Friday Favorites #12

Happpppyyyy of all Fridays!!!! How are ya? It was super easy to whip up a Friday Favorites this week because there are some things I am luh-ving. This might be my favorite FF yet.

  1. A clean Patio!! I took a day to deep scrub our patio, clean the rug, wash the cushions, etc. etc. It took a while, but I am psyched to use this for the summer. It’s my little happy “feng shui” place for reading, blogging, and morning devos.

2. Blue Apron. I used to use Blue Apron when we first moved here all the time. It became a bit too pricey without discount coupons, but they sent a “we miss you” coupon in an e-mail, so I whipped up those tostadas from the last post and this pasta for DJ to have when he returned from the games lateeee at night!

3. Dolmas. Dolmas are stuffed grape leaves. I don’t know what the heck a grape leaf is (probably leaves of grapes), but I do know they are darn delicious. I could eat these suckers for breakfast, lunch, and dinner. I put them in sweet potatoes, eat them with tahini, and just by themselves with hummus.

4. Green Goddess Salad Dressing from Trader Joe’s. Holy canoli ravioli. Looking for an epic salad dressing that isn’t loaded with crapola??… well, here you are, look no further. You’re welcome, don’t mention it.

5. Nurse’s Week Gifts <3 The gifts below are from my sweet hubby for nurses week (last week, but you know I’m always behind on posting). This toilet paper roll is actually a study tool with real rhythms.. I am obsessed. I laughed sooo hard. Code Brown… lol.

At work they had fun little things happening all week. I was able to sneak some of the cake & we were gifted water bottles & hats. I really felt the love & appreciation!!! And that cake was a nice & needed treat while working in the neuro close observation room.

6. Summer Walks. It’s beginning to look a lot like summmmmer, everywhere you gooo!!! I love walks in the summer, and when I need to run errands I typically will walk to the store instead of drive. I usually call my grandma on my walks (she’s seriously one of my favorite people to just chat with… she cuts it to ya straight, is so wise, and always cracks me up!). But if Grandma is busy (which she is often because she has more of a social life than I do), then I’ll just listen to podcasts while soaking up the fresh air & sun.

7. Wild Wild Country. HAVE YOU WATCHED THIS YET?! DJ and I are chipping away at it slowly since our schedules don’t line up, but the moment we have a free second we watch as much as possible. It is so good. So interesting, thought provoking, and your jaw will drop to the floor many a times. If you have watched it.. I would love to chat!

8. When Breath Becomes Air. It won’t even do justice to say this is my favorite book I have ever read. It’s magnificent, a work of art, raw, and does not shy away from the difficulties of life and medicine. You will leave this book changed. The author is a surgeon who actually worked on the unit & hospital that I work for now, so it especially hit close to home. Many of my coworkers knew him personally and recommended this book to me. I have been harping my family this past week to read it… like sending nearly daily reminders. (y’all know who you are and I’m going to keep annoying you until you have read it).

9. The Couple Next Door. On a very different literary note… I love reading thrillers and mystery books that keep you guessing and theorizing the whole time. This book had so many twists, turns, and definitely was not predictable at all. The writing itself was just okay, but the plot-line was spectacular. Highly recommend (after you’ve read the one above of course).

10. Jergens Natural Glow. Recently Jergens came out with a face natural glow, and I nearly squealed with excitement in the Target isle. This stuff is amazing, it really does give a nice “glow”, I actually don’t even feel the need for any foundation or anything after using this and it doesn’t make me break out (I have very sensitive skin, so if it works for me it will work for you!).

Plants & Face-Plants.

Hey guys!!! I just finished up food prepping for work and am sitting back eating my usual giant summer salad. I’m pretty excited to write this update because there have been some fun happenins the last couple weeks.

April 21st I headed back to work. I forgot my lunch *sad face*, but discovered this gem in our hospital cafeteria instead. I always pack my lunch because we barely have time for our breaks so running to the cafeteria and back doesn’t make sense… plus it’s wayy more cost effective to pack. Anyway, this little gem is from Urban Remedy. Oh me oh my, so delish! If you see this out and about, snatch one! This bowl had quinoa, roasted sweet potatoe, cumin, himalayan pink salt, chickpea croutons, pumpkin seeds, and beets with tahini dressing. Lemme tell ya, a nurses lunch break is the most sacred, best part of the day (if they get it). Haha.

April 23rd was a little “sandwich” day (a day off shift between a stretch of shifts), so basically my day consisted of sleeping and snacking.

DJ and I have been using Freshly to fill in a couple meals here with the couple codes they have for the first couple boxes. They have a southwestern bowl that I like combining with other foods- this combo was mmm mmm goood. I’m really feeling a quinoa kick lately. It just goes with everything!

Also, from TJ’s I have started getting pickled beets and dolmas that I love combining with hummus and tofu and a slice of Dave’s Killer bread. The combo itself is killer 😉

In the afternoon I went on a nice little jog to soak up some beautiful sun & blooms.

The other kick I’m on is a purple sweet potato stuffed with avocado and Fage yogurt topped with cumin, paprika, Himalayan salt, and cayenne.

After working the 24th, I came home starvin’ marvin’. I decided to whip up a makeshift pizza with the ingredients we had since all the pizza shops were closed. I made “naan” pizza with tandoori naan, tomato basil pasta sauce, sautéed veggies, and red pepper flakes (with of course some ranch… anyone else like ranch with their za?). My midwest is showing…

And finally…. a moment to breathe for a bit on April 25th! I slept in and spent the morning cleaning up, catching up on emails, getting requirements done for grad school, yadayadayada. In the afternoon I had garlic and herb shrimp from Freshly over kale.

On April 26th, I met up with my friend from work, Alexandra, for coffee at Voyager Craft Coffee in San Jose.

Such an interesting place! I’m surprised I haven’t been here before now.

The coffee and conversation were fantastic. I’ll definitely be back here for a pick-me-up!

April 27th I woke up early and jogged my standard route and took note at how every single time I run there seem to be new flowers in bloom!

I spent the day meal prepping again, and then had my standard massive salad for dinner. (carrots/bean burger/hummus/onions/mushrooms/power blend greens/avocado with green goddess dressing).

The weekend at work was rough, rough, rough. Usually weekends are a respite from the craziness, but for some reason this one was ruthless. Needless to say, I was excited a couple days off. April 30th, I woke up with a twist on my sweet potato creation and instead did put yogurt & avocado over a rice cake.

The rest of the day was spent getting Mother’s Day gifts, perusing the shops in Los Gatos, & making a bucket list for places to visit, hike, and eat in SF! I am determined to knock a bunch out this summer.

May 1st (how is it May already?!) I met my friend, Kim, at Cafe San Jose for brunchy food. Kim is also a nurse so it’s always a big breath of fresh air talking to someone who just “gets it”, ya know?

I’ve been wanting to try this breakfast joint for foreeveeer. It had the best Yelp ratings and lived up to, no no surpassssed, the hype.

To start, I ordered an egg white veggie omelette… and oh. my. goodness…. this was the largest omelette I have ever seen. IT WAS HUGE (wait until you see it relative to the rest of the food in a couple pics).

I also had read that trying their Swedish pancakes with ligonberry was a must. And I saw why… this was perfectly, perfectly cooked. The pancake was light, the buttery and fruity flavor tremendous…. one of the best breakfast morsels of all time. I am taking DJ back here ASAP to try this dish.

In the afternoon I went for a nice long run.

In the evening I made a Blue Apron meal- Mexico City Chicken Tinga Tostadas. DJ loved them! Can never go wrong with a Blue Apron meal (although I tend to make quite a mess when cooking up a storm).

May 2nd was the last day off before another stretch of days. The day before going back to work I tend to get pretty down and feel anxious the whole day. (Sunday Scaries some might say…. but it could be any day of the week with a nursing schedule). I usually just meal prep and try to stay preoccupied with cleaning and what not. This day I was feeling extra anxious after such a horrible weekend….I had to do something to get me out of my funk, so I pulled out my SF Bucket List and tried to find something I could knock out in a couple hours. I decided to put the food prep on hold and get myself heck out of the house.

I got in my car, made sure I had enough gas in the tank, opened the sun-roof, rolled down the windows, blasted music teenage style and drove into the city.

First stop was Twin Peaks. This overlook promises the best views of SF.

After driving up a winding road, I parked with no problem (which is rare in SF) at the bottom of one of the peaks (there are two next to each other- hence twin peaks).

It was FREEZING up there and so windy. I thought I was going to fly off the peak, lol. I held onto my hat and made the trek up the stairs.

It was worth it. It provided a 360 degree view from the top. (and provided sub zero degree temps!) (Ok that’s dramatic, but it was chilly chilly!).

After appreciating the majesty of the peaks, I headed to my next spot: The Sutro Baths.

I didn’t think I’d been to the Sutro Baths before, but I actually had… with my friend Annie! There is a fascinating history behind them you can read here. They are situated right next to Lands End, one of my all time favorite hiking spots.

I popped in my headphones and listened to a podcast while making the SF oasis my playground.

In this moment when I took this picture, I embraced the warm sun beating down, had this view in front of me, and took a deep breath. I felt peace, just peace. The anxiety of going back to work dissipated for this brief moment in time.

I came back home, feeling much refreshed, and food prepped with whatever groceries we had leftover. I made a stuffed sweet potato with leftover southwestern bowl and cottage cheese from breakfast at Cafe San Jose.

I also prepped the second half my omelette with cottage cheese, southwestern bowl, and avocado.

The next couple work days went well. I needed a bit of a break from the insanity that had been my last few shifts.

And this brings us to May 5th… you know what that means!! CINCO DE MAYO!!! I love an excuse for Mexican food. Can I get an Amen?!

I went on an easy run early in the morning, but suffered a nice little fall. I tripped literally over my own two feet. I fall far too often when I run. Unfortunately, this was not going to be my last tumble for the weekend…. stay tuned…

I quickly forgot about the horrible fall as I got ready to hang out with two of my favorite people- Amy, DJ’s twin and my friend Sara y’all may remember from several blog posts.

We decided to go to Aqui, basically a Cal-Mex Panera. We had Aqui-perfected Mexican eats and drinks, awesome conversation, and plenty of laughs.

Their veggie quesadillas were by far my favorite dish I’ve had there (which says a lot because I love all their dishes).

When we caught the Cavs game on a TV in the restaurant, we glued ourself to the game for the last few minutes. When Lebron made that game winning shot, Amy and I did not hide our excitement. Have to represent the CLE in the CA! GOOO CAVS!

After an unforgettable time, we went to Target to pick up sweets and went back to our apartment to watch The Sinner to wrap up the evening (woah, this show is twisted, but I love it. It’s giving off major Girl on the Train vibes).

Sunday, May 6th, I woke up bright and early to run a half marathon with Coastal Trail Runs, this one was called the Horseshoe Lake Trail Run. I ran a Coastal Train run last year and it was extraordinarily challenging because you run up a mountain essentially. I love them though because they are a great way to get some phenomenal views and have a nice long run on trails I would never dare to go on my own.

Now, I have to say…before the race I did think I was going to get murdered. I went on an emotional marathon before the race even began. The GPS took me up a tortuous road on a random mountain. Upon the Alexa-wannabe GPS robo-lady announcing, “you have arrived”, I found myself in the middle of nowhere. No other cars, people, or gu stations were in sight. I didn’t know what to do, especially because I didn’t have cell service.

