Soufflé Pancakes & It’s Finally Autumn!

Hey, everyone! I am trying to get us all caught up before a super busy (and fun) week ahead 🙂 This morning is a three cups of coffee type of day, but I’m resisting considering I have to get up at 4 am tomorrow morning. Wish meh luck…. sometimes I wonder how I did that on a regular basis for over a year. I think we left off right after Thanksgiving!

November 23rd was a day of utter relaxation for DJ and me. I used to love Black Friday shopping, but now that online shopping is available I would much rather do it from my home than fight the masses. I ran a few errands and then we had a Thanksgiving Round 2 with all our leftovers in the evening (you can see those in the Friday Faves post).

November 24th DJ and I woke up early, went to our local Target, and then grabbed some Starbucks. I still have to try their new holidays drinks. Anyone try the Juniper Latte yet?

After breakfast I enjoyed a nice long run on a my-kind-of-Saturday-morning grey day!! It actually finally feels like Autumn now. Leaves are falling, I repeat- the leaves are falling!

After working on some school work I was in a mood for a movie. I am never in the mood for a movie at home, but for some reason nothing sounded better that evening. I usually can’t sit still that long, but I was so exhausted after all the festivities, and with the warm Christmas tree up it all sounded perfect. We chose Manchester by the Sea. About twenty minutes into it we turned it off- it was too depressing for the mood we were in. Instead, we tried Crazy Rich Asians, which I had heard raving reviews about. It was a good movie, we enjoyed it- but were sad they portrayed Christians in a such poor light, yet again, through the Hollywood lens :/.

Sunday morning of the 25th before church we tried out Koja Kitchen. DJ and I have been drooling over pictures of these soufflé pancakes for a couple months. After our experience at Cafe Jacqueline, anything with the word “soufflé” is calling our names! Within this last couple weeks just started selling them at this particular location by our apartment… serendipitous I do say!

DJ had their mixed berries ones, and there was not a trace left within a couple minutes. Rarely does DJ rave about food in the way I do, but he couldn’t stop talking about how wonderful these were!

And I concurred. My matcha mascarpone ones were next level fluffy, yummy deliciousness!!! These are crave worthy- the texture & flavor is everything. I don’t know how soufflé pancakes aren’t a staple for all breakfast spots. They are just phenomenal.

After church I enjoyed a shorter run soaking up the beautiful day.

November 26th I went on a nice walk before finishing up my massive paper for the semester. Woohooo!

On Wednesday November 28th I just continued to truck along with the school work with a run squeezed in between.

In the evening I posted a whole bunch of stuff on Poshmark and sold a few items. That always feels so satisfying, especially when you sell something that has just been sitting in the closet for a while!

Thursday the 29th was the same ole’, same ole’ for us with school and work, but in the evening I made more of the mac and cheese recipe from Thanksgiving! My goal is to figure out a vegan version of this. But for now- bring on the dairy!

I classify this as “cry food”: Food so good you get emotional and may even feel the urge to cry tears of joy.

Friday November 30th I went to a new hair salon and had my roots fixed from the fiasco of the last lady now that I’ve nursed it back to health somewhat. I loveeed how it turned out, I paid about half the price as the other place, and definitely spent half the time in the chair. I am so stinkin’ excited about this… y’all know I’ve had a difficult hair journey since moving here, so I’m glad to have found somewhere affordable and high quality! I loved my stylist too- she’s so sweet, fun to chat with & knowledgable.

We decided to have a formal date night for the first time in a long time! We have been kinda all over the place with work/school/etc. this last few months, so our attempt at a weekly date has fallen to the wayside (although we could consider our weekend breakfast tour a date day I suppose!).

We received a coupon from Steins to try out their new menu. If you’ve been following along for a while this place probably looks familiar. We were excited to try it out!

I am always skeptical about a soft pretzel since trying the one at Deschutes in Portland. That one was just too good & has ruined every soft pretzel since- nothing ever comes close! However, this one was solid. Not as good still- but close, especially with the dipping sauces of caraway beer mustard, pub cheese, & tomato jam!

