshing after that workout! We then went back to the house, picked up DJ and relaxed at the local watering hole (or Keller’s Recreational Pool). I haven’t gone into a lazy river in years. It was so nice to float around and around and chat about just anything and everything.We were so on-the-go that I hardly have any pictures of the first half of the day’s festivities!

We got ready and hit the city!!! First we went to the Fort Worth Water Gardens. I have never been anywhere like this. This “downtown oasis” consists of uniquely architected structures that each have a specific characteristic. There was a wedding and a quinceanera going on while we were there. My mom thought it was especially fascinating, and she chased around the quinceanera group to get pictures. You would have thought she was one of the kid’s parents. No shame. She did end up getting her picture that she wanted so badly!

For dinner we went to one of the BEST steakhouses ever (like I said-come to Texas for a great steakhouse!). While we waited, we hung out in their boutique. They had the cutest Texan turquoise purse I have ever seen, until I saw the price tag. That made it a little less cute!

Appetizers:

  • Presenting the most incredible Bacon wrapped crab stuffed jalapeños. I don’t even eat meat, so I took off the bacon (some of you are cringing hearing me say that), and they were still TO.DIE.FOR. Truly one of the greatest things I have ever tried at a restaurant. The side of jalapeño cheddar grits will transform your meaning of “grits”, I promise!

  • Fried Calamari with Cowboy Cocktail Sauce– Yes, it was as good as it sounds!

Mains

  • The main course part of meals is incredibly stressful for me. It all looks so goooood! I can never decide on a main entree and usually end up ordering something, then changing it by the time everyone else has ordered. To help with this indecisiveness, my mom and I usually choose two meals we both think sound good and split them half-and-half. This time we split the Mahi-Mahi with Lobster Florentine (pictured below- no explanation needed) and the Jalapeno Cilantro Crusted Red Fish (hello, taste bud explosion!).

  • The men each ordered the Pan Seared Crusted Tenderloin with Port Wine sauce. They said it was good, and I am willing to bet they ain’t lying!

Sides

  • I require of you, if you go here, you MUST try the Bourbon Creamed Corn. it was one of my favorite parts of the whole meal! (Dip some of their corn bread in the creamed corn if you like all good things food).
  • Butter Roasted Mushrooms– Yes, I am currently drooling all over my laptop, how kind of you to notice.

Dessert

  • We couldn’t decide on one dessert, so naturally we ordered three. That’s normal, right?
  • First we tried the West Texas Pecan Pie. Can Pecan pie ever be bad? NO.
  • We then tried the banana pudding– it was “eh”. I’m not picky about desserts, if it has enough sugar than it really can’t be bad. This was just missing that banana punch, hate to say it.
  • However, we finished up with the Dutch Oven Apple Crisp with Cajeta. Not sure what Cajeta is, but I really like it!

  • Next time we go, we all agreed we have to try their Chocolate Bread Pudding Tamale. I mean, just look at the things! We didn’t order them because the banana pudding sounded so light and tasty, but this is what the waiter recommended. There is your lesson for the day, boys and girls, always take the waiter’s recommendations!

After dinner we walked around downtown Fort Worth for a while. I was surprised at how nice everything was. It did not feel like a downtown, but rather like a large scale suburban shopping center. For our evening entertainment, we went to Four Day Weekend Comedy Show. I love a good IMPROV show, and this one surpassed all expectations. The way this show works is the audience writes sentences or phrases on a piece of paper and place it on a board near the stage before the show starts. During the show they randomly pick off words/phrases and use them in their skits. It’s too much to handle. We were roaring.

We wrapped up the night by sight-seeing the rest of sparkling Downtown, sitting at a patio and enjoying the warm breeze while sipping on some light beverages, and debating wayy too long about what type of bush was planted next to our table. We then headed off to the Grand Canyon in the morning! More to come on that adventure!