Finally, a car slowly approached my isolated destination and I could make out a mid thirties guy with a neon shirt on, snacking on what looked like trailmix- I put my bet on the fact that he was a runner. I mean I had to be close to the start, right? I waved him down from my driver’s side and he rolled his window down. I asked if he was going to the race. In a British accent, he confirmed he was and told me to follow him but warned me the following road was treacherous. We started on a dirt road that was narrow, and I’m pretty confident would not allow two cars going in both directions. What if another car comes? I thought to myself. One wrong move, you are over the mountain. After ten minutes I found myself deeper and deeper into the mountain, the fog thickening, and my personal plot thickening. Christmas tree farms were on either side, with their Christmas decor still on full display. The smiling dirt dusted snowmen didn’t fill me with joy, but rather terror. This was the stuff of horror films.

At this point I was confident that this man was just leading my back to some obscure location to be murdered. I tried calling DJ, but the call immediately dropped. I didn’t know what to do, then he finally pulled over to the side of the road. I barely cracked my window as he got out of his car and ran back to me. He said, “You should be OK now, just take this road straight for another 20 minutes, I’m going to step on it so I’m not late”.

Another 20 minutes?! It was already 7:20…. the race started at 8:00. What the….. ? I thanked him, and he took off and left me literally in the dust. I drove at a more legal speed down the road, and finally, at 7:50 arrived at Skyline Ridge Open Space Preserve, the starting point. They may want to update their online directions. Baha.

After racing to the porta-potties, I sprinted to the start as the gun went off.

The race was horribly bottle-necked for the first couple miles, but evened out after a bit. I was awe-struck by the views, worth the 1800 feet ascent.

I did have another fall at about mile 9. Whoooops! I can’t seem to stay on my own two feet. At the finish as DJ greeted me with a big hug, he just said, “Again?!” as he surveyed my dirt covered face, hands, and knees. Lol.

And the best part of races….. the post race snacks!

When I say I ate dirt, I literally ate dirt. I caught my body with my face. Haha.. I knocked the wind out of myself, so my chest still kinda hurts when I cough or turn in weird directions too. I find the whole thing pretty hilarious. Before this weekend I had gone quite a while without falling, so I was due for a good tumble.

I ended up in 4th in my age group. After the race, DJ and I headed to Bill’s Cafe (our favorite), that now has a location within walking distance of our apartment. WOOHOOOOOOO!!!!!!!!

I had a massive breakfast of my go-to French Garden omelette and a Bill’s Mimosa.

Last evening, we headed to DJ’s family’s for some yummy grilled food & great chats. We also started a documentary called Wild Wild Country on Netflix. It’s already super fascinating after one episode. Has anyone watched it?!? Thanks for hanging in there for this looooooong post. How are you?!

What a Hoppy Easter!!!!

Happy Friday!!!

How’s it going? I hope all your Easters were egg-cellent!

Hospital orientation ended yesterday (WHERE DID THE MONTH GO?!). All we have now is one more entrance exam next week. This coming weekend is going to be the busiest yet- I work Friday- Sunday with one eight and two twelves. Right now I am taking a quick break from the studies to whip out a post!

Before I jump into the recap I have something tragic to share………..

The legendary red salad bowl is no longer with us.

I realized that the “post 12-hour shift” time frame is very dangerous. Not only did I manage to break perhaps one of my most treasured belongings, but I also set a paper towel roll on fire, went to the store and realized I forgot my purse when about to check-out, and I used the word “one” instead of “won” incorrectly in my Friyay faves post. #Gotocollege.

Does anyone else go into a hot panic when they find errors in their published posts?!? It happens to me every time!

BUT, in other news! I made the last Blue Apron meal in the delivery Friday, and it was out-of-this-world YUM! (PS. if you want a $30 discount off go to the bottom of my About page!).

Has anyone had Cheryl’s cookies?! They are my favorite sugar/buttercream frosted cookies out there. It was the perfect treat after a long day. I also needed to carb up for a big run in the morning!

Saturday

I mentioned in my post last week how I was going to attempt 22 miles to see if I can physically finish the Big Sur marathon on the 30th. I hadn’t been training too seriously considering I didn’t know if my work schedule would allow me to run it. But the race happens to fall on a weekend when I don’t work!

The training run actually went surprisingly okay! I am getting giddy about the actual race! DJ isn’t able to make it with work, so I was planning on driving there solo. Howeverrrrr, my mom called me yesterday to say that she is actually able to fly in! EEEK! This made me happy to near tears. I haven’t seen her since Christmas and to have that support for the marathon means the world.

And naturally, after those 22 miles, I have an abundance of blossoming flowers to share!!

Saturday evening I had the second portion of the Blue Apron meal. Since the baseball season started, DJ has been getting home later- more about midnight now. I spent the evening cleaning the house, doing laundry, and getting organized for the crazy week that was about to ensue. But I had Sunday to look forward to because………..

EASTER EASTER EASTER! What a glorious day. HE IS RISEN!

This Easter was quite unusual for DJ and I. We usually celebrate in Ohio, but for the first time we were here on our own with no family- just the two of us. I actually was pretty dang emotional (lol, what’s new). It all made me super nostalgic for Easters past- thinking of the Sunday services with my family, the far too competitive Easter-egg hunts I had with my sister over the years, having leisurely afternoon spring runs on those Ohio trails, and visiting DJ’s family in the afternoon (oh, and of course, devouring Mom L’s strawberry pretzel salad). I just missed everyone horribly- to a new level since I’ve moved out here. But I was thankful we had our Church family to spend some time with in the morning. That helped a ton. Our church had a fun photo booth, Boba tea, and the best people you could imagine worshipping our Lord and Savior <3

DJ went to Church to help set up at 5:00 am and I slept in a bit (Lord knows I needed it). After service DJ napped and I studied. It was raining outside, so it was the perfect day for naps and studies.

DJ has been fighting off allergies something horrible and wasn’t feeling pictures- but I still had to somehow document the Easter Sunday outfit, right?!

I was itching to cook, but I simply didn’t have time with how much work I had to do for the week to come. We decided to go out instead and make it a date night. We haven’t seen each other much at all lately and our date nights just happen when we can snatch them now.

We settled on Alexander’s Steakhouse. We had been holding out for a special occasion, and I’d say there is no more perfectly special occasion than celebrating our Lord’s triumphant victory. We needed this romantic, quiet dinner to catch up on the last weeks happenings and to just be together. It was lovely, and I’ve reflected on that dinner every time I start to miss him throughout the week.

Alexander’s is known for having some of the highest quality steak in the world called “Wagyu”. DJ didn’t try it this time, but it’s such delicate meat that they actually wrap it in linen. I found this hilarious.

THE BREAD! Once again—-sprinkled with sea salt. Those little croissant things were our favorite.

I decided to try a Himachi shot after scouring YELP for the “must haves”. It was good! It’s basically like taking a shot of sushi (no alcohol or anything- just fish and other stuff that I’m not sure… haha). I make it sound terribly appetizing, huh? I’m not sure I would go out of my way to order it again, but it was definitely worth the experience.

And whenever octopus is on the menu……..

This octopus was fantastic. But STILL, nothing tops Marco Prime’s spanish octopus in Florida. NOTHING.

We also tried their bone marrow after having that fantastic bone marrow at Orchard City Kitchen. If you’ve never tried bone marrow, you must. It is one of the most savory, umami flavors of all time.

DJ ordered a Filet that he gobbled up real quick, so I’ll assume it was pretty great.

I tried their featured seafood dish for the halibut.  MMMM mmm. So good.

And we cannot forget the sides….Lobster truffle Mac & Cheese and Creamed Spinach. That lobster truffle mac and cheese may be one of my top five favorite foods I have eaten in my WHOLE life.

Last, but certainly not least, we couldn’t walk away without dessert. We had their Matcha Cheesecake and, holy canoli, I must go back for more. DJ said he wasn’t going to have any because he was too full…. when he took his first bite he couldn’t stop. (JJ!!!!! We may need to stop in here for dessert when you visit!).

But wait, it doesn’t stop there….

They brought out complimentary chocolates because when you give people free chocolate you win their heart. That’s why Olive Garden is so successful- the Andes mints (ok, the breadsticks may have a touch to do with it too).

Oh, hello, complimentary cotton candy! I did not see this one coming. What is it with all the free cotton candy lately (reference to LA trip with my girls).

OH..before I forget! My sister-in-law’s Corgi, Pool Noodle, is in a big contest and is in ninth place! (Maybe you remember Noodle from the Christmas post?!). The Last Couple Weeks…

Last night after a 12- hour shift I pulled into our apartment complex, parked the car, took the elevator up to our floor and walked into our home.

“How was it?”

That was all it took. The tears just flowed. And flowed some more.

DJ jumped up from the couch and just held me.

The end of my first week of in-hospital nursing came to a close. With it came feelings of incompetence like none I have ever experienced. Those feelings of inadequacy slowly chipped away at my confidence, as though carving out pieces of my soul. After three shifts, I was broken.

I knew this was coming, mentally. I have heard it from countless other new nurses before. I won’t let that happen, I lied to myself.

Yes, this past week was perhaps one of the most emotionally draining of my life. I knew orientation would be a challenge- but I truly don’t know how I’m going to finish everything by the deadline of April 19th. We have countless skills we have to perform in-hospital, but when caring for patients, it’s hard enough to find a bathroom break, let alone demonstrate how to set up a chest tube, how to clean a tracheostomy, how to insert an NG tube, how to change a CVC dressing, set up a lumbar drain, etc.

On top of that is the physical exhaustion- the 4:30 wake up calls, the intense modules to complete on my “day off”, the desire to keep a home running for DJ and I to live in, including keeping groceries stocked and the laundry done.

But perhaps one of the most challenging aspects right now stems from the deep love I have for the people I am caring for. All that above, it’s hard to do, but oh man, it is so worth it when I can care for someone so intimately and make a difference in their lives. But out of this love I have for caring for my patients comes a desire to be freaking good at caring for them. And I’m not. I have no idea what I’m doing right now, and I am beyond frustrated with myself. One of our educators told us multiple times that we have to be forgiving with ourselves. Now I totally understand what she meant.

I forget to chart so many things. I lay awake panicking because I can’t remember if I did A, B, AND C, or if I only did A and B. I drive to work nauseas because I’m so terrified.

But it’s normal, they say.

Do I regret this choice or decision? No.

Do I wonder if I have what it takes? Yes.

Do I have to remind myself multiple times a day that God has a specific plan for me here? Yes.

Is this the first chapter of my story that has a beautiful ending where I can confidently say that I am a good nurse? I really hope so.

Ya’ll know that I’m pretty candid around here. Yes, I LOVE to make the world’s-worst jokes, and I LOVE to laugh-but I will let you know when it’s been tough tough tough. When things get stressful, I tend to go into hermit mode and cut myself off from the world. But in this past couple weeks I have worked up a serious appetite to blog. I feel like it always helps me put things back into perspective. When you can write about a situation, it gives it a tangibility and control at your finger tips. You decide what is highlighted, and ultimately you decide the perspective you have and the learning you gain from the experience. That’s what writing does for me, and it’s cathartic and healing in an essence of its own.

And although this week was so hard, I know that it will get better. I am in a learning season, and sometimes learning is one of the most trying obstacles we can face in life. Why? Because learning requires a stretch of our will, minds, energy, patience, and that is usually uncomfortable. But the awesome truth about the trials of learning is the accompaniment of growth. Lessons aren’t learned in complacency, but rather in tribulation. As is growth. So for that growth I am thankful, I need this stage to help me blossom. I need it to refine me and my character. I need it to meet new friends, lead people to Jesus, and carry out a purpose for which I have been called. One day this stage will allow me to encourage others that walk through it too.