Gotta get those truffle fries!! The lemon aioli they are served with is the most heavenly aioli everrrr.

We tried their creamed spinach too- and was pleasantly surprised how good this was! Typically steakhouses are the ones with the best creamed spinaches, but this is up there for sure.

DJ had their chicken tenders with their super spicy hot sauces. Mmm mm! I used some of the hot sauces for dipping too. DJ said these are some top notch tenders.

I tried their vegan cauliflower & garbanzo bean vegan dish paired with a cold glass of Pinot Grigio (perfect combo). This dish is supposed to serve three people, but when in marathon training….lol.

The dish was… fine. I wouldn’t order it again, probably will go for the fish next time- but it was still satisfying & is a great vegan option for those that are strictly vegan!

We came home, watched Arrested Development, and crashed.

On the morning of Saturday December 1st (How is it December?!), we had to go back to Koja…… the cravings were REAL.

This time I tried their Tokyo caramelized banana option! It was tasty, but I still prefer the matcha mascarpone. DJ had the mixed berries again.

I had a great long run of 16.75 miles after that carb load. I studied the entire time on the treadmill because it was raining outside. I made a solid dent in the books & actually felt better than I thought after the run. In the evening we had all our leftovers, and I spent the rest of the day resting the legs and blogging.

Yesterday, December 2nd, we went to an awesomeeee church service, then I did the first 20 minutes(ish) of this Youtube HITT routine. I ran some errands and then stopped by my friend Sara’s to wish her a happy bday. I worked on school work for a few hours, spent on hour talking to SheIn customer service (do not order from them- it’s not worth it), and last, to round off a nice, lazy, yummy weekend, we watched a couple episodes of Arrested Development.

Today the 3rd, I made a bunch of returns on my Black Friday orders. I ended up keeping two shirts, but it’ll feel good to see that money come back. Right now I’m enjoying this bowl of overnight pumpkin oats with fresh cranberries, a dollop of Fage, & maple syrup. Holy smokes – I might be on a new kick!

The rest of the day is dedicated 100% to studying. Watch out Research & Stats, I’m coming for ya. We leave tomorrow for Disney, so I’ll probably be MIA till next week! Hope this week is absolutely restful, joy-filled, & lovely for each of you!

Crazy Wildfires & DJ’s Birthday Celebrations!

Happy Thursday, ya’ll (well, Thursday by the time anyone reads this- although it is currently Wednesday evening)! How’s it kickin’?

We said goodbye to one of my favorite charge nurses last week; I was super sad to see her go 🙁 (This send off banner was too funny not to share though!)

DJ’s birthday was October 6th!!! I can’t believe I am just shooting this post up now. Sheesh! Anywho, we had a gift card to Open Table that was put to phenomenal use at the local Forbes Mill in Los Gatos!

This sweet man.. I would usually not pull my phone out at places this nice to snap food pics, but he convinced me that it was just us two and it wasn’t a big deal…. I obliged pretty easily 😉

We started with the giant prawn cocktail. There is nothing better than a fresh shrimp/prawn appetizer. It’s easily our go-to!

We also tried their crab cakes! They were tasty, no denying it…yet a far cry from the cakes we had in Baltimore.

I also had their generously sized beets and macadamia crusted goat cheese salad. It was one of the best I have ever had,  and it’s so simple to throw together! I definitely will be recreating this at home.

DJ tried the ULTIMATE surf and turf with a combo of waygu and lobster tail. I sampled the waygu because it’s supposed to be the highest quality of meat, and I couldn’t let the opportunity pass….. butttt I had an aversion to the flavor. After not eating meat for about four years it didn’t do anything for me.

We also dabbled in a side of creamed spinach.. if it’s on the menu you know we are jumping on it! We absolutely loved it. I still think the creamed spinach from Ben and Jack’s in New York is the best of all time, but this is not far behind.

And I couldn’t pass up the epic, rave-worthy, award-winning scallops….. I think the only ones that contest are Farallon’s in San Francisco. Gosh, just the thought is making my mouth water all over the darn laptop. They were served over forbidden rice- a new obsession of mine officially. Has anyone had this magical grain?! It’s ah-may-zin!