(Romans 5:3) Not only so, but we also glory in our sufferings, because we know that suffering produces perseverance; perseverance, character; and character, hope.

And in the mean time, I refuse to solely survive. I want to live, I want to thrive. I want to learn as much as I can and not let every negative, exhausting, emotionally draining situation define me or my perspective.

I also don’t write this for pity or anything- it’s simply to have a baseline for myself moving forward so I can see that growth that takes place! I know things will get better, and I hate to be negative, but it’s also important for me to be candid about these things for my own reflection!

Sooo, without further adieu. I would love to share some highlights of our week…

I am officially running the Big Sur Marathon!!! I haven’t officially announced it here because I didn’t know if my work schedule would allow it. To be honest, I haven’t trained much, so it may be a bit rough. If anything, I will see some spectacular views! I’m trying not to put too much pressure on myself to get a great time or even finish it if my body says, “heck nah”, so we will see. I did complete an 18-miler with two minor breaks on Friday while studying on the treadmill, so that’s not too bad! This weekend I don’t work Saturday, so I might go for a 22-miler while I study! Anywho…. here are my nature-y pics from other runs during the week!

DJ and I still haven’t seen each other much during the week. Baseball season is gearing up, so he has been at work till about 10/11 pm every evening including many weekend nights. However, Saturday March 25th, he had a lunch break (where he could actually leave the office). We met at Bill’s because where else?! He ordered the french toast croissant and I ordered the greek omelette again because I’m addicted. We missed ya, Mom and Gordie! For dinner these past couple weeks, I have done crockpot ribs and a combination of Hello Fresh/Blue Apron, and salads. Blue Apron > Hello Fresh by a LANDSLIDE. I used Hello Fresh because we had a promo giftcard. It was promo no-no. I mean the stuff wasn’t horrible, but it was not Blue Apron. Blue Apron makes me feel like this in the kitchen…

This meal below was easily one of my favorite Blue Apron meals of all time!!! It was a mozzarella pizza with fresh oregano, spinach, and green bell peppers. YUM. The dough was perfection too.

I’ve tried to change the scenery of my study areas and resorted to hanging out in our apartment’s community area. It’s so cute, I don’t know why I haven’t done this more in the past. And I’m lovin’ those pillows.

On one of my days “off” (there is ALWAYS something to study and do or a class to attend on our days “off”, hence the quotations), I returned a ton of the business casual clothes I didn’t end up wearing for our two big business cas. weeks of orientation. I decided to take a quick stroll around Santana Row just to be outside for a bit. So many amazing memories here. There’s this memory and this memory and this memory……. It made me happy and nostalgic all at the same time.

Thursday night we had our church group. This is the first time I have been able to make one since the group started up three weeks ago. DJ actually was able to request to leave early and led the group for the evening. Such a stud. My good friend Danielle (from that insane hike), made Lamingtons- a traditional Australian dessert. Holy Maloly they were so good. I can’t even explain. All good things come from Australia.

She also made Vegemite/Veggie/Bacon and cheese scrolls- Which are seriously manna from heaven, and all people need to try these before they die. Danielle is also one of the greatest bakers ever, and I think Jesus blessed me a little extra with her as a friend.

Last night was the first date night DJ and I had since my last post (at the Socialight on March 24th). I came home from work around 8 pm emotionally exhausted and hangry as mentioned above. ***I also have to make a side note that DJ cleaned the whole house, did dishes and laundry on his first day off in a couple weeks. He is amazing.***

Anyways, there was a very specific meal I was craving- and that was Lazy Dog’s Sesame Crusted Ahi Tuna over Cauliflower mashed potatoes in a curry coconut cream sauce. Luckily, DJ hadn’t ate a huge dinner so we headed over to Main Street for a late one. (Also what better place to go post 12-hour work day than Lazy Dog?)

This was the highlight of my week. Just spending these precious, small moments with DJ. (He doesn’t like me taking his picture, so I sneak them and then post them on the internet while he’s not looking 😉 ). And then he’ll read this and I’ll get a lecture. It’s like clockwork.

So, today was PALM SUNDAY!!!! I needed my church family badly. They encouraged me greatly. Also, in this worship service today, I felt so wrapped in love. There is a specific reason for this… it’s amazing the way God works.

Going back a few years… the day after my dad passed away in high school, I went to church. I felt like going through the “normal” motions was just how I coped. I remember the first song that played in our worship service was “Hosanna”. I couldn’t choke out the words but my heart was singing them. It was laden with emotion and has been for me ever sense. It’s weird though, it doesn’t bring with it feelings of immense sadness and loss necessarily. It brings back the reminder that the Lord is my comfort in my darkest moments. Our church that DJ and I attend now has their own worship music from C3 Church’s elevation worship- they rarely play more “mainstream” worship that most churches know. However, this morning, while I was feeling downcast and perhaps more stressed than I have in my life, the worship team started playing this song. It just brought me such comfort- reminding me that God is my place of rest, my Prince of Peace. I felt like Jesus was reminding me that He will be with me through all of this.

DJ had to work today, but was back home for dinner (officially an anomaly).

For dinner tonight I had some leftover Seared Sesame Ahi tuna from leftover’s last night in my salad with tons of avocado and white cheddar puff pastries from Blue Apron. DJ wanted his leftover ribs.

I spent the rest of today studying and basically trying to get organized (contrary to what the picture might say).

The work week starts again bright and early at 5:00 am (which now feels like sleeping in compared to my hospital days). I have modules and classroom work the beginning of the week and 12-hour shifts starting Thursday.

I am so very sad that blogging has been put on the big ole’ back burner. Once orientation is over the load should lighten up a bit. I send ya’ll so much love.

Based on the amount of caffeine I’ve needed to support my 2.5 hours of sleep and first day of work (hence the 2.5 hours of sleep), my Monday has been like this…

I will recap how today went a little bit later. But for now I will give a short little recap of our week/weekend.

Last week I had to finish up last minute things on the checklist to get ready for work. On Wednesday night we met our friends (Danielle, I went on the hike with ,and her husband Matt) for sushi.

We just love hanging out with them. Except they are forever cooler than us because they have Australian accents!

This might be my new favorite sushi place in the area. I love everything about the ambiance, and the sushi was superb!

DJ ordered their lobster tempura roll and I may have snuck a few extra bites when he wasn’t looking… because YUM!

I ordered a bit of a unique dish-but  I cannot wait to order it again! It is called the “Feel Free and Fresh Roll”- this is a cucumber wrapped roll with salmon, yellowtail, white fish, crab and avocado topped with creamy ponzu, apply pear, and tobiko. It was the most refreshing roll I have ever had. It is hearty too- with all the good protein from the fish. The whole thing was just a winner, and a new fave. Don’t be surprised if you see this little guy poppin’ up more around these parts 😉

Thursday I went on a nice long run outside. I snagged this picture without realizing I was stepping in a beehive. WHOOPS! No worries- no stings, but it was a close call. I probably looked hilarious to the cars passing by as I flailed in a million directions while doing a furious pat-down to make sure no little devils were on me!

I also went to Santana Row while running around getting last minute things for the job. H & M is a winner for business casual! I also finally found a great hair salon that doesn’t cost an arm & a leg… it only costs a hair!!! LOLOLOL. Ok- come on, that was one of my better ones, eh?!

This night we made Oaxaca Plantain Tortas with sautéed shallots and red peppers. I didn’t know what to expect, and I wasn’t sure how DJ was going to respond to them, but he gobbled them right up! The combination of ingredients in BA always surprise me, but they always work!

After dinner we went on a nice walk together. Something I miss about our Indiana days were the walks we took after dinner when the weather was nice. Life is getting crazy, DJ isn’t returning home until 7:30/8 every night now (but he loves his job!), and soon I’ll be leaving before he even gets home (Get used to working that microwave, baby!). But it makes us appreciate the time we do have together, and reminds us to stop to smell the flowers 😉

FRIYAY= ST. PATTYS DAY!

Ya’ll know I get wayyyy too worked up about any holiday. Mom L and Gordie sent us these gorgeous flowers as a thank you for the weekend, but also as a Happy St. Pat’s day. Now if that’s not permission to get into the spirit, I don’t know what is!!!

ALSO, I am convinced that I have a sprinkle of Irish in me because I have freckles. And Mackenzie is a somewhat Irish name, right? It has an “M” and a “C” soooooo…………… I’m basically a leprechaun.

DJ rolled his eyes about 290359 times at me during the night when I said, “Kiss me, I’m Irish!”

He denies that I have even a smidgeon of Irish in my heritage.

But for real, who doesn’t get a serious case of FOMO if they aren’t Irish on St. Paddy’s?

Anywho. Ain’t gonna let the DNA keep me away from the ST. PADDYS DAY!

I had to make sure that we had our “Irish pub fix”. DJ and I have never “celebrated” this together before, but I didn’t want to miss the chance to take advantage.

Where better to go than Historic Murphy Avenue in Sunnyvale?

We never knew this area even existed, but it has a street lined with darling lights, fabulous restaurant options, and interesting, eye-grabbing shops. We will certainly be back here to explore more!

In doing my “Yelp” research, I found that The Oxford is great for your St. P’s fix.

To really get in the spirit, I decided to get an Oxford Mule (their main drink). I liked the ginger a lot, but I’m not gonna lie- I missed my Friday-date-night glass of red wine!

Still good though, especially if you like Moscow Mules. Then again, this is the only one I’ve ever tried so I have nothing to compare it to.

This place is a fusion of all types- but I would say it’s retro london with a taste of modern industrial architecture (but maybes that’s just English style?).

For dinner we were placed at their outfacing island. I loved this because we felt like we had the best of both words, half in and half out of the restaurant.

It was challenging getting good pictures under the dim lighting, but I gave it my best Irish-girl shot. We started with the Monterey Squid with char-grilled squid, arugula, tomatoes, radish, & parsley relish. Every time a menu has octopus or squid as an app I basically have to order it. Why you say? Because the spanish octopus I had at Marco Prime in Marco Island was the greatest thing on the planet, and I will do anything to have that taste linger on my tongue once more. To have Spanish Octopus grace me with it’s presence……. Yes, I am the Shakespeare of food, how kind of you to notice. Anywho, this did not even come close to that level of flavor. On to the next squid..

DJ ordered their Lamb Sliders. He devoured these little suckers right quick, so I’ll take it he enjoyed them. Orrrr he was trying to avoid conversation with me. We will go with the former.

Now- I’m super bummin’ that I didn’t get a great picture of this dish because it was AH-MAY-ZING. Allow me to present chermoula eggplant with roasted eggplant, saffron rice, spiced yogurt, and cherry tomato crush. I don’t know what they put in that yogurt sauce- but good heavens, there are no words. DJ even said he couldn’t believe how good it was. I downloaded a saffron yogurt recipe and plan on trying to re-invent this in the future.

DJ and I walked around Historic Murphy path after swearing we would be coming back in the near future. It was hopping since it is stacked with pub after pub after pub.

Saturday, I got a nice long training run in on the treadmill while reading HP (currently on the third book, and I use it as motivation to get everything done during the day so I can read #HPaddict), did the household chores, and waited for DJ to get home from work.

At this point in the weekend I was feeling ancy mcnancy (Not making another Irish joke- I’m done, I promise, maybe). I was ridden with anxiety knowing I was starting up work on Monday. I wasn’t running to God’s truth and scripture much during the week, and naturally the anxiety was consuming me.

But I’m telling ya, God truly will renew our soul and relieve our anxiety, we just have to come to Him (1 Peter 5:7). I flipped open to John 14, the next chapter I was going to read going through the book of John, and literally the first verse said, “Do not let your hearts be troubled.”

And then a few verses later in vs. 26, “But the Advocate, the Holy Spirit, whom the Father will send in my name, will teach you all things and will remind you of everything I have said to you. Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.”

He doesn’t give us a peace like the world gives- a peace that’s fleeting, a peace that is contingent upon circumstances, a peace that is dependent upon our emotions. The peace Christ has for us is lasting and sure. It is a peace that we can use as weapon when life isn’t comfortable (and it’s not a lot of the time). We can find joy through this peace in His name, despite anything that comes our way. My anxiety lessened when He worked on my heart and my perspective. His still, beautifully familiar voice (I haven’t made time for in my chaos) spoke to me and stopped the world from spinning off it’s axis-“I’ve got you” He said. He reminded me of His love and His promises which gave my heart utter, perfect, heavenly peace.

DJ and I went on a walk when he came home. We went to Main Street Cupertino and then idly strolled other side streets. I savored each step, because I don’t know how this next chapter will look for us moving forward.

DJ and I had a late snacky-type dinner of cheese and crackers (We have ate SOOO many cheese and crackers this week, it’s comical)…..but we still had a bit of room for more food around 8 pm. We decided to go to Rootstock, a place we had been wanting to go together for a while.

They have an awesome bruschetta menu. We split the bruschetta (smoked salmon FTW), and I finally had my glass of red wine that I was sad I veered away from the day before.

Sunday we went to church and then I finished up last minute errands. I made sure all my documents were good to go, and I even got a big girl purse to store everything from Target!

For dinner we had salmon, edamame, and saffron rice leftover from The Oxford (There was tons).

And today was the first day on the job!!!! I am wearing my Ann Taylor thrifted shirt that I bought a couple months ago if it looks familiar 😉

GUYS- I LOVE THIS JOB! I love love love love love love love it. I am fatigued beyond words, but I love my colleagues (instant friends right there), I love my hospital, I love their mission, I love that I am only a couple weeks away from meeting my first patients as a real RN, and I am absolutely elated. The first day could not have gone better. Even on ZERO sleep, it was perfect.

I woke up (or more correctly, rolled out of bed) at 5:00 am- chugged a cup of coffee, a protein bar, & left the house by 6. The whole day the environment radiated non-pompous professionalism, compassion, joy, and genuine care for us as residents and for the patients of the hospital. Although it was mostly just logistical stuff, I truly think I gathered a great feel for the atmosphere, the expectations, and the type of program I am in. Lemme tell ya, I can’t wait to go back tomorrow. My fears have certainly been mitigated, and all I feel in this exhausted moment is blessed. I can’t wait to get on my floor so soon!

The rest of this week is orientation- same old, getting up at 5 getting home at 7 ish and then next week I have a similar schedule until I start 12 hour day shifts the first week of April. After that I transition into nights. I am actually excited about nights because I can’t sleep when I know I have to wake up early- I get all nutty about missing my alarm and stay awake like a raccoon. So rather than not sleeping nights & days, I just won’t be sleeping nights! As though this time difference isn’t enough already for my East coast folks, now I’m gonna go all nocturnal on ya’ll.

Crazy Eats & Crazy Conversations!

HAPPY HAPPY WEDNESDAY (probably Thursday now?), everyone! Thank you for all your sweet wishes to recover- I am happy to report that my hearing and ear is almost back to 100%. What a ride! I won’t take the ability to hear for granted any longer.

I’m thankful that I was sick when I was though. I start work on March 20th, so truly, if that was going to happen thank goodness it did sooner than later! I felt so isolated these last couple weeks being sick, so Friday when I slightly started turning the corner, I decided to go out for a nice run!

During the day I was able to get my butt moving and get the house clean, get laundry done, all that jazz. On my way home from an errand I spotted a little hole in the wall place broadcasting Malaysian cuisine. Naturally, I flew to YELP, and this unassuming storefront had raving reviews. As it was Friday date night, I texted DJ to see if he would be interested in trying it out. He is always down for literally whatever always, so we eagerly awaited what this Malaysian cuisine entailed.

He has been arriving home later than usual with the new job. It’s totally fine- just an adjustment for planning out dinners and everything. As soon as he walked in the door I had my shoes and coat on ready to go- I was HUNGRY hangry. We jetted to Layang Layang on S. De Anza Blvd.

It felt authentic as they come. It was also jam packed which is always an excellent sign. The decor screamed Malaysian (at least I think? I don’t know much about Malaysia). It actually reminded me a touch of the ethiopian restaurant we tried out, but the food was not at all similar.

Malaysian food mirrors thai food incredibly closely (which makes sense). Thai is definitely one of my favorites, so I was salivating while scrolling the menu.

We started with their Satay Tofu, which was decent, but not the greatest tofu in the world.

I settled on a red curry tofu and DJ tried their Hakkien Mae with thick yellow noodle in heavily flavored soy sauce with chicken, shrimp, and veggies.

DJ, surprisingly, loved it more than I did. I’m still convinced Olarn has the BEST red curry around. I still have to take DJ there because he is a big red curry fan too.

Saturday DJ had to work, and I was squeezing in a long 14 mile run for my marathon training. One of our friends from church is moving to Oakland and borrowed our truck for the day to help with the move. As a thank you, they brought us these out-of-this-world donuts from Donut Savant. Like, holy moses, I can’t even explain— the FLAVOR! AHHH! I want to go here again and try all their flavors. The pecan one may have been my favorite, and DJ said their glazed was competitive with some of his top tiers. The one next to the pecan one is actually a candied ginger with a light vanilla frosting. It sounds like a strange combination- but it was pleasantly palatable.

We didn’t do much Saturday night. It was rainy out and we were both exhausted. I still didn’t feel like I had my mojo back all the way and we decided to have a chill evening. I’m trying to take advantage of them while I can because I know soon they will be few and far between. I still hate just laying around without doing something productive. I get far too ancy. DJ will plead with me to relax, so as soon as I can concoct something productive to do while sitting and “resting”, I give in. I decided to go through the photos on my laptop and delete any randoms, multiples, etc. I went from 14,000 photos to about 7,000 photos. There is just something about getting rid of stuff that is like a weight lifted. I’ve had that on my “to-do” list for a looong time and it’s such a nice relief that it’s actually done!

When Sunday came we went to church bright and early. I only stayed for the first service because my ear was not hanging in there well. The noise and music sounded chaotic and the drum started to throb.

BUT. It was the commissioning service for the leaders of the church. I had been sick and had my interview, so I missed two sessions and will make them up next round. DJ graduated though, and I am immensely proud of the humble, loving, kind, strong leader he is!

When he plopped on the couch in the afternoon I made him a big lunch and then he declared he had a sweet tooth. The sun was shining (an unusual occurrence), so we decided to take a walk to CREAM! I mentioned this place in one of my VERY first posts from moving here, and we haven’t been back together since.

Long overdue.

This place is crazy. They make the most mouth-wateringly delicious ice cream sandwiches around with endless flavors, some of which are unique like their green tea ice cream and vegan cookies. HELLO, CALIFORNIA!

I wasn’t having too much of a sweet tooth, and decided to just nibble on whatever DJ got. Sharing is caring 😉

Lucky for me, he ordered more than enough. He decided to try their Sundae of Champions. This consisted of two fresh baked cookies, three scoops of ice cream, one LARGE crumbled brownie, a do’sant sandwich (donut ice cream sandwich), and whipped creme with sprinkles. This diabetes in a cup sundae was a sight to see! Everything tasted fresh and delicious. The brownie was our personal favorite part.

And of course, I had to take more than enough pictures to document 😉

On Monday, I had a hike planned with one of my good friends. This is the first day that I felt my ear wasn’t entirely muffled. We planned to meet at 9 am and when I parked the car I saw a bunch of turkeys just roaming around. I feel like lately I have seen so many random wild birds. So here is your wild bird of the post!

Despite the annoyance of the rain (it was raining this morning too a matter of fact), it was a gorgeous hike with sprawling green foliage and cascading moss everywhere you looked. It felt like a fairytale. We decided to hike for about an hour.

Annnnnd then I realized we were lost.

After about two hours of going straight up the mountain in the rain, I knew that we were not on the path I thought we were on…. WHOOPS

We saw one lady at the top, who may have been scarier than the mountain lion I enountered. She didn’t speak great english, and she kept asking us,”What path you take?” “You take that path”?!” “Avoid the dead bodies!” “Oh, good!”. We exchanged perplexed looks and just told her we had taken wildcat trail.

“Oh good!! No dead bodies!”

She hurried off in the other direction and I looked at Danielle super confused. I go, “Did she say dead bodies?!”. Danielle said, “that’s what I heard- unless she was mispronouncing something like a trail name. Let’s keep an eye out on the news”. Hahaha.

I really do not even know how to comment on that encounter. It was one of the strangest things to ever happen to me.

I apologized profusely to Danielle for getting us lost in the rain and mud and on behalf of the crazy lady. She was SUCH a trooper about it all.

This was taken at the top of the mountain. Unbeknown to us, we still had an hour of hiking left!

Three hours later, with stomachs growling, shoes thick with mud, and tons of laughs we made it back to the car with the guidance of some helpful ladies we saw hiking.

We decided to try Bill’s Cafe which has a notorious reputation for being one of the best breakfast and lunch spots in San Jose. Luckily, it wasn’t crowded when we arrived around 12:30 and we were seated right away.

Their menu has everything you can imagine for breakfast. They have a section for pancakes, waffles, benedicts, scrambles, omelettes, skillets, french toast, etc. etc. EVERYTHING. Danielle ordered this parisienne french toast which was a giant CROISSANT baked fresh dipped in egg batter and grilled sprinkled with powdered sugar and cinnamon. She graciously offered me a taste, and WOWZA- we were both impressed with just how much flavor was packed in it. Now we know- make french toast with croissants. (You can see the creation in the second picture below)

I ordered their french garden omelette. It had goat cheese, spinach, sun dried tomatoes, avocado, mushrooms, and basil. I usually order my omelettes with egg whites, but after this accidental hike, I could use all the refueling I could get! It was one of the greatest omelettes I’ve ever had. The sun dried tomatoes in it tasted so fresh and I wanted to ask what kind they used. It was maddeningly delicious!

This week I did an order of Blue Apron (WOOHOOO!). I love love love love Blue Apron and for my birthday I got a giftcard (Obviously someone knows me well ;)). I could talk about it for days. I may make a separate post to describe in depth all the pros/cons and share all my thoughts!

For the first meal on Monday, I made a Moroccan Chicken for DJ and had my giant salad to use up some leftover veggies in the fridge. I don’t have a ton of experience cooking meat dishes, so Blue Apron is great with helping me learn in that arena.

Monday night- BACHELOR! We made two mega cookies for this one- our usual chocolate chip tollhouse and then a massive hot cocoa tollhouse one (they are addictive, beware).

Yesterday I made the Spicy Shrimp Coconut Curry from Blue Apron for dinner. I’m mad at it for not turning out too photogenic, but it was delicious!