I could go on for days and days about how amazing DJ is. He is a man of God, handsome, humble, hilarious, loyal as they come, my rock, courageous, intelligent, witty, intuitive, hard working, dedicated, and genuine. Those qualities just scratch the surface. I don’t know why God blessed me with such an incredible man, but I won’t argue with His provision 😉

The days are all kind of blurring together from the rest of the last few weeks. I do want to share of my favorite snap shots from random runs and of course, even more random pics of all the foooooodddd we’ve been scarfin’!

The fall blooms are just as gorgeous as the spring blooms!!! Even though we don’t have the leaves change like back in the good ol’ midwest, we still have the beautiful array of flowers to admire in this season.

Unfortunately, my autumn runs had to come to a quick halt when the wildfires started last week. It smelled pungent with smoke in the hospital (which is closer to the fires than our apartment is), and then eventually the air around our home was saturated with the unescapable burning scent. In the morning when we woke up our eyes itched, our throats scratched.. it was surreal. We just keep praying for everyone affected by these horrible fires. I truly hope the madness stops soon and mother earth cools her jets.

Back to the random food mess… I’m still on the egg kick for suure. (I put some of the leftover creamed spinach on a piece of toast and then the egg on top, good heavens).

I also have been CRAVING a Whole Foods trip. Since they have always been ugly pricey, I usually only go every once in a while. However, now that they are bought by Amazon their prices have gone down tremendously!

Using many of the ingredients from whole foods, I made a fall salad that I’m ridiculously obsessed now. I was inspired by Stein’s Beer Garden’s salad. It contains jicama, roasted butternut squash, quinoa, light craisins, and I use a homemade apple cider vinaigrette (with some apple cider, a touch of oil, and a touch of sugar).

I think ya’ll get the point. Haha.

Another thing I, and the rest of everyone, has been loving is spaghetti squash! Ugh, it is SO good. I have been mixing it with vegan butter, vegan meatless crumbles, and a touch of parmesan on top. So easy, so scrumptious. I know many of you out there have tremendous recipes for the spag-squa, please share em’ with me!

And I’ve been whipping up a lot of capreses for DJ. This is one of his favorite snacks and the heirloom tomatoes were on sale at Whole fuuds and, oh man, were they ever fresh!

I’ve been decompressing from the studying with lots and lots of running. I have been mixing in Insanity workouts, but as soon as the smoke settled and the air cleared I booked it back outside.

Something else I’ve been devouring lately is smoked salmon on pita with caramelized onions and a fried or poached egg. This has been hitting the spot and has been a great high protein/healthy “comfort food” during this super stressful time.

I took my GRE yesterday …

I crammed for about two and a half weeks in my time off work for the exam, and just didn’t score as well as I would have liked on the quantitative. Algebra and me do not exactly tango in the moonlight. Ask me to tell you the symptoms of Moya Moya or the proper medication to treat tuberculosis..we can chat. But I don’ t have the faintest idea what in the Westeros math has to do with it. It’s not even real math. Like I get 1+1=2… or me +math= disaster….. but I will be the first to admit I do not know how to solve “If Tommy had five oranges and Shelly had 12 and 2 were taken away and thrown at a cactus, why is the square root of the Eiffel tower a bag of potatoes?!”

*Deep breaths, deep breaths*

I get that people study for a looong time for this, but only one of the schools I’m applying to out of five require it. I just don’t think it’s worth it to slave over the study material when majority of MSN-FNP admissions don’t require it, and the app deadline for the one that does is November 1st. (Which is actually great because then I don’t even have the option to retake it for now). Now I’m rambling. *clearing throat*. Oh well, que sera sera.

HOW ARE YOU?!?  I am jumping off the crazy train now, and heading to bed before an early morning wake up call. Muah!

a BIG celeb, a BIG Cinnamon Roll, and a BIG Interview!