Today I have to go to the mall to find “business casual” clothes. UGH. I’m dreading it. I may be the only girl on the planet that truly just does not enjoy shopping all that much- especially when I have to find something.

BUT…. there is a very exciting weekend ahead, and I can hardly control my excitement…

Fort Worth, TX Recap!

Hey Ya’ll! Long time no chat! I am so behind on these posts, comments, everyyything- so I apologize but I will get caught up very soon 🙂 I have so many good memories to record and share. I am taking us wayyy back in time to December 15th when I arrived in Fort Worth, Texas. My mom and step dad, Pete, live there and my sister, Halston, flew in as well. DJ had to stay in Cali for work! I already recapped San Antonio, which was a weekend trip, so this post is the bookends of that weekend!

Thursday (12/15)

I woke up in the morning sick as a dog. I definitely caught whatever had been going around. DJ took me to the airport, and we realized this would be the longest we would be apart since we got married. Anyway, I comically lugged my three suitcases through the airport, unable to keep them stacked in a way that I could physically move them in unison. I’d go five steps then *flop* the one would topple over, another five steps then *flop*- I continued dropping the luggage every few feet and certainly was someone’s entertainment for the day. I honestly didn’t care, I just wanted to get through security to my darn gate. I handed off my checked luggage and was finally free from the luggage juggling circus act. Once through security, I started craving soup more than I can ever remember in my whole life. The chills were pretty bad. I walked through the airport strip and had about given up on finding soup and instead started hunting down my gate. When I was close to my gate I saw the San Francisco Soup Company and was never so ecstatic to see a soup place in all my years.

I ordered their summer corn chowder and it hit.the. spot. It took that achy chill out of my bones and made the rest of the wait bearable!

On the flight I read the latest issue of the American Journal of Nursing, wrote some Christmas cards, and used the tray table as a pillow. What do you guys do on flights?

After I landed, my family and I exchanged hugs and “Ah! I don’t want to get you sick”(s) and “I don’t care!”(s), then hit the road to head to Keller (a suburb of Fort Worth). On the way we stopped by the Gaylord Texan in Grapevine, TX. My sister’s boyfriend, Kevin, was there for one more night and we said he couldn’t leave without seeing this place. It’s quite the spectacle! It’s one large hotel, but they deck it all out for Christmas. You know the saying, “Everything is bigger in Texas”? I’m pretty sure that originated with this hotel. It’s worth a quick walk through if you are ever in the area!

They have an imitation San Antonio Riverwalk on the lower level. It’s even completed with Mexican restaurants all around it. How cool is that!??!

Once home, I was greeted by my puppy, Jade, that I haven’t seen in so long.

On Friday (12/16) Kevin left (sad day!), and I had my hair did (insert hand flip emoji) at a Lemongrass Salon by Aveda while my mom and sister shopped. I accidentally missed my appointment that I had scheduled in California (I thought it was 1 but it was 11), so my mom graciously helped me schedule this one. I still was not feeling 100%, so it was a good day to knock this out. Getting your head massaged and roots covered is a sure fire way to make a girl feel better 😉 I swear by Aveda salons for a good blonde!

Friday night mama Jill whipped up a delicious dinner!!! It was cauliflower Arancini via GreenChef, and we loved it! However, we both agree after using both services that Blue Apron is still the better of the two.

I liked using the leftover cauliflower bites to dip in hummus. They were even better the next day.

That night we went to the movies. I LOVE the movie theaters with the Cafe and Bar areas. We watched Collateral Beauty. I thought it was just OK, but the rest of my family loved it. Either way it was great family time and sparked good conversation. I won’t give a full synopsis- but if anyone has seen it I would love to hear your thoughts!

Monday (12/18) was a chilllllllll day filled with sleeping in, a workout at the local recreation center with my mama, baking Christmas cookies, and sushi for dinner. A perfect day if there ever was any! The last couple times we have been in Fort Worth have been pretty tourist packed, so we decided to take it easy this round and just relax- a word that isn’t really in my vocab too often.

At breakfast, the little stinker put on her sweet begging face. Sorry, Charlie, I like my toast too doggone much to share.

Christmas Bakin’! I wish I could take credit for any of this, but Mama Jill was the baking wizard all the way. Her coconut macaroons are the BOMB (they are the white morsels). And there is truly something about homemade rice krispy treats!

Tons of sushi from Kroger with seaweed salad and asian thai salad was on the agenda for dinner. (I know grocery store sushi may not sound super appealing, but I have never been disappointed!).

After sushi, we went over some family friends’. I met them last spring when I was in town and had a ball with them. I couldn’t wait to hang out again. Their house is the most festively decorated home I have ever seen. I think the said they have eighteen Christmas trees total? Each one is decorated with a specific ornament theme. For example, they have a Christmas tree with only shoe ornaments, another with only wine bottle ornaments, another with only santa ornaments, etc.; it was an actual winter wonderland.

Also we had carolers stop by, and they were the most precious two little girls in the world.

Tuesday (12/20)

This was lounge day round two! We watched Netflix, home videos, Hulu, and grazed all day long.

Every single night us three girls hot-tubbed, chatted, and sipped on wine. It was perfection. Pete was so sweet to encourage us to have our girl time.

The neighbors next-door just had a baby, so we dog-sat a couple times in the evenings for them to lighten their load. This video makes me belly laugh every time I watch it. It is of one of the dogs (the most lovable Pitbull in the world) thoroughly enjoying a tummy rub. Yes- that is a dog making that noise. My mom at the end of the video goes, “Why are you crying, Buster?!” *That’s the dog’s name 😉

Wednesday (12/21)

Halston, my mom, and I woke up and did Insanity in the living room. All ya’ gotta do is move a few couches out of the way and you’ve got a nice gym!!

After our big family workout, we went to brunch at Another Broken Egg Cafe per my stepdad’s suggestion. I think I thanked him at least ten times for suggesting this place, because it was one of the BEST brunchy places ever. Ugh, I say that every time, but I do mean it!

They had such a uniquely delicious selection of food, and their coffee was served in handcrafted stone mugs. Doesn’t get much better than that.

My mom and Pete said we needed to try the Beignet doughnuts. These are like the best-donuts-you’ve-ever-had and then some. SO. GOOOD. And they are served with a honey marmalade. I donut know how I have gone my whole life without them. And I donut know how I have gone so long without making an awful pun. You’re welcome.

Us girlies tried the skinny omelette which had herbed egg whites with blanched asparagus, roasted red peppers, green onions, goat cheese and roasted garlic cloves with an english muffin and a fruit dish. They seasoned it with the most palatable herbs!!!! My mom and I placed our bets on what they were, and we actually nailed it! Thyme, rosemary, and parsley. If you’ve never tried that on an omelette, DO IT! It’s extraordinary, or shall I say “Egg-straordinary”! Ok, ok, I’m done now 😉

Pete chose the lemon ricotta pancakes. He graciously offered us all a bite, and obviously I graciously accepted a big ole’ one. My sister gets mad because she says when I “try” something, I end up eating half of it. But, hey, tomat-oh, tomah-toe. You say “try”, I hear “sample half the plate”. Anyways, these were lemony ricotta-ey pancakey perfection.

Wednesday night we had the Candlelight celebration at church. It worked out perfectly because this was our “faux” Christmas Eve. Although we couldn’t celebrate actual Christmas day all together, the fact that we could go to this candlelight service definitely made it feel like a true Christmas Eve celebration. It was moving, and I love seeing the sanctuary lit up by candlelight.

When we came home we had apps while we finished up cooking dinner! The cheese was a mix of vegan and regular. I truly could not tell the difference between which one was vegan and which one was not. Usually good vegan cheeses are hard to come by, but this stuff was a facsimile; it blew my mind! We could not get enough!

Fun tip: If you need a fancy, yet incredibly easy, appetizer- try doing pita crackers + hummus + roasted red pepper + roasted onion + a drizzle of balsamic glaze.

Although DJ wasn’t able to actually be with us, we still hung his stocking!!!

It was nice to sit around and enjoy our apps around the gorgeous tree. It’s these moments that define the word “content” for me.

Dinner started with goat cheese “croutons” atop a salad with pears, pecans, and mixed greens. THIS. This is going to be a tradition.

Momma made ribs for Pete… yes, that whole thing was for Pete considering none of us eat meat. LOL. The girls had a sesame crusted tuna. I forgot to take a picture because I was a bit ravenous!

Dessert followed with my mom’s marveeeeelous Christmas cookies and my step dad’s famous pumpkin crunch which I am beyond bummed that I don’t have a picture of. We gobbled that thing up so quick! It’s one of our favorite parts of Christmas. It’s truly something I look forward to year round.

On Thursday (11/22) we had our “faux” Christmas Day!!!!! It was a magical morning followed by a breakfast of eggs, toast, and BEER JELLY! I found these on UncommonGoods for Pete. We had fun sampling all of them! Uncommon Goods is an AMAZING site for unique gifts for the family. I find most of my gifts here each year!

Annnnnd my stocking, as well as Halston’s, was stocked with five gum, NO COW bars (lemon meringue- the best), and Quest bars. We may have a bit of an obsession to say the least…

After opening gifts and having breakfast, I went for a nice long run. Unfortunately, the sun didn’t want to peak through too much, but it was still enjoyable. I lived in Texas in the Summer of 2015 before traveling to India, so the familiarity feels like home, even down to the running trails.

Friday (11/23) I woke up early to go to the local recreation center in Keller to get a workout in before getting ready to head to the airport. My sister had a different flight than me (a much earlier one), so she was landing in Ohio as I was taking off. This is how I caught up on reading everyone else’s blogs from the week! People probably think I’m such a crazy ellipticallyng (spelling?) with a laptop, but you’ve gotta do what you’ve gotta do!

When my mom got back from the airport, I finished packing up and then we decided we had time for one last lunch before heading out. She recommended a favorite of her’s and Pete’s in town, Devivo Bros. Eatery. It is considered rustic comfort food, but has an Italian flare! So essentially all the good things..

We split the Kale salad with fresh kale, dried cranberries, pumpkin seeds, crispy tortilla strips and candied almonds tossed in a jalapeño ranch dressing as well as the white bean tomato basil soup.

It all hit the spot perfectly, and I was so thankful for this small chunk of time we could treasure before my flight.

An Emotional RoLleR-coAsTer of a Week and So.Many.Updates.

Hey guys! I hope you all had a wonderful and safe Halloween weekend and start to your week! This past week has had so much good with a side of a bit of bad.

Shall we?

Wednesday– I had a rough day. Ya know- one of those hump days- where Wednesday disguises itself as Monday. I couldn’t shake the cobwebs from my head and I felt like I was moving like a snail. Three cups of coffee and counting were NOT doing the trick.

But once dinner rolled around I got to sample out another Blue Apron meal! If I am having a bad day, usually cooking and having a solid dinner can turn it around for the evening.

This was so simple. I think it’s probably the easiest meal I have made yet from this company, and I will definitely be recreating it. The homemade tartar sauce was too good, and I never knew endives could be so tasty?!

Wednesday after dinner we went to our first session of the Winter group meetings through the church. You all know how thankful I am for the people we have met through this church, and if you live in the Bay area and need somewhere to call home PLEASE contact me! God was tugging on my heart to share during one part of the discussion. I was NOT intending to “get deep” on the first night with mostly strangers. But naturally, like He always does, He pushed me out of my darn comfort zone. May I get an Amen?! I know this group is going to be such a blessing, it already is, and I can’t wait to see where it goes!

Thursday– Chores & Such. Totally necessary to waste your time by writing that- huh? OH, I did find out that I passed my nursing exam on this day and received my license in the mail! Thank you a million for all the sweet words on the last post. They seriously touched me <3 <3

Friday– I wanted to Fall. It. UP. Since I had been studying most of October, I didn’t get to go into full on fall mode besides eating massive amounts of candy corn. Which is fine, it’s probably the best part, but regardless, my pumpkin-laced-female-DNA was screaming “get yo self to a pumpkin patch!”

We started the day in San Pedro Square at the Farmer’s Market. I love Farmers’ markets, and every time we pass this one I say I want to go. Finally! I love all the fresh food, produce, unique gift ideas, and general atmosphere of a good Farmers’ market. This isn’t necessarily DJ’s idea of fun, but one of those things he will do with me because he knows it makes me happy. San Pedro Square is a happenin’ place and a foodie’s paradise. We wouldn’t know any foodies, now would we? 😉 DJ and I have exhausted Main Street Cupertino and Santana Row, so I think this will may be our new Friday Night date place for a while!

That afternoon we saw a vibrantly contrasting rainbow against a gray backdrop outside the window of our apartment. I haven’t seen a rainbow in a while, so naturally, I had to snag a picture of it.

We also headed to pickup our box springs for our bed for the master bedroom! It’s coming along! While we were waiting for the pickup we messed around on Snapchat.

** Side note: DJ gave me permission to announce he is no longer doing law school. He was originally doing the JD-MBA combined track, but now is just sticking to the MBA which starts this Spring. I am truly proud of him for doing what he knows is best for him. Plus it means I get to see my man more often!

Friday night I got out all my pumpkin patch wiggles. This place had abounding options for the average pumpkin picker. There were pumpkins here like I have never seen before!

Fun fact: My step dad’s name is Pete, and his best friend is Tom… Mom- can you show him this? I bet he will get a kick out of it. So cute, so corny. Had to share. I tried picture messaging it, but my service is  glitchy- as you know.

Friday night we decided to take it easy. I whipped up some Blue Apron meals. For myself I had Roasted Acorn Squash with Couscous Salad and Dressed Pea shoots. This and the coconut curry catfish are my two favorite meals so far from Blue Apron.

For DJ, I made the Spiced Pork Burgers with a “side” of coleslaw. The “side” took two leftover large Tupperware to fit it all. But I don’t mind- we love us some ‘slaw!

After dinner I received a call from the credit card company that my purse had been found at the pumpkin patch. I went into full on panic mode. While carrying my pumpkin from the patch, I must have dropped my purse on the way out. I called the cell number of the people who had found it (and currently had it). They were the SWEETEST couple in the world. I thanked them profusely for their integrity and kindness. I heard a little, young voice in the background go, “Is that Mackenzieee?!”. “I want to talk to Mackenzieee!”. The mother put the cutest little girl on the phone and she innocently, but matter-of-factly, inquires, “Hi Mackenzie- why did you leave your purse at a pumpkin patch?” Through nearly previous tears I started laughing and replied, “Great question! I think I was just too excited to carry my pumpkin and get home to carve it, so I dropped it without noticing!”.

We planned on a public meeting spot (Peet’s because where else?!), and I ran out the door with DJ. We tried offering them compensation for their troubles, but they refused. They said they just wanted to do the right thing. Then the husband asked, surprising us, “Are you believers?”. We quickly exchanged information about which churches we attend and a bit more small talk. Then we parted, perhaps never to see them again (well not never again 😉 ). What started as a traumatizing, panic ridden moment turned into an heart-warming experience. I still have no idea what led them to ask us if we were also believers, but how stinking cool. She messaged me that night to let me know her sweet daughter had prayed that I wouldn’t leave my purse at the pumpkin patch next time! Lol.

After this crazy day, DJ and I decided one thing was necessary: Cookies.

Break and bakes to be specific: What is your favorite brand/type?!? DJ loves the Pillsbury Chocolate chip ones and I love the Pillsbury S’mores (but they are hard to find). I firmly believe in cooking 1 minute under the recommended cooking time. We decided to save the Pumpkin Carving for another day.

DJ is the chocolate milk KING. Like he knowwws his chocolate milk. One time we had a blind taste test of about six different brands of milk. He nailed each one of them. He has a list of tiers on his phone where he rates the best of the best. Shamrock Farms is at the top! DJ probably would be embarrassed if he knew I wrote this… so quick read it before he makes me delete it!  Anyone else love a certain brand? Milk and cookie discussions are paramount to life.

NOW: Here is the meat and potatoes of this post!!!! To celebrate the NCLEX, I wanted to do something CRAYYY! So I looked up “Haunted places in the Bay area”. I don’t believe in “haunted”, but still in lieu of this time of year I thought this would just be interesting… I want to say “fun” or “festive”, but when you hear what happened to lead to this story, those words do not seem to fit. We contemplated touring the Winchester house, but I recently went through it, and it takes a while for the tour. We decided to save that for another time. I found a haunted road, Marsh Rd., and a haunted restaurant, The GrandView, that were within twenty minutes of one another. I made reservations at the restaurant and planned out so we would have enough time to explore the road.

Time for the spooOOooky stories:

Marsh Rd: “It’s become almost a rite of passage for Milpitas high school kids to seek out the ghost of murder victim Marcy Conrad, who was killed by her boyfriend on Marsh Road. Unlike the back stories of most urban legends, this murder was real and well-documented.” – SanJose.com

They actually had to close the road for a while because it was getting a bit out of hand with people going to the bridge and ravine where the ghost supposedly wanders.

While DJ and I were driving down this road, all we could talk about was how stunning the mountains and scenery were. It was probably one of the most charming places I have been since living in California. And yet, still it felt strangely unsettling. Now, knowing the background of the story and what actually occurred here, my heart was beating a tad faster than it should have been. I think the fact that we felt so isolated was what made the drive eerie more than anything. There was no one in sight. Nothing in sight. Then all of a sudden something stepped out into the road. My breath caught in my throat. A big pitbull-terrier mix type dog was giving us an ominous stare down with eyes outlined by dark circles. DJ slammed on the brakes, and we waited for it to get out the way. My breath started coming back to me slowly and my heart rate slowed. I calmed myself down. DJ laughed at my reaction, and we kept going, further and further down the road. Finally we came to the bridge and ravine… My stomach knotted thinking about the story surrounding this place. We turned the car around after taking a quick look around and began driving back up the road.

As we drove back up the road, DJ made some quick remark about the puppy coming after us. As soon as he said this, the same dog ran out into the road again, way further along than where we originally saw the beast. He stopped and stared at us just like before with large, dark knowing eyes. I was like, “Ok that’s it, let’s get out of here!”

Next stop: GrandView Restaurant.

The GrandView: “The lights have been known to flicker or even come on by themselves at this restaurant, even when no one is in the building. Also, the ghost of a young girl has been reported standing on the balcony that looks out over Silicon Valley.” – Hauntedplaces.org

Okay, despite the stories, and the alleged “haunting” of this venue, I felt like it was nothing but magical. Even the bartender that greeted us laughed at the notion of it being haunted. The view of Silicon Valley was ….. well even now… it’s leaving me speechless. We came at the perfect time to witness one of the most incredible sunsets. It was beyond romantic and DJ and I dined over delectable halibut and lobster carbonara. I probably do not even need to describe the flavor. Ya’ll need to come and experience it yourself.

I felt like we were dining in heaven. It was surreal. I could not have imagined celebrating any differently. Also–I begin applying for jobs next week- YEEK! 🙂

Sunday was a bit of a whirlwind, in the best way! We have have begun volunteering at church in the mornings, so we get there around 7:15 (DJ) and 8:00 (myself). It has only enhanced my whole feeling of belonging, relationship with Christ, and perspective of the body of Christ. Right before the first service, I received a message from a friend I went to college with. DJ and I have been wanting to get together him and his wife for a while, and I suggested they come to our church sometime. They have plans to move back to Indiana, but I recommended they swing before they did! Sure enough, they said they were on their way for the 11:30 service! I was both shocked that they were coming, but also thrilled. They drove two hours to us from Modesto and we grabbed lunch at the Farmer’s Union together afterwards. It was fantastic to catch up with them and see how God is moving in their lives. They said they felt like the message was tailored for them- it even led them to make some pretty big life decisions.

Because my blog tends to just run on food fuel as much as we do, and this post is a lengthy one, it needs a snack! A smoked Mozzarella & Cabbage Pizza with a Romaine and Apple Salad should do the trick… (And ya’ll didn’t think I could get any dorkier).

Monday was a SAD day. DJ gently woke me up to tell me that our dear, beloved Spanky had died. Guys- I was a mess. I loved that freaking fish so much. And it was just a fish?! How could such a little guy take up such a big piece of my heart?! DJ was also certainly upset himself. We were both pretty down the entire day. Cyranny certainly helped me feel better with her helpful blog counseling, hehe. She is a GEM. Anyway, we just kept busy, as you will see. We don’t have any idea how this happened, but we hypothesize it had to do with the water. We followed what the people at the pet store told us to a T, but I think they very clearly missed some instructions (no I’m not pointing the finger, OK maybe I am, I am a mother in mourning!). When we looked online they said they should have at least a 5 gallon tank, it should be 1/3rd original water, and it should be 78-82 degrees. They told us it was fine with the tank I bought and recommended to keep the water at room temp.

Our other guess precipitating the tragic event is Clinton or Trump took him out because they caught onto our #SpankyTomforPresident hashtag. I don’t know which it was, but gosh dangggg it was rough. People with beta fish- care to share some tips?! Anyways, I was going to do an update post about Spanky- how he was becoming more brave and spending less time in his barrel, how he loved me more than DJ (but DJ says Spanky was warming up to him), how we joked that he was too good for us….Perhaps he was and that’s why he went to fishy heaven.

We may get another in the future… but for now.. we are certainly not emotionally ready </3. (yes, I have a fancy for the melodramatic).

Naturally, I did what any normal girl would do to feel better: Retail therapy. Usually I don’t care for shopping all that much, only when the shopping bug really bites, but I always loooove thrifting. I went to a thrift store on Monday and went in for sweaters, but came out instead with this gem. I actually do not have a big purse, so this was great and had a Kate Spade-esque look to it! It was only $22 and it’s a Kenneth Cole Reaction. I think that’s a good deal?! I know I have some fashionistas out there- is this a good deal?

Once again, I attempted my pumpkin cheesecake with an oatmeal crust. I seriously love it, but it’s not quite perfect yet to share. No worries- third time is a charm. I am determined to per-fect this little boogar. I also plan on making my Pumpkin French Toast this weekend- and so stay posted for that sometime next week!

Monday night DJ and I decided to carve pumpkins. Keeping with theme of the night, I made a pumpkin pie. *The crowd all groans*.

Tuesday morning I went running on my favorite trail- San Antonio Open Preserve. Due to the recent rainfall in this area, Thank Jesus, the trails have such whimsical beauty about them. Moss climbs the trees, the rivers are purring again, and the dampness of the mud adds a little spring to each step. It was an incredible run. Each breath was deliciously filled with the taste of nature and it reminded me greatly of Ohio.

Tuesday night I whipped up a grilled cheese with mild cheddar&muenster cheese for DJ with tomato soup and cilantro (I try to make things “normal” but it’s just so hard when there are so many herbs- OK?!), and then I made a giant garden salad for myself to finish up the produce.