Hey friends! This morning (Wednesday while I’m writing this), I had “the” interview. I think it went well! Yesterday was officially the longest day of my life; waiting is probably the hardest part of it all. But this morning listening to worship music, reciting scripture, and receive a tremendous influx of encouraging texts made me feel so at peace. Thank you ALL for your love and support and encouragement. It has made all the difference! Regardless of what happens, I have confidence that the Lord was with me in that room, guiding me what to say, and ultimately guiding me to the best position to glorify Him- rather that’s with this hospital or another.

Anyways, this last week I have been dropping the ball on blogging. And once again the blog-cravings are STRONG as ever. Like I am getting mega-anxiety that it’s been a hot tic since I’ve been able to go over to your sites (my girl, JJ, knows what I’m talking about), AND I am so behind on comments which is definitely not okay.

However before it gets too far past,  I’ll do a little (Lol, just kidding it’s not little) recap of our past week!

But first, I will do blog awards! You guys know I am the actual worst at responding, but they mean the the world to me, and I still want to say a massive thank you. I honestly do have intentions to respond to these, it just might have to be in a slightly unconventional way or a bit late.  Wednesday (1/25)

On Tuesday night DJ and I decided we had a massive donut craving. We looked up some spots in the area that we could go to in the AM and found this super hole in the wall donut shop that had glowing reviews on YELP.

Our review: Overall we like Happy Donuts better (for me their maple was just not cutting it), but their sprinkle cake donuts were AMAZING. So, if you are going maple or glazed go to either Stan’s or Happy’s, if you are going sprinkle/cake, go to Donut Wheel. Still the best donuts we’ve had to date are Krispy Kreme and Patio’s at Lakeside’s (Lakeside is a community of cottages on the lake- one of our favorite places in the world). Just in case you missed our last donut spiel, I have to ask again- FAVORITE DONUT?!

Later that day I went to Tea Annie’s with a friend. Man, oh, man it was so needed in the thick of the stress I’ve been feeling. She is one of those people I just clicked with right from the get-go, and she encourages my heart every time I see her. So thankful for you, Jenny!

Tea Annie’s is known for their tea (particularly bubble tea- which is SO yum), and their massive crepes. Like tell me that’s not the most delicious looking thing you’ve ever seen?! Also, who here is a bubble tea fan? Tapioca pearls- aye or nay?!

Wednesday night DJ and I had an opportunity to lead our Bible Study group – actually I prefer the word “facilitate”. Everyone was super interactive and the conversation was phenomenal, it basically led itself. I am continually reminded how blessed we are to be surrounded by such genuine, loving, and Christ-seeking individuals. Something I absolutely love about being apart of a small group is that it’s a safe place where we all discuss the good/bad/beautiful/sad going on in our lives without judgement. We don’t expect perfection from each other and we don’t have to put on a facade when we are with one other. It’s refreshing. It’s an atmosphere of acceptance, and exactly opposite of what Christianity can often be portrayed as- hypocritical. Some of my deepest relationships since we have moved here have blossomed from these groups. If you need a community in the SV area- I can get you the hookups 😉 I promise that was not intended to be a shameless plug, even if it is!

Now Thursday. This was a serious finish-up day of prep for me. Just reviewing everything, coming to a place where I felt confident in speaking without my notes and guidelines, and just taking some deep breaths.

For dinner, I needed some therapeutic cooking (meaning attempting something kinda gourmet). I looked at all we had in our fridge and decided to make creamed spinach with bacon wrapped scallops over wild rice. I had the same, just minus the bacon. DJ said, and I quote, “This is out of this world.” I think I almost choked on my spinach. I have never received an “out of this world”. Like I don’t even care if I get this job anymore- I got an “out of this world” referring to my cooking. I don’t know if DJ realizes how much that made my life right there!

Friday

We didn’t have any particular plans set Friday night, but our parents gave us their tickets to go to Bob Saget at SJ Improv!!! Uh yeah… THE Bob Saget! Thanks again guys (if you happen to read this). Right before we decided to grab dinner at an Italian Restaurant. We haven’t had Italian in a blue moon and were both craving it.