Today (Wednesday), I met with a friend for Lunch and we had the MOST wonderful conversation. Later, DJ and I watched the game with the fam. 🙁 🙁 :(. If you are a Cubs fan, I am glad that billy goat curse is broken, just not at our expense!

Like come on. That’s freaking crazy. We were losing our minds over it!!!! It predicted exactly what happened… Minus the apocalypse. Lol.

On another note, it’s November already- can you believe it?! We have family coming in town tomorrow, and we are PUMPED!!!! Hope you all are doing so well. I’m thankful for this community and although I began this blog to update fam and friends and have a place to write down our memories, I treasure each one of you here and the friendships that are forming along the way <3

Halloween Festivities and a little bit of everything else

Long time, no see!!! I have been so busy studying the last couple weeks that I haven’t been able to do a recap post. I am finally snagging a couple minutes now to draft something out before bed. And you may just get the rough draft because I don’t think I have time to edit- so in advance I apologize for the misspellings, the grammatical errors, run-ons, and fragments.

First things first per usual: Thank you to everyone for those sweet, sweet thoughts and words on my last post. As I told many I didn’t want to write it (or at least parts of it), but I knew I needed to. I woke up at 4:30 in the morning with all those words on my heart, and knew that I needed to share ultimately to bring glory to God for what He has done. Thank you again for everyone who shared your own thoughts, experiences, and encouragement.

Also thank you to Shawna  for her nomination for the Black Cat Blue Sea Award. I loved reading your responses, hun! I wish I could take the time to respond, but time is thin lately! However, if you guys get a chance, check out this wonderful girl’s place on the web <3

ANDDDDD Guess what?! I finally took my nursing boards (yesterday morning), and can officially put the books away, at least for a bit. I actually received my approval right after my last update post and cried tears of joy. FINALLY. After seven months, seven long months, I could finally take this stinking test. But, really, who gets that excited to take a test?! Pathetic I tell ya. I won’t find out if I officially passed them for a while, but I’m feeling okay about it. This could be really mortifying if I didn’t pass and I have to publicly announce it to about five hundred people- oh well! We will see. Positive thinking right?!

Time to rewind to October 6th. Yes it has been that long. No worries, guys, I have all the food pics. Because, like the last couple posts, all I have done is eat and study.

For DJ’s birthday dinner he wanted to do something relaxing that didn’t involve getting dressed up and didn’t involve facing traffic. We decided to try out Eureka, a place on Main Street that people rave about. Worth the rave- it was maybe my favorite place we tried on the strip.

For an appetizer we split some bruschetta. It was yumm. Anything with a good goat cheese and a good balsamic vinegar is destined to satisfy ya.

DJ ordered these insane little boogers. These are lobster tacos with cabbage, saffron crema, watermelon radish, and signature handcut fries. I feel like he inevitably chooses the better dish. Don’t get me wrong, I always love my meals, but I always tend to like his a touch better than what I order. The grass is always greener on the other side of the dinner table. Or maybe less green, because I tend to get a lot of salads. Anyways ..

I did make a good move by getting these sweet potato fries. UGH they were perfection. I ordered the veggie beet burger over greens. It just sounded so strange; I had to get it. It was super delicious and filling. Them fries though….

Friday and Saturday was the women’s conference through my church. The theme was “Wisdom”. Lord knows I need more of it. I can’t even describe how much I admire the leaders of our church. It would take me dayyys to write out all that I gleaned from just those two days. I met so many lovely new women and was inspired more than I could have ever anticipated. When I came home from the conference Saturday night DJ surprised me and had cleaned the whole apartment. This made my life. He is the best.

Back to the conference real quick: the bracelet I am wearing in the picture below is made by girls at She Rescue Home. Please check out their site if you have a chance, well worth it. They rescue girls in Cambodia from the sex trade and provide them with shelter, food, education, occupational tools and skills to provide for their family in other ways, medical care, counseling, and reintegrate them into society. That is a terse synopsis of the immense impact they are making and the expansion of what they do. The stories of these girls brought me to tears. Here are some quotes from the founder, Leigh Ramsey, that describe the situation better than I can:

“There are complex issues that contribute to a girl being vulnerable to trafficking – factors such as poverty, abuse, trickery and deception, unemployment and addiction often leading to desperation in the family.”

“But once trapped in this world of unspeakable evil, they are held captive against their will, and threatened with violence, are soon imprisoned in a world of unimaginable pain and degradation … as we say repeatedly IT’S NOT OK!”

They hand-made these bracelets for our conference, one of the tools the skills they learned through She Rescue Home, and every time I wear it I think of and pray for these precious, valuable humans that deserve so much more than the evil of this life.

It almost feels silly to go on to talk about anything else after that, but life is a mosaic of the good, bad, deep, beautiful, exciting, mundane, simple, and silly. It keeps us balanced and keeps us sane. Can you imagine spending too much time in any of those areas? The mundane makes us appreciate excitement, and the ugly makes us appreciate the beautiful.

Saturday I was craving french toast. I have a healthy high pumpkin french toast I make every fall. It is incredibly easy and tastes like heaven. I can’t wait to share this recipe with you guys.

While I was doing errands one of these days (lost track, not sure which day), I found some darlin’ little pumpkins. I would have gone alllll out on the fall decor but the studying made it so I couldn’t go out and buy all the fall things. Good thing too, I tend to go a bit overboard with the decorating when given the chance.

Sunday after church (10/9), we went to brunch. I was craving a good brunch. It’s probably my favorite meal, and I was hitting a serious wall with studying. Brunch is always a cure all’ for the study wall. We went to a highly recommended place called Hash House. It even sounds like a good brunch place. I stepped inside and smelled the buttery toast, eggs, and roasting coffee- the intoxicating, small town, diner breakfast smell. It takes me back to Saturday mornings with my dad and my Papa at local spots in little Parma, Ohio <3 My siblings know exactly what I’m talking about. Hello, Luna’s, Mimi’s, Demetrio’s, and My Place! My family knew the waiters and waitresses by name. I miss those days. All the nostalgic feels right now..

Now back to present day… DJ ordered a Western Hash and I ordered a Tofu Benedict, because where else have you ever heard of a Tofu Benedict?!?! It hit the spot. We also had to try an order of their pancakes- we ordered the short stack. A short stack. We thought they messed up our order and brought us a large stack. Nope. That is their short stack (it’s bigger than the picture does justice). I’d be interested to see the large! Verdict on the cakes: DJ’s mama’s are better. Besides her perfect pancakes, DJ swears the Bellagio in Las Vegas has some of the best he has ever tasted. Anyone concur?

The rest of the week we had leftovers, and just random easy things here and there. I haven’t cooked as much as I like usually since I have been studying so hard and just have been making easy things like garden salads, pizza, grilled cheese… yada yada yada.

However, one night (I think last Friday?) we went to Oren’s. I wrote all about how marvelous this Israeli food is in one of my posts. DJ and I crave this place. We like trying new places as a general rule, but man, we both were just itching to get our hands on some of their hummus and pita.

Let us talk coffee. Lately after dinner I have been loving some decaf chai tea with a little almond milk and a Graze Chia Coconut Cookie. It is the perfect treat to help relax me to get back into study mode for the night. The Mrs. Right cup was dirty, obvi.

I have been continuing to go to Peet’s everyday. They are truly friends at this point. They bring me out samples here and there of their latest blends, and I know longer have to tell the cashier my order. I just say, “the usual”. YES, I am one of those! I am going to miss the study “grind” simply for this reason. I will probably use blogging as an excuse to park it in Peet’s for a couple hours instead now and again 😉

I always have either a quest bar or no cow bar on me for quick fuel. When my blood sugar drops I turn hangry real quick. DJ can attest to this. I particularly like dipping the bars in my coffee. I realize I probably look like a weirdo doing it, but that’s never stopped me. I used to lick the foam off the cup sides too, but I put my big girl pants on and stopped doing that… in public.

Now to the highlight of our last couple weeks!!!!! Last saturday our family had a Halloween party! I can’t begin to explain how fun this was, but I’ll try. I think my cheeks still hurt from laughing. I was using this party as motivation all week long to crank out the last chunk of studying I had. It was such a nice night and helped refuel me for the last few days of cramming before the big exam. Also- it could have been a hosted Pinterest Halloween party. Every single thing was incredibly creative. Ideas galore! Our sisters that I always talk about presented us with the coolest little gift bags with our names on them and personally picked out chocolate we would love. They are incredibly creative and thoughtful, and put so much time into making this the greatest Halloween party of all time. I hope we are invited next year 😉  And, naturally, we all wore costumes, and every single one was fantastic.

This game is a blast. No matter what age you are- this is a winner! You simply wear a  mouthpiece like the ones they use at the dentist office and have to speak a phrase that you are given. Everyone else has to guess what you are trying to say. It is hilarious. We were rolling.

Monday night I got a text from my younger sister that there was a shooter on her college campus. They received a text from the Administration that he was heading toward the baseball fields, and she was currently in the baseball field at the time. She texted me from inside a shed in the field where she was sitting with the rest of her team. Scared me out of my mind. She was okay and hasn’t heard much about the situation since… But scary stuff. 😥

I took my exam yesterday (Tuesday), and I already explained the down low on that. Here is my obligatory “I just took my nursing boards” goofy, overly excited, why am I smiling like that selfie.

When I got home I spent about an hour freaking out convincing myself I didn’t pass, and then DJ spent the next hour convincing me that I did pass. I told him I don’t count my chickens before they hatch, and he said he counted one nurse chicken hatching. I found it hilarious. And then I had candy corn and felt much better about life.

Random small talk note about the weather: It has been getting more fall-ish, and I am loving that. It rained a few times last week, and it was perfect study weather. I love that the seasons still have a sort of rhythm here in Northern California. I was mistaken that it was 75 and sunny everyday. While I never complain when it is 75 and sunny, the respite of rain is a nice change every now and again.

We are going to a gala for our church this Friday, and I have few fancy dresses in my closet to choose from. To be honest, I am not really a big shopping fan. It overwhelms me a bit. It also seems to take forever to make sure I am making the right decision and getting the best deal. I do love me some good thrift shopping though.

DJ and I hit up the mall after the test yesterday and I actually found a dress relatively quickly. The lady checking us out was so jovial. She told us she wanted to adopt us and came around and gave us hugs after the purchase. I think it was the friendliest customer service experience I have ever had. It may have made DJ a bit uncomfortable, but I loved it! After that was off the list I was in a better mood. I don’t know if I was more anxious about taking my NCLEX or finding a dress, but regardless we conquered both (hopefully!).

After that we went to lunch at True Food Kitchen. This place just opened at Stanford shopping center in Palo Alto. I think this place was made for us. The vegan options were endless. DJ actually opted for a vegan option, although there were meat options. Once again, he chose the better meal, but he is always so kind to let me take a little big bite of whatever he orders.

To start DJ ordered a honey lemonade. We also split a charred cauliflower dish with harissa tahini, medjool date, dill, mint, and pistachio. I actually have most of these ingredients right now and would love to replicate it. The combination of flavors was addictive.

For my main dish I tried the seasonal ingredient salad with tofu. This included brussel sprouts, butternut squash, cauliflower, white beans, pomegranate, and toasted mulberry with a horseradish vinaigrette. I would never think to combine those items, but it worked soo well!

DJ’s meal was the bomb.com. He had a T.L.T. Which is smoked tempeh, butter lettuce, tomato, avocado, and vegan mayonnaise. We are definitely going back to this place! I want to try everything on their menu.

The whole day, Tuesday, reminded me that I have the greatest family and friends in the world. Before my test I woke up to the sweetest, most encouraging texts. When I came home with DJ after shopping I was greeted by a beautiful  Williams- Sonoma spiced pumpkin bread mix baking box.The silver pumpkins in the picture is the bottom of an actual pan to bake the bread in and it came with a delicious pumpkin butter spread! Also waiting for me was the most beautiful, exotic, and ME bouquet of flowers I have ever seen. They smell amazing and every time I look at them my heart melts. I was not expecting any of this, but I was touched beyond words!

Let’s talk in-laws for a hot tic… If I had to hand pick a family to marry into it would be the DJ’s. I thank God constantly for giving me a second family that showers me with unconditional love, support, and encouragement. I can’t imagine my life without them, and they truly make me feel like one of their own. Oh no, here come the water works. Someone get me a tissue! Nothin’ like an NCLEX to make a girl emotionally unstable!

This morning I allowed myself to sleep in until 8:30! That is a BIG deal for me, ya’ll! I also was able to go for a super relaxing ten-miler in the sun. I haven’t done that in ages. It felt so good to have the music blasting a little louder than it should, the adrenaline rushing through my veins, and feeling like I could conquer the world. I haven’t had that exhilarating of a run in so long. Lately I’ve been running on the treadmill so I can study my notes and read my review book while running. You should see my books from trying to highlight while running- it’s comical. Also- I only fell once during those ten miles! That’s success in my book. You all know my inclination for the ground.

Anywho, we have my Aunt and Uncle coming in town tomorrow- YAHOOOOO! The rest of the day was groceries, cleaning, shipping boxes, catching up on a zillion emails, all that jazz that was put on the back burner while I studied. It feels good to currently be sitting in a clean house. Oh, and I didn’t forget dinner. Now that I can cook again I made a crispy coconut curry catfish from Blue Apron. I knew this week would be busy so I figured Blue Apron would be good to have on hand for a quick meal with all the ingredients already included!

A Prison, a Criminal, and a Lawyer

Friday, Friday, Friday! Woohoo! Well this past week just flew, didn’t it?! I have some interesting anecdotes to share from this past week, for sure! Also-sorry for the massive overload of recipes posted. I have had them sitting in drafts for a while and figured I should probably just post them already!

Real quick, last Thursday night I whipped up Blue Apron’s Curried Cod with coconut rice. You need this in your life. I promise. I talk about how Blue Apron works here, if you are curious 🙂

Last Friday we went to the Orioles vs. Giants game with our family. Ya’ll know how we love our Orioles. However, I still jump during the National Anthem when everyone screams, “O’s”. Even after four games this summer I somehow forget that’s the thing to do! It always makes me leap like five inches off the ground. Anyone who has been to an Orioles game knows what I’m talking about. We went to AT&T park with our family, and this baseball park is easily one of the best in the country. I still prefer Camden Yards for it’s retro, 100% your at a cracker-jack-and-peanuts baseball game feel, but this is a close second! It overlooks the bay and you can actually watch boats come in and out of the pier.

 

Our dad (DJs side ) got us all baseball caps for the game (Not sure why I’m not wearing it in the picture above?!). But I LOVE baseball caps, and now have a new favorite! I think I have more “bad hair days” than the average person, so a new baseball cap is  a big deal. Plus it represents our team! The Orioles won, just so everyone is clear. Also, walking around San Francisco at night is quite beautiful. The place is always poppin’ and the Bay Bridge was absolutely gorgeous.

DJ and I shared a wonderful breakfast at the hotel before heading out for the day. I have seen smoked salmon and a bagel on many breakfast menus, but usually salmon for first thing in the morning sounds off. That day I was feeling up for trying it, and it was monumentally delicious. The concept is pretty simple too, and I might need to get some ingredients to have this at home sometime. It is paired with dill cream cheese, red onion, fennel greens, and capers. I think DJ probably got annoyed by me saying with every mouth-full, *muffled* “Oh muh gushhhhhhh, its suh guuuuuuuuud”.

IMG_8423We then headed out to *dun dun dun*- Alcatraz!!! I have been so excited for weeks since we planned this trip to go here and it surpassed my expectations! If you are planning a trip to San Francisco, this is worth your time. We took a ferry over, and the views and weather were perfection. We could not have asked for a better day, especially because the temperature tends to drop drastically when you are right on the water. A light jacket did the trick!

We opted to do the audio tour, which is the best way to explore Alcatraz. It takes you on a journey using some of the real voices of previous inmates, guards, and workers. I don’t want to give much away because you have to go for yourself.

** Side note: DJ always makes fun of my hands in pictures because he says it looks like I have a claw or some alien signal, lol.

Before we left for the day we did one of those bicycle carts. It was exhilarating whipping through the city on those!!!!!! Nothing beats a weekend with family. Those two days packed in memories I will always treasure <3!

Saturday night consisted of unpacking, cleaning the house up a bit, and DJ studying away. It is so strange having completely reversed roles. Last year I was studying non.stop. every single day, and DJ was in more of a “transition” year. Now he is the one studying his tush off. However, as soon as I get that approval to test for my nursing boards I am going to crack down! Then we can just be a couple of study bugs together.

IMG_7931Sunday morning we went to Church and it was awesome, cause really, would it be anything else?! I wear workout clothes to run errands and do everything around the house about 95% of the time, so before I changed into said comfy garb, I had DJ snap a shot to prove that I do wear normal people’s clothes for about two hours each Sunday!IMG_8473

For dinner, we had some leftover coconut rice and so I grilled up a whole bunch of shrimp in BBQ seasoning and some pineapple to throw on top!IMG_8474

Monday- Oh, Monday. This day was eventful! It was DJ’s first official day of law school, and I had a hair appointment. The contrast is striking.

I have been trying to get my color back to a more natural state and believe me, up close it was evident I needed to get something done. The roots were pretty bad! We were in one of those salons where each room is separate and owned by one or two hair stylists, but it all makes up one giant salon. Typically on Mondays salons are closed. The hairdresser took me because she was going away for the weekend and wanted to get another customer in. The salon was very quiet. However, as we were letting the color dry, a hairstylist came running from the other side of the salon screaming bloody murder. It was absolute pandemonium. She was running all over the place screaming, “He took it, he took everything!” through hysterical tears. Well apparently, she had just went to the bank, went to her salon, placed her purse on a chair, and used the restroom. When she came out it was gone. She remembered a man following her in, but assumed it was a maintenance worker since they do maintenance on Mondays when the salon is closed. The poor thing, I felt awful. We couldn’t locate him or the purse anywhere around the salon. My heart was definitely pounding. We called the police and they came along with her sons to help console her. Anyways, the hair turned out good (That sounds so absurd to mention on the heels of this horrible situation!). I am also 22 and still have no grip on curling my hair, so I was pumped that I got to rock it curled for the rest of the day.

For dinner, I made our last Blue Apron meal of the package. This one was summer vegetable and quinoa bowls. The flavor was just bursting. I learned so many different ingredients to cook with through Blue Apron, and I definitely would love to try it again at some point in the future!

On Tuesday, I had one of those “I need extra coffee” mornings.

I worked on several projects, and then made a meal I have had posted on the fridge since we came here. For a wedding gift, we received a subscription to Fine Cooking Magazine. This is a fantastic and unique idea for anyone who needs a gift for a couple that likes to cook! I try to clip recipes from there and put them on the fridge to try one when we are planning our meals for the week. It has been so much fun.

This recipe was a sweet and spicy shrimp stir fry with a raisin glaze. It was like nothing I have ever made and it was INSANELY GOOD. However, I may have made it a tad too spicy. That’s saying a lot because usually the spicier the better for us. I will be making it again, but with fewer jalapeños. IMG_8621IMG_8618

Anyone else get annoyed when there are always those one or two last bananas that go bad? Well I hate waste; you would think our mom raised us during the depression. I decided to make three ingredients banana oatmeal raisin cookies. I can post a recipe for them soon! They aren’t the greatest cookies of your life, but they are a great snack with all natural sugars and just enough sweetness to help with a sweet tooth. And they are only 46 calories each, which is pretty good for anything with the name “cookie”. A few are great in the morning with coffee too!

On Wednesday I prayed that it would be better than the one before. AND IT WAS! Guess who conquered the book shelf?! This girl! Uh-huh, that’s right!!!

For dinner, I jumped right on that Zoodle train. I’m not sure why it has taken me so long to make these because they are incredibly easy and tasty!!! I wanted to make an alfredo sauce from scratch and also a vegetarian version, but was running late,  like really late, so I threw in a can of Progresso Alfredo Chicken! I added some shredded chicken, garlic, daiya mozzarella, and a bit of tapioca starch and BAM- zucchini alfredo. DJ loved it. He couldn’t believe that it was actually healthy. I scrounged up some quick leftovers for myself since I was running so behind.

What was I late for? Wednesday night is when our community group meets in Santa Clara. DJ, unfortunately, had to stay home. Law school is no joke, folks. He was feeling pretty overwhelmed at the beginning of the week, but I think is feeling better now. Figuring out exactly what to do, how to study, and what the professor wants is half the battle. He has the second half down (dedication and will), and I have no doubts that he will succeed!!

On Thursday, DJ has his long day at school. I have my hiking group, and have to leave close to, or before, he comes home. I did make sure that there was some dinner for him in the fridge. I made salmon from Monterey Bay with a Hawaiian protein rice blend,and steamed broccoli. I love seasoning the skin on salmon so it crisps up when you bake it.

The views on this hike were absolutely incredible. I love the bonds I am forming with these friends. They are amazing people. We also had a little (meaning a large and furry) friend join us! I have never seen a spider that massive in the states before. Hello, California!

After the hike my friend and I stopped in to a nitrogen ice cream place in Cupertino. They actually make ice cream out of nitrogen gas. Watching the process is quite entertaining. My phone was about to die so I couldn’t grab many pictures- guess I’ll have to go back 😉 The ice cream was sooo scrumptious! We split the Matcha and Salted Caramel. The flavor was vibrant, and yet the texture was incredibly light. It just melted right in your mouth, but was still creamy. We called it confusing, but confusingly delicious!

One last thing I want to share is our new method for prayer. Our dresser was brought in on this giant wooden plank. It sent my creative alarms off, and I didn’t want to get rid of it. I told DJ I would figure out something to do with it and he kinda smirked like, “Oh no, what now?!”. DJ is a trooper to always roll with my makeshift ideas. For example, I made a jewelry holder four years ago out of a cooking pan, and refuse to use anything else. With this plank of wood, I have decided to create a prayer board. With white marker I write a prayer request, and then when it is answered, white it out. Our goal is to have the whole board changed to white to show how awesome God is in answering our prayers. I don’t expect this to be a quick thing, it could take years and years, and honestly it may never be completely white. God doesn’t always answer prayers in our time, but I have no doubt that He is faithful and we should pray expectantly. If you have a request, let me know, I can put it on for you!

This morning I found out one of my my best friends, Rachel, passed her Child Life specialty exam. GO RACH!!!!!! So proud of you!

Tonight DJ and I are finally going to have a relaxing evening together, it’s his deemed “night off” of studying. We are going to try a new restaurant, but not quite sure where yet! Tomorrow I head to SanFran again to visit a friend from high school. (I don’t think I told you that, Mom- But Annie lives here!).