We found this little treasure called Il Fornaio. It wasn’t horribly pricey like many of the other italian restaurants we were seeing. The waiting staff was some of the friendliest I have ever encountered at any restaurant. Them Italian folk-gotta love them. I sometimes wish that I was born Italian, or Greek. Greek seems fun too.

Naturally, we filled up on way too much bread before. Where my carb junkies at? HOLLA!

I had the rustichella which is flatbread topped with goat cheese, mozzarella, tomatoes, red onion, kalamata olive, basil and oregano and baked in the oven. It HIT the spot. I don’t usually drink white wine, but it sounded like it would pair well with this- it definitely did!

DJ ordered the Pennoni Alla Vodka with large pasta tubes with bacon, vodka-cream-tomato sauce, and Grana Padano.

Then it was off to see Bobby in Improv!!! Ok- I have got to say- it was quite raunchy. By quite I mean really really raunchy. Don’t expect Danny Tanner up on that stage. He actually mentioned that. He said, “People wonder why I’m not more like Danny Tanner, what would I do- clean your glasses and mop the floor?” Lol. That was one of his cleaner jokes 😉

Saturday morning I had some errands to run while DJ went to play basketball. In the afternoon we watched his little sister play in her All-Star game. I have had so much fun attending theses games, I don’t want them to end!

In the afternoon I did some marathon training! I randomly signed up for one on the 11th of February  yesterday so I decided I should make sure I could actually go thirteen miles. I also am signed up for the Big Sur marathon, but I’m not sure if I’ll be able to race that due to the job uncertainties.

**When I get stressed out I sign up for races like people do retail therapy- is that normal? Anyone else do that?**

By the time I was finishing up my run the sun was setting. It was gorgeous out and I soaked up every second of that run. The picturesque landscape continues to take my breath away (or maybe that was the running?)

SUNDAY! 

Wow. Sunday was one for the books! It was another beautiful day. I don’t know what this thing called “sunshine” is that decided to come back to California, but it made an appearance and I wasn’t even upset about it.

Below is one of my dear friends named Kim. She is pretty much the cutest human on planet earth. Love her so much!

It was one of my favorite Sundays of ALL TIME. Our church presented for the first time VIVE people. Miracles do still exist. I’m telling you- they do, and this story is proof of that!

After Church I went and had brunch with my friend, Sara. She grew up in Los Gatos and knows ALL the good spots. (She’s who I went to Santa Cruz with a couple months ago).

Allow me to present… the most epic cinnamon roll of all time. She told me this was necessary to get if you go to Los Gatos Cafe. I understand why. I’m not a big cinnamon roll person, but this blew my socks off. I took a bundle of pictures because this is too insanely incredible not to share.

The lesson is… if you come to Northern California, stop by Los Gatos, particularly Los Gatos cafe and order there cinnamon roll. Before this the only cinnamon roll I really loved were Cinnabon’s. Now I am convinced that these are better. DJ says it is a contender when I brought him home some leftovers. That’s huge!

Oh and that’s not all…

We also ordered actual meals because one giant cinnamon roll is just not enough on a Sunday Brunch. I had their seafood benedict with scrambled egg whites (instead of eggs), served over an english muffin with avocado and hollaindaise (on the side). This was fantastic, but my favorite part may have even been the potatoes. Such great breakfast potatoes. Not sure what they use, but good heavens.

After, we went on a quick walk around the neighborhood. The surrounding area is super eccentric, so it was fun to see the houses and decor. It also was a lot quieter than where we live so it was nice walking around a suburb like that- it felt a little bit like Ohio to me!

Monday and Tuesday were filled with trying to stay calm, coffee, trashy reality shows, and the Bible… which do not go hand in hand, but I’m just being honest with ya’ll.

Now today and tomorrow and probably a good chunk of this weekend I am going to try and catch up on some blogging! We also have dinner plans with my brother tonight in the city and tomorrow night we are going to some friend’s for dinner. I should hear tomorrow or Friday if I got the job!!!! I will certainly let you all know!
